How long are Easter dinner leftovers safe to eat? A food safety expert weighs in on the 'danger zone'
Yahoo Canada spoke to a food safety expert on how Canadians should handle their Easter leftovers and best practices to avoid any food-borne illnesses. Here's what you need to know.
According to Health Canada, food-borne illness — more commonly known as food poisoning — happens when a person gets sick from eating food contaminated with harmful micro-organisms, such as bacteria, parasites or viruses.
Every year, it's estimated more than four million Canadians get food poisoning. Symptoms include nausea, vomiting, diarrhea, stomach cramps and fever. For young children and seniors, the consequences can be more severe.
The foundation of safe leftovers begins with proper food preparation. To avoid cross-contamination, designate separate cutting boards and utensils for raw and cooked foods.

"The importance of hand washing throughout this entire process is also something I'd recommend and I think it's often overlooked," said Brittany Saunier, the executive director at the Partnership for Food Safety Education (PFSE).
Washing your hands before you prepare and eat food, as well as after handling uncooked meat or touching surfaces, is an example of preventive measures that can reduce the risk of harmful bacteria from transferring.
Additionally, the PFSE's holiday leftover guide reminds us to rinse our fruits and vegetables before use or consumption.
So, you've enjoyed your Easter feast and you're stuffed, but there's a turkey or ham desperate for your attention. What should you do now?
Saunier said a running conversation among food safety professionals is how they've noticed friends or family during a dinner party leaving their food out for more than two hours.
"A common misconception around leftovers and storing food after you're done eating is the two-hour rule," Saunier said, adding it's important to put food away within that time, whether that means refrigerating or freezing it.
She said it's natural for people to forget since everyone might be enjoying each other's company, but if you're cognizant you might do that, then she recommended making sure the food maintains its temperature.
"So if it needs to be chilled, make sure it stays on ice, and if it needs to stay warm, maybe keep it on a burner so it has some sort of heat source," she said.
Saunier said another misconception people have pertains to their use of containers. Though many people might pick a container that would allow them to fill it to the top, Saunier said it's better to store your leftovers in shallow containers.
"It allows the food to reach a temperature that reduces your risk of illness quicker," she added.
When it comes to handling larger proteins like turkey or ham, Saunier recommended cutting them up into smaller pieces before you store them so it helps them cool and reach temperature quicker.
Containers should also be airtight to prevent odours from permeating the fridge and to minimize cross-contamination. Additionally, you can label containers with the date to track your storage duration easily.
Regardless if you're storing a protein or vegetable, Saunier said leftovers should be consumed within three to four days. If you're freezing food, she recommended consumption within three to four months.
"After the four-month freezer period, it becomes more of a quality issue than a safety issue," she said, adding your food might start to lose flavour.
Keep in mind, that bacteria multiply quickest between four to 60 degrees Celsius, known as the "danger zone." It is best to keep your fridge at a four-degree temperature or below.
When it's time to enjoy your leftovers, proper reheating is key.
Saunier said to use a digital food thermometer to ensure meats reach an internal temperature of 74 degrees Celsius to eliminate any bacteria that may have developed during storage. This step is particularly important for dishes containing meats and other protein-rich foods.
"For certain soups and sauces, reheat it so it comes to a boil and then it's safe to consume from there," Saunier said.

