When you need to throw something together for a fast and easy weeknight meal, tacos are often a busy cook's first choice. That's because you can stuff almost anything inside a hard or soft tortilla—including leftovers—top it with some shredded lettuce and/or crunchy veggies, add a generous sprinkling of cheese and feel like a total winner. Tostadas—flat and crispy (and sometimes bowl-shaped) tortilla shells piled high with meat, seafood, or vegetables—are just as easy if you're looking to change things up on Taco Tuesday, but still want to stick to a Mexican theme. Why do we love this Mexican version of the open-faced sandwich? Like their crunchy folded cousins, tostadas are very versatile. They also can be assembled in 20 minutes or less, depending on the chosen protein and whether or not any veggies have to be cooked. In other words, you don't have to think too hard to make tostadas. This recipe brings together ground beef that's been spiced up (considerably) with chipotle peppers in adobo sauce and the traditional taco fixings of shredded iceberg lettuce, fresh tomato, chopped cilantro, and crumbled Cotija cheese. Depending on how involved you want diners to be, you can either assemble the tostadas before serving or place the toppings in separate bowls and let everyone serve themselves. For meat layer 2 tablespoons vegetable oil or alternative 1 pound ground beef 1 large yellow or white onion, chopped 2 garlic cloves, minced 2 chipotle peppers in adobo sauce, plus 2 tablespoons sauce, or to taste 1 teaspoon ground cumin 1 tablespoon chili powder Kosher salt and black pepper, to taste 8-ounce can refried beans, warmed 8 tostadas (flat crisp shell) For topping Handful of shredded iceberg lettuce Handful of shredded red cabbage 1 cup halved cherry tomatoes 1/4 cup chopped red onion Large handful fresh cilantro, chopped 1 cup crumbed Cotija cheese 1 avocado, peeled and cut into wedges 3 limes, divided Salsa, optional Heat vegetable oil in a large skillet over medium-high heat. When it is sizzling, add ground beef and cook, stirring and breaking up the meat with a wooden spoon or rubber spatula until it is no longer pink. Stir in onion, garlic, chipotle peppers and sauce, cumin, and chili powder. Season to taste with salt and pepper. (If meat is too spicy, thin sauce with a little water.) Empty refried beans into a small saucepan placed over low to medium heat. Stir frequently until the beans are heated through. Keep the beans on warm while you prepare the various toppings and warm the tostada shells, adding water as necessary to keep a creamy consistency. Toss shredded lettuce with juice of 1 lime and add a pinch of salt and pepper. Cut 2 remaining limes into wedges. Heat tostada shells in a preheated 350-degree F oven until hot and crispy, about 3-4 minutes. Assemble the tostadas. Divide the shells among plates and spread a thin layer of warmed refried bean on top. (This will act as a glue for the ground beef.) Spoon the meat mixture on top of the beans. Top with shredded lettuce and cabbage, halved tomatoes, chopped onion, chopped cilantro, sliced avocado, and crumbled Cotija cheese, and serve immediately. If desired, spoon on some jarred salsa. Problem Solved If you're a fan of Mexican food, you've likely tasted, or at least seen, birria tacos on a menu. These tacos are served with a side of the consumé the meat, often goat or beef, was stewed in, similar to a French dip sandwich. The spices and seasonings are the most important part of determining how tasty the dish is. There are a lot of time-consuming elements to making the seasoning for a traditional birria, but with a few simple shortcuts, you can still have all the delicious flavor in a fraction of the time. You can make a homemade birria seasoning mix that's ready to be thrown into the pot on any given Taco Tuesday. DIY Birria taco seasoning The spices are shelf-stable, so you can make this ahead of time and in bulk. You will need a container or a small mason jar in which to store the mix. Ingredients for a homemade birria seasoning mix: 10-12 Large dried chiles. Using a mix of different chilies will create a deeper and more robust flavor. 1 Tbsp. cumin 1 Tbsp. oregano 1 Tbsp. onion powder 1 Tbsp. garlic powder ¼ Tsp. ground cloves ½ Tsp. - ¾ tsp. cinnamon Black pepper ½ Tsp. citric acid 1-2 Bay leaf Optional: tomato powder To make your own birria seasoning: Over a bowl, cut off the stems of the dried chilies and get rid of as many of the seeds as you can. Chop the chilies using a food processor, spice grinder, or blender. It doesn't need to be a fine powder, but it does need to be in smaller, uniform pieces. Pour the ground chilies into a jar. Add in cumin, oregano, onion powder, garlic powder, dried cloves, and cinnamon. These spices are to taste, so feel free to adjust the measurements to your preference. Add the lid to the jar and shake to blend the spices together. OPTIONAL: You can add some tomato powder to the mix. Otherwise, you can set aside some tomato paste to use when you're preparing the dish. You can also add in beef bouillon powder or a bouillon cube to the jar to make preparing birria even easier. This is especially useful if you're planning to give the spice mix as a gift. Add citric acid and mix again. Add bay leaves and it's good to go. This mix is enough for a 3lb chuck roast. This mix does not include salt since many of these spices have salt in them, and the meat will be seasoned with salt. You can add more salt if needed when preparing the birria. Instant Pot birria tacos Making birria in an Instant Pot or pressure cooker is the fastest way to make it. To make birria tacos: Lightly season all sides of the chuck roast with salt and pepper. Sear the meat with a dash of oil in the Instant Pot, pressure cooker or in a cast iron skillet on the stove. Add in tomato paste* just before the meat finishes searing. Smear it on one side of the meat, then flip it so the paste is on the hot surface. Dump in the birria spice mix. Toss the meat to get a nice even coating and toast the spices slightly. Add enough beef broth* to cover the meat. Add a pinch of salt. Add the lid, put the pressure on, and let it cook for about an hour. *If your birria mix already has beef broth or tomato powder, you do not need the tomato paste or broth. Just use water. Once it's finished, skim the fat off the top. This is often used to cook the tortillas in. Shred the meat and add it to your tacos. You can also add cheese to turn your birria taco into an equally delicious quesabirria taco. Taste the consumé and add more salt if you need it. Then, pour some of the broth into a bowl for dipping, serve and enjoy.
