Eating carrots has never been more delicious as this recipe reveals that you only really need some oil and extra seasoning to elevate your snack - and it only takes 20 minutes
Whether you love or hate them, carrots are a very popular vegetable, among both children and adults. It's packed with fibre, vitamin A, antioxidants and other nutrients contributing to overall health. Even better that they're so affordable.
There are many ways to carrots: raw, cooked, or processed. Carrots are versatile and can be enjoyed in many different ways, from snacks to accompaniments to delicious dishes.

In the UK, carrots are widely consumed, ranking among the top choices when it comes to groceries. A major root vegetable, over 700,00 tonnes are produced annually. This is enough to provide 100 carrots per person per year.
They're available all year round in all UK supermarkets, and the sowing season typically begins from early spring to late summer. The prices vary depending on the store, starting from 42p and upwards.
According to Cookie and Kate, there's a better way to consume carrots - and it's by roasting them. Carrots develop a deep, concentrated flavour and golden, caramelised edges as they roast in the oven, making it an easy and healthy side dish.

The best thing about it is that it doesn't cost extra money, as the ingredients might be already laying around your kitchen counter.
How to make roasted carrots using olive oil
Ingredients:
Small carrots
Olive oil
Salt
Ground black pepper

Preheat the oven to 200C. Wash the carrots, dry them well with a paper towel, and peel them. It's recommended to use small carrots. However, if you have big carrots, simply cut them into halves or smaller pieces.
Mixing oil, salt and grounded black pepper, toss the carrots until they're well coated. Then, roast them until they become tender and browned, 10-15 minutes per side.
Then, roast them until they're golden on the edges and tender throughout. The cooking process shouldn't take more than 30 minutes.
Once done, serve immediately and most importantly, enjoy the delicious taste! These can be served with traditional or other main dishes such as lasagne or mac and cheese. The carrots can also be dipped in ranch dressing, tahini sauce, sour cream dip or Greek yoghurt.
Roasting carrots in the oven takes 20 to 40 minutes, depending on the size and how tender you'd like them to be. Smaller carrots, also known as baby carrots, will roast in as little as 20 minutes at 200C. However, larger carrots might need 30 to 40 minutes. Therefore, it's best to cut them into smaller sizes to ensure even cooking.

It delivers a powerful dose of cancer-killing medication directly into cancer cells, while limiting damage to healthy cells, reducing the risk of harsh side effects. Around 1,500 people a year with multiple myeloma, a rare, incurable cancer of the bone marrow, are expected to benefit from the treatment. Paul Silvester, 60, from Sheffield, is one of the first patients to receive the new drug through an early access programme. Diagnosed with myeloma in July 2023, Paul was initially given a different treatment, but when it failed to stop his cancer from progressing, doctors turned to belantamab mafodotin. 'I feel like this treatment has brought the party balloons back in the house,' he said. 'It has been amazing - within the first two or three weeks, after the first dose, I was in remission. "It gives me quite a lot of confidence in the drugs and it makes me more optimistic about the future. "I've been feeling well and I'm still quite active - that's what's important in terms of your quality of life. "One of my daughters is graduating from university in October and it's a goal for me to be there." British rock legend reveals he's fighting aggressive blood cancer and is undergoing treatment The therapy, developed by GlaxoSmithKline, is administered via infusion every three weeks alongside two other drugs: bortezomib and dexamethasone. Clinical trials showed it could delay the progression of myeloma for around three years, compared to just over a year for patients receiving commonly used drug daratumumab with the same combination. Following new guidance from NICE (the National Institute for Health and Care Excellence), the drug has now been approved for widespread NHS use in England. It's the first health system in the world to offer it routinely. Patients who have relapsed or not responded to earlier treatments will now be eligible for the therapy. The treatment has been nicknamed a 'Trojan horse' because of how it works. 2 Much like the famous story from ancient Greek mythology where soldiers hid inside a giant wooden horse to secretly enter the city of Troy, this drug hides a toxic payload inside an antibody that tricks cancer cells into letting it in. Once inside, it releases a powerful, cell-killing molecule that destroys the cancer from within, while sparing surrounding healthy cells. 'New hope' Professor Peter Johnson, NHS England's national clinical director for cancer, said: 'Myeloma is an aggressive type of blood cancer, but we have seen a steady improvement in the outlook for patients over recent years as we have introduced new targeted therapies. 'I am delighted that patients in England will be the first to benefit from this new treatment, which has the potential to keep cancer at bay for years longer, giving people the chance of more precious time with friends and family. 'This treatment could be life-changing for many patients and their families, and that's why it is so important that the NHS continues to secure quick access to the latest, innovative treatments like this, at affordable prices to the taxpayer.' Helen Knight, director of medicines evaluation at NICE, added: 'We're delighted that people in the UK will become among the first in the world to access belantamab mafodotin for this indication. "This recommendation demonstrates our commitment to getting the best care to patients fast, while ensuring value for the taxpayer." Myeloma UK, a charity supporting those with blood cancer, has also welcomed the news. Shelagh McKinlay, its director of research and advocacy, said: 'It's fantastic to see the UK at the forefront of myeloma treatment. 'We have been working very hard for the last year to get this treatment approved and we know it will transform the lives of thousands of people with myeloma.' Health Minister Karin Smyth added: 'This groundbreaking therapy puts the NHS at the forefront of cancer innovation. "By harnessing cutting-edge 'trojan horse' technology, we're offering new hope to blood cancer patients across the country."

