
Offbeat Donuts opens in Wexford creating 10 new jobs locally
Circle K on the M11 Gorey is among three Circle K sites along with Kilcullen and Athlone that will open new scratch donut bakeries.
Co-Founder of Offbeat Donuts, Brian O'Casey, said: 'We are very excited about this opportunity to work with Circle K to bring this new scratch donut bakery concept to market. Offbeat Donuts, Ireland's leading artisan donut brand, has partnered with Circle K to open three brand new scratch bakeries in key forecourt locations across the country.
At each location, customers can enjoy the full Offbeat experience, watching donuts being baked, topped, and decorated fresh on-site throughout the day.
Other food offerings are also available at these busy, high-footfall service stations, which include McDonald's, Subway, Camile Thai, and Circle K's own barista coffee, fresh food, and self-serve hot meals.
Each new bakery will create over 10 new jobs locally, bringing Offbeat's total Irish workforce to over 160 people.

Pat Phelan's Limbo to seek deal with Abbott after legal action launched
Abbott's Ireland-based Lingo Sensing Technology initiated the London action against Vitals in View companies based in Ireland, the UK and the United States. Vitals in View are the firms behind the Limbo business. The dispute relates to trademarks and alleged passing-off, according to court filings. 'Limbo has recently experienced massive international growth, and we have a deal agreed with Abbott/Lingo to amicably resolve and address any issues, that works for all parties,' Limbo chief executive and co-founder Rurik Bradbury told the Irish Independent. 'We'll announce more details of our plans and success in international expansion in the coming weeks,' he added. He said he expects the legal action to be struck out pending a resolution to the spat. Customers who sign up for the Limbo weight loss plan wear a continuous glucose monitor that's linked to an app on their phone. It's designed to assist customers with dietary changes that will help them to shed weight. It expects those using its system to lose between 3kg and 5kg in a month. It charges €199 a month for the system, or the equivalent of €149 a month or €99 a month if consumers purchase a six-month and 12-month plan respectively. Limbo started as VIV (Vitals in View) and later changed its name to Limbo in 2022. Headquartered in New York, Limbo has a research centre in Cork. Last year, Abbott launched what it said was the first ever consumer-focused 'biowearable' Lingo product. 'Lingo tracks glucose spikes and dips in real time and provides personalised insights and customised coaching, helping people implement healthier habits and pursue better sleep, mood, focus, energy and fewer unpredictable cravings,' it said. ADVERTISEMENT Abbott added that its scientists had spent more than two decades researching continuous glucose monitors. A spokesman for Abbott did not respond to requests for comment regarding the litigation against Mr Phelan's firms. Co-founded by Mr Phelan, Limbo's other co-founder is Tony Martin, a physiologist and coach. In 2022, the company raised an initial €6m in funding in a round led by Hoxton Ventures. The fundraising was also backed by US ex-basketball star Shaquille O'Neal, Irish rugby player Jamie Heaslip and former Apple senior executive Rory Sexton. This year, the company has embarked on a $12m fundraising round and anticipates having $80m in annual sales by 2027.

Arachas acquires marine specialist broker Craftinsure Ireland
The move is the latest in the ongoing consolidation of the broker sector in Ireland. It is the fourth acquisition announced by Arachas in 2025, following other deals in Galway, Cavan and Cork. CII, a market leader in the pleasure craft sector, was started in 2008 by former Eagle Star underwriter Rod Daniel as an offshoot of UK-based Craftinsure's launch in the UK in 2001. It was the first broker to provide a complete boat insurance service online to Irish boat owners and is the only pure 'quote and buy' marine insurer in the country. Marine insurance is a specialised and complex end of the market and CII has developed products covering 14 different risk categories covering powered craft, sailing boats, canoes, rowing boats and other craft. Arachas, whose chairman is former finance minister Charlie McCreevy, is part of the Ardonagh Group, one of the world's largest independent insurance distribution platforms. Ardonagh is one of the top 20 global brokers with operations in 30 countries and 12,000 staff. Its Arachas business in Ireland employs more than 700 people across 14 offices. Arachas was acquired in 2020 by Ardonagh for a reported €250m in a debt-backed deal. Since then, Arachas has been a big player in the consolidation push in the country's insurance broker industry this year with acquisitions including Gerry O'Mahony Insurances in Limerick, Tom Fogarty Insurance Brokers in Tipperary, Gilmartin Insurances in Leitrim, and Waterford-based broker McDonald Dwyer Reddy & Byrne. 'We admire the specialisation and expertise of the CII team and are pleased that they have agreed to join the Arachas family and further strengthen our position in the marine insurance market,' said Joey Wynne, CEO of Arachas. 'We look forward to welcoming the team into our business and developing further in this important sector.' CII chief executive Paul Ivory, who worked with Zurich Insurance Group – formerly Eagle Star – in Ireland, said it would be business as usual for CII's customers but that Arachas would provide expertise and support.