Small Investment, Big Returns: Why This NIH Center Matters

My application to do a PhD at the University of California, Berkeley was accepted, and I was offered funding support through a National Institutes of Health (NIH) program called the Fogarty AIDS International Training Program. I had little money those days, and without NIH funding and a welcoming professor who cared deeply about global health, I could have never left India for higher education in the United States. Today, I chair a department of global and public health at a leading Canadian university. The life-changing opportunities I had as a Fogarty trainee at Berkeley allow me to pay it forward by training the next generation of global health leaders. I was not the only scholar to benefit from Fogarty funding - nearly 8,500 individuals from 132 countries have trained through Fogarty programs since 1989, and many have become leaders in their countries. Several have led groudbreaking research projects, and led inspiring programs and institutions. Soumya Swaminathan is a great example. After her Fogarty training in the United States, she went on to become a leading HIV and TB researcher, become the Director-General of the Indian Council of Medical Research, and subsequently the first Chief Scientist of the World Health Organization. 'My Fogarty fellowship gave me an opportunity to get exposed to advanced immunological techniques and meet leading experts at a critical stage of my career. It helped spark new ideas and initiate collaboration with international experts which may not have happened otherwise,' she said. Another shining example is Glenda Gray, who was the first female President of the South African Medical Research Council. 'Becoming a Fogarty Fellow catalysed my career as a clinician scientist, and marked the beginning of my research trajectory," she said. "It enabled me to make contributions to HIV vaccine research and development, as well as research in the area of preventing mother to child transmission. The interventions we developed have led to the control of paediatric HIV and improvements in treatment that have reduced HIV-related mortality in children,' she explained. Gray is currently Director of the Infectious Disease and Oncology Research Institute, University of the Witwatersrand. The Fogarty International Center (FIC) has also benefitted US scientists and institutions. In FY24, Fogarty funded 440 U.S. grantees from 122 U.S. institutions in 39 states. Research conducted in Global South countries have led to improved treatments for health challenges of importance to Americans. 'The training programs supported by the FIC over the past 40 years have been unparalleled in their reach and impact around the world,' said Arthur Reingold, Emeritus professor at Berkeley School of Public Health, who has trained hundreds of scholars through his Fogarty grants. 'They have, through their support of highly talented biomedical scientists from scores of low and middle income countries, dramatically improved research and educational capacity globally, as well as markedly enhanced high impact collaborative research on AIDS, tuberculosis, malaria, and diverse other communicable and non communicable diseases. The benefits resulting from the enhanced research capabilities of scientists supported by the FIC have accrued to people living everywhere, including in the United States,' he elaborated. Lucian Davis, an Associate Professor at Yale Medicine and the Yale School of Public Health, has also used the Fogarty program to train dozens of American and African scholars. 'Fogarty enables us to train the world's brightest minds to tackle America's leading health priorities—a high-impact, low-cost investment that keeps us connected to the world,' he said. And guess what, the entire annual budget of the FIC is a merely 0.2% of the total NIH budget - a drop in the bucket. Despite this tiny investment, the FIC has had a spectacular national and global footprint and impact, by any metric. Today, it greatly saddens me to see defunding of US science agencies, including NIH, and it's devastating impact on US academic institutions and scientists. Several American scientists have either reached out to me to explore options in Canada, or have applied for faculty positions at my university. Scores of American scientists are seeking to flee the country (and become "science refugees"). It boggles my mind that US politicians are allowing this brain drain to happen under their watch. America's economic strength, in part, comes from the nation's immense scientific firepower. I am especially distressed to learn that the FIC is once again on the chopping block, with the entire $95 million budget FIC budget set to become zero in 2026. How exactly is cutting such an impactful program supposed to make America great? Even as the world deals with massive crises like pandemics, conflicts, climate change, and widening economic inequities, all of which require truly, global cooperation and coordination, it seems like politicians are choosing narrow self-interests, nationalism, and isolationism. This strategy is not likely to succeed. Why? We've all witnessed how interconnected the world is during the Covid-19 pandemic. Viruses that emerge in far away places will find us, regardless of who we are or where we happen to live. Every outbreak is merely one long-haul flight away. Smoke from wildfires will travel thousands of miles to darken our skies and choke our lungs. Our fates are undisputably intertwined with that of other countries and peoples. There is nothing 'woke' about looking out for each other in an interdependent world. And that is why America must stay engaged in global health and multi-laterialism. And that is why American lawmakers must work to protect a national treasure like the Fogarty International Center. If an investment is yielding spectacular returns, no smart business person would dream of killing it. So, why defund the FIC and the NIH? If I was a US lawmaker, that is the question I would be asking myself. I take some hope from the fact that the Senate Appropriations Committee recently rejected the Trump administration's proposed funding cuts to the NIH. But the road ahead is long and hard. I hope good sense will prevail and the powers that be will find a way to save America's phenomenal scientific enterprise. Science matters for America's health. It matters for health of the whole world.

