Guest Experience: 10 Do's and Don'ts for a Great Guest Experience Strategy
If there's one takeaway for 2025, it's this: Guest experience isn't a department – it's a mindset. To deliver exceptional moments, guest satisfaction must sit at the core of every decision, across every department. From front desk to finance, marketing to maintenance – every action should be viewed through the lens of its impact on the guest. Want real transformation? Make guest satisfaction more than a KPI – make it a culture. If guest experience doesn't come up in every leadership meeting, you're missing the point. It's not about chasing trends or mimicking your compset. Memorable experiences are built through emotional connection, authenticity, and a deep understanding of your guests' evolving needs. Guests want more than a bed – they want a story, a feeling, a sense of belonging. When you design moments that matter, you don't just earn loyalty – you create advocates. Here are 10 guiding principles 'Do's and Don'ts' for a guest experience strategy that actually delivers: Do's to Deliver Great Guest Experiences: ✅ DO Treat guest satisfaction as a core metric. Every time you implement a new initiative (i.e. digital dining, upselling, automated check-in) don't just measure revenue or conversion. Ask: Did this enhance the guest experience? Did we move the satisfaction needle? ✅ Make guest intelligence relevant to every team. From housekeeping to F&B, tailor insights to be digestible and actionable. Empower teams to act on what they learn, not just observe from a distance. ✅ Push your vendors to be partners, not just providers. Ask them where guest intelligence is heading and how AI will shape experience. Choose partners who guide and evolve with you, not just those who tick a box. ✅ Stay plugged into product roadmaps and industry webinars. Hospitality tech moves fast. Tomorrow's winning experiences are being built today. Stay informed, curious, and engaged - it's not just sales fluff, it's your edge. ✅ Use AI for review responses, but keep it human. AI can support scale and consistency, but your brand voice still matters. Train it to reflect your tone. Tech should elevate your authenticity, not dilute it. ✅ Hire and train for emotional intelligence. Guests remember how you made them feel. EQ-driven teams read cues, respond with empathy, and create moments that stick. That's the secret sauce. ✅ Create local, brand-authentic experiences. From a curated neighborhood guide to a scent inspired by the region, guests crave stories, not sameness. These emotional touches forge deeper connections. ✅ Monitor your compset, but think beyond it. Benchmarking is important, but inspiration lives everywhere – retail, wellness, entertainment. The best ideas often come from outside hospitality. ✅ Build a communication strategy for the entire guest journey. Use email, SMS, WhatsApp, chat AI, and in-room tech to support – not interrupt. Be proactive, seamless, and human. Anticipate needs. Build trust. ✅ Make space for magic, surprise, and delight. A handwritten note. A Spotify playlist. Remembering their favorite drink. These moments create stories guests tell long after checkout. That's real hospitality. Don'ts – What to Avoid in Guest Experience:

Uncertainty Abounds: HVS Takeaways from NYU International Hospitality Investment Forum 2025
With contributions from Kannan Sankaran, Patricia Shih, Neil Flavin, Alice Sherman, and Cole Masler. The start of June always brings the industry together in New York City, and we enjoyed our time at the NYU International Hospitality Investment Forum this year. It was great to see many of you there and share our recent experiences in the industry. The conference was preceded by our webinar that provided an update of our forecast and views from HVS President – Americas, Rod Clough. You can view the webinar here. The conference brought forward a noticeable mix of contrasting viewpoints as to the state and near-term future of the industry. Some attendees were convinced that transaction activity will pick up in the next three to six months as we transition to a more balanced seller/buyer dynamic. Others expected transaction activity in major markets to be down for the duration of 2025, citing the recently instituted federal tariffs and government job cuts that have created some uncertainty in the levels of both domestic and international travel. They see these as factors that are causing capital to stay on the sidelines for the time being. Whether more positive or negative in their near-term future view, investor sentiment remained cautious in both camps. Luxury and lifestyle segments continue to outperform, and a stronger focus on acquisitions over development has taken hold. There appears to be a disconnect between media reports of low consumer confidence and the 2025 travel trends observed in several key markets. Industry participants are watching the summer travel season to see if the positive trend continues in these markets (or reverses the declines in others). These stakeholders are also keeping a close eye on inflation