How the potato went from banned to beloved

Potatoes were once so despised they were linked to leprosy. What changed? It's a tale of propaganda, survival, and ordinary people's resilience. The potato's journey from despised and feared to dinner-table staple reveals how this simple root reshaped economies and cultures.
This history of the potato, like the spud itself, has been baked into folklore, mashed into politics, and fried into a thousand origin myths. However, the tuber's rise to global stardom wasn't a simple matter of hunger meets harvest—it was a slow-cooked saga of stigma, spin, and sheer necessity.
What started as sacred Indigenous knowledge of the potato was swiftly rebranded as salvation. Monarchs, scientists, and opportunistic propagandists all took turns serving the spud as miracle, menace, or national mascot.
Still, the potato's real ascent sprouted far from palace gates. While elites thought they were handing down deliverance, it was the people on the ground—farmers, foragers, and famine survivors—who really made the potato take root.
This is the story of how this unlikely outsider made it to the center of the plate, and how optics, politics, and the people who had no choice but to eat it transformed the potato from a rejected root to a revolutionary staple. Before it became comfort food, the potato was considered sacrosanct. High in the Andes, some 8,000 years ago, the Incas and their ancestors cultivated the crop not just as food, but as fortune. Nutrient-dense, cold-resistant, and capable of growing in thin, rocky soil, the potato thrived where little else could and sustained sprawling pre-Columbian civilizations for centuries.
The Spanish conquistadors introduced the potato to Europe in the 1500s, smuggling it among the spoils of colonization alongside maize, cacao, and tobacco. But while the stolen gold and chocolate dazzled, the potato did not. It was fast-growing but unfamiliar, ugly, and covered in dirt like something best left unearthed. By the 18th century, most French recipes were rooted in religion, so while orchard fruits and game birds were celebrated, anything dug from the 'devil's dirt'—like onions, carrots, and especially potatoes—was deemed fit only for peasants and swine. France was facing a famine by the late 1700s and starving—literally and figuratively—for a solution. But Antoine-Augustin Parmentier, a French pharmacist who survived on potatoes as a prisoner in Prussia, rose to become a staunch spokesperson for the spud. To sway the scientific community, he penned pro-potato pamphlets, won scientific accolades for using potatoes to treat dysentery and replace flour, and hosted glamorous, starch-studded soirées for Parisians and international elites. He also gave the tuber the royal treatment by gifting potato blossoms for Marie Antoinette's wigs and the king's lapels to debut exotic potato couture at court.
Still, convincing the aristocracy to enjoy and advertise the potato wasn't enough. Parmentier had to win over the working class,who had long been taught to despise the spuds. Proving potatoes were edible meant staging the oldest marketing trick in the book: exclusivity. When Louis XVI granted Parmentier 54 acres of land near Paris, he had his potato plants guarded by day and left unprotected at night, tempting locals to 'steal' the coveted crop and plant it themselves. In 1772, the Paris Faculty of Medicine finally stamped the spud 'food safe,' sowing seeds of survival that France would soon be forced to reap when its wheat failed. Later in 1789, just as the French Revolution boiled over, Parmentier published a royal-backed murphy manifesto.
By the century's end, potatoes had gone mainstream:Madame Mérigot's La Cuisinière Républicaine became the first potato cookbook, pitching the tuber as 'the petrol of the poor,' according to Rebecca Earle, food historian and professor at the University of Warwick. While Parmentier was staging tuber tactics in France, potato propaganda was planting roots across the globe. In Prussia, Frederick the Great saw political promise in the crop and ordered peasants to grow it. When they resisted, he threatened to cut off their ears and tongues, then used Parmentier-esque reverse psychology, declaring the potato a 'dish fit for a king,' essentially transforming it from pig food to royal fare.
By the 19th century, the potato had evolved into palatable patriotism, driven by rulers, reformers, andscientists who knew that controlling food was a form of power. Outside of Western Europe, Irish fleeing famine brought tubers into the Americas. In Russia, it became the backbone of everyday diets. Once promoted as a strategic food security crop in China, it's now the most widely grown staple and a street food favorite in the country. In Peru, the potato's birthplace, it remains a symbol of cultural pride and biodiversity, with thousands of native varieties still cultivated in the Andes.
From Indian aloo gobi to Korean gamja jorim, the potato has managed to slip effortlessly into any cuisine, reinventing itself wherever it takes root and feeding millions along the way. The potato's impact today
In modern Western food culture, the potato has faced a new kind of public relations problem. Once celebrated as a symbol of resilience, today it's often cast as a dietary delinquent: too processed and too passé.
