If a Greek and an Italian had a love affair, this would be the outcome: creamy, tomatoey butter beans pepped up with fried 'nduja for a bit of spice. Served with lots of parsley and crusty bread, this is a meal in itself, but the beans would also work brilliantly as part of a meze. It's the summer tomato dream.

3 tbsp olive oil2 onions, peeled and finely chopped3 carrots, peeled and sliced3 celery sticks, trimmed and slicedSea salt and black pepper
90g 'nduja2 tbsp tomato puree
2 400g tins butter beans (or a 700g jar), not drained
½ bunch flat-leaf parsley, finely chopped200g cherry tomatoes on the vineCrusty bread, to serve
Put a large, shallow casserole or deep, large saucepan on a medium heat. Add the oil, onions, carrots and celery, season generously and fry, stirring often, for five minutes. Crumble in the 'nduja, turn up the heat and fry for another five minutes. Stir in the tomato puree followed by the butter beans and their liquid, then pour in 150ml cold water and stir in most of the chopped parsley. Nestle in the tomatoes still on their vines and leave to bubble away gently for about 15 minutes.
Meanwhile, turn on the grill to high. When everything in the pan is tender, and the liquid has reduced slightly and turned rich, transfer the pan to the oven and grill for three to five minutes, until a lovely crust forms on top.
Scatter over the remaining chopped parsley, and serve with chunks of crusty bread for mopping up all those juices.

A giant crane that has blighted the skyline of Florence for almost 20 years is finally to be removed. The controversial structure, described as 'a metal monster', has stood in the centre of the Tuscan capital since 2006, when it was installed in a square opposite the Uffizi Galleries – famous for sublime artworks of the Italian renaissance – and tasked with doing the heavy lifting of materials during the initial phase of the museum's ongoing expansion. At more than 60 metres tall and visible from miles away, the crane was used less and less as the construction works dragged on, but there it remained despite numerous attempts to have it removed over its incongruity with the Florence landscape. Over time, the crane not only became a target of mockery, with an Instagram account set up for this purpose, but also the ultimate symbol of Italy's notoriously sluggish bureaucracy. The main thing holding back the crane's removal has been the huge cost but also the permissions required from the various levels of authority. But after some of the city's entrepreneurs responded to an appeal by the Uffizi's exasperated director, Simone Verde, and clubbed together to cover the bill, the dismantling of the crane will finally begin on 16 June, culminating in a celebration on the terrace of the galleries' Loggia dei Lanzi on 21 June. Such is the importance of the occasion, the event will also be attended by Italy's culture minister, Alessandro Giuli. 'Florence has been waiting for this moment for a long time,' said Verde. 'The metal monster is being removed and Florence's dazzling beauty can finally return intact and unviolated.' Verde added that the 'havoc' caused by the crane had been weighing on the city for far too long, and that he hoped the momentous occasion would mark the beginning of the end of 'this cursed construction site'. Part of the total €180,000 (£152,000) cost will also be used to replace the crane with a less invasive and more sustainable hoist, allowing the works to finally be completed without sullying the city's aesthetics. 'This operation confirms that good administration can triumph despite everything,' said Verde. 'It also testifies that the Uffizi has the capacity to be a model for cultural efficiency and a true flag for Italy in the world.'

How often do you stray from tradition when it comes to recipes? Would you say you're a rule follower or a riffer? Cooking is all about clocking up time in the kitchen. Just as a pilot will chart well-mapped courses as they're learning to spread their wings, following tried and true recipes to the letter is a safe and effective way to build up confidence before you spread yours. But if you're a long-time follower who's ready to take to the sky, the best place to start is somewhere familiar, then whack on a twist, because even the recipes you thought were canonical often started with a riff. Take tuna mornay, for example. If you grew up in Australia, you'll probably be surprised to learn that tuna mornay is only a 'thing' for us – and only for the last 80-odd years. For the French, sauce mornay – bechamel with grated cheese – is usually reserved for slathering over seafood such as lobster. In Italy, birthplace of pasta, seafood and cheese are an unholy union. It's the anglophones who seem to be cool with pairing creamy sauce and canned fish. Tuna pasta bakes and casseroles, which are tuna mornay by a less fancy-schmancy name, are common in North America and the UK. One advantage of being down under is we're far enough away from the European culinary cannon to play a little faster and looser with the classics. Of both Cucina Australiana – or elsewhere. So why not riff on a riff? Bring the best bits of a mornay – creamy, comforting, fuss-free – then eliminate the margin of gluggy error by replacing the bechamel with a crème fraiche, add zip and zest with my very versatile PGAL (a paste of parsley, garlic, anchovy and lemon that you're going to want to spread and stir through everything) and freshen it further by incorporating the accoutrement from another traditional tuna dish: the niçoise. Usually a niçoise is bulked out with spuds; instead the crunchy top here is none other than crushed-up potato crisps! I got the inspiration for this from a reader called Sue, who emailed to ask if I'd tried it. Dear reader, once you've tried this, it's pretty hard to go back to plain old panko. Serves 4-6 1 can (425g) tuna in olive oil, drained, reserving the oil50g black olives, pitted and roughly chopped 1 tbsp capers, rinsed and drained (I used lilliput in salt, but any will do)80g gruyere, grated 200ml crème fraiche 500g dried short pasta (shells always work well here)200g green beans, topped and chopped to pea size For the PGAL (parsley, garlic, anchovy and lemon) paste1 bunch flat-leaf parsley, washed and stems trimmed3 cloves garlic, peeled3-4 good-quality anchovies, including the oil1 lemon, zest and juiceReserved tuna oil ¼ cup extra-virgin olive oil ¼ tsp freshly ground black pepper For the chippie crumb 100g packet potato chips/crisps of your choice 50g butter, room temp 50g gruyere, grated Bring a large pot of well-salted water to the boil and preheat the oven to 160C fan (180C conventional). To make the PGAL paste, pop all of the ingredients into a food processor and blitz to a smooth paste. Leave in the food processor until needed. In a medium-sized bowl, combine the tuna, olives, capers, grated cheese, crème fraiche and mix to combine, breaking up the tuna into chunks. Check for seasoning and adjust if needed. To make the crumb topping, pop chippies (crisps), butter and cheese into another bowl and squish together with your fingers to break up the chips, rubbing in the butter and cheese to form a crumb texture. Once the pasta water is at the boil, add the pasta to the pot, stir about for the first minute or so to keep it from clumping, then cook for one minute less than the packet's instructions. Before draining the pasta, pop your green beans in the bottom of a colander. Drain the pasta over the beans (this will give them a swift blanch to take the squeaky edge off) and toss both pasta and beans back in the pot, along with all of the tuna ingredients and PGAL paste. Stir everything together well and check for seasoning. Pour into a baking dish and top with the chippie crumb. Place in the oven for 10 minutes until golden and bubbly. The dish will be super-hot, so take care when getting it out of the oven. Serve immediately with a simple salad on the side.

