A perfect boiled egg in 32 minutes? Don't let science ruin the joyful imperfection of home cooking

To make pearls of balsamic vinegar, first chill a good amount of olive oil in a tall glass. While it waits in the fridge, in a small saucepan over a medium heat, bring the vinegar and agar-agar to the beginning of a boil – just until the agar-agar has dissolved. Let this mixture cool, remove the oil from the fridge, and use a pipette to drop balls of the agar-stiffened vinegar into the oil to form the pearls. Drain into another container using a small sieve to catch the pearls. Reserve the oil for another use.
I remember making these, my first and only foray into what is known as 'molecular gastronomy', in 2013. It was already a bit passe at that time, but the science experiment aspect of creating a simple acidic garnish for a chocolate and strawberry cupcake that Valentine's Day was undoubtedly fun. The lesson influenced how I'd go on to use agar-agar, a seaweed-derived vegan gelatin, in dishes like panna cotta or flan, but I never made the pearls again. They were a novelty, and now I have a fond memory of cosplaying as Ferran Adrià, a Spanish chef who popularised these sorts of processes through the restaurant El Bulli.
The pearls came to mind while reading about an experiment conducted by Ernesto Di Maio at the University of Naples in Italy. His team found that if you swap an egg between boiling water and 30C water every two minutes for eight cycles, totalling 32 minutes, the egg will be perfectly evenly cooked between white and yolk. New Scientist reported on this finding rather credulously, as though home cooks are truly perplexed about how to boil an egg to their liking.
Rather than cooking science that's about making something pretty and fun, like the vinegar pearls, this experiment was about making an instance of everyday cooking labour intensive, water-wasteful and time-consuming. I could see someone doing this experiment once, the way I made the vinegar pearls, and then going back to their tried-and-true method. (For what it's worth, dropping eggs into already boiling water and letting them cook for seven minutes is how I get my preferred texture of jammy orange yolk.)
In the long history of the relationship between cooking and chemistry, there's often been this kind of push-pull between what is actually going to enliven and enlighten a home cook, and a pursuit of perfection – whether in technique and taste or in nutrition. Indeed, cuisine in the US throughout the early part of the 20th century was defined by a divide between gourmands, who were interested in food and wine for the pleasure it gave them, and the 'scientific cooks', who were obsessed with eating as a means of ingesting the proper amount of vitamins, minerals and calories without any interest in the joys of the table.
'Food science' differs from the restaurant-driven style of molecular cooking because it's usually focused on nutrition, flavour chemistry and shelf stability to the most common ends of creating industrial products. Molecular gastronomy, a term coined in 1988 by Hungarian-born British physicist Nicholas Kurti and French physical chemist Hervé This, has been focused on culinary applications of scientific principles and processes: sous-vide cooking a steak by sealing it in a vacuum bag and cooking it slowly in a water bath; using liquid nitrogen to create a carrot foam; or transforming the texture of olive juice through spherification. These techniques were popularised through El Bulli, Wylie Dufresne's New York City restaurant wd~50, and Grant Achatz's Chicago restaurant Alinea – and the latter is the only one of these still open and wowing diners with apple candy filled with helium that arrives to the table in the form of a balloon. (I've eaten there, and it inspired me to sous-vide slices of rutabaga – swede – again, just once.)
Rather than these kinds of perhaps gimmicky tasting-menu ideas, 'innovation' in food these days tends to come in forms that are focused on an ideally sustainable future: plant-based faux meats; chef-driven proprietary seed companies like Dan Barber's Row 7; or strawberries grown indoors year-round by the company Oishii. These are more in line with what food science has always been about, which is precision, uniformity and replication: products that can scale and turn a profit, but retain the culinary considerations learned from molecular gastronomy.
If there is to be a scientific touch to food, it's come to be understood that there should be an element of that higher-minded gastronomic purpose afoot in order to convince people of its worth.
While it's always been fun to mix scientific approaches with home cooking, what worries me about a focus on 'innovation' for the sake of a 'perfect' squash or strawberry, a profit-driven soy patty, or new techniques for simple things like boiling eggs is that they could have the effect of deterring people from cooking. Learning how to pick fruit or vegetables at the market and getting into the kitchen to cook them will always be acts of trial and error, and they should be fun.
Cooking is an experiment, every day, in how water, oil, salt and so many other elements can come together for the purpose of making something delicious. But unlike a laboratory or a factory, the result doesn't need to be the same every single time, or held to a precise scientific standard. Weather, moods and attention all influence how a human cooks – and there's a lot to enjoy in the imperfections.

