
The begum's beady eyes: Madhur Jaffrey on filming Heat and Dust, 1983
Madhur Jaffrey, 'the lovely lady who teaches us Indian cookery on television and in books,' was a Rada-trained actor before becoming a 'household name', writes Janet Watts in the Observer Magazine on 9 January 1983. Now she is resuming her acting career in James Ivory's latest film, Heat and Dust. She plays the wicked old Begum, manipulative mother to the Nawab (played by Shashi Kapoor)who makes 'a dishonest woman of a ravishing English rose' (played by Greta Scacchi).
'I was always a rebel,' she tells Watts from her New York home. Born into an 'upper-upper-middle-class' family, her matriarch grandmother ruled the women in the Delhi household 'like a boss'. Women and, Jaffrey later realised, men too, were oppressed. 'Everything in her birthright,' writes Watts, 'gave her claustrophobia.'
Her father called her acting a 'hobby', she called it 'the most wonderful escape', even if 'I was short and thin and had a big nose.' After Rada, she went to America, married the actor Saeed Jaffrey and had three daughters. The couple introduced James Ivory to Ismail Merchant and Jaffrey was cast in their 1965 film Shakespeare Wallah. She worried about not looking right. 'I still do!' she adds. She won Best Actress at the 1965 Berlin Film Festival.
Afterwards, she asked her mother to send her the 'now-famous letters' full of Indian recipes, got divorced and began writing cookery books. Heat and Dust takes her back, not only to her acting days, but to a past of homegrown oppression and western colonialism.
She feels sympathy for the British Raj that has gone, the tourists who are still coming. Jaffrey clarifies: 'India can suck out all your starch, your crisp European consciousness, and everything you hold dear can seem to slip out into this vast Indian vastness.'
Not for Jaffrey, though. 'I'm part of the vastness,' she enthuses, 'I'm its product. It's taking nothing away from me; because I am it.' She feels nourished by it, says Watts, as readers do by her personal tastes of India.'

In early March that year, MK Dons set a British record of scoring a goal against Gillingham to cap a move which comprised of 56 consecutive passes. "But we had five defenders, we had two full backs playing wing back and we couldn't finish it off so the balance was a bit skewed that's what I've learned." He also enjoyed a 25-game unbeaten run in the English Championship with Southampton. Chelsea are close to sealing a £30million deal to sign Liam Delap from Ipswich Town, with the striker set to be offered a perk with Jadon Sancho's loan ending as he heads back to Manchester United Liam Delap could be set to take the number 19 shirt at Chelsea, as Jadon Sancho prepares to return to Manchester United. Chelsea are close to securing the signing of the Ipswich Town forward after triggering his £30million release clause. The 22-year-old striker is now poised to make the switch to Stamford Bridge, having been offered a six-year contract following a medical earlier this week. Despite Ipswich's relegation to the Championship, Delap made a significant impact in his first full Premier League season, scoring 12 times in 37 league appearances while wearing the number 19 shirt. With Sancho returning to his parent club, the shirt is now available for Delap, should he choose to take it. Sancho has worn the number since his loan move to Chelsea last summer. Delap also wore the number 48 shirt during his time at Manchester City, a number that is currently unassigned at Chelsea. However, the prospect of wearing the same number he wore while making his mark in the Premier League and for England may be too enticing to resist, reports Football London. Sancho, 25, is expected to depart west London when his contract expires at the end of June, resulting in a £5m loss for Chelsea. It's understood that a permanent move for Sancho fell through after personal terms could not be agreed between the club and the former Borussia Dortmund star. Chelsea will now be hit with a whopping £5m penalty fee to United after backing out of the agreed commitment to sign the winger for £25m. Sancho found the back of the net five times and set up another ten goals in 42 matches for Chelsea this season. Despite his inconsistent time under Enzo Maresca, he did score the third goal in Chelsea's 4-1 win over Real Betis in the UEFA Conference League final. The Italian manager sang Sancho's praises after the game. "Jadon Sancho, if we finished fourth, it's because of Jadon, if we won tonight it's because of Jadon," Maresca said. "Everyone is up and down a little bit, that's part of the game." After making 83 appearances following his transfer from Dortmund to Man United in summer 2021 for a mammoth £73m – and not always seeing eye to eye with then-boss Erik ten Hag – Sancho seems set for an Old Trafford return to potentially work under Ruben Amorim. Forget the elevated chains, the Michelin magnets, the Desi pubs and the Indian-Irish fusion joints (alright, there's only one of those). Trishna in Marylebone pre-dates and outshines them all, a graceful doyenne, gliding across the hectic ballroom of London's high-end Indian restaurant scene. There's nothing particularly flash about Trishna's baby-blue panelling and simple wooden furniture. It doesn't scream 'design consultancy has been here' or 'immersive dining concept'. Instead the vibe is straightforward and friendly. This is a 'normal' neighbourhood restaurant that achieved (well earned) city-wide fame, jacked up the prices (understandably) and lived happily ever after. It's your talented and hard-working grandmother, happily remarried to a millionaire. If you can accept the cost, Trishna will deliver every time The considerable cost of eating at Trishna is reflected in the food's quality. Everything bar a few starters is top notch, the kind of delicate-yet-punchy south Asian cuisine you'd be mad to try replicating at home. A perfect example of a 'Trish dish' is the bream: jade-like slices of fish, marinated with coriander and green chilli, served with a floral tomato salad. Not only is it as eye-catching as a David Hockney still life, the bream has a high-wire balance of flavours, cooked with expert precision in the tandoor. Another signature offering is the legendary aloo chat, a lip-smacking lattice of chutney and sev, crowning a chickpea and potato nest. It's almost as if the folks at Trishna saw Gymkhana's famous aloo chaat, had a taste, rolled up their sleeves and said 'hold my (Cobra) beer'. The hits don't end there. Pray silence for Trishna's Dorset brown crab - a dish that staff bring out with a silent-yet-discernible pride, like a Soviet leader on parade day, watching his troops roll out a nuclear missile. It's a nourishing bowl of chive-and-chilli-topped crab meat, imbued with a truly shocking (in a good way) depth of flavour. Not only the best thing we ate at Trishna, it's one of the best things we've eaten all year. Hot on its heels in the tasty stakes was the beef shortrib, a hockey puck of stewed and shredded meat, atop a chickpea dosa raft floating on a pulsating bed of coconut and shallots. Meanwhile, the Goan prawn biriyani - served with a cute pink-peppercorn raita - is a delicate delight, the shining antithesis of claggy, heavy curried rice dishes the world over. Some of the starters are comparatively one-note. And the desserts, as you'd expect, aren't really the point. But if you can accept the cost, Trishna will deliver every time. The vibe Quietly confident south Indian fine-dining establishment, masquerading as a 'normal restaurant'. The food South Indian cooking that packs flavour and nuance into every dish.
