A busy mother-of-three dropped an impressive four stone in only a matter of months by kicking her £1,200-a-year addiction to cheese.
Lucy Castle, 41, from Leicestershire, fell into a trap of unhealthy eating—gorging on oven baked camembert, brie and french bread—whilst she ran around after her three boys.
But when she was diagnosed with type two diabetes in March 2024, she knew something had to change.
'I was a busy mum so I used to find the quickest easiest option,' the diet consultant and women's wellness coach said.
'But cheese was wrecking my life. I was spending £25 a week on different cheeses. My favourite was brie,' she added.
As well as covering her meals in cheese, she would also snack of chocolate bars and crisps throughout the day, before ordering a takeaway—whatever was 'easiest'.
But after having her youngest son, now two, Ms Castle's health quickly began to decline as she struggled to lose the baby weight and her confidence plummeted.
'I wasn't feeling well. I was dizzy. I had pins and needles and come out in sweats,' she said.
'I used to avoid social events, hide away in baggy clothes and I couldn't keep up with my boys.'
Then after visiting her GP, the mother-of-three was diagnosed with type two diabetes—a common condition in which the body struggles to make enough of the hormone insulin, increasing the risk of heart disease, kidney disease and even stroke.
Unlike type one diabetes however, the condition is preventable and can be managed through diet and exercise.
'That was my wake-up call,' Ms Castle said.
Determined to reverse her diagnosis and be able to keep up with her growing boys, Ms Castle tried the 1:1 diet—a very low calorie diet plan designed for rapid weight loss, also known as the Cambridge diet.
The plan involves eating four replacement meals a day—specially made shakes, soups, porridges and snack bars—which fulfil a person's daily nutritional requirements while avoiding added calories.
The diet works by putting the body into a state of ketosis—forcing it to burn stored fat rather than carbohydrate for energy.
Ms Castle, who now supports others with their weight loss journeys, said: 'Seeing the scales every week and my weight going down—it kept me motivated.

'Before I couldn't keep up with my children. My back was hurting—my knees, my hips. Now I have more energy.
'I feel so much happier, my health is back on track and I'm enjoying life with my boys more than ever.'
The busy mother managed to lose a stone a month, totalling an impressive four stone on the diet which she has now stopped in favour of home-cooked meals such as chicken stir-fry and healthy snacks after reversing her diabetes.
She added: 'For the first time in years, I now love shopping for clothes that make me feel amazing.'
Now the mother-of-three hopes to inspire others to lose weight and prioritise their health.
'You can do this too,' the wellness coach said. 'Take it one day at a time, stop being hard on yourself, and practice self-love.
'It's not just about losing weight—it's about finding yourself again.'
The Cambridge diet remains one of the most restrictive diets out there and a popular alternative to blockbuster weight loss jabs such as Ozempic and Mounjaro.
Participants are given a low-calorie diet, totalling around 800 calories a day for between 12 and 20 weeks.
Dieters on the plan will also get support from a nurse or dietitian to reintroduce healthy foods and maintain weight loss, while medications for type two diabetes can be stopped if seemed safe.
Adults who have been diagnosed with type 2 diabetes in the last six years and have a BMI of over 27 are eligible for the programme.
Since its launch in 2020, over 25,000 people have been offered the NHS soup and shake programme, with the number to double in the next five years.
However, experts have warned that forcing the body to burn fat rather than carbohydrates can have devastating consequences for women's health.
Lisa Goldstein, a leading nutritionist who specialises in reproductive health told the Daily Mail: 'When you don't eat enough - especially too few carbs - your brain can switch off ovulation.'
Medically known as hypothalamic amenorrhea, this is the body's way of avoiding pregnancy when energy reserves are low, she explained.
This can be caused by being on a calorie-restrictive diet.
'Unlike men, women's reproductive systems require a minimum threshold of calories, carbs and body fat to function', she added.
The 1:1 diet has also been linked to muscle loss, fatigue, diarrhoea and gallbladder stones.