and unemployment levels, the two key factors that could affect discretionary spending. Group business has become a big driver of demand in the absence of the typical leisure and commercial sources. As a result, RevPAR is likely to stay stagnant or decline in many markets, as this supplemental group demand is typically lower rated than the leisure- or commercial-transient demand that is usually present. Operators appear to be showing more concern, as revenues, particularly from the leisure segment, have slowed this year. Hotel owners and operators are prioritizing operational efficiency over aggressive expansion, with technology and labor strategy emerging as key focus areas amid persistent cost pressures. These pressures include continued high labor costs (management and hourly), elevated insurance costs, brand-mandated PIP renovations, and deferred maintenance. While owners and operators are taking internal measures to control their GOP percentages, they are having to implement additional strategies to lessen the impact of increased insurance costs and taxes on EBITDA. In addition to the higher operating costs across the board, owners are feeling unsettled regarding the uncontrollable expenses. The cost of supplies is anticipated to be affected at some level by tariffs and potential trade deals. Development deals are generally more paused than outright canceled. Key money provided by brands has affected developer decisions, though many brands have elected not to engage in a bidding war, instead standing firm on their long-term value proposition. Representatives for all brands reported that they are extremely busy and appear optimistic; however, privately, they revealed that they are seeing a slowdown, albeit small, and deal closings in multiple segments have slowed due to owner hesitancy resulting from the economic conditions. Unless a project is located in a high-demand, impactful market, some owners are taking a 'wait and see' approach. Overall, the sentiment and outlook were generally neutral, with optimism from some balanced by caution from others. "Uncertainty" was the word that was used most often. There is currently a lot of macroeconomic-related noise. The prevalent tone was 'let's wait a few months,' both to gain some clarity once the tariff situation plays out and to see the final version of the One Big Beautiful Bill that may be passed by the U.S. Senate. The Ultimate Guide to Sous Vide Equipment [for Professional Chefs]
A high-quality sous vide machine is the foundation of precise, reliable sous-vide cooking in any professional kitchen. Whether you're managing a high-volume restaurant or refining your approach to modern gastronomy, selecting the right sous vide equipment is key to achieving consistent texture, precise doneness, and efficient workflow. Consistency Comes with Precision Temperature Control One of the defining advantages of sous-vide is its ability to maintain precise temperatures throughout the cooking process. Even minor fluctuations can affect food texture, so investing in a machine with ± 0.1 °C accuracy ensures optimal results every time. For proteins like steak, chicken, or seafood, this level of control guarantees perfectly tender textures without risk of overcooking. When choosing a sous vide machine, chefs should evaluate several factors to match their kitchen's needs: Wattage: a higher wattage machine heats water faster and maintains stable temperatures, which is key in high-volume kitchens. Look for models between 1000W and 2000W for professional use. Size and capacity: consider the volume of food your kitchen handles. Compact models work for small-scale operations, while larger units accommodate batch cooking. Portability and design: some machines, like the Breville Joule Turbo, are sleek and lightweight, making them ideal for amateurs who require flexibility. For chefs, avoid too light machines and go for more stability, with for example the Julabo Fusion Chef. Durability: stainless steel components and high-grade plastics extend the lifespan of your machine, ensuring it withstands daily professional use. Immersion Circulators Vs. Water Baths Choosing between an immersion circulator and a dedicated water bath depends on your kitchen's scale and workflow. Immersion circulators: these compact devices attach to containers or stockpots, making them highly versatile and space-efficient. They are ideal for kitchens that need flexibility and portability. As noted by Good Housekeeping, Sous vide cookers attach to the side of whatever container you plan to use via a clamp, generally a clip-on or screw-on style. One isn't better than the other, but the screw-on clamps do require a little more manual effort. Source: EHL Water baths: designed for larger-scale operations, these all-in-one units provide uniform heat distribution and eliminate the need for separate containers. They are ideal for batch cooking in high-output kitchens where consistency is non-negotiable. Top-Rated Professional Sous Vide Machines For chefs looking to invest in premium sous vide equipment, these