London Restaurants Test Air Purifiers To Tackle Pollution Caused By Frying, Grilling: Report

London's dining scene received a breath of fresh air when the council announced plans to install air purification systems in restaurants across the city. The initiative is part of a pilot scheme aimed at tackling air pollution caused by cooking emissions. According to a BBC report, commercial cooking is the third-largest source of Particulate Matter (PM2.5) emissions in London, accounting for 15% is mentioned nowhere but 59% of all emissions is mentioned which one is accurate? These emissions stem from cooking fuels such as wood, gas, and charcoal, as well as food preparation techniques like grilling and frying.

PM2.5 particles are so fine that they can penetrate deep into the lungs, heart, and even the brain. Long-term exposure to these particles can lead to serious health issues, including heart disease, respiratory disorders, and cognitive decline.
To address this, Westminster City Council is trialling a new air purification system in five local restaurants. The three-month project is free for participating businesses and aims to monitor and eventually reduce cooking emissions, thereby improving both indoor and outdoor air quality.
Additionally, the study will provide valuable data on how restaurant emissions contribute to the city's overall pollution levels. The findings will be shared with businesses. Eve Seemann, head chef at Apricity restaurant in Mayfair - one of the restaurants participating in the trial - expressed hope that the experiment would shed light on the impact of cooking emissions on her and her staff.

"Although our style of cooking may not be as polluting as others, it's important to see what areas we could improve in. This data will allow us to see when there's a peak, what caused that peak and what we can do to try and remedy it. I'm glad we are part of finding a solution to reduce air pollution," she added.

Women living in downtown and midtown neighbourhoods, where several highways intersect, had a higher level of exposure to pollution over a year, compared to those living on the outskirts of the city, the team said. Vehicular emissions are a major contributor to PM2.5 pollution. Two substances -- 'cortexolone' and 'lysoPE(20:3)' -- involved in the relationship between short-term exposure to air pollution and an elevated risk of early births, were identified. Cortexolone is a glucocorticoid crucial to regulating metabolism, inflammation, and the immune response, while lysoPE(20:3) is a lipid present in cells and important for cell function. Study highlights The findings, published in the Environmental Science and Technology journal, highlighted disruptions in how proteins are digested and absorbed -- vital to foetal development and immune function -- which potentially serve as a link between exposure to air pollution and premature deliveries. The changes were associated with an increased risk of various negative birth outcomes, including premature birth, the researchers said. "The link between air pollution and premature birth has been well established, but for the first time we were able to look at the detailed pathway and specific fine particles to identify how they are reflected in the increased risk of adverse birth outcomes," lead author Donghai Liang, associate professor of environmental health at Emory University, said. "This is important because if we can figure out the 'why' and 'how' then we can know better how to address it," Liang added. Of the 330 women participants, 66 (20 per cent) delivered preterm babies -- before 37 weeks of pregnancy -- and 54 (16.4 per cent) delivered early term babies -- occurring between 37 and 38 weeks and 6 days of pregnancy -- both of which are significantly higher than the prevalence in the general US population, the researchers said. The authors wrote, "We identified significant indirect effects of cortexolone and lysoPE(20:3) in mediating the relationship between PM2.5 and early births." "Perturbations in protein digestion and absorption and aromatic amino acid metabolism may potentially mediate the associations between PM2.5 and early births." Liang said that while even lower levels of air pollution are harmful, people cannot simply be asked to move away from highly polluted areas. "So, from a clinical intervention standpoint, it's critical to gain a better understanding of these pathways and molecules affected by pollution. In the future, we may be able to target some of these molecules to develop effective strategies or clinical interventions that could help reduce these adverse health effects," the lead author added.

Though the city has observed better ambient air quality this year as compared to the previous year's pre-monsoon report, it continued to be above the permissible limits of NAAQS despite implementing air pollution control measures in the city such as enforcement of BS-VI compliant vehicles, and promotion of CNG and e-vehicles. This was highlighted in the 'Assessment of Ambient Air Quality of Lucknow City Pre-Monsoon 2025' report released by the Council of Scientific and Industrial Research-Indian Institute of Toxicology Research (CSIR-IITR) on Wednesday. The particulate matter (PM) concentrations were observed from pre-monsoon 2024 to pre-monsoon 2025. The PM10 concentrations decreased by 9.8%, 14.6%, and 4.9% while PM2.5 concentrations declined by 13.6%, 17.2%, and 17.4% in residential, commercial, and industrial areas, respectively. However, they exceeded the NAAQS limits -- 100 for PM10 and 60 for PM2.5. The PM10 levels remained relatively stable at Aliganj and Vikas Nagar, while Indira Nagar and Gomti Nagar showed an increase in 2024, followed by a decline in 2025. In commercial areas, including Charbagh, the PM levels fluctuated over five years but declined in 2025 as compared to 2024. Overall, commercial areas exhibited a sharp increase in PM10 levels from 2021 to 2024, with a slight decrease in 2025, though values remained above the NAAQS limit. In the industrial area (Amausi), PM10 levels showed a variable trend, increasing from 2023 to a peak in 2024, followed by a slight decline in 2025. The PM2.5 levels remained consistently above the permissible limit in all locations, but commercial and industrial areas consistently recorded higher pollution levels as compared to residential areas. The PM10 concentration was the highest in Gomti Nagar (residential) and Charbagh (commercial), while the PM2.5 levels were the highest in Gomti Nagar (residential) and Chowk (commercial) areas. While both the pollutants can be harmful for health, CSIR-IITR director Bhaskar Narayan said that PM 2.5 can be severe as it can get mixed with the bloodstream. 'This downward trend suggests an overall improvement in air quality across all zones. The observed reduction in the concentration of particulate matter may be due to relatively moderate atmosphere dryness conditions during the 2025 sampling period, as compared to the completely dry seasons in 2024,' the report said. The night time noise level trend in residential areas decreased slightly over the years, except in Aliganj, where a marginal increase was observed. In commercial-cum-traffic areas, noise levels showed an increasing trend, except for Alambagh, which showed a decline. In industrial areas, night time noise levels slightly decreased as compared to the previous year.