Adding bereavement education to primary school curriculums has been hailed as an important change that could bring long-term societal update to government guidance on relationships, sex and health education (RSHE) has advised that from September 2026 children should be taught about dealing with death before leaving primary guidance says pupils should be reassured that "grief is a natural response to bereavement" and that "everyone grieves differently".Simon Wright, chief executive of Norfolk-based bereavement charity Nelson's Journey, said: "We know that unsupported grief for children can have quite devastating consequences that can stick with children for some time." The RSHE change formalises an issue which is already addressed by some schools, with Nelson's Journey among the organisations to offer training for teachers and other professionals. Mr Wright said his staff were "very pleased" about the addition as many people do not realise how prevalent the issue said that research showed one in 29 school age children experienced the death of a sibling or parent and that the Little Plumstead-based charity received around 700 referrals for young people every Wright, the former MP for Norwich South, continued: "Developing that understanding of grief for all young people is incredibly important, both for those young people who have experienced death but also for all children to understand their relationship with others who may be grieving."So we feel this is an announcement that could have a really positive impact."Some schools in Norfolk already do include discussions about death and we're always really keen to talk to teachers who do that and discuss the approaches they can take with different aged children." 'Children are inquisitive' Jay Harrison works as part of the bereavement service offered by the mental health charity Norfolk and Waveney Mind - and has also praised the change as positive news."Kids are cleverer than we give them credit for," said Mr Harrison. "They are inquisitive, so they are going to have questions about what happens."I think it's our duty as adults and responsible people who are maybe a little bit more in touch with our emotions and our feelings, to be able to impart that knowledge on young people and realistically create a more resilient community moving forward." Shannon O'Sullivan, headteacher at Thomas Bullock Primary School in Shipdham, has also welcomed the addition from the Department for to BBC Radio Norfolk, she said: "Preparing children for these real-life events and normalising that we have an emotional response to loss will really help children to understand that feeling worried or low is normal and doesn't automatically mean that there are wider issues."We as adults understand that grief is linear, it's a journey and we give ourselves time – and sometimes not enough time – to have those periods of emotions."So teaching children that it is okay to express yourself and teaching them the language around that is going to be the building of understanding that helps them to have those emotions." A hospital chaplain has retired after 28 years of offering support to patients, staff and George Sarmezey, who has just turned 64, stepped down from his role at Northampton General Hospital on first joined the chaplaincy team in 1997 on a three-year contract, but when his senior colleague left, he ended up "stepping into his shoes"."I stayed [in the job] for 28 years for family reasons but also there wasn't anything better out there and I just enjoy the ministry and the job," he explained. The chaplaincy team supports the religious, spiritual and pastoral needs of everyone on the hospital site, including patients, visitors and Sarmezey had previously worked as an assistant priest in Bristol and Swindon and carried out visiting on wards at the Bristol Royal Infirmary. He said he applied for the job after seeing it advertised in The Church Times. 'Don't really retire' One of the highlights of his time at the hospital, he said, was working on a 2008 project with the King's Fund to refurbish a bereavement suite."The big cultural change... was rather than the families going to the wards to collect the paperwork, they would be able to talk to a dedicated bereavement officer and that was a huge positive change," he plans to take holidays, pick up the guitar again, and continue leading services locally."I'm looking forward to it, but I'm also very aware that priests don't really retire!" he added. The hospital's director of nursing thanked the reverend for his "incredible support for our patients, their families and all of our colleagues"."His friendly, reassuring, and deeply sensitive, approach has been invaluable and very much appreciated during his 28 years of dedicated service," said Jo Smith."He has made such a difference to the services we provide our patients and staff." The organisation that manages The Broads National Park has called for better awareness of the "shocking" impact pet flea treatments have on insecticides that are banned in farming due to their harm to the environment are contained in "spot-on" products used on cats and chemicals pose "significant risks" to aquatic wildlife, whether from a dog swimming in the water or indirectly when washing hands or pet bedding, the Broads Authority said."Pet owners aren't necessarily tuned in to the environmental dangers posed by these treatments as the issues have not been widely publicised," said environment policy adviser Andrea Kelly. "It is shocking just how serious the negative impacts might be of these flea treatments on our waterways, especially considering how readily available the products are."Given how many people love seeing kingfishers and other wildlife when on the rivers, we believe lack of awareness is the main reason why this has become such a widespread form of pollution." The Broads Authority, which manages the park in Norfolk and Suffolk, said it welcomed the government's new "road map" to address the will focus on awareness and an evidence-based review, and could lead to regulation of fipronil and imidacloprid."We hope that by adding our name to the list of organisations working to raise awareness of this issue we can better educate pet owners and encourage them to change their habits to help our precious wetland habitats," added Ms Kelly. Consider less-toxic flea and tick treatments, such as those containing dimethicone, which work by physically immobilising parasites rather than poisoning themStop their dog from entering rivers, lakes, ponds or ditches if they have been recently treated with spot-on treatmentsChoose oral chewable tablets that offer protection against fleas and ticks but do not require insecticides to be applied to the coatIf spot-on treatments must be used, apply them only when necessary (as not all pets require year-round use) and try not to get any treatment on their handsSource: Broads Authority The insecticides persist on a pet's coat for week and the chemicals can remain active for up to 90 days, even though they kill fleas within 24-36 particular risk are insects such as dragonflies, damselflies and freshwater beetles - all essential species for a healthy wetland system, the Broads Authority spend much of their life underwater and provide food for fish, birds, and other wildlife, and are "extremely sensitive" to have also shown that nests lined by birds with treated animal fur have a greater number of unhatched eggs or dead chicks, it Emily Nightingale, a vet near Ipswich, said the issue was "deeply concerning"."This is something that the vet sector has been looking at for a number of years - the wider spread of the effects of pesticides that we are using as a preventative in animals, as a treatment for fleas ticks, mites and worms."We need to make sure we are choosing the right treatment so it is appropriate for that animal and their environment, and to make sure we are not over-treating or under-treating."Announcing Defra's roadmap in July, biosecurity minister Baroness Hayman said it would develop a better understanding of the impact of flea and tick treatments."This government is absolutely committed to restoring nature and reducing harms posed by chemicals in the environment," she added.
