Are people losing their appetite for the classic American breakfast?
The classic American breakfast — eggs, bacon, toast, coffee, orange juice and milk — has been a popular morning meal for decades. And no wonder: It's hot, hearty and filling. It's still a staple on menus at diner-style restaurants across the country, including Denny's, which serves up a close cousin, the All-American Slam.
But times are changing. The U.S. orange juice supply is getting squeezed. Processed meat like bacon isn't good for you. Eggs are expensive. Coffee prices are spiking. People have a hard time digesting milk. And who has time to cook, let alone eat, all of that food in one sitting anyway? While the classic American breakfast isn't dead, as one writer for the Atlantic put it: 'More and more, the notion of the classic American breakfast — bacon, eggs, toast, milk, coffee and a glass of orange juice — is beginning to seem like a snapshot of a bygone era.'
How did this become the quintessential breakfast in the first place? And what changed? Grab a seat at the breakfast table and have a listen.
The history of the American breakfast and why we eat what we eat is a long and multifaceted story, but much of it comes down to two things: convenience and some really effective marketing.
Humans have a lengthy history of eating eggs (we're talking millions of years) and pork. By the late 18th century, those protein-packed foods had become even more accessible: Pigs were abundant in America, and 'pretty much everybody had their own chickens,' both of which were usually cheap to keep, Sarah Wassberg Johnson, a culinary historian, tells Yahoo Life.
But bacon and eggs didn't become an iconic duo until the 1920s, thanks to Edward Bernays, aka 'the Father of Public Relations.' While working on behalf of Beech-Nut to boost sagging bacon sales, he launched a campaign and got 4,500 doctors to sign a statement declaring that 'a hearty meal for breakfast was best,' turning bacon into 'a key player in the classic American breakfast.'
'It helps that American bacon is really delicious,' adds Wassberg Johnson.
Even the concept of breakfast being the most important meal of the day was a 1917 marketing slogan from Kellogg's (yes, of the cereal fame) to get people to eat more cereal in the morning.
Marketing also did wonders for orange juice. 'Orange juice wasn't super-expensive in Florida because everybody could have their own orange tree in their backyards,' says Wassberg Johnson. 'You have to go to places where you can't grow oranges in order to get a viable market.' Ads promoting drinking the juice, along with the discovery of vitamin C in the 1920s, which citrus fruit has in spades, propelled sales.
Milk has also benefited from marketing. While humans have been drinking cow's milk for thousands of years, it didn't become a popular beverage in the U.S. until the late 19th and early 20th century. Even then it needed a PR boost, which at one point came from the government. Kendra Smith-Howard, an associate professor of history at the University of Albany and author of Pure and Modern Milk: An Environmental History Since 1900, told Scripps News that in the 1910s and 1920s, the U.S. Department of Agriculture (USDA) 'touted milk as 'a nutritionally complete food'' with the 'appropriate level of fats and proteins and sugars all in one component."
Selling food is one thing. Getting it to customers is another. The transcontinental railroad in the late 19th century and its refrigerated train cars changed the game when it came to shipping food, and created a mass market for perishable items like eggs, processed meat and orange juice.
The home appliance boom also played a big role. 'The rise of electric home appliances like electric waffle irons and electric coffee percolators and electric egg cookers and toaster ovens' made making breakfast at home easier, says Wassberg Johnson.
All the marketing the world won't help you, though, if a food doesn't taste good, and from a culinary perspective, the classic American breakfast has a good mix of flavors and textures. 'Eggs have that luscious, creamy texture and they're savory, but their flavor isn't so overpowering — it's subtle,' says Sara Haas, a dietitian and recipe developer.
'When you pair that with bacon, which is obviously salty and crispy, you're balancing out that smooth and creamy egg,' she says. 'And then you have the toast, which, when you brown it, makes it a little sweet. So you've kind of got salty, sweet — all of the things going on, which is the secret to the success of many famous dishes. The trifecta of delicious.'
Some elements of the classic American breakfast are still going strong. CivicScience's 2024 breakfast trends report shows that eggs continue to top the list, with 38% of U.S. adults saying they eat them for breakfast on a typical day. That's followed by toast or bagels (32%) and cereal or oatmeal (29%), with bacon or sausage (28%) close behind.
Coffee obviously hasn't lost its luster either: It's still the most popular beverage at breakfast (or really any time of day), with 42% of people choosing to kick off their morning with a cup of joe, while fruit juice and milk (both 12%) ranked much lower.