In Canada, more than 80,000 cases of skin cancer are diagnosed each year. Kelly Clarkson's ex-husband Brandon Blackstock's cause of death has been revealed. A statement from the coroner where Blackstock lived in Montana confirmed that the 48-year-old former talent manager, "passed away peacefully at his home in Butte, Montana on August 7th under hospice care surrounded by his family." According to People, coroner Dan Hollis said Blackstock's "manner of death" was natural causes following his three-year battle with melanoma. The prospect of getting skin cancer may seem unlikely or altogether not that bad to sun worshippers and those who love getting a tan. But to those who've been diagnosed with the disease, including reality TV star Teddi Mellencamp, the truth is far more devastating. The Real Housewives of Beverly Hills alum has been sharing her stage 4 melanoma journey with the public, explaining that her cancer spread to her brain and lungs, and expressing the challenges she's faced when it comes to the treatment process. 'The highs and lows of treatment for stage 4 brain and lung tumours are pretty extreme. Please go get your yearly checks,' the 43-year-old daughter of singer John Mellencamp wrote in an Instagram post. Like Blackstock and Mellencamp, Kathy Barnard has been through the tumultuous experience that is malignant melanoma. Barnard was first diagnosed in 2003 when she was 47 years old. In the past 22 years, she's faced the disease four separate times, including when the cancer spread to her lungs. ' I'm a huge outdoor athlete, and I'm very Scottish and pale skinned, and I just love the sun,' Barnard told Yahoo Canada in a previous interview. She grew up at a time when there was very little knowledge or information about the dangers of the sun, so she rarely took precautions to protect herself from its harmful rays prior to being diagnosed. 'I'm from the generation where everybody thought that you should have a base tan before you went on a holiday. I was the generation where they had tanning beds in gyms, and I would go to the gym all the time and use them.' Barnard is about to turn 70 and is currently cancer-free. She noted she's incredibly grateful for the innovative treatments that have helped her make it this far, many of which didn't yet exist when she was first diagnosed. 'I have been — touch wood — so unbelievably lucky,' she said. But she knows many skin cancer patients who haven't been so fortunate. That's why Barnard has made it her mission to educate the public, particularly young people, about the importance of sun safety. She founded the Save Your Skin Foundation, an organization offering support to skin cancer patients while advocating for prevention and education on the danger UV rays offer. The very real dangers of skin cancer 'It's a common misconception that skin cancer is a 'better' cancer to get,' Dr. Geeta Yadav, a board-certified dermatologist and founder of FACET Dermatology, told Yahoo Canada earlier this year. In reality, while some skin cancers have better survival rates than others, she noted melanoma in particular can be an 'incredibly deadly disease.' Melanoma can spread, or metastasize, in three different ways. Yadav explained that includes through tissue, beyond its original borders; through the lymphatic system, which can allow the melanoma to travel to lymph nodes or other parts of the body; and/or through the bloodstream, which allows the cancer to travel to other organs. In Mellencamp's case, she sought medical care after experiencing debilitating headaches. Her care team found tumours in her brain and lungs, meaning that her melanoma had metastasized via the bloodstream. This was also true in Barnard's case. When melanoma spreads, it tends to spread to non-regional lymph nodes, meaning lymph nodes not in the area of the original tumour, Yadav explained. This includes the lungs, the liver, the brain and the bones. Melanoma spreading to the lungs and brain are the two most common causes of metastatic melanoma-related deaths, she added. Metastatic melanoma is said to have a five-year survival rate of under 30 per cent, while the five-year survival rate of early melanoma can be as high as 99 per cent. Rates are on the rise Although we now have much more information about the importance of sun protection, skin cancer rates are on the rise. According to the Canadian Skin Cancer Foundation, one in every three cancers diagnosed worldwide is skin cancer. In Canada, more than 80,000 cases of skin cancer are diagnosed each year. Additionally, more than 5,000 of those are melanoma, the deadliest form of skin cancer. Melanoma is also one of the most common cancer types found in young adults aged 15 to 29 and 30 to 49, as well as the seventh-most commonly diagnosed cancer in Canada. 'It used to be the cancer of old people. That's not the case anymore,' Barnard said. ' It's the fastest-growing cancer in our young people.' Protect your skin and get checked Smart sun habits, including daily application of sunscreen, are key to reducing your risk of skin cancer. However, Yadav noted so many people choose to skip SPF and soak up unprotected UV. 'It never fails to surprise me how cavalier people are about their skin health, especially considering how much effort many people put into addressing cosmetic skin concerns,' Yadav said. 'Remember, unprotected UV exposure can cause premature skin aging as well as cancer, and it's far harder to get rid of sunspots than it is to prevent them.' Sun protection goes beyond just SPF, which must be applied every two hours. It also includes UV clothing, trying to stay out of the sun during peak hours, wearing a hat and making sure you wear sunglasses. The latter is particularly important, as Barnard said there's been an increase in ocular melanoma over the past five years, including in younger demographics. Equally important as skin protection is early detection, especially since survival rates drastically increase if melanoma is found before it spreads, Yadav added: 'Follow the ABCDE rules — look for asymmetry, irregular borders of a mole, variations in colour within just one spot, diameter larger than six millimeters (about the size of a pencil eraser) and evolving sizes, shapes or colours. If you see something that looks suspicious, make an appointment with your doctor right away."
