Tessier applies traditional French baking techniques to a small-batch, high-quality model. Croissants are made over three days, with long fermentations and careful lamination. The bagels follow a similar principle – boiled, well-glazed and baked for texture – and are offered plain, sesame, jalapeño or everything. Pastries are a major strength, including a Swiss roll with vanilla custard and chocolate, and a honey and sea salt croissant. All products are made from scratch with an emphasis on timing, fermentation and consistency.
Artybaker now employs 30 people and produces everything in-house using time-honoured methods. The bagels, in particular, are widely regarded as among the best in the city.
What did we order?
Turkey club bagel sandwich (sesame), pastrami bagel sandwich (jalapeño & cheddar), veggie bagel sandwich (everything) and lox bagel sandwich (plain).

How was the service?
Very pleasant. You wait your turn and order at the counter.
Was the food nice?
The pastrami bagel with jalapeño and cheddar was the standout. The bagel had a good glaze and proper chew. The cheese had melted, although Swiss cheese would be preferable to cheddar. The filling was generous: pastrami, cheddar, pickled cucumber, iceberg lettuce and a tangy mustard-based sauce with noticeable acidity. Flavours were sharp and well balanced.
The turkey club on a sesame bagel was my least favourite. It came loaded with good quality turkey, grilled bacon, tomato, Swiss cheese, and mayonnaise. I found it a little bit bland, but my wingman ranked it top.
The lox on a plain bagel was a classic salmon and cream cheese bagel with red onion, cucumber and capers. The salmon was farmed, which is to be expected. It was good quality and firm.
The veggie on everything bagel was slathered in cream cheese and stuffed with avocado, tomato, cucumber, coleslaw, iceberg lettuce, capers and dill. The avocado was properly ripe and the overall mix was fresh and balanced. A strong vegetarian option.
What about the packaging?
Bagels are packed in pretty pink and white striped bags, wrapped in recyclable paper.
What did it cost?
€43.50 for lunch for four people: turkey bagel sandwich, €10.50; pastrami bagel sandwich, €10.50; veggie bagel sandwich, €10.50; and lox bagel sandwich, €12.
Where does it deliver?
The Kimmage store opens 7.30am – 3pm. There is no delivery, it is takeaway only.
Would I order it again?
Yes, these are the best bagels you'll get. They're on the expensive side, but they make for a very good lunch.

The Irish Times view on Ireland's wind energy: a fight for funding
Ireland is making slow but steady progress towards ambitious renewable energy targets, but challenges remain – including a more competitive market for attracting private investment. The latest report from Wind Energy Ireland shows that wind energy supplied 24 per cent of the country's electricity needs last month, the third best performance for July on record. According to the Government's offshore renewable energy targets, the objective is to reach 37 gigawatts of wind energy by 2050, which would be enough to cover by a factor of six the current peak demand for electricity in Ireland. There is a lot riding on reaching these targets. The goal of a secure, cost-effective supply of energy remains some way off. Senior multinational companies have warned that future investment relies on this. Moreover, if Ireland does not meet EU-agreed CO2 reduction targets from 2030 onwards, it could be liable for billions in fines. Some of the challenges are homegrown. For example, according to the latest report from Wind Energy Ireland, roughly 14 per cent of the electricity that could have been generated by wind last year was lost due to limited grid capacity. Also, several important wind energy developments have been delayed by planning logjams. READ MORE The Government has earmarked €3.5billion to upgrade the energy infrastructure and reforms to the planning system have improved timeframes on planning applications for wind developments. It is important that there is continued improvement in both of these areas, as one of the main external challenges is access to funding. Recently, the Danish government had to backstop a $9.4billion rights issue by Orsted, the renewable energy developer, as it needed capital to complete US developments. Donald Trump's 'drill baby drill' approach energy policy has caused many investors to switch from renewables back to fossil fuels. Ireland needs billions in investment to develop its offshore wind potential. An efficient infrastructure and planning system is essential to attract future investment in a competitive marketplace for funding.

Appreciation: Dr David Naylor: One of Ireland's most respected geologists
Dr David (Dave) Naylor, one of Ireland's most highly respected geologists, passed away in his 90th year on June 15th in Maryland, USA, following a short illness. During a career of more than 65 years, he worked in academia, the civil service and industry. Born in Yorkshire, and a Leeds University graduate, he spent three years as a field geologist with De Beers in South Africa and Namibia exploring for alluvial diamonds. In 1959 he commenced PhD research at Trinity College Dublin where he was appointed a lecturer in 1961. Following a mineral discovery at Tynagh, Co Galway that led the way to Ireland becoming a major zinc and lead producer, Dave undertook a consultancy project on the drilling results in late 1961. His consultancy fee of £40 went towards the cost of an engagement ring, and in 1962 he married Verney Hickin. Verney became a well-known garden designer and columnist with The Irish Times. In 1964 Dave joined Chevron as a petroleum geologist in Calgary, Canada, carrying out wellsite and helicopter-based mapping projects in the Northwest Territories and the Yukon. In 1969 he co-founded and later became managing director of Exploration Consultants Limited, a London-based consultancy that was heavily involved in the early days of North Sea oil exploration and development. READ MORE Subsequently, in 1976 Dave joined the Geological Survey of Ireland as assistant director, overseeing the field mapping programme, and was Irish technical representative on EC committees and at the United Nations Law of the Sea Conference. In 1981 he became general manager of Oil & Gas at Northgate, overseeing licence interests in offshore Ireland, the North Sea, North America, Australia and Fiji. From 1990 until 2000 he was project manager for ERA-Maptec, and from 2000 was consultant to the 162 Group of natural resource companies in Dublin, often involving field work in the Middle East and elsewhere. An expert on the geology of southwest Ireland and the Irish offshore sedimentary basins, he was adjunct professor at University College Dublin and a research associate at TCD. Co-author of five books and more than 70 scientific publications, his first publication was in 1964. Fittingly, his final publication, in 2024, was in the Irish Journal of Earth Sciences, of which he was a founding editor. Dave loved field work, never losing his enthusiasm or scientific curiosity. He believed that a geologist should never become too far removed from the rocks. Dave and Verney moved from Dublin to Durrus, Co Cork, in 2000, and in 2023 to Maryland, USA, to be closer to their sons, Sean and Mark, and their families. His many interests, in addition to geology, included the piano, jazz music and especially travelling with Verney, often on horticultural/botanical expeditions. They visited dozens of countries including Nepal, Bhutan, China, Argentina, Peru, Australia, India, Iran, Syria and Jordan. Their last trip, shortly before Dave's illness, was to sites along the River Nile in Egypt. Coming from modest means himself, he neither condescended to others nor disrespected an opinion based on the perceived social class of the speaker. A mentor to generations of geologists, he will long be remembered in the geoscience sector and beyond as a kind, generous and wise friend with encyclopedic geological knowledge. He was a true explorer.