But eating all of this in one sitting? That's what's changed over time. Here are several reasons why:
Cooking is time-consuming. People don't typically have time to make (or eat) a full hot breakfast before work. The Industrial Revolution played a big role in this. Also, as more women entered the workforce, there was a shift in cooking at home. Big breakfasts are 'dependent on other people's labor,' Sarah Lohman, a culinary historian and author of Endangered Eating: America's Vanishing Foods, tells Yahoo Life. 'Fifty years ago, this was the labor of women.' In 2025, however, 'we are in an era where a two-income household still doesn't make ends meet,' she says. 'So who's making that breakfast?' Instead, it's been relegated to Sunday brunches at home or a local diner.
People want convenience. When cold cereal was introduced in the 1890s (particularly with Kellogg's Corn Flakes), it changed the breakfast game. 'It gets popular because it takes literally no effort to make it,' says Wassberg Johnson. Cereal is quick and easy to prepare, freeing people up from being stuck in front of a stove in the morning.
Some Americans don't eat breakfast at all. 'I think maybe intermittent fasting has killed the American breakfast,' says Lohman. 'I think lots of people aren't eating breakfast.' About 15% of Americans skip breakfast, according to the Centers of Disease Control and Prevention, while 13% of U.S. adults have tried intermittent fasting (which includes not eating breakfast), according to a 2024 survey from the International Food Information Council.
Fewer people are drinking cow's milk. Milk consumption has continued to fall over the past 70 years, according to the USDA. A 2024 Yahoo News/YouGov poll found that 31% of U.S. adults rarely or never drink any type of milk. Younger generations — Gen Z in particular — have gone from 'Got milk?' to 'not milk,' drinking 20% less cow's milk than the national average in 2022. Cow's milk now competes with plant-based milk alternatives, such as almond milk and soy milk. Also, many people simply can't digest cow's milk. (That said, cow's milk may be making a comeback.)
People are more health-conscious. However delicious bacon may be, most people are aware that processed meats aren't healthy. They raise the risk of high blood pressure, heart disease, type 2 diabetes and more. But cutting back on processed meat like bacon by just 30% reduces those risks.
Prices have gone up. Breakfast isn't as affordable as it used to be. Along with egg and coffee prices, the average cost of frozen orange juice concentrate in U.S. supermarkets has skyrocketed by about 90% over the past five years, according to the Wall Street Journal. 'Higher food prices may also be taking a toll on Americans' love of traditional breakfasts,' says MarketWatch report.
Although many people have ditched the full American breakfast for smaller, quicker meals or just a hot cup of coffee, Wassberg Johnson says the filling meal still persists, even if it's mostly at brunch on Sundays. It's a classic, after all.

HSPPR receives $100K grant to address lack of veterinary care in excluded communities
(SOUTHERN COLORADO) — The Humane Society of the Pikes Peak Region (HSPPR) has received a $100,000 grant to address barriers in accessing veterinary care in Pueblo. Many communities have been left out of the veterinary care services altogether due to rising costs combined with geographical, cultural, and other barriers. While many American households include pets, access to basic veterinary services has not kept pace. 'Pets are universally considered important family members and keeping them together requires resources that are often missing,' HSPPR wrote. 'This is particularly felt in many underserved communities where not only cost, but geography and systemic inequities have left veterinary care beyond reach.' In 2023, PetSmart Charities committed $100 million over the next five years toward improving access to veterinary care. The grant focuses on historically excluded communities, according to HSPPR, many of which lack access to community supports, including veterinary services. HSPPR was chosen to receive a grant to address barriers in accessing veterinary care in East Side Pueblo. 'HSPPR is excited to partner with PetSmart Charities and the East Side Pueblo community on this innovative initiative, which will help identify the community's most pressing pet care needs,' said Lisa Johns, HSPPR Director of Veterinary Services. 'HSPPR will work alongside community members and local partners to fill those gaps, with the ultimate goal of bringing additional resources, including affordable access to veterinary care, to the people of East Side Pueblo.' Vaccine sceptic RFK Jr disbands government advisory committee on immunisations
Robert F Kennedy Jr, the US Health Secretary and a prominent vaccine sceptic, has dismissed all 17 members of a committee that issues official government recommendations on immunisations. In an editorial in the Wall Street Journal, Mr Kennedy claimed that 'retiring' the Advisory Committee on Immunisation Practices (ACIP) was necessary to help rebuild trust in vaccines and ensure 'unbiased' health recommendations. 'The committee has been plagued with persistent conflicts of interest and has become little more than a rubber stamp for any vaccine,' he said, adding that he wanted to 'ensure the American people receive the safest vaccines possible'. The move – which some committee members found out about via the media – has been widely criticised by public health experts and scientists, who point to Mr Kennedy's long track record questioning the efficacy and safety of vaccines, sometimes based on dubious science. 'We have just watched politics bury science,' said Dr Michael Osterholm, director of the Center for Infectious Disease Research and Policy (CIDRAP) at the University of Minnesota. 