Cocktails With A Cause: How Chef Richard Sandoval Champions Bees

In the citrus groves of Mérida, Mexico, a quiet revolution is taking place—one that blends sustainability, heritage, and the art of cocktail making.
At the heart of this movement is Alma Finca, a Mexican orange liqueur crafted with fresh, local ingredients and a deep respect for the land. It's also where Chef Richard Sandoval, a pioneer of modern Latin cuisine, is planting seeds for the future—both literally and figuratively.
Earlier this year, Sandoval traveled with his children, Giancarlo and Isabella, as well as members of his team to Mérida to meet with Dr. Iván Saldaña, the developer of Alma Finca, as well as members of Miel Nativa, a business dedicated to stingless honey bee (Melipona) production and conservation.

Sandoval is a culinary trailblazer who has spent over three decades redefining Latin cuisine on the global stage. A graduate of the Culinary Institute of America, he grew up between Mexico City and Acapulco, learning the art of hospitality from his restaurateur father and the flavors of traditional Mexican cooking from his grandmother. Today, Sandoval is the founder of Richard Sandoval Hospitality, a contemporary Latin restaurant group with over 60 locations across 13 countries and 4 continents. His mission: to bring Latin flavors to the world while honoring their roots.
'As my children, Giancarlo and Isabella, begin to take on important roles within Richard Sandoval Hospitality, it's essential that they understand the heart of the business,' Sandoval said. 'As a Latin-founded hospitality company, their connection to our heritage, and drawing inspiration from it, is invaluable.'
That connection to heritage is what brought Sandoval and his children to the Yucatán, where they visited orange groves pollinated by Melipona bees. The trip was part of Viva Abejas, a sustainability initiative Sandoval launched to raise awareness about the importance of pollinators.
'When I learned that one in every three bites of food we eat relies on bees, I knew I had to take action,' he said. 'Viva Abejas was born from a desire to give back to these incredible pollinators and educate future generations about their importance.'

Alma Finca is one of the most recent creations from Saldaña, a biologist-turned-master-distiller and the co-founder of Casa Lumbre, a spirits company known for crafting innovative, terroir-driven Mexican spirits. With a PhD in biology from the University of Sussex, Saldaña brings a scientific lens to spirit-making, focusing on biodiversity, sustainability, and cultural storytelling. He's the creative force behind more than 60 spirits, including Montelobos Mezcal, Ancho Reyes chile liqueur, Abasolo Ancestral Corn Whisky, Nixta Licor de Elote, Nocheluna Sotol, and Almave, a non-alcoholic agave spirit developed with Lewis Hamilton.
'Alma Finca is a Mexican orange liqueur that celebrates the extraordinary diversity of citrus in Mexico,' Saldaña said. 'But it's more than just citrus—we use local spices like achiote and allspice, and even the flowers, leaves, and skins of the oranges. It's a spirit deeply rooted in the Yucatán.'
Saldaña's connection to the region runs deep. As a teenager, he spent summers in the area working on conservation projects. 'Yucatán has the largest diversity of citrus trees in Mexico,' he said. 'It's a region shaped by centuries of global exchange, and Alma Finca is our way of honoring that complexity.'
A Story for the Next Generation
As part of the Viva Abejas initiative, Sandoval also authored a children's book titled 'Viva Abejas.' The story follows a young Ricardo who meets a Queen Bee in his abuela's backyard and learns about pollination and conservation. All proceeds go to the World Bee Project.

Honey Lavender Margarita
2 ounce blanco tequila
1 ounce lime juice
1 ounce honey lavender simple syrup
0.5 ounce crème de violette
0.5 ounce Alma Finca orange liqueur
Shake with ice and serve in a rocks glass over fresh ice. Garnish with a lavender sprig and lime wheel.
Sweet Revolution
1 ounce Mezcal Espadín
0.5 ounce honey syrup
1 ounce guava purée
0.25 ounce blood orange juice
0.5 ounce Campari
0.25 ounce Alma Finca orange liqueur
2 ounce sparkling wine
Shake all ingredients (except sparkling wine) with ice. Strain into a frosted snifter glass over ice. Top with sparkling wine and garnish with a grapefruit slice and edible flowers.

