
Spain's most decadent foodie town isn't where you think it is
Amongst its ornate churches and centuries-old ruins, Astorga's food scene is certain to impress even the most fastidious of foodies, with a wealth of time-honored dishes found across its many shops, bars, and restaurants.

While Castilla y León offers numerous opportunities to savor regional favorites like roasted suckling pig and garlic soup, the crown jewel of Astorga is undoubtedly cocido maragato, a three-course meal served with an intriguing twist.
What makes cocido maragato unique is the order in which it's eaten,' says Natividad González, co-owner and chef at local restaurants Casa Maragata I and II. 'You start with the meats, then move on to the vegetables, and finish with the soup. Dessert comes last, of course—custard served with a traditional Maragato cake called roscón.' As with all Spanish cocidos, this hearty dish is prepared in a large pot, allowing the meat and vegetables to simmer together for hours to achieve the most tender mouthfeel possible. While the dish is best known for its reverse style of presentation, it's also renowned for the exceptionally diverse range of proteins that are present during the first course. Diners are served nine types of meat at once.
After a hearty portion of pork sausage, pork belly, and chicken mingled with other meats, guests can look forward to a plate packed full of succulent chickpeas and cabbage, all culminating with a bowl of savory, noodle-filled broth—the final product serving as the perfect representation of one of Spain's most renowned regional meals.

Once you've sampled some of Astorga's most notable savory dishes, you'll likely be on the lookout for something sweet to snack on—and fortunately, the city comes equipped with a truly staggering range of options thanks to its thriving chocolate industry.
'Astorga's chocolate legacy began with the muleteers who transported goods like fish,' says Alfredo Cabezas Galán, owner of Chocodulce Cabezas S.L. and Chocolatería La Cepedana. 'Eventually, they also began carrying cocoa beans they encountered on the Galician coast.' Over the centuries, this affinity for cocoa developed into a thriving economic driver for the city. By the 1960s, approximately 40 artisans were operating in Astorga, each offering their own distinct array of edible and drinkable products.
Today, Chocolatería La Cepedana serves as both a shop and an education center, crafting about 700 kilograms (1,543 pounds) of chocolate daily while showcasing a collection of antique tools and trinkets related to the industry. West of the Astorga train station, food history buffs can keep exploring the craft with a trip to the Astorga Chocolate Museum. Operating out of an ornate 20th-century mansion, this institution is packed with exhibits that highlight the rich history of Astorga's confectionery industry, and sections dedicated to traditional consumption methods, advertisements over the years, and other related topics.

Cocido maragato and artisanal chocolate may be two of Astorga's greatest strengths, but they're far from the only culinary stylings worth sampling during a visit. While bakeries abound across downtown Astorga, travelers in search of an interesting treat can make their way to Confitería Flor y Nata to try a fresh merle, a unique pastry that's found nowhere else in Spain. Crafted from eggs, flour, and a top-secret blend of other ingredients, this treat is just one of many items that have been created at the bakery since its debut in 1936, with various options ranging from buñuelos to huesos de santo.
Meanwhile, those who wish to explore a more modern take on Astorga's dining scene should spend an evening at Restaurante Serrano. Since 1995, this polished venue has showcased mushrooms that grow across Castilla y León. Meanwhile, this affinity for fungus has led to flavorful plates, such as truffle-infused lamb and Iberian pork sirloin bathed in brandy mushroom sauce. The restaurant is also particularly well-versed in crafting seafood dishes, providing guests with the perfect opportunity to sample salmon, codfish, and other Spanish favorites.
Of course, the city also offers its fair share of non-culinary attractions to explore. Roughly 2,000 years ago, the Roman Emperor Augustus, then known as 'Asturica Augusta,' founded modern-day Astorga. Today, visitors can uncover its storied past with a trip to the Museo Romano, a downtown institution dedicated to showcasing the Astorga of yore. After studying the coins, pottery, and other artifacts found within its halls, tourists can keep an eye out for some of Astorga's other ancient relics, which include eons-old Roman walls and baths scattered across its city limits.
People who venture to Astorga—far less renowned compared to some of Spain's larger cities— will be richly rewarded with a wide breadth of culinary experiences. From morning merles to an evening packed with truffles and fresh seafood, this storied city provides an opportunity to explore the true splendor of Spain from a gastronomic standpoint, accompanied by plenty of fascinating architecture to enjoy along the way. This cruise planner's biggest tip? Travel where only ships can go.
