How incredible vegetable desserts in Japan changed my mind about sweets
I'm the first person to refuse dessert at the end of a meal and, like many Asians, consider 'not too sweet' the finest compliment I can bestow upon a cake or its brethren. So many found it odd that I spent some time in Hokkaido recently with the main aim of attending a sweets festival. Japan's National Confectionery Exposition has been held since 1911 to promote the country's sweets trade. It occurs once every four years but, owing to the pandemic, was cancelled in 2021 and last held in 2017. The expo returned this year for its 28th edition – called Smile Sweets Hokkaido – and was held in Asahikawa, a small city in Hokkaido, Japan's northern island known for its excellent dairy industry and high-quality fruit and vegetables. More than 1,000 products featured. Let's just say I've never seen such a frenzy for packaged sable biscuits, castella cakes and other sweets as I did that weekend. Photo: Charmaine Mok Queues for the festival's on-site desserts, such as fluffy, cream-filled pancakes and strawberry parfaits, took up to an hour. The only thing I ended up enjoying was a single soft-serve ice cream made with Hokkaido corn, and that was only because most people were hiding from the rain at the time.

How a young Turkish-German female chef in Hong Kong makes fine dining fun
'We never want to be too stiff. I don't want people to be scared to laugh or worried that they're talking too loudly,' says Mina Güçlüer, the new head chef at storied French restaurant Belon. 'I want to make sure everybody's having fun and eating good food at the same time.' It's a fitting declaration of intent, given that at only 29 years of age, her recent promotion makes her one of the youngest female chefs to helm a fine dining establishment in Hong Kong. Belon's head chef Mina Güçlüer rose through the ranks after joining the fine dining outlet in 2019. Photo: Jocelyn Tam The Turkish-German chef has experienced a rapid ascent, landing her first job out of school as a commis chef at the three-Michelin-starred Victor's Fine Dining by Christian Bau, in the German town of Nennig, before moving to the two-Michelin-starred Horváth in Berlin. 'I learned so much about what it means to work in fine dining,' recalls Güçlüer, 'and the amount of care that goes into the product. There's pretty much no room for error.' Having joined Belon in 2019, Güçlüer has risen through the ranks under chef Matthew Kirkley , and it shows. The new dishes she has debuted exhibit the same precision and eye for abstraction on the plate, tinged with a commensurate amount of nods to Belon's French roots. Why did you become a chef?

Nintendo's new Switch 2 console breaks sales records in first 4 days
Nintendo said Wednesday it had sold a record 3.5 million Switch 2 units worldwide in the first four days after the console was launched. 'This is the highest global sales level for any Nintendo hardware within the first four days,' the Japanese video game giant said in a statement. Featuring a bigger screen and more processing power, the Switch 2 is an upgrade to Nintendo's blockbuster Switch console. Photo: AFP It was released last Thursday to a global swell of fan excitement that included sold-out pre-orders and midnight store openings. Since its 2017 launch, the original Switch – which enjoyed a popularity boost during the pandemic with hit games such as Animal Crossing – has sold 152 million units. That makes it the third bestselling console of all time. Analysts predicted last week that Nintendo could score record early sales with the Switch 2, but it remains to be seen if it can match the performance of its predecessor.
