As bird flu spreads, what is the risk from eggs and milk?
More than 150 million poultry birds have been killed in an attempt to combat the virus, known as H5N1, which has caused egg prices to soar and supply to be limited.
Additionally, hundreds of dairy cow herds have been affected, and reports have emerged of bird flu virus fragments found in milk products.

Health experts tell ABC News that the risk of bird flu to the general public is still low and it's unlikely that eggs or milk products available in stores are contaminated with bird flu, but there are steps people can take to mitigate their risk.
"The risk to the public to contract bird flu from items that they get in the grocery store is exceptionally low," Dr. Nicole Martin, an assistant research professor in dairy foods microbiology in the department of food science at Cornell University in New York, told ABC News. "We know that pasteurization has been shown to be very effective at eliminating the virus from milk. ... And then on the poultry and egg side, [there is] very low risk that eggs make it to the marketplace with the avian flu."
Government regulations currently require egg processors to wash and sanitize eggs that are graded by the U.S. Department of Agriculture to remove germs from the shell.
Additionally, some pasteurized eggs are available in grocery stores as long as the processor has approved the process with the U.S. Food and Drug Administration (FDA).
Even if bird flu manages to make its way into an egg, "the normal cooking process would kill that virus," Dr. David Cennimo, an associate professor of medicine at Rutgers New Jersey Medical School, told ABC News. "So, the only theoretical risk is if you're eating raw or undercooked eggs, and again, the flocks are being monitored for bird flu."
Once bird flu is detected in poultry or a bird species, the only way to stop the virus from spreading further is to de-populate, or cull, the entire flock.

Dr. Cameron Wolfe, a professor of infectious diseases at Duke University in North Carolina, told ABC News the eggs related to that culled flock are then discarded.
However, he said it's unclear how recently the eggs would need to have been laid to be discarded.
"If you find today that your flock is affected, and this week we're going to cull that flock and we'll take the eggs out, I don't know how far you can go back to understand which eggs might have been affected," he said. "But we do take them out of circulation."
Experts say most milk products present little risk, due to the process of pasteurization. Pasteurization involves heating liquids to a high temperature for a short time to kill harmful viruses and bacteria. Pasteurized dairy products, such as yogurt and cheese, are also deemed safe.
In April 2024, reports emerged of bird flu fragments found in samples of pasteurized milk. However, because the commercial milk supply undergoes pasteurization, the fragments are inactive remnants of the virus and cannot cause infection.
"Pasteurization has been shown to completely kill the virus, so the normal milk that you're buying off a shelf in the grocery store that is pasteurized is safe," Cennimo said. "So I wouldn't worry about that either."
However, unpasteurized milk, or raw milk, could be dangerous
The FDA has previously warned of the dangers of drinking raw milk, which does not undergo pasteurization The agency currently considers consuming unpasteurized milk and milk products a "high-risk choice."
"With the avian influenza virus that's currently circulating in dairy cattle in the United States, the raw milk itself has a very high concentration of this virus," Martin said. "And so what we know is that there have been many demonstrated cases of animals becoming ill and dying from drinking this contaminated milk."
Martin said there is not a clear indication if any humans have become ill from drinking contaminated raw milk but there is no intervention strategy to reduce the virus in raw dairy products without pasteurization.
The experts say that freezing is ineffective when it comes to killing bird flu.

Many pathogens can actually survive at low or freezing temperatures, including H5N1.
Cennimo said one way to think about this is when someone travels to a country and they receive health advice to not drink the water in that country.
"If you've gotten good travel advice, they'll tell you, 'Don't drink anything with ice in it,' because the ice cubes are things that are infected because they were made by local water," he said. "So that just shows you right there, a literal ice cube can harbor bacteria. So freezing meat or eggs or whatever is not going to help. As far as we know, freezing does not inactivate influenza."