Much of the demonization of the potato is tied to how it's prepared. 'Most potatoes in the U.S. are eaten as highly processed snack food,' says Earle. 'We've forgotten that a simple boiled potato is a joy.'
While it may have fallen out of favor in the U.S., the potato's role on a larger scale is far from fried. In kitchens around the globe, it's still prominent, feeding billions, and in food policy circles, it's gaining new attention as a climate-resilient, nutrient-dense staple.
Earle puts it best: 'A potato cooked slowly from cold water, gently boiled and simmered until perfect, is nothing short of revolutionary.' In that humble preparation, class lines fade: anyone can afford it, and anyone can master it. A humble boiled potato becomes a taste of equality, with the power to nourish, unite, and upend the status quo.

Hamilton's public school board is exploring the creation of a standalone Indigenous school to give students from kindergarten to Grade 12 'cultural immersion' while learning the Ontario curriculum. This next step aims to contribute to ongoing truth and reconciliation efforts in education, Indigenous education lead Jolene John said at a June 5 program committee meeting . 'The need for an Indigenous school has been consistently voiced by Indigenous students, families and community organizations,' she said. Hamilton-Wentworth District School Board program committee trustees supported the move to develop programming and work toward launching the school 'alongside the local Indigenous community,' the recommendation reads. The school, an idea that dates back 25 years, would be open to Indigenous and non-Indigenous students who want to learn 'from rich Indigenous world views and teaching and learning pedagogies,' John said. It would be based on the existing Learning Nest program that offers First Nations, Inuit and Métis high school students a chance to earn credits through learning experiences, including teachings, language and participation in cultural activities. Students would be able to choose to stay at their home school or attend the Indigenous school, which John said would likely be set up in an existing HWDSB building. Costs associated with starting the school have not yet been shared. The framework for the school will be developed in partnership with the board's Indigenous Education Circle and local non-profit Niwasa Kendaaswin Teg, and adhere to Ontario curriculum expectations. In a 2024 survey of the Native Youth Advancement with Education Hamilton (NYA:WEH) initiative to help keep kids in school, 84 per cent of caregivers saw improvements in students' attendance, grades and behaviour. Eighty-seven per cent said it helped them stay in school, and 90 per cent reported 'increased pride in their Indigenous identity.' The results, which also included recommendations for endangered Mohawk and Ojibwe languages, 'reaffirmed' the need to expand programming, John said. John said say they're exploring a partnership with Ohsweken language school Onkwawenna Kentyohkwa to ensure adequate staffing, which has been a challenge in existing HWDSB Mohawk language programs. The board says it's only aware of one other Indigenous school in the province, Kâpapâmahchakwêw — Wandering Spirit School at the Toronto District School Board. Trustee Maria Felix Miller, who said two of her Ward 3 schools have significant Indigenous populations, asked what impact the school would have on the 'vibrant' programming that already exists. Deseret News 175 years: From settlement to 3.5M people

An estimated 20,000 Indigenous people lived in what is now Utah when the Mormon pioneers arrived in the valley of the Great Salt Lake in 1847. Those Native Americans included members of the Ute, Paiute, Goshute, Shoshone and Navajo tribes. The pioneers themselves numbered around 1,637 that first year. 'When the pioneers arrived here, there was already a substantial Indian civilization and culture existing,' Elder Marlin K. Jensen, a member of the Quorum of the Seventy of The Church of Jesus Christ of Latter-day Saints, said in a July 24, 2010 speech on what is now celebrated as Pioneer Day. The pioneers no more 'discovered' the Great Basin than Christopher Columbus 'discovered' America, he said. Elder Jensen, a former church historian who is now an emeritus general authority, cited a July 31, 1847, journal entry from Mormon pioneer William Clayton: '(The Shoshone) appear to be displeased because we have traded with the Utahs, and (the Shoshone) say that they own this land and the Utahs have come over the line.' 'The truth of the matter is that the Mormon pioneers had 'come over the line' as well,' Elder Jensen said. 'Perhaps only Brigham Young, with his prophetic gifts, could have foreseen at that time that the tiny trickle of pioneers who were then coming into the Great Basin would one day, in just a few years, grow into a mighty stream of immigrants.' As more pioneers arrived, the population in the territory grew to an estimated 3,000 in 1848. Two years later, it more than tripled to 11,380. And over the next decade, it swelled to 40,273 in 1860, a 253% increase, according to U.S. census figures. Though not at that rapid rate, Utah has sustained marked growth since 1900. More recently, it was the fastest-growing state in the country from 2010 to 2020. As of July 2024, Utah had a population of 3.5 million people, according to the U.S. Census Bureau. Among the few possessions those early pioneers lugged across the plains was a Ramage printing press in an ox-pulled wagon. Named after American printing press manufacturer Adam Ramage, pioneer William Phelps bought the press in Boston. It was used to print the first issue of the Deseret News on June 15, 1850. Since that day, the Deseret News has chronicled life in what is now Utah and beyond, including the state's dramatic growth over the past 175 years. The early settlers immediately began planting crops and building houses in their new high desert home. And Brigham Young started making plans. 