Not just rice and peas: lifting the lid on the radical roots of Caribbean cuisine

Hello and welcome to The Long Wave. This week, I dived into Caribe, a remarkable Caribbean cookbook that is simultaneously history, memoir and visual masterpiece. I spoke to the author, Keshia Sakarah, about how she came to write such a special book.
Caribe is not only a recipe book of Caribbean dishes, it is also a homage to family as well as an account of history and migration. That history is both short and long: it charts Sakarah's Caribbean community in her home city of Leicester, England, and of each individual country in which the recipes originated. And there is another layer of history: that of the dishes and ingredients – how they came about and how far they travelled on the tides of colonialism and immigration.
This was the most edifying part for me, as it revealed the expanse of cuisine around the world and its commonalities. For instance, I had no idea that kibbeh, a meatball rolled in bulgur – that I only understood as a niche Levantine dish – exists in the Dominican Republic as kipes or quipes. It was brought to the Caribbean by immigrants from the Middle East in the late 19th century. Who knew? Sakarah did. She discovered that fact during a multiyear research odyssey across the islands.
Sakarah's love for cooking, and the culture behind it, comes from early exposure. She is an only child of Barbudan and Montserratian descent and spent much of her childhood with her retired grandparents, who were 'enjoying life, cooking and eating. I would go to the allotment and the market with them. That planted that seed.' The result was a fascination with Caribbean food that flourished in adulthood, when Sakarah decided to be a chef and an archiver of Caribbean cuisine. On her travels, she found her passion mirrored by those she engaged with. 'I would just have conversations with people about food,' she says. 'People wanted to tell stories and were excited that I was interested.' The process of on-the-ground research was 'covert and natural' because locals sensed her curiosity wasn't 'extractive'.
Crops, colonisers and resistance
'The linking of the history was quite surprising to a lot of people,' Sakarah says, 'because they had never considered it. Especially in our community, we have no idea why we eat what we eat.' In one particularly enlightening section of the book, Sakarah details how sweet potatoes, cassavas and maize were unfamiliar to Spanish colonisers in the Dominican Republic in the late 1400s.
When they established their first settlement, these colonisers relied on the farming capabilities of the Indigenous Taíno people, who were skilled in crop generation. In an act of resistance, the Taíno refused to plant the crops, leading to the starvation of the Spanish. However, they returned in subsequent settlements better prepared. The Spanish brought crops and livestock familiar to them in a mass movement of species known as the Columbian exchange, which Sakarah says 'changed the face of flora and fauna across the globe'. Caribe is full of such eye-opening vignettes on how the region's food carries a historical legacy.
Two things struck me as I read the book: I had never seen a single written recipe growing up, and I had not a single idea about where the food I grew up eating came from. Even the recipes handed down to me are not quantifiable by measurements – they are a pinch of this and a dash of that. Everything is assimilated but never recorded. Sakarah wanted to make that record because 'when an elder passes, they go with all their knowledge, so it's important to archive things for the purposes of preservation'.
She wanted the work to feel like an intimate passing on of information, using language, imagery and references that were not that of the outsider looking in. The pictures that accompany the recipes were almost painfully resonant, ones of Black hands casually drawn in a pinching action after scooping up a morsel. One recipe for dal shows an implement that I had only ever seen in Sudan, a wooden rod with a bifurcated bottom, spun in the pot to loosen the grain.

A culinary reminder of home
I say to Sakarah that the longer I am removed from home, the more food plays a complex rooting role in my life, where I hold on to random meals or ingredients from childhood: fava beans, okra, salty goat's cheese. Food plays a similar role for her, in ways that she didn't even realise. Because she grew up with her first-generation grandparents, Sakarah says she feels more Caribbean than British, which shows up in very confusing ways. Researching the book has enabled her 'to come to terms with that, because I see the layers in it, and also the beauty of the diaspora'.
One of the main motivations of this book, which represents the various islands in separate chapters, was to show the shared yet diverse expanse of Caribbean food that is often wrongly collapsed as only 'Jamaican'. Nor was Sakarah interested in presenting regional dishes as a victim of imperialism, but rather a product of overlapping histories. By doing so, she removed shame and did not attempt to assert identity through cuisine. Sakarah has pulled off a remarkable feat – the book is quietly radical in its presentation of food as something that is not political, but a product of politics. It is simply what everyone eats. 'Food isn't always celebratory and fun and joyful,' she says. Nor is it always an act of cultural resistance: 'It just is.'