industry-trusted machines deliver exceptional performance and reliability: Breville Joule Turbo: known for its compact design, app integration, and rapid heating, making it an excellent choice for amateurs while chefs will prefer the Julabo Fusion Chef for their precision-driven kitchens. PolyScience Professional Chef Series: a staple in high-end restaurant kitchens, this machine offers commercial-grade durability and unparalleled temperature accuracy. Selecting the right sous vide machine and sous vide equipment is a decision that directly impacts efficiency, precision, and consistency in the kitchen. Whether opting for an immersion circulator or a water bath, chefs should consider temperature control accuracy, build quality, and workflow integration to find the best fit for their needs. Essential Equipment A high-performance sous vide machine is just the beginning. Having the right sous vide equipment ensures efficiency, consistency, and precision in every dish. From vacuum sealers to insulated containers, these accessories optimize temperature stability, water circulation, and food safety, making them essential tools for professional chefs. Vacuum Sealers and High-Quality Vacuum Bags Airtight sealing is necessary to successful sous-vide cooking. A strong vacuum seal prevents leaks, enhances flavor infusion, and ensures even heat transfer, making it a key step in the cooking process. Chamber vacuum sealers: ideal for professional kitchens, these sealers remove air efficiently, sealing liquids and marinades without risk of spillage. External vacuum sealers: more compact and budget-friendly, but less effective for sealing high-moisture foods. Vacuum bags: high-quality, BPA-free bags withstand extended cooking times at precise temperatures without compromising food integrity. Most important, choose bags suitable for vacuum cooking and not those for storage, which are less resistant to temperature. Source: EHL For chefs working with delicate proteins or long cooking durations, investing in a premium vacuum sealer is essential to maintaining food quality and safety. Containers and Racks The efficiency of an immersion circulator depends not only on its power and precision, but also on the container and accessories used. Proper water circulation ensures stable temperatures and even heat distribution, preventing cold spots that can lead to uneven cooking. Selecting the right sous-vide container and rack system helps maximize the performance of your immersion circulator, ensuring consistent results in every batch. Cambro containers: these are designed for heat retention and circulation efficiency. Standard pots may work for short sous-vide sessions, but they lose heat quickly and can limit water flow. Cambro containers, designed for durability and insulation, help maintain stable temperatures over long cooking times, making them ideal for professional kitchens. Their wide openings provide enough space for batch cooking, ensuring the circulator can move water freely around every bag. As Serious Eats explains, A large container, like a Cambro, Dutch oven, or stockpot, is essential for maintaining water levels and ensuring even cooking. Stainless steel racks: they keep bags properly spaced for uninterrupted flow. When multiple vacuum-sealed bags are placed in a container, they can clump together, blocking water movement and causing uneven cooking. Stainless steel racks prevent this issue by keeping bags upright and evenly spaced, allowing water to circulate freely around each portion. This is especially important in high-volume kitchens, where multiple proteins or vegetables must be cooked simultaneously while maintaining precise doneness. Insulation Tools Extended sous-vide cooking times, especially for slow-cooked proteins like short ribs or brisket, can lead to evaporation, heat loss, and fluctuating water levels. Insulation tools help conserve energy and maintain consistency throughout the process. Sous-vide balls: floating plastic balls form an insulating layer over the water surface, reducing evaporation and helping maintain stable temperatures. While they are useful for water baths used in short-term service, they are less effective for long cooking durations, where a custom-fit lid provides better insulation and prevents significant water loss. Source: EHL Custom-fit lids: designed for Cambro containers or stockpots, these lids prevent water loss and temperature fluctuations, ensuring stable conditions during long cooking periods. Mastering sous-vide cooking goes beyond choosing the right sous vide machine. It requires the proper supporting equipment to maintain precision, efficiency, and food safety. From vacuum sealers and containers to insulation tools that conserve heat, each accessory plays a role in optimizing sous-vide workflows for professional kitchens. Maintenance Guidance To ensure a sous vide machine performs at its best over time, regular cleaning and maintenance are essential. Proper care prevents mineral buildup, overheating issues, and performance inconsistencies, extending the lifespan of your