Roasted Jersey Royals with crunchy seasonal salad

Jersey Royal season is short so it's best to make the most of these tasty new potatoes while you can. Known for their nutty flavour and delicate skins, Tesco Finest Jersey Royals are the perfect addition to a spring salad. Here, I've roasted them until golden and crisp, and piled them on to a platter with seasonal asparagus, feta and crunchy almonds. It's all finished off with one of my go-to dressings: Tesco Finest Greek yoghurt whipped up with nutty tahini and lots of green herbs.
Prep 15 min Cook 45 min Serves 4
750g Tesco Finest Jersey Royals, halved 3 tbsp Tesco Finest Sicilian extra virgin olive oil, plus extra for drizzling200g Tesco Finest Jubilee asparagus
100g bulgar wheat
100g Tesco Finest barrel-aged feta
25g toasted flaked almonds
For the dressing1⁄2 head garlic, roasted with the Jersey Royals 150g Tesco Finest Greek yoghurt
2 tbsp tahini
Handful parsley
Handful mint, plus extra to serve1⁄2 lemon, juiced
Suggested wine pairing Tesco Finest Western Australia chardonnay
Heat the oven to 220C (200C fan)/425F/ gas 7. Add the potatoes to a saucepan of cold, salted water, bring to the boil and then cook for 12 minutes or until a knife goes in easily. Drain through a colander and leave to steam dry for 10 minutes. Tip on to a lipped baking tray and toss with the olive oil, a good pinch of salt and the half head of garlic for the dressing. Roast for 15 minutes. Add the asparagus and roast for 8-10 minutes more, until it is tender.
Meanwhile, cook the bulgar wheat according to package instructions. Let cool a little.
Squeeze the roasted garlic out of its skin into a blender with the yoghurt, tahini, herbs, lemon juice and 50-70ml of water. Season with salt and blend until smooth.
Add the bulgar wheat and most of the almonds to the tray with the roasted potatoes and asparagus. Then pile everything on to a large sharing plate, finishing with the dressing, remaining almonds and crumbled feta. Drizzle with extra olive oil, sprinkle on mint, and serve.

They were looking forwards to a week of relaxation, but the ordeal "horrendous from the minute they got there," Susan said. After paying £750 each for the week, the sun-seekers were expecting slap-up meals and drinks on tap. But Susan told Chronicle Live: "There was no food we could eat and we couldn't have anything to drink. We had to pay €1.50 for water." Advertisement After a tiring journey - and a long ramp to reach the hotel reception - they were more than ready for food and refreshment when they arrived at around 2pm. But, to their horror, hotel staff said food would not be served to guests until 5pm. And when it finally emerged, it was a measly "one-inch square of baklava", Susan claims. Instead, Susan said: "On a morning you could have toast, a hard-boiled egg, or something in sauce." One night there was a Greek night and they had kebabs, I couldn't eat that. "It's the worst holiday I've ever been on." There are some foods Susan can't eat because she has ulcerative colitis. Advertisement And she didn't fair any better on the drinks front. The all-inclusive drinks were wine, lager, ouzo, or brandy. Susan would plump for a Bacardi and Coke, but her only option was to pay €9 for a knock-off brand. She said: "By the time we paid £750 for the holiday, €70 tourist tax for me and my daughter and an extra £450 for both of our meals, I could have been to the Caribbean on that." Advertisement It was thumbs down for the hotel's facilities as well. Susan said there was no entertainment as the site, which is "stuck in the middle of nowhere", and the 150-yard trek down to the private beach was too steep to navigate. The family has travelled with TUI plently of times, usually to Spain, and they had always been reassured by the firm's experience in curating trips. But after the Corfu cock-up, Susan doesn't think she can stick with the company. Susan Edwards had paid £750 for a seven-night stay at the Lido Corfu Sun Hotel, along with her elderly cousins, daughter, and another cousin. But Susan, 69, from Westerhope, said the holiday was "horrendous from the minute[they] got there." She has specific dietary requirements due to ulcerative colitis, was unhappy with the food available at the hotel and said it was difficult to find suitable meals ‌ Susan said: "It was all-inclusive, £750 each we paid and there was no food we could eat and we couldn't have anything to drink. I have to be careful because I have ulcerative colitis so there's certain things I can't eat. The all inclusive drinks were wine, lager, ouzo, or brandy. Yes, there were soft drinks, but we had to pay €1.50 for water." ‌ Susan said her party arrived at the hillside hotel at around 2pm on May 12 and were ready to enjoy food and refreshments after a long journey. After climbing a large ramp to reach the hotel reception Susan said she was informed that pool-side food would be served at 5pm for guests, which she claims was a "one-inch square of baklava". However, her dissatisfaction with the food at the hotel became worse the following day when she discovered there was "no English food" available. It also describes the four-star hotel as having its own private patch of beach "just steps away". However, Susan claimed there was no entertainment at the hotel which is "stuck there in the middle of nowhere". She added: "There was a private beach but it was so steep we couldn't get down to it and it was 150 yards from the hotel. "There's a ramp at the side of the hotel that you have to try and pull your case up when you arrive. My daughter was up and down, up and down, trying to pull everyone's case up for them." ‌ She also described her frustration regarding the hotel's refusal to provide an additional key for the room she was sharing with her daughter. Susan remarked: "I asked for a second key for my daughter because sometimes I get tired in the afternoon and rather than lying in the sun and getting burned. "But if I went up to have a sleep, my daughter wouldn't be able to get into the room. She would have to wake me up to get in. I asked for a second key but I was told 'no, too expensive'." Susan explained that she usually takes her holidays in Spain with her cousins and always opts to fly with TUI, appreciating the security of having "there's a big company behind you if anything goes wrong." ‌ Nevertheless, she feels that she cannot travel with them again after being left dissatisfied by their response to her complaints.