Let's get one thing out of the way: you're not here for gob-smacking architecture. With a few exceptions, Turku is a homage to the concrete low-rises of the 1960s and 1970s. Do not let that put you off visiting this city on Finland's southwest coast. In summer its creativity blooms in 18 hours of dazzling natural light each day and the Aura River's bar boats and banksides become somewhere to kick back. Rents are cheaper than Helsinki — 100 miles east and the nearest international airport – so offbeat chefs come here to whizz up seafood dishes and there are lots of artists' studios, most with an open-door policy. Gallons of the terrifying gin and grapefruit concoction known as Long Drink will loosen your tongue, helping you to roll your r's and (eventually) learn to pronounce 'Turrrrrrku' correctly. The Forum Marinum (Maritime Centre) is a walk through the city's ship-building history. Skip the big exhibition halls and get outdoors onto one of the five restored vessels on display. Our favourite is Sigyn, a classically pretty wooden barque trading ship — the last in the world — dating from the late 1880s (£19; • A guided tour with a local professional such as Pirita Seppala will reveal secrets of Turku's most obvious sites, including the cathedral (there are model boats hanging from the rafters) and the rebuilt medieval Old Great Square. But it also ensures you don't overlook the less conspicuous offerings, such as the open studios at Art House Turku in the former Rettig tobacco factory (tours from £13pp; Ahoy there, electric shipmates! Lana's eco-friendly boats are a great way to get out on the river, quietly. Available to hire by the hour, they're straightforward to navigate and can carry up to eight passengers up and down the Aura while hardly making a sound. Order a picnic or grab drinks from Lana's café on the riverside to take on board. Just don't Long Drink and drive (from £55; It doesn't look promising but Turku's dumpy granite castle provides an informative trot around 700 years of regional tension between Finland and Sweden, Russia and Denmark. The warren of 164 rooms connected by narrow corridors and staircases is like an Escher painting — once inside expect to lose at least an hour (£14; A 20-minute drive or cab gets you to the saunas and hot tubs of Villa Jarvela on the shores of Littoistenjarvi lake in the east of the city. This is a BYO flipflops and towels affair, but the views of the lake are delightful and really this is what you come to Finland for. There are kayaks and rowing boats for hire but hours can pass chatting to Turkuans while taking a dip (£11; The buffet on board the 7pm dinner sailing of the MS Rudolfina feels like supper at your nan's circa 1983: loads of meatballs, lashings of potatoes and for reasons unknown, gherkins. The slap-up dining goes nicely with the warm service and the charming boat ride, a three-and-a-half-hour trip to Naantali, a pretty village resort in the archipelago with astonishing sunset views (£43pp; This food court has more than 30 stalls in a beautiful Victorian building, with everything from piispis (western Finland's podgy iced buns filled with strawberry jam) from MBakeryn kahvila (£4) to sautéed reindeer from Poronlihan Erikoisliike (£11; The fishmonger and bistro Herkkunuotta, set up 19 years ago by the husband and wife team Johan and Taina Hellsten, is the countertop spot for lunch. The ever-changing menu here could include pike-perch in a crust served on mash with a creamy crayfish broth or Norwegian smoked salmon salad (mains from £11; • 28 of the best places for an autumn city break Priding itself on being the original of the two rooftop bars in town, Walo has a suntrap terrace above a lounge with floor-to-ceiling windows and a fun list of cocktails including the bourbon-based Out of Office. Plus it's open until 4am on Friday and Saturday nights (drinks from £8; This riverside restaurant, under the direction of the head chef Aleksi Lukka, made made the Michelin guide this year, and with good reason. The discreet entrance leads down to a pared-back cellar cellar dining room. Once inside, dishes are seasonal and precisely presented; the orange colours of the whitefish roe in the starter get a callback in the peach ice cream of the dessert. In between there's sole, peas and Finland's signature tiny, waxy summer potatoes (three-course tasting menu £63; There aren't many truly budget places to eat in Turku, but Café Eino in the Market Square is one of them. Inside a flower-fringed tent (open even on snowy winter days) there's a selection of sandwiches and rolls made with local cheeses, siikatartar (bread with whitefish) and gluten-free options (from £5; Brits will feel at home in Turku, a city that seems to insist on a proper afternoon brew, made in a proper teapot. This café, inside an 18th-century red wooden building that was once the city's pharmacy, does it the best, with stacks of vintage china. The traditional Brita cake, made with whipped cream, berries and meringue is big enough to be shared by two (cakes £6; Round the evening off at Rica, a pub that covers all the classics and has house cocktails, such as the Tatanka (vodka, apple and cinnamon), that are actually drinkable (cocktails from £9; Beer fans should head to Panimoravintola Koulu, a brewery in an old schoolhouse with a lovely garden, a two-minute walk away. The hotel's key attractions are threefold: its location near the Market Square, parking underneath the building and air conditioning in the rooms — not something Finns do as standard. The only downside is there's a £22 fee to use the spa (B&B doubles from £119; Great if you're going it aloneTurku isn't blessed with boutique hotels, but this is the closest thing the city has to a bijou bolt hole. There's a dash of mid-century modern with black lampshades and colourful big rugs in the 140 rooms. Eight categories means everyone is catered for, with dedicated rooms for solos and top-price suites with private in-room saunas — although there is also a small spa for general use with a sauna and cold shower too (B&B doubles from £146; Fly to Helsinki, 100 miles east of Turku, then either hire a car for the easy two-hour drive or take the train; single fares from £5 ( Once in Turku the key sights are easily walkable — it's a 30-minute riverside amble from the centre of town to the castle. We're on safari … in the Netherlands