sous vide equipment. Whether you're using an immersion circulator or a water bath, following these key maintenance practices will keep your machine running smoothly. Daily Cleaning: Wipe Down After Each Use Routine cleaning is the first step in maintaining a sous vide machine's efficiency. After each use, wipe down the device with a soft, damp cloth to remove any food residue, condensation, or oil buildup. Immersion circulators: ensure the heating coil and water intake are free from debris. ensure the heating coil and water intake are free from debris. Water baths: drain and rinse the container to prevent grease or food particles from accumulating. This simple step keeps your machine in top working condition and prevents any lingering odors or contaminants. Periodic Descaling: Remove Mineral Buildup If your kitchen uses hard water, mineral deposits can form inside the machine over time, affecting performance and heat distribution. Regular descaling ensures consistent temperature control and prevents long-term damage. Use a vinegar-water solution, with 1% of vinegar, to break down calcium and limescale buildup. Run the machine with the solution at normal operating temperature for about 30 minutes, then rinse thoroughly with fresh water. Source: EHL As Top Sous Vide advises, Descale regularly, watch for mineral buildup, which varies depending on use frequency and water hardness. Monitoring the machine's performance and descaling every few weeks will keep it operating at peak efficiency. Regular maintenance is essential for getting the most out of your sous vide machine. By cleaning daily, descaling periodically, and taking preventive measures, chefs can ensure precise cooking performance, extended machine lifespan, and reliable operation in high-volume kitchens. Investing a few minutes in routine care saves time and money in the long run. Advanced Features for Professional Equipment For professional kitchens handling high volumes and demanding service hours, investing in commercial-grade sous vide equipment ensures efficiency, precision, and reliability. Advanced features like smart connectivity, high-capacity cooking, and built-in safety measures make a difference in workflow optimization and quality control. Cost vs. performance: finding the best value in sous vide machines Investing in a sous vide machine for a professional kitchen requires a balance between performance, durability, and long-term cost-effectiveness. While high-end models offer advanced features and greater precision, budget-friendly options may still meet the needs of smaller operations. The key is to find a machine that delivers consistent results while optimizing energy efficiency and durability. Balancing Power and Energy Efficiency A higher wattage sous vide machine heats water more quickly and maintains stable temperatures, essential for high-volume kitchens. However, energy efficiency matters too, as once the target temperature is reached, maintaining it requires minimal power, helping to control operational costs. 1000W to 2000W machines provide fast heat-up times while maintaining energy efficiency. Models with auto-adjusting power modes can reduce electricity consumption during long cooking periods. For restaurants that run sous-vide equipment continuously, choosing a model with energy-saving features ensures lower operating costs without compromising performance. Comparing Price Points: Balancing Features with Budget The price range of sous vide machines varies widely, depending on precision, capacity, and build quality. Comparing models based on cost vs. functionality helps chefs and restaurant owners find the best fit for their needs. For restaurants relying on sous-vide cooking daily, investing in a higher-end model provides long-term reliability and precision, whereas budget-friendly alternatives may work for occasional use or testing new techniques. Durability: Why Stainless Steel is a Smart Investment Commercial kitchens demand equipment that can withstand heavy use. While some entry-level sous vide machines use plastic components to reduce costs, stainless steel construction offers greater durability, heat resistance, and longevity. Stainless steel prevents warping or cracking, especially under continuous heat exposure. Machines with reinforced clamps and sturdy housing last longer, reducing replacement costs. A high-quality stainless steel sous vide machine may have a higher upfront cost, but it saves money over time by reducing wear and tear issues. Finding the best sous vide machine for your kitchen comes down to balancing power, efficiency, and durability with budget considerations. For chefs running a high-volume operation, a higher-wattage, stainless steel model offers a strong return on investment, while those looking for an entry-level solution may opt for a more affordable alternative. The key is to choose equipment that meets the demands of your kitchen without unnecessary costs. Selecting the Best Sous Vide Machine Professional kitchens aim to enhance precision, streamline operations, and improve cost efficiency.