Honey is a popular option to sweeten the taste, but adding cinnamon can also have the same result. It will add richness and a hint of a nutty taste, and not only will it taste good, it also boosts the nutritional value. "The combination of Greek yogurt's protein and probiotics with the healthy fats and nutrients from the nut butter makes for a satisfying and nourishing snack or breakfast option," the experts add. You can also sprinkle nuts such as almonds, peanuts and walnuts on top to add a nutty flavour and crunch. A tip is to toast the nuts beforehand for some extra flavour and then either sprinkle them on top or mix them in. Alternatively, you can include natural sweeteners such as honey, pure fresh maple syrup or stevia which can provide a delicious sweetness to your Greek yogurt. Or if you prefer something a little more savoury, Mary Berry has shared one of her secret tricks for perfecting poached eggs. In her recipe for Eggs Benedict, Mary let slip that a splash of vinegar in the pan ensures the egg whites set rapidly and maintain their buoyant form, reports the Express. She said: "The secret to a poached egg is boiling water with a dash of vinegar in it." Simply start by bringing a pot of water to the boil on the hob. Lower the heat until you've got a simmer going then introduce a modest splash of vinegar to the mix. Cracking the egg into a ramekin or cup first makes it simpler to transfer it into the water. Stir the simmering water to create motion before adding the egg.

During this time, she "had no choice but to try to get through looking after Derek 24/7 completely alone". Kate admitted: "By the end I was so sleep-deprived I was scared it was no longer safe - for me, for the children, let alone for Derek." She continued, "In desperation I called health services again and this time refused to get off the phone until some answer was given. In the end, the person on the other end of the phone, who was also clearly exhausted, told me, 'There is nothing I can do but - and this isn't official - you are not alone and what I always say to people is take him to AandE and leave him there, then they legally have to do something.'" Kate was taken aback that it had come to this point, questioning how the best solution seemed to be to "abandon" someone who wasn't safe to be left alone. She expressed gratitude for family members who assisted in the dreadful situation, but acknowledged that others might not be as fortunate. Kate also confessed to still experiencing a "tsunami of sadness", often waking up in the middle of the night in a panic thinking she hasn't given her husband his medication. She previously shared the poignant last moments she and her two children spent with Derek. ‌ In a conversation last year, Kate recalled how proud dad Derek told his children, Darcey and Billy: "You're the best children anyone could ask for. Look after mum, be good for her." Tragically, this was the last time Derek saw his two children before falling into a coma. Kate openly praised her children for their handling of their father's condition and passing. ‌ Speaking on Good Morning Britain in February last year in 2024, Kate said: "It was one of those stop-the-clock moments, where you want the world to stop. "It swamps you. We now have 24 hours, [which] turned out to be more of a month, of fighting on and fighting on, following the prognosis that he won't make it through.