Paul Grigsby came to the cruise industry by way of trains. Grigsby, who is Holland America Line's vice president of deployment and itinerary planning, grew up boating but he counts a month-long train trip through Mexico as 'first real travel experience.' Shortly after graduating college, he and a friend traveled by rail from Mazatlan to Veracruz in 1987. 'We were able to take advantage of what it was like to travel in the United States back in the '40s and '50s on these old rail cars,' Grigsby told USA TODAY. 'And it was a bit of a madcap adventure because of my lack of Spanish. At one point, there were two of us traveling and we were in a berth for one because I didn't translate very well.' The trip cemented his interest in travel, especially in its nostalgic forms, which show up in the itineraries he plans these days. Grigsby spoke to USA TODAY about how he got his start, his love of travel books, and his cruise tips. The interview has been edited and condensed for clarity. Question: How did you get into this role? How did you come to itinerary planning? Paul Grigsby: Well, I've been at Holland America now (for) 25 years, and I've been in the capacity of revenue management. And itinerary planning is within the revenue management function of this brand, and in fact, (at) most of the cruise lines it's arranged that way. And I kind of worked my way through. Started out in revenue management proper, and then evolved to more (of) a planning function, which was with the revenue plans. And then, back in 2019, I was given the leadership role of the itinerary and deployment planning. Did you grow up loving ships? Yeah, I did. I mean, I grew up in Seattle, and I used to walk the docks with my father. You know, he loved ships and the sea, and he greatly influenced me. We would visit ships when they were in town, and they had visitation opportunities. Also, he was an avid boater, so I grew up boating throughout the Pacific Northwest, and you know, the Washington State archipelago as well as up in British Columbia. This may be self-evident given your work, but do you have a preferred way to travel? Well, I am biased towards travel by ship. I think even if I didn't work for Holland America Line or the cruise industry, I'd still say that. There's no such thing as ship lag, right? There is (such) a thing as jet lag, and it's just a leisurely way to go. And if I had the time, I would definitely travel by sea. I would cross the Atlantic instead of flying across the Atlantic. … I love being at sea. And again, I think it goes back to my roots, growing up on the water. I was a commercial fisherman for a summer, so I feel at home on the water. Is there a cruise cabin type that you particularly like, or a location on a ship that you prefer? I like the port side because when I was a kid, my father assigned his two kids to one side. You know, I was assigned port side, my sister was assigned starboard side. So, I always have stuck with port side. And as far as the type of cabin, I will admit, I do like a veranda cabin. I do enjoy being able to walk outside and enjoy the sights and smells of the sea. Do you have any travel must-haves, things that you always like to bring with you or have with you? I like to bring a good book along, especially a travel book. You know, there are always some hiccups that happen with travel, it seems like, and so it's always fun to read about somebody who might have had it worse off than you do. I like reading travel history. Evelyn Waugh, one of my favorite authors, he wrote a lot about his times of traveling back in the '30s. Also, Candice Millard, that's another book: her book, 'The River of Doubt' … is about Teddy Roosevelt's exploration through the Amazon. Fascinating read. Great American Vacation: 'Bachelor' star Peter Weber blindsided on 'Destination X' (and loved it) Do you have any travel pet peeves or any unpopular travel opinions? I think it's used a lot, this word, but I think it does resonate for me, and that's just authenticity. For instance, if I go to a city, I want to visit the old section, you know, a section that really defined what that city was. And maybe it's my interest in history. And, for instance, I'll find out what the old hotel was that people would stay at back in the day, so I'll visit that. I'm more interested in that than staying at, you know, a hotel or something that is an American name hotel. For those new to cruising, what are the top things you would recommend they know before booking a cruise? Yeah, so if you're new to cruising and you're not sure if it's your cup of tea, I would definitely start with a trip that you would not see any other way than on a ship. For instance, Alaska, is often the first of many people's foray into cruise travel. And the reason is that the best way to see Alaska is by ship. You're not going to get to Glacier Bay – I mean, maybe, yeah, you could get an airplane or whatever, fly and buzz around it, but to immerse yourself in Glacier Bay, you've got to be on board a ship. And you know, places that are known for being archipelagos, those are best seen by ship. So I would pick trades like that first, and hopefully you catch the bug, and then you might go to places like, say, the Mediterranean, where there are other ways of travel around. But then you realize how easy it is to travel by ship, and you'll probably be just as happy there, too.