The work, led by the University of Chile and the Chilean Antarctic Institute, was published in Emerging Infectious Diseases, a journal of the U.S. Centers for Disease Control and Prevention, marking a milestone in pathogen research on the frozen continent. The study, which included sequencing the virus in birds such as Antarctic skuas and terns, provides crucial information for understanding the evolution of H5N1 and its potential spread to other species. Sequencing a virus's genome is like reading its complete genetic code. In this case, genomic analysis of avian flu found in Antarctica showed the virus is part of the variant that has affected South America. "Sequencing and genetically characterizing this virus in Antarctic birds allows us to understand its behavior in an extreme, pristine and particularly vulnerable ecosystem," said Víctor Neira, a professor at the University of Chile's Faculty of Veterinary and Animal Sciences and a member of the research team. Specifically, the phylogenetic analysis showed a high genetic similarity to viruses detected in gulls and fur seals on South Georgia Island, confirming the existence of a viral migration route from South America to Antarctica. The finding underscores the need for constant global epidemiological surveillance and highlights the virus's risk of mutation, experts said. By infecting new species in a different environment, the virus could become more dangerous and pose a threat to human and animal health worldwide. According to the research team, its greatest contribution to Antarctic science is providing essential data on biodiversity and emerging risks in the region. In late 2023, H5N1 reached Antarctica for the first time, breaking the isolation that had kept the continent free of the virus. After a gunman opened fire on the Centers for Disease Control and Prevention (CDC) campus in Atlanta last week -- forcing hundreds into lockdown, hitting six buildings and killing a police officer -- authorities found he'd been harboring years-long grievances with the COVID-19 vaccine. Patrick White's neighbors told ABC News that the 30-year-old believed he suffered negative health effects after he got the vaccine, and the Georgia Bureau of Investigation (GBI) found written documents at his home indicating that he wanted to make his discontent known. He died of a self-inflicted gunshot wound during last Friday's incident. For many CDC employees, the shooting was the culmination of long-held fears that years of simmering anger and division that grew from those who disagreed with COVID-19 pandemic policies might turn to violence against the CDC, putting public health workers in physical danger. "I think the environment has been set up for something like this to happen," Jessica Rogers-Brown, a CDC epidemiologist who has worked in multiple centers across the agency over the past seven years, told ABC News. "But this is far worse than I feared." Rogers-Brown, who works at one of the buildings that was struck by gunfire, emphasized that she was speaking in her personal capacity, not in her professional role or on behalf of CDC. For Rogers-Brown and some of her colleagues, that fear has turned to frustration with government leaders -- including President Donald Trump -- over the last week. They feel the shooting has slipped into the background without even a public statement from the president about the attack on federal property or a sufficient denouncement from Health and Human Services (HHS) Secretary Robert F. Kennedy Jr., who oversees the CDC and has peddled vaccine skepticism throughout his career. Earlier in this week, when Rogers-Brown went to pick up equipment that would allow her to continue to work from home while shattered windows and broken doors are replaced on CDC's campus, she walked past bullet holes. She said she won't feel safe returning until she feels federal leadership has publicly stood up for the CDC and Kennedy has condemned any violence aimed at public health workers as loudly as he derided CDC for its COVID response. Before becoming health secretary, Kennedy falsely called the COVID-19 vaccine the "deadliest vaccine ever made" and, during his recent presidential run, he wrote in a post on X that he would "clean up the cesspool of corruption at CDC." "We really are at a turning point of what can happen," Rogers-Brown said. "We can start to right the ship, or we can keep going down this road and wonder if, next time, I'm going to be triaging the gunshot wound of a colleague. And what will make the difference will be the voices of our leaders that have the microphone." She called for Kennedy to make it clear that "public servants are not the enemy" and "CDC workers are humans." Over the weekend, Kennedy sent an email to staff, offering prayers and saying he realized that the shooting was "unsettling" for staffers. Kennedy visited the CDC on Monday, surveying the damage, meeting with senior leadership and visiting the widow of DeKalb County Police Officer David Rose, who was killed Friday in the shooting. That day, he referred to the shooting as "heartbreaking" in an X post. In an TV interview with Scripps News later that day, Kennedy said CDC workers "should not be the targets of this kind of violence from anybody" and that political violence is "always wrong." Asked if he would take action to quell misinformation around vaccines, Kennedy said there wasn't enough information about the shooter's motive and went on to criticize public health agencies. "We have to ask, why are people not believing the public health agencies? And the