Masala Pyaaz
Ingredients: Kashmiri red chilli powder - 1tbsp, chaat masala - 1tsp, black salt - 1tsp, mustard oil - 1tsp, green chillies - 2, juice of 1/2 a lemon, fresh coriander, salt to taste
Method: Peel and chop your onions into delicate ringlets and soak for a bit in ice-cold water — emphasis on the ice-cold! Once they're done soaking and are completely crisp, douse them with all the ingredients and give it a good mix before devouring with your meal.
Malai Laccha Pyaaz
Ingredients: Fresh curd - 5 to 6tbsps, a touch of fresh cream, black pepper powder - 1tsp, black salt - 1tsp, elaichi powder - 1/2tsp, green chillies - 1, melted butter, fresh coriander
Method: Follow directions above.
Side note: Don't skimp on the dollop of cream and melted butter — it's what will help the creamy mixture wrap itself on the onions.
Chutney Pyaaz
Ingredients: Fresh coriander and mint leaves, green chillies - 3 to 4 pieces, hing - 1/2tsp, ice cubes and salt to taste, mustard oil - 1tsp, fresh coriander, juice of 1/2 a lemon
Method: To make the green chutney, simply blitz together the coriander, mint leaves, green chillies, hing, an ice cube and salt together. Transfer this to a mixing bowl, throw in the onions, top with mustard oil and juice of half a lemon and your chutney pyaaz is ready.

Women and children also participate in this traditional activity, turning it into a family business that is often celebrated at the community level. Almonds are used extensively in traditional cuisine, especially in sweets and beverages such as kehwa. Locally grown almonds are preferred over imported varieties due to their superior taste and freshness. Despite their importance, almond farmers in Kashmir face challenges such as erratic weather patterns, limited access to modern farming techniques, competition from lower-cost imports, shrinking farmlands, and a lack of policy support from authorities. To address these issues, the government is now planning to introduce high-density varieties of almonds across Kashmir. Ingredients 4 medium-sized boiled potatoes 2 tbsp oil 1 tsp cumin seeds 2 dried red chillies 1 bay leaf 1 tsp kasuri methi 1 tsp grated ginger 1 finely chopped green chilli ¼ tsp asafoetida ½ tsp Kashmiri red chilli powder ½ tsp turmeric powder 1 tsp coriander powder 4 tomatoes blended into pulp Salt to taste ¼ tsp garam masala Finely chopped fresh coriander leaves Water as required Recipe Boil the potatoes, allow them to cool, and mash them roughly with your hands. Don't mash them into a fine paste, small chunks should remain for texture. Heat oil in a pan. Add cumin seeds, dried red chillies, and bay leaf. Once they start to crackle, add kasuri methi, ginger, green chilli, and asafoetida. Saute until fragrant. Add Kashmiri red chilli powder, turmeric, and coriander powder. Cook until the raw smell of the spices disappears. Pour in the tomato pulp and cook on medium heat until the masala starts to release oil. This is the key step for rich flavour. Add the mashed potatoes and mix well. Adjust the water depending on whether you prefer a thick or runny gravy. Add salt to taste and let it boil for 5–7 minutes. Sprinkle garam masala and chopped coriander on top. Mix once again and let it simmer for another 2–3 minutes. Your halwai -style Bhandara wali Aloo ki Sabzi is ready to serve!
