Norwegian Cruise Line reveals its sweetest dining secrets

The job of a Norwegian Cruise Line pastry chef is a very important one.
Dessert is the literal icing on the cake of the cruise experience for many passengers, and it takes devotion and artistry to perfect the recipes that keep cruisers dreaming about cruise ship treats long after they return to land.

Along with many other sweet menu items, Norwegian Cruise Line serves about 12,000 of its passenger-favorite OMG cheesecake dessert every single week across its fleet. Every day, a pastry chef's job involves preparing about 1,000 sweet treats inside the cruise ship galley.
Leading this sweet cruise ship operation as a chief pastry chef requires about eight to 10 years of training and a serious passion and dedication for the art of creating edible masterpieces.
In the cruise line's latest "Meet the Crew" video, Norwegian Cruise Line President David Herrera offers a behind-the-scenes look at just what it takes to consistently deliver these craveable cruise treats day in and day out as a pastry chef aboard the cruise line's brand-new ship Norwegian Aqua.
As he gets in the galley with the fleet's executive pastry chef and learns how to prepare and plate some of the cruise line's most popular desserts, Herrera shares insights into some of the team's secrets for pastry perfection.

David Herrera: Welcome to Meet the Crew, where we show you how Norwegian's fleet stays in perfect shape while making sure every guest is experiencing their best vacation on board.
I am David Herrera, and I'm going behind the scenes with the crew members who make every sailing spectacular. Please join me as we meet the crew.
David Herrera: Hey everybody, this is David Herrera at Norwegian Cruise Line, and we've got a special one for you today.
We're on Norwegian Aqua, and we're headed right into the galley, where all the food is made, where all those interesting pastries, all the deliciousness that we have at Norwegian Cruise Line.
And with us today: Christian Pratsch, Vice President of Food and Beverage Operations for Norwegian Cruise Line. Hello, sir. How are you?
Christian Pratsch: Thank you. We're so glad to have you here.
David Herrera: You spent a lot of time on the ships. Now you're on the shore side. You provide a lot of leadership for the entire fleet. How long were you on the ship, sir?
Christian Pratsch: I am with NCL for eight years now. I started with the beautiful Norwegian Joy in China. I only recently, shy of a year, transitioned into the role of vice president, overseeing food and beverage operations. The galley is to my heart, because that is where I grew up.

David Herrera: So, you're coming back home to the galley.
Christian Pratsch: Yes.
David Herrera: And we're going to do some special stuff today. Let's do it.
Christian Pratsch: Let's go.
David Herrera: We're deep in the heart of the galley, the pastry section. This is where the magic happens, from show-stopping desserts to delicate garnishes. This team fuels the sweet side of every Norwegian Cruise Line sailing.
David Herrera: Okay, so who are we going to meet with and what am I going to be doing, sir?
Christian Pratsch: Today, we're going to meet Chef Ryan. He's our fleet executive pastry chef. He has been on the ship for many, many years, and he's going to show you how to do some guest favorites.
David Herrera: Chef Ryan.
Chef Ryan: Nice to meet you.
David Herrera: Good to meet you, sir. How are you?
Christian Pratsch: You are in good hands. Good luck.
David Herrera: So, you're going to leave and we're just going to... Why not?

David Herrera: Chef Ryan has been part of the NCL family for 15 years.
Chef Ryan Alcantara Agustin: I started at NCL as assistant in pastry, assistant pastry chef, now pastry chef.
David Herrera: He is the creative force behind the desserts guests crave, and the leader of a team that's constantly delivering excellence, one sweet bite at a time.
David Herrera: So, you only have been a chief pastry chef one year longer than I have.
Chef Ryan: Yes.
David Herrera: So, it's almost like we're peers, like same level almost, right?
Chef Ryan: Yes, sir.
David Herrera: Cool. So, this should be easy for both of us.
Chef Ryan: Yeah.
David Herrera: It's incredible to see the level of care, precision, and craftsmanship that goes into every dessert. Watching this team in action makes it clear that pastry is an art that takes passion, skill, and years of dedication to master.
David Herrera: What are we going to do first?
Chef Ryan: OMG cheesecake.
David Herrera: OMG cheesecake. How come when I eat it, it doesn't look like that? There's always other stuff on it.
Chef Ryan: We are going to put some decorations before we serve it.
David Herrera: The OMG cheesecake is one of the most popular desserts on board. It is a rich cheesecake layered with caramel and butterscotch. Let's see if I can do it justice.