answer, I think, is pretty elementary: That the public health agencies have not been honest," Kennedy said. Some staffers were frustrated by what they perceived to be a lack of strong response from Kennedy, who didn't directly address staff during his visit on Monday. "He never even sent an email to us until this past Saturday and never visited our campus until this week," a CDC scientist who has worked at the agency for 10 years in a variety of positions told ABC News. "I don't even know how to feel with the lack of words from the White House and RFK victim-shaming us." The scientist asked not to be publicly identified over fears of retaliation at work and safety concerns. HHS spokesperson Andrew Nixon told ABC News in a statement that Kennedy "has unequivocally condemned the horrific attack and remains fully committed to ensuring the safety and well-being of CDC employees." Nixon said Kennedy's response was swift and decisive, citing his trip to Atlanta, and said any suggestion of a delay "is simply not supported by the facts." "The Secretary's presence and outreach underscore his commitment to the CDC community and public health workforce. This is a time to stand in solidarity with our public health workforce, not a moment for the media to exploit a tragedy for political gain," Nixon said. While Trump hasn't publicly spoken about the shooting, White House spokesperson Kush Desai also emphasized that the safety and security of government employees, "whether in Washington, D.C. or Atlanta, Georgia -- is the topmost priority of the Administration." "Violence has no place in any civil society, and the White House extends our heartfelt condolences to the family of Officer David Rose and the entire CDC team," Desai said in a statement sent to ABC News. CDC director Dr. Susan Monarez spoke directly to CDC employees on Tuesday, giving brief remarks in a 10-minute all-staff call that was cut short by technical issues. "You are resourceful, resilient and strong, and we will make sure you have the resources, the protection, the support you need to keep doing the work you do," she said. She followed up later the same day with a more direct denouncement of misinformation to the agency's more than 10,000 employees with a note that read, in part, "the dangers of misinformation and its promulgation has now led to deadly consequences." "I will work to restore trust in public health to those who have lost it -- through science, evidence, and clarity of purpose," Monarez wrote. Another CDC staff member told ABC News that the last six months of the Trump administration had already been tumultuous for the agency. She cited Kennedy's reorganization efforts that led to the mass-firings of around 10,000 HHS employees and many entire CDC programs being cut, which Kennedy defended as "reducing bureaucratic sprawl." "It was an overwhelming grief to watch what was unfolding with public health and how it was going to affect people's lives," the CDC worker, who also asked not to be publicly identified over fears of retaliation at work and concerns over her own safety, said. "But it is very personal now." With nearly 20 years of experience working in communications at CDC on multiple different public health issues, including immunization and COVID-19, she said she'd never seen as much fear among her colleagues as she had this year. "The vilification of federal workers is astounding, and people are forgetting ... that we're human beings," she said. "We're parents and friends and mothers and daughters. You know, we're just like everyone else." She pointed to Kennedy's history of vaccine skepticism before joining the Trump administration and actions to dissuade vaccine uptake since taking office. "This didn't happen overnight," she said. In May 2021, Kennedy filed a citizen petition asking for the Food and Drug Administration (FDA) to revoke its authorization of all COVID-19 vaccines, which he falsely criticized during a Louisiana House of Representatives meeting about school vaccine requirements as the "deadliest vaccine ever made." Since taking office, Kennedy has taken a series of actions to change U.S. vaccine policy. He announced that the COVID-19 vaccine will no longer be recommended for healthy children and pregnant women and, earlier this month, canceled $500 million in mRNA vaccine federal funding, terminating awards and contracts with pharmaceutical companies and universities. "After reviewing the science and consulting top experts at NIH and FDA, HHS has determined that mRNA technology poses more risk than benefits for these respiratory viruses," Kennedy said in a video posted on X when the cut to mRNA funding was announced. Cutting mRNA Research Could Be Our Deadliest Mistake Yet
The U.S. Department of Health and Human Services (HHS) recently announced it will wind down funding for mRNA vaccine development—which could prove to be one of the costliest, deadliest decisions HHS Secretary Robert F. Kennedy Jr. will make during his tenure. HHS has already scaled back access to and recommendations for COVID-19 vaccines—a decision experts are deeply concerned about—and Kennedy's frequently misinformed views on vaccines continue to fan the flames of anti-vaccination attitudes. Now, Kennedy's failure to fully explore the potential of mRNA vaccines could stagnate research that has the potential to save millions of lives around the world. The dark cloud of COVID-19, one of the deadliest infectious disease outbreaks in history, can hardly be thought of as having a silver lining. But the nearest thing to a glimmer of a positive would