
Ancient Romans' favorite sauce reveals fishy secrets after 1,800 years
Researcher Gonçalo Themudo published his findings in the journal Antiquity on July 2. The research centered around garum, a fermented fish sauce that Ancient Romans enjoyed as a popular condiment.
Themudo, a biologist based in Portugal, was able to recover DNA from the fish remains in an ancient garum-making vat at Adro Vello, an archaeological site in Galicia, Spain.
At the bottom of the vat, researchers uncovered small, fragmented fish bones – mostly vertebrae – that were remarkably well-preserved.
They were 1,800 years old and heavily processed during fermentation, yet the DNA in the bones was still intact enough to study.
Themudo successfully recovered and sequenced the genetic material, with the results confirming the ancient sauce was primarily made from sardines.
"We knew from other sources and from the morphological identification that these should be sardines," Themudo told Fox News Digital.
"But there was always a possibility the morphology was wrong because these were based on loose and very small vertebrae bones."
"Romans most likely liked its rich flavor and versatility as a condiment – and prices seem to have matched their fondness for it."
The recovery of viable DNA was unexpected.
Themudo said he was "really doubting" it.
"It was a real surprise when we got some positive results for the presence of DNA and then when we were able to match it to sardine DNA," he said.
The sauce was exported widely across the Roman Empire, meaning the local sardines were probably being used to season dishes far away.
Themudo said that garum was "full of glutamates, giving it a rich umami or savory taste, similar to what you get in modern fish sauces, broths, shellfish, mushrooms or some cheeses."
"Romans most likely liked its rich flavor and versatility as a condiment – and prices seem to have matched their fondness for it," Themudo noted.
"It could be used as fish broth and used to season meat or fish during preparation of meals."
He also compared garum to soy sauce — or, to be more accurate, the fish sauce commonly enjoyed in Southeast Asian cuisine today.
"It would probably also have a strong fish smell," he said. "It could be used as fish broth and used to season meat or fish during preparation of meals."
The study also underscores the value of ancient DNA research, Themudo stressed.
DNA molecules degrade over time, breaking into ever-smaller fragments due to chemical and physical damage, particularly in fermented products, Themudo said.
"Think of [DNA] as narrow and extremely long sheets of paper filled with the letters A, C, G and T," Themudo said.
"Someone takes those sheets of paper and starts tearing them in half, and then takes each half and tears those, and so on. As time passes, the pieces of paper become [so] small that they become unreadable."
The discovery also shows that, even in difficult conditions, ancient DNA can survive — and be deciphered.
"This study not only proves that we can extract and sequence ancient DNA from fermented fish remains," he said. "It also opens new avenues to the study of population dynamics of these fish species through time."

FacebookTweetLink A 4,000-year-old handprint has been discovered on a clay model used for offerings in an Ancient Egyptian tomb. Researchers from Cambridge University's Fitzwilliam Museum, in the United Kingdom, stumbled upon the imprint while preparing for an exhibition, which is set to open this fall. It was found on the base of a 'soul house,' a building-shaped clay model typically found in burials and said to have provided a place for the soul to live, according to a press release from the museum. The model has an open space at the front where food offerings, like bread, lettuce or an ox's head, could be placed. Dating back to about 2055–1650 BCE, the soul house underwent extensive examinations that revealed how it was made four millennia ago. It showed that the unnamed potter would have first created a framework of wooden sticks for the two-story building, which was then coated with clay. The firing process would have burnt the wood away. The handprint was found underneath the soul house and was most likely formed when the potter moved the model while the clay was still damp and before it was fired in a kiln. 'We've spotted traces of fingerprints left in wet varnish or on a coffin in the decoration, but it is rare and exciting to find a complete handprint underneath this soul house,' said Helen Strudwick, senior Egyptologist at the museum and curator of the exhibition. 'This was left by the maker who touched it before the clay dried,' she said in the release. 'I have never seen such a complete handprint on an Egyptian object before. You can just imagine the person who made this, picking it up to move it out of the workshop to dry before firing.' 'Things like this take you directly to the moment when the object was made and to the person who made it, which is the focus of our exhibition,' Strudwick added. Vast amounts of pottery have survived from the ancient Egyptian period as ceramics were widely used for functional objects and decorative pieces. It was common for pottery containing food and drink to feature in burials. While much is known about ancient Egyptian rulers like Tutankhamun, the stories of those who made some of the many artifacts discovered in their tombs is often overlooked. The ready availability of clay and low value of pottery is likely to have affected social status of potters, according to the museum. The soul house will be on display at the Cambridge museum as part of the 'Made in Ancient Egypt' exhibition, which aims to highlight the stories of artisans like the one who left this handprint behind. This Ancient Roman Artifact Is Also a 453 Million-Year-Old Fossil
Despite how Ross' paleontology career is treated by his companions in Friends, there's something special about finding the remains of creatures that lived millions if not billions of years before us. In fact, humanity's interest in paleontology isn't a modern development. Ancient Romans were just as fascinated by fossils. According to the ancient Roman historian Suetonius, Emperor Augustus established the first known paleontological museum at his villa on the island of Capri, where he showcased the bones of ancient 'giants' and 'monsters.' While paleontologists have yet to uncover such fantastical remains, a study published Thursday in the journal Science describes something that, in my opinion, is even more special—an ancient Roman amulet crafted from the fossil of a critter that lived between 453 and 460 million years ago. The researchers claim that the artifact 'represents the first documented trilobite in the Roman world and the earliest known reference to this fossil group—and the intentional manipulation of a trilobite specimen—in all of classical antiquity,' they wrote in the study. Trilobites are a group of marine arthropods that existed between 521 and 251 million years ago. It's also the 'third trilobite in the global archaeological record to have been collected and used by people over a thousand years ago,' they added. The rare artifact came to light in a Roman settlement in northwestern Spain called A Cibdá of Armea that existed from the first to the third century CE. The researchers suggest that the fossil itself originated in shale outcrops over 267 miles (430 kilometers) away from the Roman settlement. The trilobite likely reached the settlement via trade or as the property of someone from central Lusitania (a Roman province in Spain) moving to the region. Either way, someone clearly altered the fossil. 'The Armea trilobite fragment unquestionably shows evidence of anthropic work, particularly on the underside and left side of the piece,' the researchers explained. 'These marks do not affect the upper surface, which displays the characteristic articulated segments of a trilobite's dorsal exoskeleton. It seems clear that the person who modified the stone intended to leave that natural surface untouched, while simultaneously adapting the fossil to its new function.' According to the study, the modified fossil could have functioned as a game token, a part of a necklace or bracelet, a banded pendant on a metallic mount, or simply an object people carried in their bag or pocket. Regardless of how the trilobite was fashioned, it was likely kept for supernatural, propitiatory, or medicinal purposes and abandoned between the first and third centuries CE. 'It is plausible to consider that the Armea trilobite may have been perceived to hold magical and protective powers for its wearer, as is the case with fossils or even trilobites in other well-known archaeological contexts,' the researchers wrote. Coincidentally, archaeologists found the trilobite next to a bronze coin of Augustus. The discovery is a testament to the fact that humanity's curiosity for that which came before us is a universal trait that transcends cultures, borders, and even time itself. It stands as a reassuring reminder, especially in times like these—when the only thing everyone seems to agree on is our many differences.