David Herrera: How many people are there in the pastry team?
Chef Ryan: On Norwegian Aqua we have around 26.
David Herrera: 26?
Chef Ryan: Yes, sir.
David Herrera: Making pastries?
Chef Ryan: Yes, sir.
David Herrera: That's a lot of pastries, baby.
Chef Ryan: A lot of pastries.
David Herrera: All right. What do we do first?
Chef Ryan: We're going to do the plating, sir.
David Herrera: Vanilla.
Chef Ryan: Yes, sir.
David Herrera: Putting on vanilla. I see you're going with the spinning the plate as opposed to...
Chef Ryan: Yes.
David Herrera: I think it's better if you get a little more aggressive, a little bit faster.
Chef Ryan: Butterscotch sauce.
David Herrera: Butterscotch. Ooh, right on the trim, huh?
Chef Ryan: Yes, sir.
David Herrera: Oh, all the way around.
Chef Ryan: Yes, sir.
David Herrera: Let me show you how to do this. I think that looks a little more elegant.
Chef Ryan: Then we're going to put the chocolate sauce, sir.
David Herrera: Back and forth, side to side.
Chef Ryan: Yes.
David Herrera: It's like the electric slide. I got you. Let me show you how to do this. I prefer, once again, to go circular and then, reverse it, and then drop a point in the middle.

David Herrera: Let's be real. I need a few more years of practice to keep up with the talented pastry team. My goal? Just don't screw up the whipped cream.
David Herrera: Let me show you how to do this. You go really fast. Boom. Oh, man.
A little extra. Boom. There it is. That wasn't my best work. I'm better with cakes.
Chef Ryan: Okay, sir.
Chef Ryan: Black forest cake. This we need to cut.
David Herrera: Are you kidding?
Chef Ryan: Yes, sir.
David Herrera: Okay. Is there a medic on duty? Let's hope for the best. Oh, yeah.
Look at that. Woo. Like butter, baby.
Chef Ryan: Then we're going to put some syrup, sir.
David Herrera: Sugar syrup. You know, it's like washing a dog.
Chef Ryan: Then, we're going to put whipped cream.
David Herrera: With your hand or with a spoon?
Chef Ryan: With a spoon, sir.
David Herrera: Oh, okay.
David Herrera: For the record, I saw your spoon doesn't have holes. I think you made mine harder.
Chef Ryan: No, no.
David Herrera: I can still do it, no problem.
David Herrera: You know what? A little extra cream. Boy, that was fast. How'd you do that? Okay. I got a bad feeling about this, but there it is.

David Herrera: Next up, piping. This is where precision meets artistry.
David Herrera: At my pastry school, we didn't use this. We used more cans. A steady hand is everything.
David Herrera: Just to show you that I don't mess around, I'm not stopping at eight.
David Herrera: And I am definitely feeling the pressure. Nine. Boom. Mine has a little more art deco than yours. Like, mine has almost like, an art piece.
Chef Ryan: Yeah.
David Herrera: Yours looks like something good to eat, but mine's like something that you would hang on your wall.
Chef Ryan: Yes, sir.
David Herrera: I have a feeling Ryan's actually being pretty kind. I doubt my version would ever leave the kitchen. Every single dessert from this team of 26 chefs has to not only taste delicious, but also look picture perfect. And they nail it every single time. Because every guest deserves our very best.

David Herrera: So how many pastries do you make a day, approximately?
Chef Ryan: A thousand pieces of cake, sir.
David Herrera: A thousand pieces of pastry every day?
Chef Ryan: Yes, sir.
David Herrera: Time for my final challenge of the day: chocolate-covered strawberries. With a mountain of them to make, it is a race against time to get each one perfect.
David Herrera: This is 100% chocolate.
Chef Ryan: 64% dark chocolate.
David Herrera: 64% dark, and what is that?
Chef Ryan: It's white chocolate.
David Herrera: Oh, snap. Let me see you go fast.
David Herrera: All right, that's good. Step aside.
Chef Ryan: Always.
David Herrera: Oh, wait. You got to go fast, dude. We got people to feed. We got people getting hungry.
Christian Pratsch: David..
David Herrera: It turns out I'm really good at this.
Christian Pratsch: You are a gifted man, and I can absolutely see which cake you decorated.
David Herrera: I'll take that as a compliment.
David Herrera: Compliments are great, but the job's not done yet. The rest of the strawberries are waiting, and this galley doesn't slow down for anyone.
David Herrera: How long would it take someone to do all of these strawberries and put on a plate?
Christian Pratsch: Well, it's a really good opportunity for you to test because we need all these strawberries finished by the end of the day.
David Herrera: I don't think it's going to happen, to be honest with you.