I always keep a couple of tins of ful (fava beans) for those times when I crave a quick and satisfying late breakfast or lunch at weekends. You can substitute the eggs with feta cheese for an extra creamy and salty touch. Alternatively, the recipe works beautifully as a vegan dish without the eggs. If fava beans aren't available, you can swap them with other tinned beans. Season the dish generously and serve with fresh crusty bread or flatbread. The sumac onions will make more than you need, but they're great with hummus, falafel wraps, or in lentil soup. Overview Prep time 20 mins Cook time 40 mins Serves 4 Ingredients For the sumac onions 1 red onion, thinly sliced 1½ tbsp sumac 100ml cider vinegar 3 tbsp lemon juice For the aubergine and fava beans 2 medium aubergines (around 630g) 80ml olive oil, plus extra to serve 1 onion, finely chopped 6 garlic cloves, crushed 1 small piece of ginger, peeled and finely grated 1 green chilli, finely chopped, seeds and all 1 tsp chilli flakes 1 tsp ground cumin ½ tsp ground cinnamon 1½ tsp tomato paste 2 plum tomatoes, chopped into 2cm chunks 1 x 400g tin chopped tomatoes 1 x 400g tin fava beans, drained 15g fresh coriander, roughly chopped, plus extra to serve 4 large eggs Method Step Preheat the oven to 240C/220C fan/gas mark 9. Step To make the sumac onions, put 1 thinly sliced red onion in a 400ml jar that has a lid. Add 1½ tbsp sumac and set aside. Step Put 100ml cider vinegar, 3 tbsp lemon juice, 100ml water and 1 tbsp salt in a medium bowl and whisk well until the salt has dissolved. Pour the mixture over the onions, cover the jar, then give it a gentle shake, seal, and leave to one side. You can store the onions in the fridge for up to 3 weeks. Step Cut 2 medium aubergines into 4cm chunks and place in a large bowl. Mix well with 40ml olive oil, ½ tsp salt and some black pepper, then spread out on a large parchment-lined baking tray. Roast for about 25 minutes, or until completely softened and lightly browned. Remove from the oven and set aside. Step While the aubergine is roasting, make the sauce. Put 40ml olive oil into a large sauté pan and place on a medium-high heat. Add 1 finely chopped onion and cook for about 7 minutes, until softened and lightly browned. Step Add 6 crushed garlic cloves, 1 peeled and finely grated small piece of ginger, 1 finely chopped green chilli, 1 tsp chilli flakes, 1 tsp ground cumin, ½ tsp ground cinnamon and 1½ tsp tomato paste and cook for another minute, or until fragrant. Step Add 2 plum tomatoes, chopped into 2cm chunks, 1 x 400g tinned chopped tomatoes, 1 x 400g tin fava beans, 300ml water and some seasoning. Reduce the heat to medium and cook for 15 minutes, or until the sauce thickens. Step Add the aubergine chunks and cook for a further 3 minutes. Stir in 15g roughly chopped fresh coriander, then reduce the heat to medium-low. Make 4 wells in the sauce and crack an egg into each well. Use a fork to gently swirl the egg whites a little bit, taking care not to break the yolks. Step Simmer gently for 7-8 minutes, until the egg whites are set but the yolks are still runny. You can cover the pan with a lid for the last few minutes (to speed up the process).
