
This Mediterranean farro and white-bean salad is perfect for summer picnics
You can also double the dressing recipe and stash the rest in the fridge. It'll stay fresh for up to a week and elevate just about any salad or bowl.
Ingredients
1 globe eggplant (about 454 g), cut into 1-inch cubes
3 tbsp extra-virgin olive oil
1 tsp kosher salt
Freshly ground black pepper, to taste
1 cup farro, rinsed and cooked according to package instructions (yields about 2 cups)
1 (398 ml) can cannellini or white kidney beans, drained and rinsed
½ cup sun-dried tomatoes, drained and roughly chopped
½ cup marinated artichoke hearts, roughly chopped
2 tbsp capers, finely chopped
¼ cup green olives, pitted and sliced
2 pepperoncini, stemmed and roughly chopped
1 jarred roasted red pepper, roughly chopped
1 shallot, finely chopped
½ cup fresh parsley leaves, chopped
¼ cup fresh basil, chopped
¼ cup crumbled feta
¼ cup walnuts, roughly chopped
Dressing:
1 head garlic
4 tbsp extra-virgin olive oil, divided
1 tsp kosher salt
2 tbsp white wine vinegar
1 tbsp maple syrup
1 tsp mustard
1 tsp red pepper flakes
½ tsp freshly ground black pepper
To serve:
1 cup cherry tomatoes, quartered
½ cup crumbled feta
Handful of fresh basil
Preparation
Heat the oven to 425 F with a rack in the middle position and line a sheet pan with parchment paper.
Add the eggplant to the prepared sheet pan and toss it with olive oil, salt and pepper. Roast until golden, about 30 to 35 minutes, tossing halfway through.
Meanwhile, cut off the top of the garlic head, drizzle with 1 tablespoon of olive oil and wrap it in foil. Place it on the sheet pan with the eggplant and roast for 20 minutes, then remove and let cool.
For the dressing, squeeze roasted garlic cloves into a large bowl with the kosher salt and mash with a fork. Add remaining 3 tablespoons olive oil, vinegar, maple syrup, mustard, red pepper flakes and black pepper, and whisk until the dressing is emulsified. Taste and adjust seasoning.
To the same bowl, add farro, beans, eggplant, sun-dried tomatoes, artichoke hearts, capers, olives, pepperoncini, roasted red pepper, shallot, parsley, basil, feta and walnuts. Toss well and refrigerate for up to 4 days.
When ready to serve, top with cherry tomatoes and more feta and basil.

German city of Dresden cleared for WWII bomb defusal

BERLIN, Germany — Large parts of Dresden's old town were briefly evacuated on Wednesday as experts sought to defuse an unexploded World War II bomb found during clearance work for a collapsed bridge. Some 17,000 people were asked to leave their homes in the eastern German city, authorities said. The affected area included the famous Frauenkirche, a church which was rebuilt brick-for-brick after being destroyed in the war, as well as several hotels. The bomb was found on Tuesday during clearance work at the site of the Carola Bridge, one of Dresden's main crossings over the Elbe river, which partly collapsed in the middle of the night in September 2024. The entire structure is due to be demolished by October. The bomb was successfully defused early in the afternoon and the evacuation order was subsequently lifted by police. Around 80 years after the war, Germany remains littered with unexploded ordnance, often uncovered during construction work. More than 20,000 people were evacuated from central Cologne in June after three unexploded World War II bombs were found, the biggest such operation in the city since the end of the war. The heart of the city was left deserted, with a hospital, two old people's homes, nine schools and a TV studio evacuated. The bomb found in Dresden was British-made and weighed 250 kilograms, according to city authorities.

New discoveries at Pompeii show signs of life post-eruption
Rome, Italy -- Archeologists have discovered new evidence pointing to the reoccupation of Pompeii following the 79 AD eruption of Mount Vesuvius that left the city in ruins, the directors of the famous site said Wednesday. Despite the massive destruction suffered by Pompeii, an ancient Roman city home to more than 20,000 people before the eruption, some survivors who could not afford to start a new life elsewhere are believed to have returned to live in the devastated area. Archeologists believe they were joined by others looking for a place to settle and hoping to find valuable items left by Pompeii's earlier residents in the rubble. 'Judging by the archaeological data, it must have been an informal settlement where people lived in precarious conditions, without the infrastructure and services typical of a Roman city,' before the area was completely abandoned in the fifth century, they said in a statement. While some life returned to the upper floors of the old houses, the former ground floors were converted into cellars with ovens and mills. 'Thanks to the new excavations, the picture is now clearer: post-79 Pompeii reemerges, more than a city, a precarious and grey agglomeration, a kind of camp, a favela among the still recognizable ruins of the Pompeii that once was,' said Gabriel Zuchtriegel, director of the site. Evidence that the site was reoccupied had been detected in the past, but in the rush to access Pompeii's colourful frescoes and still-intact homes, 'the faint traces of the site's reoccupation were literally removed and often swept away without any documentation'. 'The momentous episode of the city's destruction in 79 AD has monopolised the memory,' said Zuchtriegel. Archeologists estimate that 15 to 20 per cent of Pompeii's population died in the eruption, mostly from thermal shock as a giant cloud of gases and ash covered the city. Volcanic ash then buried the Roman city, perfectly preserving the homes, public buildings, objects and even the people until its discovery in the late 16th century. A UNESCO World Heritage Site, Pompeii is Italy's second most-visited tourist spot after the Colosseum in Rome, with some 4.17 million visitors last year. It covers a total area of approximately 22 hectares (54.4 acres), a third of which is still buried under ash. AFP

United flight 108, bound for Munich, Germany, was forced to return to Dulles on July 25 'to address a mechanical issue,' the airline told CNN. The plane, a Boeing 787, was carrying 219 passengers and 11 crew members, the airline said. Minutes into its ascent and at nearly 5,000 feet, the pilot told air traffic control, 'Engine failure, left engine, United 108 declaring an emergency. Mayday, mayday, mayday,' according to recorded air traffic control audio. An air traffic controller asked the pilot, 'Are you able to make your way back to the field at this time' by turning right. 'There's nobody between you and the field,' the controller said. Data from flight tracking site Flightradar 24 showed the flight departed around 6:11 p.m. ET before it circled back and landed safely at Dulles around two hours later. In a statement to CNN, the Metropolitan Washington Airports Authority said the plane was checked by Airports Authority Fire and Rescue personnel, then towed to a gate. 'There was no disruption to other flights,' MWAA said. 'The plane landed safely, and all passengers deplaned normally at the gate.