Pope thrills hundreds of thousands of young Catholics at Holy Year youth festival
ROME — Pope Leo XIV urged hundreds of thousands of young people on Saturday to have the courage to make radical choices to do good, as he presided over his first big encounter with the next generation of Catholics during the highlight of the Vatican's 2025 Holy Year. Leo encountered a sea of people as he arrived by helicopter at the Tor Vergata field on Rome's outskirts for a vigil service of the Jubilee of Youth. Hailing from early 150 countries, the pilgrims had set up campsites on the field for the night, as misting trucks and water cannons spritzed them to cool them down from the 85-degree temperatures. Leo displayed his fluency in speaking to the kids in Spanish, Italian and English about the dangers of social media, the value of true friendship and the need to have courage to make radical choices like marriage or religious vows. "Friendship can really change the world. Friendship is a path to peace," he said. "How much the world needs missionaries of the Gospel who are witnesses of justice and peace!" But history's first American pope also alerted them to some tragic news: Two young people who had made the pilgrimage to Rome had died, one reportedly of cardiac arrest, while a third was hospitalized, Leo told the crowd during the vigil service. Leo was to return to the field for an early morning Mass on Sunday morning to close out the celebration. Rome welcomes the throngs For the past week, these bands of young Catholics from around the world have poured into Rome for their special Jubilee celebration, in a Holy Year in which 32 million people are expected to descend on the Vatican to participate in a centuries-old pilgrimage to the seat of Catholicism. The young people have been traipsing down cobblestoned streets in color-coordinated T-shirts, praying the Rosary and singing hymns with guitars, bongo drums and tambourines shimmying alongside. Using their flags as tarps to shield them from the sun, they have taken over entire piazzas for Christian rock concerts and inspirational talks, and stood for hours at the Circus Maximus to confess their sins to 1,000 priests offering the sacrament in a dozen different languages. "It is something spiritual, that you can experience only every 25 years," said Francisco Michel, a pilgrim from Mexico. "As a young person, having the chance to live this meting with the pope I feel it is a spiritual growth." A mini World Youth Day, 25 years later It all has the vibe of a World Youth Day, the Catholic Woodstock festival that St. John Paul II inaugurated and made famous in Rome in 2000 at the very same Tor Vergata field. Then, before an estimated 2 million people, John Paul told the young pilgrims they were the "sentinels of the morning" at the dawn of the third millennium. Officials had initially expected 500,000 youngsters this weekend, but Leo and organizers from the stage said the number could reach 1 million. The Vatican didn't immediately provide a final estimate. "It's a bit messed up, but this is what is nice about the Jubilee," said Chloe Jobbour, a 19-year-old Lebanese Catholic who was in Rome with a group of more than 200 young members of the Community of the Beatitudes, a France-based charismatic group. She said, for example, that it had taken two hours to get dinner at a KFC overwhelmed by orders Friday night. The Salesian school that offered her group housing is an hour away by bus. But Jobbour, like many in Rome this week, didn't mind the discomfort: It's all part of the experience. "I don't expect it to be better than that. I expected it this way," she said, as members of her group gathered on church steps near the Vatican to sing and pray Saturday morning before heading out to Tor Vergata. Romans inconvenienced, but tolerant Those Romans who didn't flee the onslaught have been inconvenienced by the additional strain on the city's notoriously insufficient public transport system. Residents are sharing social media posts of outbursts by Romans at kids flooding subway platforms and crowding bus stops that have delayed and complicated their commutes to work. But other Romans have welcomed the enthusiasm the youngsters have brought. Premier Giorgia Meloni offered a video welcome, marveling at the "extraordinary festival of faith, joy and hope" that the young people had created. "I think it's marvelous," said Rome hairdresser Rina Verdone, who lives near the Tor Vergata field and woke up Saturday to find a gaggle of police outside her home as part of the massive, 4,000-strong operation mounted to keep the peace. "You think the faith, the religion is in difficulty, but this is proof that it's not so." Verdone had already made plans to take an alternate route home Saturday afternoon, that would require an extra half-mile walk, because she feared the "invasion" of kids in her neighborhood would disrupt her usual bus route. But she said she was more than happy to make the sacrifice.