David Herrera: Becoming a pastry chef isn't just about talent. It's about years of training, dedication, and passion for the craft. Only the most skilled get to wear the title.
David Herrera: Do you think our guests appreciate how much time and effort this actually takes?

It can seem to a casual observer that in the cruise industry, ships only ever get bigger. Case in point: Royal Caribbean's Star of the Seas, with a capacity of 5,610 passengers, recently made its maiden voyage, joining its sister ship, Icon of the Seas, in holding the title of the world's largest cruise ship. But a less talked-about movement is taking place in its shadow: a surge of ocean liners that are compact and sumptuous enough to be branded as yachts. It's a fairly fungible term, to be sure, but in a cruising context, 'yacht' is generally used for opulent vessels holding fewer than 500 passengers. Many of these newer small ships operate under the auspices of luxury travel brands like andBeyond and Ritz-Carlton. Both Four Seasons and Orient Express plan to launch their first ships next year, while Aman's Amangati is scheduled to set sail in 2027. And they're attracting passengers who've historically avoided cruises. Jack Ezon, the founder of the travel planning agency Embark Beyond, says that 78 percent of the clients his company has booked on the Ritz-Carlton's ships have never cruised before. Even if these passengers are new to cruising, many are not new to yachts, says Stacy Fischer-Rosenthal, president of Fischer Travel. One client, she said, is planning to spend about $340,000 for a week in the nearly 10,000-square-foot Funnel Suite of the Four Seasons I. Why not just charter his own yacht? Fischer-Rosenthal says that most don't tend to have suites that large. While the suites may be amply sized, the relative smallness of the vessels has its own set of advantages. Some cities, like Nice and Cannes, mindful of over-tourism, have placed size restrictions on the vessels they allow to dock. Review: Royal Caribbean's Star of the Seas, the world's largest cruise ship, thrills

