The reason Meet Boston can even do this is because the not-for-profit organization has a gusher of money flowing from a three-year-old surcharge on hotel rooms in Boston and Cambridge that generates tens of millions of dollars a year to boost tourism.

So what's the best way to spend that money?
Some would like the agency to invest more in homegrown grassroots festivals and programming to develop the next wave of signature events that draw visitors from all over New England and beyond. Think the next generation of the Boston Pops Fireworks Spectacular, Boston Calling, and First Night.

Morris was inspired by Philadelphia's
BAMS Fest drawing tens of thousands of attendees over the years, Morris felt like it was the right time to take things to the next level.
Weeks after the Globe began asking questions about Meet Boston's funding formula, Morris learned she would be receiving $100,000.
It's not $450,000, but she considers it a good start.
'I initially was like, yes!' Morris said. 'So the investment is growing, but I also had mixed emotions regarding what more [money] could do.'

That's a huge step up. Before the new levy, Meet Boston — formerly known as the Greater Boston Convention & Visitors Bureau —
The money has enabled Meet Boston to more than double the size of its staff to about 65 people, spend more on marketing, launch a grant-making programming that gives out roughly $4 million a year, and bankroll initiatives like bringing the Michelin Guide to Boston.
But the fact that Meet Boston has money to give out isn't widely known. Some organizations, like the
JerkFest is an annual celebration of Caribbean cooking held each year at the Harvard Athletic Complex in Allston.

'I had no idea,' said Susan Chinsen, who works at ArtsEmerson and founded the festival in 2008. The process, she added, felt a 'little exclusive.'
Now that she knows the grants exist, Chinsen plans to seek $50,000. That money would allow her to fly in more filmmakers and actors to promote their films at the festival, which draws a few thousand attendees every fall.
She thinks more out-of-state visitors would come if she could partner with hotels to offer weekend packages.
Even on a shoe-string budget, Chinsen has been able to get Hollywood talent to come to Boston, including George Takei,
of Star Trek fame, and Oscar-winning director Ang Lee ('Brokeback Mountain' and 'Life of Pi').

Carole Copeland Thomas, a longtime Meet Boston board member who chairs the Multicultural Committee, acknowledged the organization can do a better job with outreach. Over the past two years, Meet Boston has spent nearly $11 million supporting events, and of that, about 25 percent has gone toward multicultural events.
'Clearly, there are new opportunities to let more groups in our city know who we are,' Copeland Thomas said. 'Like any dynamic organization, Meet Boston always strives to represent the full potential of our destination by engaging with diverse communities, events, and organizations that help to drive the travel economy.'
Typically, money from the special tourism tax district is supposed to go toward large-scale events that drive overnight stays, especially during periods when there aren't a lot of tourists, like wintertime. Community events don't tend to generate hotel nights.
I get why hotels and Meet Boston — its board is stacked with hotel executives — favor visitors who can stay the weekend here, but there's an inherent bias in that strategy, one that gravitates toward established events.
Meet Boston has the power to change that dynamic, and it has sometimes done so, putting six-figure resources into

When I talked to Meet Boston chief executive Martha Sheridan about the bureau's grants, she said the strategy is evolving.
'We don't have unlimited funds,' Sheridan said. 'We are going to have to really figure out a way to get more bang for the buck if you will, and make sure that we can spread the wealth enough but not so much that our investments aren't meaningful. It's a balancing act.'