'If you look at [Kennedy's] accusation that he's doing this because of growing problems with vaccine trust – well, that's kind of like an arsonist complaining that so many houses are on fire,' Dr Osterholm said. 'He's the one that's been seeding these doubts for the last decade.' Since he became the Secretary of Health and Human Services, Mr Kennedy has taken a number of controversial decisions related to vaccines – including from bypassing ACIP to issue new Covid vaccine guidance, to stopping adverts for seasonal influenza shots and cancelling a $766 million contract with Moderna to develop a bird flu jab for humans. Now, Mr Kennedy has claimed the ACIP needs a complete overhaul because members have too many conflicts of interest, and are immersed 'in a system of industry-aligned incentives and paradigms that enforce a narrow pro-industry orthodoxy'. But his move appears to directly contradict promises given during his confirmation hearings. Bill Cassidy, a Republican Senator from Louisiana who is also a doctor, said he only voted for the appointment after Mr Kennedy committed to maintain ACIP 'without changes'. 'Of course, now the fear is that the Acip will be filled up with people who know nothing about vaccines except suspicion,' Mr Cassidy wrote on X on Monday. 'I've just spoken with Secretary Kennedy, and I'll continue to talk with him to ensure this is not the case.' In a statement, Dr Bruce A Scott, executive director of the American Public Health Association, added that Mr Kennedy's move would help drive an increase in vaccine-preventable diseases, at a time when vaccine coverage is declining across America. 'Today's action to remove the 17 sitting members of ACIP undermines that trust and upends a transparent process that has saved countless lives,' Dr Scott said. The committee is attached to the Centre for Disease Control (CDC) and included 17 experts – including epidemiologists, infectious disease doctors, vaccine experts and paediatricians – who typically serve overlapping four-year terms. Eight of the members were appointed in January 2025. But it has been in flux since Mr Kennedy assumed office, with its first meeting delayed by the department, before the Health Secretary announced new Covid-19 recommendations in a video posted on social media – unilaterally changing the guidance without an ACIP consultation. Still, retiring all panellists – and deleting a webpage listing the members – has come as a shock to some. Dr Noel Brewer, a professor in public health at the University of North Carolina who was a member of the ACIP, told the Telegraph his removal was 'very unexpected,' given he was meant to serve for three more years. He added that he heard about it only when 'received a copy of the Wall Street Journal article from a journalist', and later received an email confirming it at 5:48pm. 'The most immediate impact of this action is to destroy trust among healthcare providers in ACIP,' said Dr Brewer, a behavioural scientist who specialises in research about why people do or don't get vaccinated. 'The top priority right now is to restore trust in ACIP recommendations. If that is not possible, then it is time for medical organisations to create an alternative vaccine advisory committee for the nation.' On this, there has already been some progress. Earlier this year, CIDRAP launched the Vaccine Integrity Project, which aims to facilitate conversations and offer advice about US vaccine policy – almost like a version of ACIP that's not aligned to the government. 'When I started the vaccine integrity project, there were a lot of doubters that anything of major consequence would happen… [especially after] Kennedy promised in his Senate hearings that he would not take vaccines away from anyone,' said Dr Osterholm. 'Well, look at all this change. 'We are watching the very rapid destruction of critically important vaccine evaluation oversight efforts of the US government, both at the FDA [Food and Drug Administration] and the CDC. These are committees that have performed marvellously well.' He added: 'It's terribly significant. The real victims are the public, specifically young children, who are going to face a very different world of vaccine preventable diseases than even a decade ago… I don't know what happens next, but it doesn't bode well.' US restores some medical research grants, says top Trump official
A senior US health official on Tuesday admitted President Donald Trump's administration had gone too far in slashing biomedical research grants worth billions of dollars, and said efforts were underway to restore some of the funding. Jay Bhattacharya, director of the National Institutes of Health (NIH), made the remarks during a Senate committee hearing examining both recent cuts to his agency and deeper reductions proposed by the White House in next year's budget. Bhattachartya said he had created an appeals process for scientists and laboratories whose research was impacted, and that the NIH had already "reversed many" of the cuts. "I didn't take this job to terminate grants," said the physician and health economist who left a professorship at Stanford University to join the Trump administration. "I took this job to make sure that we do the research that advances the health needs of the American people." The hearing came a day after more than 60 NIH employees sent an open letter to Bhattacharya condemning policies they said undermined the agency's mission and the health of Americans. They dubbed it the "Bethesda Declaration" -- a nod both to the NIH's suburban Washington headquarters and to Bhattacharya's role as a prominent signatory of the 2020 "Great Barrington Declaration," which opposed Covid lockdowns. Since Trump's January 20 inauguration, the NIH has terminated 2,100 research grants totaling around $9.5 billion and $2.6 billion in contracts, according to an independent database called Grant Watch. Affected projects include studies on gender, the health effects of global warming, Alzheimer's disease, and cancer.