Its share price jumped 10% on Friday to above $13.00, pushing its market value to nearly $64 billion. Nubank reported second quarter revenue of $3.7 billion, up 40% from a year ago, which was in line with analysts' expectations. Net profit rose 42% since last year to $637 million. Monthly average revenue per customer climbed to $12.20, exceeding the $12.00 analysts had forecasted. This suggests Nubank is making more money off of existing customers, a part of Nubank's business that is its most important vector for growth, says James Friedman, a senior fintech analyst at Susquehanna International Group . Short-term loan delinquencies, or the number of Nubank customers who are late on their loan payments, decreased by 0.3%, while long-term delinquencies of 90 days or more rose by 0.1% to 6.6%. Nubank attributed the increase to seasonality and a spike in short-term delinquencies in the first quarter. Declining credit quality is a pervasive problem in Brazil, especially with regard to personal loans and credit cards, Nubank's core lines of business. 'This is a concern that has lingered not only with us, but also with many investors and other stakeholders since late last year or early this year,' said chief financial officer Guilherme Lago on Thursday's earnings call. In spite of this, he insisted that Nubank's loans are performing 'largely as expected.' Friedman says Nubank's delinquency results were better than what central bank data had suggested and help to explain the stock's 10% surge on Friday. Nubank has its primary operations in Brazil and smaller business units in Mexico and Columbia. Its $63 billion market value makes it the second largest public company in Latin America after Brazilian banking giant Itau Unibanco. The digital bank attracted 4.1 million new customers in the second quarter, bringing its total user base to 122.7 million, just slightly short of analysts' expectations. Growth was fastest in Mexico, where the number of credit card customers rose 52% since last year to 6.6 million. The stock's performance on Friday morning is likely also driven by the company's planned foray into international markets, says Friedman. In recent weeks, Nubank has announced several new hires, including a new chief technology officer, global head of public policy and chief design officer to better prepare for global expansion, CEO David Vélez explained in response to an analyst question on Thursday evening. Vélez indicated that they're also extending their recruitment efforts beyond just Latin America to find the best global talent. 'The international narrative is rapidly evolving,' Friedman wrote in an email to Forbes . 'I think that's the big surprise.'

TORONTO -- Canadian Prime Minister Mark Carney will visit Mexico in September to meet with Mexican President Claudia Sheinbaum, a senior official familiar with the matter said Friday. The meeting comes as America's neighbors deal with U.S. tariffs and prepare for a review of the free trade deal between the three countries next year. The official confirmed the visit on condition of anonymity as they were not authorized to speak publicly on the matter. Carney sent his foreign minister as well as his finance minister to meet with Sheinbaum earlier this month in a bid to diversity trade. They also met a large group of Canadian and Mexican business leaders, including key players supporting North America's integrated economy, trade infrastructure and supply chains. Stablecoin Payments Projected to Top $1T Annually by 2030, Market Maker Keyrock Says

Stablecoin payment volumes are projected to exceed $1 trillion annually by the end of this decade, according to a Thursday joint report from crypto market maker Keyrock and Latin American exchange Bitso. That growth will be driven by institutional adoption across business-to-business (B2B), peer-to-peer (P2P) and card payment rails, sectors which have already showed signs of rapid uptake, the authors said. The report underscored why stablecoins are gaining ground in finances: they can outcompete traditional payment methods on both speed and cost. Sending $200 through a bank could carry fees equivalent to up to 13% and take days to settle, while stablecoins can complete the transaction in seconds at a fraction of the price, the report said. Foreign exchange (FX) settlement could be the largest untapped opportunity, according to the report. The $7.5 trillion-a-day FX market still largely settles on a T+2 basis through correspondent banks. Meanwhile, on-chain FX using stablecoins could enable atomic swaps with near-instant settlement and lower counterparty risks, the report suggested. Such efficiencies could also transform cross-border payments. With more regulatory clarity, greater liquidity and interoperability, stablecoins could handle as much as 12% of all cross-border payment flows by the end of the decade. Given the opportunities, the authors forecasted that every major fintech firms will eventually integrate stablecoin infrastructure over the few next years, just as software-as-a-service (SaaS) tools became ubiquitous. In practice, that could mean wallets and payment platforms moving value on-chain, treasury desks holding stablecoins and deploying for a yield and merchants settling instantly in multiple currencies. The rapid growth of stablecoins, which have a market cap of $260 billion, could also have ripple effects on monetary policy. Stablecoin supply could reach 10% of the U.S. M2 money supply in a bull case, up from 1% today, and represent roughly a quarter of the U.S. Treasury bill market and influence how the Federal Reserve manages short-term interest rates.