There is a moment on our first evening at the Beekse Bergen safari resort that stops us all dead in our tracks. The kids are wearing the khaki safari hats from the welcome packs left on their wooden bunk beds, and we are relaxing on the veranda of our hotel room, with panoramic views of the 'savannah'. From this elevated position, we're studying our neighbours on this 10-day holiday in the south of the Netherlands: Nubian giraffes, white rhinos, antelope, zebras and ostriches, all intermingling on the plain, metres in front of us. The light is fading and a heatwave is enhancing the African theme of Beekse Bergen. In the humidity, our impromptu animal quiz, aided by our in-room brochure, is halted by a low, menacing rumble. It takes a moment for context to overtake common sense. The thunder we think we're hearing is actually the roar from the pack of lions that live just behind our accommodation. We all fall silent, absorbing one of the primal sounds of nature. It may seem like an unusual place for a safari – close to the modest city of Tilburg and 20 miles west of industrial Eindhoven – but this is a safari holiday Netherlands-style, where you don't have to fly to Africa to get close to our planet's most impressive mammals. The 120-hectare resort is a group of interconnected sites, comprising a hotel, lodges, chalets and cottages overlooking several open plains full of wildlife; the safari park, which guests can explore on foot through a connecting gate from the resort; a lakeside resort with a beach, more lodges and a campsite for all budgets; and the Speelland theme park – with indoor and outdoor rides, slides and games. The resort has strong conservation credentials, with many species that are designated 'vulnerable' or 'extinct in the wild' protected here as part of a Europe-wide network of more than 300 zoos, aquariums and parks, including Chester Zoo in the UK. The rangers tell us that all the animals living in Beekse Bergen were born here or moved to the park from another zoo; none were taken from the wild. The Dutch have a particular, tailored approach to family holidays, designing thoughtfully for children but without compromising on aesthetic and luxurious touches for adults, and Beekse Bergen is no exception – it's a hit with our seven-and 11-year-olds, and us parents, too. Custom-made bunk beds in one room, a picture window with views of the animals while soaking in the bath in another: attention to detail and lots to keep the kids entertained. For anyone staying, there is free unlimited access to the enormous safari park by car, bus or – our favourite – walking trails. Unlike a single costly trip to a regular zoo, we can make repeat visits to enjoy as many of the 100-plus animal species as we can, and at our own pace. Highlights include a magnificent Amur (Siberian) tiger, freestyling ring-tailed lemurs shrieking close above our heads, blustering rhinos locking horns over food, and the quiet grace of the African elephant families. Small 'ferry' boats with guided tours (in Dutch) take passengers from zone to zone, via lakes where we get a rare sighting of two iridescent kingfishers – a personal highlight among the more spectacular beasts. By the end of our stay, a battered map covered in ballpoint pen ticks is hard evidence of two children brimming with memories. We love the birds of prey display, with vultures, eagles, owls and storks swooping low over our heads, catching food thrown for them in mid-air. There are scheduled lion-feeding sessions and we stumble across the seals' mealtime, laughing as the three blubbery mammals wriggle comically out of the lake and on to the sand. For an extra €17.50 (£15) per person, there is also the option of a 45-minute 'game drive' with a guide – ours is the excellent Eva – to get up close and personal, away from the main car trails. We meet alpha male giraffe Jim and his harem, and as the herd licks the roof of our cruiser with their giant tongues, our amazed seven-year-old clicks her camera over and over again. Evenings are for indoor bowling, eating at one of multiple restaurants or relaxing back in the lodge. We visit the Speelland theme park a couple of times – a brilliantly wholesome outdoor and indoor activity centre with fairground-style rides, pedalos in the lake, go-karts and bouncy castles. We pop into nearby Tilburg (15 minutes by car; 25 minutes on a bike) for takeaway pizza, grocery shopping and a day perusing the shops and markets, visiting a traditional Dutch pancake house for lunch. There's also time for a day trip to Amsterdam (less than 90 minutes by train from Tilburg), where we wander over the canal bridges, meander along beautiful streets with vintage antique stores and hop on and off the tram. Our youngest decides she wants to move to the pretty Dutch capital so she can ride her bike to work every day. Back at the park, we split our stay between the hotel and the resort. Our first few days are in one of the hotel's Savanne rooms, geared to guests who want to eat at the resort's many à la carte, buffet or fine dining restaurants. We then move to a Savanne lodge at the 'top' of the safari resort, with a view of the bigger 'Masai Mara plain'. The detached lodges are more spacious with full kitchens, ideal for self-catering families. Some even have saunas. While there is a small grocery shop on site, nearby Tilburg has plenty of supermarkets to stock up at. Our tip would be to budget for the significant additional cost of breakfast, lunch and dinner if you stay at the hotel. While the veranda view of the plain from our first hotel room is spectacular, the additional cost of eating out makes the self-catering lodge much more affordable. Is there a specific age where our fascination with animals dims, before being reignited as a parent? I would say for any child pre-secondary school – before the self-conscious cynicism and underwhelmed eye-rolls kick in – Beekse Bergen is a remarkable family holiday, especially for those interested in the natural world. 'A safari in the Netherlands?' your friends will ask, intrigued and maybe a little sceptical: 'How does that work?'
