From Dubai to Salalah: Filipino chef adds Omani twist to viral Dubai chocolate

Dubai: Dubai-based Filipino chef Nouel Catis, the creative force behind the viral pistachio kunafa chocolate, is now taking his artistry to Oman's Salalah with a tempting new creation.
Inspired by the rich flavours and heritage of the Dhofar region, his latest offering uses local ingredients such as aromatic frankincense and a sweet coconut katayef dessert mixture.
'Expect the unexpected,' Catis said. 'We've taken the original essence of Dubai Chocolate – decadent, layered, and nostalgic – and infused it with Dhofar's unique identity. The coconut-frankincense katayef bar captures the lushness of Salalah through creamy coconut gianduja, hints of roasted coconut and pistachio, and the sacred note of frankincense.'
Catis underlined that this is not just a twist but a reinvention that bridges two rich cultures in a single bar.
'You'll taste something familiar, yet entirely new.'
'Cultural storytelling'
Following his recent collaboration with AF Hospitality's restaurant brands in Manila, Catis will be partnering with Al Baleed Resort Salalah by Anantara for this special project.
'This collaboration is a beautiful continuation of my journey in using desserts as a medium for cultural storytelling,' he said, noting that the special creation is designed for the Khareef season – the monsoon period in southern Oman.
'It's not just about crafting chocolates or desserts – it's about translating the heritage, aromas, and flavours of the region into something guests can experience and remember.'
The new signature chocolate – along with another creation, a Coconut Malva Cake – will be available at the resort's Al Mina beachside venue from June to August.
Andrea Orru, general manager of luxurious resort, expressed excitement about the collaboration.

Dubai Airport (DXB) is now home to an AI-powered corridor, allowing multiple travellers to pass through immigration controls within seconds. The new service allows up to 10 people to pass through at the same time, without having to stop or present identification documents, according to local newspaper Alkhaleej. The airport systems now recognise passenger data even before they arrive at border crossings, said Lieutenant General Mohamed Ahmed Al Marri, Director-General of the General Directorate of Identity and Foreigners Affairs (GDRFA) in Dubai. The new AI-powered corridor also speeds up process es and doubles the capacity of airports, as multiple passengers can be processed at once. In addition, AI also helps in detecting violations as it refers any suspicious passport directly to forgery experts, Al Marri added. The new service is the first of its kind worldwide and comes as part of an integrated system that puts the experience of "boundless travel" within travelers' reach, Al Marri stated. DXB maintained its position as the world's busiest airport in terms of international passenger traffic for 2024, according to a report by Airports Council International (ACI) World. Travellers' impressions Many passengers who walked through the corridor expressed their admiration for the quick clearing service. 'I travelled with my family and the experience was smooth and exceptional. The procedures have become much faster thanks to this corridor, as travel can now be completed in record time without the need to stop at passport control counters,' said Mohammed Amer from Syria. Another traveller called Mahmoud Balou from Canada praised Dubai's efforts to adopt the latest technologies that help cut waiting time and prevent congestion, making the travel experience more enjoyable and seamless, according to the Alkhaleej report.

MoU signed with The Bench to facilitate collaboration on organizing the event Abu Dhabi: The Ministry of Economy and Tourism announced that it will host the UAE Africa Tourism Investment Summit on October 27, 2025, in Dubai, as part of the Future Hospitality Summit (FHS World 2025) - one of the leading global platforms for the hospitality, tourism, and investment sectors. The Summit aims to enhance economic and tourism partnerships between the UAE and African nations, boosting mutual investments across key priority sectors, particularly tourism, hospitality, and related services. As part of the initiative, the Ministry of Economy and Tourism signed a Memorandum of Understanding (MoU) with The Bench - the organizers of FHS World - in the presence of H.E. Abdulla bin Touq Al Marri, Minister of Economy and Tourism. The MoU was signed by H.E. Badreya Al Maidoor, Assistant Undersecretary for the Support Services Sector at the Ministry, and Daria Smith, Portfolio Director at The Bench. Emiratis have been invited to open shops and restaurants in the rapidly expanding Hatta, as the government looks to boost the town's status as the perfect weekend getaway from Dubai. A scheme set out by Sheikh Mohammed bin Rashid, Vice President and Ruler of Dubai, on Sunday will seek to encourage citizens to become business owners, with free retail space for the first year of operation. Emiratis living in Hatta will be given the chance to fill retail space at Hatta Sustainable Waterfalls. There will be space for four restaurants, four shops and six food and beverage kiosks. 'For the first time, investment and commercial opportunities are being introduced in the Hatta Dam area, specifically at the Sustainable Waterfalls," said Bader Anwahi, chief executive of the Public Facilities Agency at Dubai Municipality. "These opportunities will drive Hatta's economic development and open the door for a new generation of entrepreneurs to grow their ventures.' Last year, Sheikh Mohammed set out plans to turn Hatta into a "global model for harmony between humans and nature" after reviewing progress on a Dh3.6 billion ($980,000) master plan for the enclave.