'Although the struggle for survival was difficult in the first years of settlement, the Mormons were better equipped by experience than many other groups to tame the harsh land. They had pioneered other settlements in the Midwest, and their communal religious faith underscored the necessity of cooperative effort. Basic industries developed rapidly, the city was laid out, and building began,' according to Settlement of outlying areas began as soon as possible. Between 1847 and 1900, the Latter-day Saints founded about 500 settlements in Utah and neighboring states. The dawn of the 20th century brought technological revolutions that would transform society. Salt Lake City saw its first automobile early in the 1900s, and the first airplane wasn't far behind. A U.S. census bulletin dated Feb. 4, 1901, showed Utah — only admitted as a state five years earlier — with a population of 276,749, a 33% increase over a decade earlier. 'The population of Utah in 1900 is more than twenty-four times as large as that given for 1850, the year Utah was organized as a territory,' according to the bulletin. In the Roaring Twenties, first letters then passengers began flying out of Salt Lake City's Woodward Field, a 100-acre landing strip the city bought in 1920 for mail operations. Named after local pilot John P. Woodward, the field evolved to become the Salt Lake City International Airport. Utah experienced modest growth through the 1930s, but saw a rapid and sustained influx of immigrants through the 'war years,' the 1940s. Utah's population increased 25.2% during that decade — most coming on the Wasatch Front — as it grew from 555,310 to 688,862, according to HistoryToGo. Immigration greatly increased the minority population, especially as Black and Hispanic people moved in to take defense jobs. Many immigrants during that period were not members of the predominant religion. The U.S. government also relocated 10,000 Japanese Americans from the West Coast to Topaz, Utah, as part of an anti-Japanese movement during World War II. In 1947, Utahns celebrated 100 years in the Salt Lake Valley. Despite earlier problems the U.S. government had with those 'pesky Mormons,' as the Deseret News-produced book 'Through Our Eyes' put it, all was forgotten. President Harry S Truman sent congratulations on the pioneer centennial: 'Utah stands in a proud place among her sister commonwealths. Her rich agriculture, her business and industry, her pioneering in social services, her zeal of education, and not the least, her men of wisdom and valiant women have given her prestige unexcelled by any other state.' As of July 2024, Utah was 75.5% white, 16% Hispanic, 2.9% Asian, 1.6% Black and 1.6% Native American or Alaska Native, according to the U.S. census statistics. Through the 1950s and early 1960s, the state's population kept a steady pace toward 1 million residents, finally hitting the mark in 1966. Community leaders celebrated the achievement by greeting Utah's newest resident, Morris M. Arnold — dubbed 'Mr. Million' — with a 60-piece band as he stepped off the airplane from Kentucky. The state's population reached 2 million just 29 years later. And 20 years later, the Beehive State hit that 3 million population milestone sometime in October 2015. 'Three million Utahns. Wow,' Pam Perlich, director of demographic research at the University of Utah Kem C. Gardner Policy Institute, said at the time. She called it a 'stunning achievement' for a geographically isolated Intermountain state that in 1950 had only 500,000 residents who came and went based on the ebbs and flows of agriculture and mining. The state picked up another 60,000 residents between July 2023 and July 2024, pushing it past 3.5 million, per the U.S. Census Bureau. Last October, the Gardner Institute projected Utah would grow from 3.5 million to 4 million residents between 2024-2033, an average annual growth rate of 1.5%. 'The short-term projections indicate continued statewide population growth driven by a nearly 50/50 split between natural increase and net migration out to 2033. Continued economic growth largely drives this migration of new residents to Utah,' said Mallory Bateman, director of demographic research at Gardner. 'A combination of historical data, trends and local expert knowledge inform our baseline projection scenario.' Utah's seven most populated counties in 2023 were Salt Lake, Utah, Davis, Weber, Washington, Cache and Tooele, and that order is not expected to change by 2023, per the Gardner Institute. The order of growth, however, differs for those counties. Utah County is predicted to gain the most new residents (164,000), followed by Salt Lake (125,000), Washington (63,000), Davis (43,000), Weber (27,000), Cache (22,000) and Tooele (20,000).