Masses of a type of seaweed named sargassum have swamped a broad stretch of coast from Puerto Rico to Guyana, affecting locations across the West Atlantic, Caribbean Sea, and Gulf of Mexico. ‌ La Vanguardia, a Spanish newspaper, reported that scientists observed a record amount of the troublesome macroalgae in May, but the situation could deteriorate even further this month. ‌ The seaweed invasion is reportedly hampering tourism industries in Mexico and Colombia. Meanwhile, anti-seaweed defences have been activated in the Dominican Republic, whilst the popular holiday destination of Barbados faces dips in hotel reservations. Argentina's Infobae has highlighted that this expansive belt of sargassum may extend for hundreds or even thousands of miles. Satellite imagery suggests it's drifting through the Caribbean and potentially heading for the US' southern coastline. Researchers at the University of South Florida's Optical Oceanography Laboratory warned of a whopping 150% increase in Caribbean levels, uncovering a shocking 40 million metric tonnes in the Atlantic, Caribbean Sea, and Gulf of Mexico. It also emits an unpleasant smell (likened to rotten eggs) when it rots, which is reportedly such an issue that it's led to school closures in Martinique. Yet, scientists don't know why the sargassum levels have doubled to these record-breaking levels. However, experts have suggested that changes in rainfall, wind, currents, and warming waters may impact its proliferation. ‌ Brian Barnes, an assistant research professor at the University of South Florida, remarked: "The peaks seem to be getting bigger year after year." Yet, the reasons behind this dramatic increase remain a puzzle. He confessed: "It's the million-dollar question. I don't have a satisfactory answer." ‌ The National Oceanic and Atmospheric Administration (NOAA) describes sargassum as a type of large brown seaweed that floats in "island-like" masses. It also has structures known as pneumatocysts. Pneumatocysts, which provide buoyancy and allow the seaweed to float on the sea, look similar to berries and contain gas, primarily oxygen. Sometimes spanning miles, sargassum provides sustenance and breeding grounds for various marine life, including birds, sea turtles, fish, shrimp, and crabs. Some creatures, like the sargassum fish, even spend their entire existence within this floating habitat. ‌ Moreover, the NOAA notes that sargassum serves as a nursery for several commercially significant fish species such as amberjacks, mahi mahi, and jacks. Brian conceded that large amounts of seaweed on the open water is conducive with a "healthy and happy ecosystem", but it can also prove to be an issue for ecosystems when it gathers on the shore. He further explained that it can pose a problem for coral reefs, as it obstructs the sunlight they need to survive. Additionally, when it washes up on shore, the creatures living in it either perish or become easy prey for birds.

Los Abuelos gets its name from two human-like sculptures of an "ancestral couple" found there. These figures "could be linked to ancient ritual practices of ancestor worship", the ministry added. The city is likely to have been "one of the most ancient and important ceremonial centres" of Mayan civilisation. Monuments unearthed at the site have been dated to the Middle Preclassic period of 800-500 BC, while the city itself "presents remarkable architectural planning". The city covers an area of around six square miles and is found in Guatemala's northern Petén department. Researchers also found a 108 foot high pyramid nearby that had Preclassic murals and "a unique canal system". "Archaeological investigations have included the active participation of Guatemalan and international professionals, with the support of the Comenius University in Bratislava, Slovakia," a ministry spokesperson said. "This joint effort has allowed significant advancements in the exploration, conservation, and dissemination of the Mayan legacy." Three sites - Los Abuelos, Petnal and Cambraya - were unearthed through the country's ongoing Uaxactún Regional Archaeological Project. Rediscovering the Lost Maya City of Ocomtún (1) "These sites form a previously unknown urban triangle," a ministry spokesperson added. "These findings allow us to rethink the understanding of the ceremonial and socio-political organisation of pre-Hispanic Peten." Mayan civilisation rose around 2000 BC and reached its peak between 400 and 900 AD. It spanned across present-day southern Mexico and Guatemala, along with some parts of Belize, El Salvador and Honduras. The amazing new discovery comes after a 1,000-year-old altar from Mexico's ancient Teotihuacán culture was unearthed in April. It was painted with a mural of red, yellow, and blue - which are colours associated with that culture. Researchers in Spain say they have found evidence that Neanderthals were capable of creating art — challenging the idea that art began with the modern humans who succeeded them. The canvas was a quartz-rich granite pebble that was excavated from a rock shelter in central Spain in 2022, in a layer dating back between 42,000 and 43,000 years. Measuring more than 8 inches long, the pebble has curves and indentations that make it resemble a human face. In the middle of its surface is a single red dot, right where a nose would be, researchers said in a study published Saturday in the journal Archaeological and Anthropological Sciences, adding that it appeared to be a non-utilitarian object rather than a tool. 'From the outset we could tell it was peculiar,' said David Álvarez-Alonso, lead author of the paper. Analysis showed that the red dot consisted of ochre, a natural earth pigment. The next step was to determine how it got there. While not visible to the naked eye, the red dot was confirmed by Spanish forensic police to be a fingerprint, leaving 'no doubt' that it was applied to the stone intentionally by a finger dipped in ochre, Álvarez-Alonso said in an email on Tuesday. The researchers postulate that the Neanderthal, who based on the fingerprint was possibly an adult male, perceived the pebble as resembling a face — a psychological phenomenon known as pareidolia — and was inspired to complete the depiction, creating 'one of the oldest known abstractions of a human face in the prehistoric record.' 'It would be a clear act of symbolization — apparently very simple, yet meaningful,' Álvarez-Alonso said. The discovery is 'doubly exceptional' since it's the 'most complete' Neanderthal fingerprint identified to date, apart from a partial one previously found in Germany, the researchers said. Neanderthals, a distinct species that went extinct around 40,000 years ago, lived alongside early modern humans in Europe, Asia and the Middle East for at least part of their existence. Characterized by a large nose and relatively short and stocky bodies, the species is very closely related to humans, or Homo sapiens. The remains of Neanderthals do not show clear evidence of lower intelligence than modern humans, some scientists have argued. The stone is 'one of a small but growing number of discoveries that point to the existence of symbolic behavior among Neanderthals,' Álvarez-Alonso said. However, it's 'clearly an isolated object, with no known parallels' that can be used for comparison, he added. 'We should not try to draw direct analogies between the Neanderthal and sapiens worlds,' Álvarez-Alonso said, as Neanderthals did not create a visual symbolic system as complex and diverse as the one developed by Homo sapiens. 'This pebble doesn't solve the mystery, but it offers one more clue suggesting the presence of a complex mind — one capable of producing symbols,' he said.