The team behind one of Sonoma County's best restaurants will soon open a new, more approachable spot in Petaluma. Named Bijou — 'jewel,' in French — it is the latest from Table Culture Provisions owners Stéphane Saint Louis, Steven Vargas and Marta Saint Louis. At 190 Kentucky St. starting Friday, June 13, diners will find seasonal dishes applying French technique to the North Bay's wealth of seasonal produce, but at a lower price than the group's original restaurant. Table Culture Provisions is beloved by visitors and locals, who often refer to it simply as TCP. But with a tasting menu that runs in the triple digits and can only accommodate around a 10 tables, it's not easily accessible. 'That is a barrier for the community to come in every day, or once a week,' said Saint Louis, who will run the kitchen at the new restaurant while Vargas helms TCP. 'At Bijou, you'll have food at the quality and standard of what we offer at Table Culture Provisions, just more affordable and approachable.' (The restaurant did not provide prices for dishes.) Snacks and shared dishes will include tempura vegetable batons with a green goddess drizzle and sprinkled with malt vinegar powder, and a petit croque monsieur with shaved truffles on top. The Cowgirl x D. Fatti is a rosemary boule from local bakery Della Fattoria hollowed out and stuffed with Cowgirl Creamery's funky-rich Red Hawk cheese that's topped with roasted garlic and a drizzle of honey. The bread's interior is cut into stubby sticks, then fried, the better to dip into the soft cheese. Larger entrees will include a 10-ounce rib eye from San Rafael butchers Flannery Beef in a black peppercorn sauce, cut into thin slivers that give it a classic French bistro feel. A small side of bone marrow truffle fries and a small salad with shaved Parmesan come along with the cut. A Japanese sea bream will be served with a vegetable ragout and a pistachio caper sauce. Hand-made stuffed pastas will rotate frequently, starting with caramelle, pasta bundles with twisted ends akin to a wrapped caramel. These come stuffed with Liberty duck legs cured in a cumin-fennel blend then confited overnight. Staff baste the caramelle with a jus made from duck stock and duck bones that's spiked with a hit of Port. A zigzag of rich crème fraîche and pea tendrils accent the dish. 'I'm just a fan of stuffed pastas and I take pride in making these,' Saint Louis said. He's already looking forward to future pastas such as a tortellini filled with hearty beef cheeks during the colder months of the year, and agnolotti stuffed with locally caught Dungeness crab when the next season begins. Dessert at Bijou from Table Culture Provisions pastry chef Sylvain Parsy includes a mille feuille, the classic French dessert of layered puff pastry and vanilla cream, that's textured with burnt caramel and a ribbon of creme anglaise. A flight of petit fours, assorted bite-sized sweets, will come in triplets or quartets paired with coffee or tea. Once summer strawberries arrive at the restaurant they will go into a tart topped with rhubarb sorbet. Until then, there's a sundae that's topped with shaved almond, cacao nib and a pour of fresh, hot chocolate sauce. Otello Tiano, who led the bar program at San Francisco's Lazy Bear, consulted on Bijou's drinks. The cocktail list will include six original cocktails and six classics with a French inclination, using ingredients like Chartreuse and pastis, a liqueur flavored with anise. Wines will be diverse, with various styles and origins, but with a focus on California. Bijou took over the former home of southern restaurant Easy Rider, known for its fried chicken and mac-and-cheese, which closed in December. The space can accommodate 55 seated diners, making a dinner reservation or a walk-in a lot more feasible than at TCP. Plans are to open every day, except Wednesdays, for dinner service, with regular Sunday brunch. A daytime window, Café Bijou, will offer pastries, sandwiches, salads and a soup du jour, plus coffee using beans from local roaster Petaluma Coffee & Tea Co. Saint Louis described the interior as feeling like 'modern comfort,' with its whitewashed walls, concrete bar and minimalist tables. Exposed brick supports and warm light from metal frame chandeliers help the building a cozier, he said. 'It's my jewel box for the community.'