be that the fast development of COVID-19 vaccines helped prevent many more deaths and led to rapid progress in our understanding and use of mRNA technology. This greater understanding is now being explored as potential preventions or therapies for a wide range of diseases, from H5N1 bird flu and HIV to cancer. Terminating 22 mRNA projects will not only directly set back research on mRNA vaccines for infectious diseases including flu; it will also arguably have negative knock-on effects for researchers the world over exploring personalized treatments for noncommunicable diseases like cancer. Early research on some novel uses of mRNA is promising. For example, a preliminary trial of an mRNA HIV vaccine found that 80% of participants generated neutralizing antibodies, which in theory could help block HIV—pending further research and development. A melanoma mRNA vaccine, when combined with existing treatment, reduced the risk of death or disease recurrence by nearly 50%. (The vaccine is currently being tested further in a full scale Phase 3 clinical trial). Even more amazingly, personalized vaccines—where vaccines are created specifically for an individual using information from their cancer to optimize their immune response—using mRNA technology have even been proposed as a universal vaccine adaptable for all cancers. Read More: The CDC Shooting is a Dark Sign for Science and America Much of the research on personalized mRNA cancer vaccines is in some way indebted to gains in knowledge made from COVID-19 research, and it stands to reason that pulling such a large amount of funding from mRNA projects will slow down further progress in these areas. Approximately $500 million worth of research funding would almost certainly have advanced the scientific community's fundamental understanding of how, and to what extent, mRNA technology works and how it could be applied to prevent and fight disease. Also problematic is the manner in which HHS under Kennedy conveys their decisions. In announcing the funding withdrawal, HHS states it 'will focus on platforms with stronger safety records and transparent clinical and manufacturing data practices.' This implies that mRNA vaccines have not been properly or transparently tested—which is not true. The safety of COVID-19 mRNA vaccines has been demonstrated in numerous studies and systematic evidence reviews. Like pretty much all vaccines and treatments, mRNA vaccines are not without side effects, but evidence shows that any adverse events are nearly always mild and short-lived. COVID-19 vaccines have already saved millions of lives globally, with mRNA vaccines accounting for a significant majority of all doses administered in many countries. Kennedy's claim that 'mRNA technology poses more risk than benefits' is almost farcical in light of scientific evidence. Moreover, the whole purpose of clinical research is to test whether new scientific innovations—like novel applications of mRNA into different diseases—are safe and effective in the first place. Kennedy has long spoken of how we need more evidence and testing on mRNA vaccines, and so it is painfully ironic that he is pulling funding for research which would enable the scientific community to do just that. Read More: An mRNA Melanoma Vaccine Shows Promise Perhaps most concerning is the caliber of evidence upon which decisions with such massive implications are being made. In an HHS announcement of the termination of mRNA projects, Kennedy claims 'the data show these vaccines fail to protect effectively against upper respiratory infections like COVID and flu.' The truth is, initial vaccines and booster doses have been shown to be very effective against reducing infection, hospitalization, and death from COVID-19. Kennedy does not even provide links or citations to systematic reviews or meta-analyses in reputable journals, the gold standard methods for scientific evidence. Rather, he simply links to an online evidence review which cherry picks studies searching only for the harms—and not the overall safety, effectiveness, or cost-benefit analysis—of the mRNA vaccines. The report does not describe the methods used to select and review studies, nor does it appear itself to have been peer-reviewed by other scientists. It almost certainly wouldn't be publishable in a scientific journal, yet it is being used as evidence to justify the fate of half a billion dollars of research funds. This is another example of how fringe viewpoints on mRNA technology, instead of the best available scientific evidence, are under Kennedy and HHS becoming the new mainstream. The U.S. has been at the forefront of developing mRNA technology for the past few decades, from the Nobel Prize-winning research of professors Katalin Kariko and Drew Weissman at the University of Pennsylvania on mRNA, to the key role of U.S.-based pharmaceutical companies in vaccine production and rollout. Perhaps other countries, companies, and funding sources will offset this funding loss and lead the development of mRNA vaccine innovations. Large investments are already being made in the U.K. and China, for example. That would be to the detriment of U.S. scientific innovation and progress. Kennedy is right to scrutinize the potential overreach of the pharmaceutical industry, and to ensure their research and development is ethical and transparent. However, his seemingly personal war against "Big Pharma" and ideological opposition to mRNA risks stunting research that could one day help prevent the next pandemic or even provide cures for hitherto incurable cancers.
