Spring is here and we celebrate with a glass of something in tune with the season, suggested by David Williams. He has a cellar full of ideas for something to raise to the arrival of spring sunshine, cherry blossom and the rising sap.

Wine festival to take place in Glasgow this weekend
Vin Vivant - described as an "unconventional" wine tasting event - will take place at The Briggait on Saturday (June 14). More than 120 organic, biodynamic and minimal intervention wines will be available to taste, discover and buy at the festival. One of NYC's best bars is coming to Hawksmoor Chicago for one night only
You don't get named number five on North America's 50 Best Bars list without taking some risks. Sip & Guzzle, a two-level cocktail haven in New York City's West Village expertly stirs buzzy NYC nightlife with Japanese cocktail culture. And, now, for one night, and one night only, that acclaimed drinks team have partnered up with Hawksmoor Chicago, a Windy City favorite well-known for its midwestern hospitality and steak-and-seafood spread. What began in east London in 2006 has evolved into a culinary juggernaut with restaurants in New York and Chicago, earning Hawksmoor placement on the World's Best Steak Restaurant list as well as James Beard Foundation mentions and Tales of the Cocktail accolades. So you can expect to be in very good hands with this pop-up match-up, which takes over the Chicago venue tonight, June 13 from 6 p.m. to 10 p.m. (final entry is at 9:30 p.m. Attendees can expect two different bar vibes, all in one epic night: Guzzle will bring crushable cocktails and highballs, while Sip will deliver refined, Japanese-style creations. Plus, the Hawksmoor bar team will also be serving up select cocktails from their own menu. Those boozy tipples will be available for purchase a la carte, on Hawksmoor's second-floor bar while supplies last. While walk-in imbibers are welcome, reservations are recommended— RSVP via Evite is encouraged but does not guarantee a reservation. The Sip & Guzzle Chicago takeover is a natural fit, given the Windy City cred of the team behind the NYC bar: owners Shingo Gokan's and Steve Schneider's combined resume includes not only NYC favorites like Angel's Share and Employees Only but also Chicago powerhouse Alinea, where chef Mike Bagale—who's in charge of the high-meets-low bar fare, including that $150 Wagyu sandwich—once served as the executive chef.

This Dotonbori food hall serves up classic Osaka dishes with cultural shows
If you're visiting Osaka, chances are you'll find yourself in Dotonbori. And why wouldn't you? It's arguably the most famous district in the city, renowned worldwide as Osaka's hub for nightlife and entertainment. There are art attractions, over-the-top store signs, the iconic Glico man (of course!), and a seemingly endless array of restaurants, bars and street food. With so much going on, it's easy to feel overwhelmed by the choices and the sensory overload Dotonbori brings. If you want to soak it all in – but in a more contained way – consider stopping by Dotonbori Yatai Mura, a food hall that opened just last year and serves as a one-stop spot capturing the essence of Dotonbori. With a prime location by the Dotonbori Canal, this food hall draws its inspiration from Japanese festivals, creating a vibrant, celebratory atmosphere. The space is spread across two floors. On the first floor, you'll find stalls offering a wide selection of classic Osaka dishes and street food. There's kushikatsu (deep-fried skewers of meat and vegetables), tempura, grilled seafood such as king crab and scallops, yakitori (grilled chicken skewers), sashimi rice bowls, ramen and stir-fried udon. Recently, the selection has expanded with the opening of Takoyaki & Okonomiyaki Chitose and Unagi no Hasegawa, both well-established local restaurants. They've opened offshoots here, serving Osaka staples like takoyaki (octopus balls), okonomiyaki (savoury Japanese pancakes) and a variety of grilled eel (unagi) dishes. Upstairs, there's additional seating, a bar where you can sample 30 types of alcohol including sake and shochu, and a stage that hosts regular live performances. Expect classic, crowd-pleasing Japanese performing arts and festival dances such as taiko drumming, Awa Odori, Bon Odori and more. There's a nominal fee of ¥1,000 for a seat to enjoy the shows. So if you're looking to rest your feet and feed your appetite at the same time, Dotonbori Yatai Mura is worth considering, especially with its outdoor terrace seating by the water. It's a great spot to people-watch, take in an iconic Osaka scene you've likely seen countless times in photos – and now, finally, in person – with a drink in hand.