A Subtle Change Is Reshaping Winemaking In Napa Valley

Alexander Rubin Photography In a converted 19th-century stone barn in northern Napa Valley, a white wine is taking shape that upends more than it preserves. It is 87% sauvignon blanc, 13% sémillon, fermented in concrete, aged 14 months on lees and filtered for stability. Its structure is saline, its edges softened by time and skin contact. It is labeled simply: Sylviane Estate Blanc. 'I almost never filter anything, including white wines,' says Adam Casto during a tasting session at Ehlers Estate in St. Helena, California. 'But I didn't want the first white wine release to have any risk of re-fermentation in the bottle. So I filtered this one.' Casto joined Ehlers Estate as head winemaker in 2023 and this upcoming harvest will be his third with the winery. He was hired not to maintain the house style, but to rebuild it. His approach favors slow fermentation, concrete vessels and extended lees aging. 'The sémillon brings a salty, sea spray character, especially from the crystal lees aging,' he says. 'The concrete adds a little more body.' The Sylviane is pressed after 24 hours of skin contact. It rests in a mix of neutral and new French oak, but not to impart flavor. 'That contact, combined with the concrete, helps turn the phenolic bitterness into a kind of structure,' Casto explains. The result is not a white wine modeled after tradition but something else: an engineered response to site and conditions. 'This was very much inspired by white wines I tasted in Hungary in 2019,' he says. 'They paired with food in a way that reminded me of red wines—so structured, so food-friendly.' This technical approach is now visible across the winery's small portfolio. The 2022 Portrait—a red blend of cabernet sauvignon, cabernet franc, merlot and petit verdot—was fermented in stainless steel and aged 21 months in French oak. So was the 2022 cabernet franc. But labeling now receives less attention than how each wine is built. Casto has begun stripping varietal names from the front of bottles, starting with cabernet franc. 'It's like killing off a main character in a story,' he says. 'It opens up new possibilities.' This philosophy now guides not only how the wines are made but how they are named and presented. The new flagship red, for instance, was initially named 'La Lande,' in honor of the president of the Leducq Foundation, which owns the estate. That plan was abandoned when the team learned the name was under copyright in Spain. They have since planned to rename the wine 'Perdrix,' the French term for partridge. It is traditionally associated with wine through the term 'œil de perdrix,' used to describe the pale, coppery hue of certain rosés. The word also evokes Burgundian traditions, lending a classic tone to wine naming. Perdrix blends cabernet franc and merlot, but its composition is only part of the point. The wine is designed to represent the entire estate, not a single variety. 'The wine becomes the portrait of the estate,' Casto says. 'Eventually, I'd love for this to be our flagship wine—our benchmark.' Future vineyard blocks will be planted with this in mind. Casto is training 200 vines on a high-wire system meant to handle rising temperatures. Half the estate—roughly 21 acres—is under evaluation for replanting. 'The idea is to plant a block with the intention that it will always be a blend,' he says. 'The composition of the blend will reflect the distribution of cultivars planted. And that can shift over time.' The pressures shaping Casto's work are not only philosophical. In 2024, California's wine grape harvest fell to its lowest volume in two decades, with a total crush of just 2.8 million tons—a 23% drop from the previous year. Napa Valley alone saw nearly 40 days above 100 degrees Fahrenheit during the growing season, a fourfold increase over 2023. At the same time, expectations for sustainability have become standard. More than 90% of California's wine now comes from Certified California Sustainable wineries, and over 65% of the state's vineyard acreage is certified under environmental programs. For Casto, these factors are inseparable from how wine is made. 'It has to work on multiple levels,' he says. 'It can't just solve one problem.' Quarterly reports will document the process. Soil pits, trellising design, canopy orientation and clonal selection will be shared with club members. 'My opinions will change. My mistakes will accumulate,' he says. 'That's part of it.' At Ehlers, he produces just 100 cases of Perdrix right now. But it serves as a test model. The smaller size offers control. It allows for extended aging, regular evaluation and immediate course correction. It avoids the forced consistency required in wines that must be replicated at scale. 'We need to do more, do it faster, and do it better,' Casto says. The goal is not rarity. It is refinement. Casto says he doesn't view winemaking as a search for perfection or permanence. Instead, it is process-driven, dependent on restraint, awareness and time. 'When someone asks why I take photos, I say, because I'm afraid I won't see it otherwise,' he says. 'That's how I feel about winemaking too.'