Passengers sailing on Royal Caribbean's Star of the Seas shouldn't ever find themselves in a state of boredom while traveling aboard the world's largest cruise ship. On the company's second Icon-class ship, the tally for the sheer number of things to do — including attractions, points of interest, dining venues, drinking spots, shopping and shows — approaches 100. From dangling out over the edge of the ocean on a harnessed skywalk adventure to enjoying the new 'Back to the Future: The Musical,' there are countless ways to enjoy time relaxing, eating, drinking or being entertained. The 248,663-gross-ton vessel arrived at Port Canaveral earlier this month with room for 5,610 passengers at double occupancy, plus 2,350 crew, to sail 7-night Eastern and Western Caribbean itineraries. The gigantic ship is separated into eight neighborhoods, each designed with specific activities and age groups in mind. First look aboard Royal Caribbean's Star of the Seas, the world's largest cruise ship Having separate, distinct areas for passengers to spend time helps the massive ship feel uncrowded and like a floating city at sea, complete with its own Central Park in the middle. 'What we've tried to do is to create really unique spaces and experiences that work for every generation and every group. There's a lot of shared moments and memories that can be had on Icon class and Star of the Seas,' said Michael Bayley, president and CEO of Royal Caribbean International. 'Every single night, there's a different dinner, a different show. Every single day, there's a different set of experiences. The totality of all of that really is expressed through the neighborhoods.' From adventurous experiences to upscale dining and laid-back pools, here's what visitors can expect on board. One neighborhood dedicated exclusively to high-adrenaline experiences is Thrill Island, which can be accessed on Deck 16. This is the central hub for the Adrenaline Peak climbing wall, the FlowRider surf simulator, the Lost Dunes mini golf course and Category 6 waterpark. The waterslides are well-suited for families with two tube slides, Pressure Drop (the first 'open freefall waterslide at sea') and Storm Chasers, a pair of racing mat slides. The Frightening Bolt drop slide was closed during the media sailing after a glass panel on the same waterslide on the Star's sister ship shattered, injuring a passenger inside. Crown's Edge presents a short but exciting experience with a ropes course and skywalk that dangle guests out over the ocean. Thrill seekers will enjoy this attraction, but others might find it's not worth the time that it takes to get suited up and wait just for a quick minute on the attraction. The FlowRider surf simulator is sure to be a hit with watersport enthusiasts of all ages and skill levels. Pools are central to many relaxing destinations on Star of the Seas. Many of the swimming spots revolve around Chill Island, which can be found on Deck 15, 16 and 17. The Royal Bay Pool is central to this neighborhood, which has plenty of hot tubs and other pools tucked away nearby. Adults will especially enjoy The Hideaway, which has an infinity pool at the aft of the ship. Soak up incredible ocean views with a drink in hand from the adjacent Hideaway Bar. Pool waiters make it possible to get a refill without ever moving. Splashaway Bay and Water's Edge are both situated in the Surfside neighborhood on Deck 7 and are suited for families who want to swim together. Altogether, the destinations help fulfill Royal's mission of catering to families while still making sure there are spaces for adults only to hang out. The Overlook, which sits forward on the ship on Deck 14, provides an indoor space to take in the natural light and panoramic views of the 82-foot-tall, 164-foot-wide, glass-and-metal AquaDome. Royal Caribbean prides itself on its entertainment options, which are abundant aboard its newest ship. The real star of the lineup is 'Back to the Future: The Musical.' In the Royal Theater, guests can laugh and gasp along with a version of the iconic movie that's been reimagined for the stage with more campy humor and suggestive scenes. The special effects are the most impressive part of this production, which wouldn't be complete without the DeLorean time machine. Sol, a new ice skating show, takes place in the Absolute Zero venue and takes viewers through a day in America from Miami to California. Skaters twirl and dance on the ice in numbers set to music, presenting a dazzling and high-energy spectacle from start to finish. The skating show is innovative, but even more so is Torque, which utilizes the pool beneath the AquaTheater and high dive platforms to wow the audience. Aerialists complete the high-flying spectacle, which finds creative ways to incorporate water throughout. Aside from the shows, guests can find plenty of evening entertainment throughout the ship. Jazz lovers will get a kick out of Lou's, a bar within the Central Park neighborhood. Dueling pianos on Deck 6 are another fan-favorite, sure to keep guests laughing and singing along all night. While many of the offerings on Star will feel familiar to Icon of the Seas, the dining options have changed. Complimentary offerings have been spruced up with Sorrento's pizza, Basecamp, the Park Cafe and Pearl Cafe, both of which offer breakfast and lunch pastries and sandwiches. El Loco Fresh is a great option for poolside Mexican food, while the AquaDome Market on Deck 15 has delectable dishes from Mediterranean to barbecue and crepes. Specialty dining venues include Chops Grille, a steakhouse, Izumi Hibachi & Sushi, Hooked Seafood and Giovanni's Italian. The most upscale and exclusive dining option is the Lincoln Park Supper Club, a formal venue with 'sultry live jazz,' upscale plates and a very limited seating capacity. Cruise passengers certainly won't go thirsty aboard Star of the Seas with upward of two dozen places to grab a drink on the ship. Each watering hole has its own flavor, from the Playmakers Sports Bar & Arcade to The Lime and Coconut, which has plenty of tropical concoctions to choose from. The Swim & Tonic swim-up bar on Deck 16 has already proven to be a fan-favorite, and the popularity of the concept means Royal guests can find more such venues at its forthcoming private destinations in the Bahamas and Mexico. The Rye and Bean is another unique offering that can be found within the AquaDome neighborhood, serving up coffee and tea-infused cocktails. When looking to indulge in sweet treats with spiked options, visit the Desserted Milkshake Bar on Deck 16. Of all the features of Star of the Seas, its art collection is among the ship's most impressive assets. Guests embarking on Deck 5 are immediately greeted by The Pearl, a massive art installation that spans two decks and features 3,600 computer-driven kinetic tiles that move with music. Every landing on the ship's staircases features a different set of art from Caribbean-based creators. The ship also features several large-scale murals and sculptures that infuse whimsy and fun into every public space. All of this combined helps create a colorful and dynamic environment for guests to enjoy their vacation. Passengers will find an array of modern accommodations at prices for every budget onboard Star of the Seas categorized by interior, outside view, balcony and suites. Many rooms have redefined the definition of a balcony with windows that slide open from the top to create an outdoor environment and offer expanded interior space when closed. Other rooms do have dedicated balconies. While many of these overlook the ocean, some balcony rooms and suites on the interior of the ship overlook Surfside or Central Park. Panoramic Ocean View rooms give guests a front-row seat to ocean views from inside the AquaDome at the front of the ship. Many rooms and suites are geared toward families, such as the Family Infinite Ocean Balcony or the Surfside Family Suites. Any room categorized as a suite grants access to dedicated areas at the top of the ship, including the exclusive Coastal Kitchen and The Grove sun deck. The most luxurious and spacious options onboard include the Ultimate Family Townhouse, which occupies three levels and includes a dry slide in the room. With only one such option on the ship, the lucky family booking this room also enjoys their own whirlpool and a game room. The two-level Royal Loft Suite is geared especially for well-to-do passengers with two bedrooms, a baby grand piano, a private Jacuzzi and panoramic views out of the two-level windows.
