
Scran season 8: The challenge with Scottish scallops
In the latest episode of Scran, I visited the award-winning restaurant Inver which is located in a beautiful spot on the shores of Loch Fyne.
I was there to find out more about the Open Seas Dived not Dredged campaign, which has been created to highlight the damage that's done by dredging for scallops and encourage the more sustainable practice of hand diving, which they believe all consumers have a role in.
I spoke to Andrea Ladas, Sustainable Seafood Officer for Open Seas, David Stinson, diver, Will Branning of the Sustainable Restaurant Association and Pam Brunton, co-owner and Head Chef at Inver.
In my discussions I find out more around the issues with dredging for scallops, how this is impacting the sea bed and the fishing industry and consider what it means for chefs and consumers.

Scran, a well-loved eatery in Troon, introduced the peculiar treat in a brief online video, which has since gone viral. Their TikTok post has already garnered more than 300,000 views. Co-owner Kyle posted a snippet of the dish being prepared, featuring vanilla soft-serve ice cream heaped onto fries and adorned with a sprinkle of multicoloured hundreds and thousands. The unusual combo quickly sparked a debate among viewers. While some labelled the pairing "criminal," others were all for it, likening it to dunking chips into a milkshake. One supporter declared: "It's a yes from me." What began as a playful gimmick has rapidly turned into an unexpected success. (Image: SWNS) Kyle explained: "We're quite active on social media, so we were brainstorming ways to promote our ice cream unit. "We thought of merging the fries and ice cream, intending it to be a wee humorous video to stir up some engagement, but it exploded. We've actually had people journeying down from Edinburgh to sample it after spotting it on TikTok. "It was supposed to be a novelty, but it's morphed into something much bigger. We've been selling them pretty steadily now!" Some patrons have travelled up to 80 miles just to taste this quirky creation, reaffirming Scotland's unending passion for deep-fried delicacies. Less than two hours from Edinburgh, Troon has long been a favourite for beach lovers, families and day-trippers. Come the weekend, it's buzzing with activity, but during the week, it exudes a quieter, more relaxed charm. Even on busy beach days, its vast size ensures you'll often find a spot to unwind, particularly at low tide when the Firth of Clyde unveils expansive rippling sands. The coastal view is simply breathtaking. On clear days, the dramatic outline of Arran can be seen in the distance, while Ailsa Craig's volcanic dome appears eerily on the horizon. Troon's golden beach extends over a mile, from the bustling town centre in the north to the globally renowned Royal Troon Golf Club in the south, a frequent host of the Open Championship. But there's more to Troon than just sand and golf swings. The town is peppered with independent cafés, shops and restaurants, providing plenty to discover between ice creams and fish and chips.
