When the Titanic set sail in 1912, the 'onboard storage pantry' had 40,000 eggs.
Today, in 2025, we've had much murmuring about the price of eggs being as costly as $8 a dozen or more because of the avian bird flu.
Of course, a dozen eggs in 1912 cost around 37 cents.
Other amazing food supply figures for the Titanic to feed the 2,240 passengers, which includes about 900 crew members, were 36,000 apples in the galley as well as 1,000 bananas (very exotic for the time), 34,000 oranges, strawberries, and 'hot house-grown grapes.' To wash much of this down, the cargo inventory included 15,000 bottles of ale and 63 cases of fine champagne.
Much of the 'behind the scenes' insight we know about the Titanic comes from the ship's manifest paperwork and inventory logs, and the information provided by the few crew members who survived, including first-class cabin maid Violet Jessop. Violet was a career woman rarity at the turn of the century, working as a female cabin maid crew member of luxury steamship ocean liners for the White Star Line for passage to cross the Atlantic Ocean.
Before her death at age 83 in 1971, she found later life fame and was best known as having survived both the sinking of the HMHS Britannic and her sister ship the RMS Titanic. As a first-class maid, one just 23 years old, she was one of the few female staff members to secure a lifeboat seat. She wrote about her experience in great detail in a memoir, which was later published around the time of her death.
I've spent much of my week with actress and historian Leslie Goddard, who has returned to the Theatre at the Center stage in Munster to share this true account of the twin nautical disasters Violet survived in vivid and fascinating detail with audiences in her one-woman play 'Violet Jessop: Titanic Survivor,' which concludes with weekend performance at The Center for Visual and Performing Arts, 1040 Ridge Road in Munster. Drawing from her theatrical background and experience as a researcher and historian, Goddard previously presented her one-woman performances at Theatre at the Center as Julia Child in September 2023 and Amelia Earhart last summer in July 2024, having earned standing ovations.

'Of the 2,200 people on the Titanic, only 705 people survived the tragedy as the Carpathia arrived several hours later after responding to one of the last distress signals,' Leslie reminds.
Also aboard the ship were 12 dogs, only three of which survived since they were small lapdogs of first-class passengers who brought their prized canines with them into the lifeboats.
Millionaire John Jacob Astor, age 47, whose family built the Waldorf-Astoria Hotel in New York City and whose worth at the time was more than $2.2 billion in today's dollars, was aboard the ship. He opted not to board a lifeboat, staying behind on the ship with his purebred Airedale terrier 'Kitty.' But he assured that his pregnant second wife and new bride, Madeleine, just 18 years old, did find her way to a lifeboat, along with her private nurse and personal maid.
Leslie said it is known that just before the Titanic sank, someone went below deck to open all the dog kennel cages to free the animals to make their way to the upper deck. She said it is widely believed that it was John Jacob Astor who freed the dogs.
Passenger Ella Holmes White of New York brought four roosters paired with hens, likely housed in or near the first-class galley, with the fowl imported from France, to improve her poultry farm in the States. Elizabeth Ramel Nye brought her yellow canary, which required a 25-cent ticket for passage.
Believed not to be aboard the Titanic? The ship's mascot and expert rat exterminator, Jenny, a tabby cat that lived in a basket near the stove area of the galley. Before the final fateful voyage of the Titanic, Jenny had a litter of kittens. In her published book, Violet says that before the ship left the dock in Southampton, England, crew members witnessed Jenny removing the kittens, one by one, from the ship and to the safety of the docks and 'dry land.' This was thought to be a foreboding omen, which caused some fears among the crew. It's not believed Jenny was on the ship the night it descended below the surface.
Leslie's one-woman play at Theatre at the Center includes a stage recreation of the first-class deck and dining areas of the ship, as well as the crew areas and third-class steerage. Among the unique props showcased in this production are fresh orchids, white roses and fragrance 'bon voyage' floral sprays, and complete replica sets of the Titanic's elegant china and tea service sets. Among the decadent desserts served to first-class passengers on the Titanic was a baked Waldorf Pudding, not to be confused with Waldorf Salad, the latter recipe that later became popular in the 1920s.
Food.com shares a tribute recipe for baked Waldorf Pudding that would be similar to what was likely served on the Titanic and as reimagined by John Weatherly, the executive pastry chef at Cullen's restaurant in Houston and as originally published in Hearst Publications' Houston Chronicle newspaper.
Titanic Tribute Baked Waldorf Pudding
Makes 8 servings
2 large apples, diced into 1/4-inch cubes (use a good-flavored baking apple, such as Granny Smith, MacIntosh or Braeburn)
2 tablespoons butter
2 tablespoons granulated sugar, plus 1 cup granulated sugar, divided use
4 large croissants, cut into 1/2-inch pieces
1-quart heavy cream
8 eggs
1 tablespoon vanilla extract
1 cup golden raisins
Directions:
Heat oven to 350 degrees and while the oven is heating, sauté the diced apples with the butter and 2 tablespoons sugar.
Place apples in the refrigerator to chill.
Cut croissants into 1/2-inch pieces.
Heat cream slowly to a boil and mix eggs, remaining cup of sugar and vanilla in a bowl.
Add hot cream slowly, while continuing to stir; set custard to the side.
Spray 8 individual 8-ounce ramekins with cooking spray and fill ramekins half full with cut croissants, add apples and raisins.
Cover with more croissants but do not pack bread tightly in ramekins or it will make the pudding too heavy and dense.
Pour custard over croissants and let set for 10 minutes to let bread absorb custard.
Finish filling remaining ramekins with croissants and custard.
Place ramekins in a deep pan with 1/4-inch of hot water.
Place in oven and bake for 45 minutes and stick a knife in custard to check doneness.

Putting OceanGate to rest?

Arnie Weissmann I've written before about my tangential relationship with the OceanGate tragedy: I was set to dive in the submersible Titan three weeks prior to its implosion, but the dives were canceled due to bad weather. Nonetheless, I spent a week on the mother ship with a ringside view of the OceanGate operation. I got to know CEO Stockton Rush, French wreck diver Paul-Henri "P.H." Nargeolet, OceanGate staff, volunteers and my fellow "mission specialists" who were hoping to dive to see the ruins of the Titanic. Additionally, I was an acquaintance of Hamish Harding, a passenger who perished in the implosion. I had spent time with him just days before the catastrophe. I wrote a three-part series in Travel Weekly during the time of the intense search for the missing submersible. In it, I noted that Rush had told me that the carbon fiber used in the hull of the Titan had been purchased at a discount because it was past its use-by date for commercial aviation. Now that the U.S. Coast Guard has come out with the results of its investigation of the calamity, a lot of questions are officially put to rest. But it would be disingenuous for me to say that it's put the OceanGate saga to rest for me; days may go by that I don't think about it, but not many weeks do. On the day that the remains of the Titan were found, I started getting calls from news organizations. Most were focused on the expired carbon fiber. The next morning, CNN sent a crew to interview me for a documentary that it was making live from St. John's, Newfoundland. Ultimately, I was quoted in the Wall Street Journal, Washington Post and scores of media outlets here and abroad that ran the two Associated Press stories I appeared in. A Reddit thread based on the Travel Weekly stories appeared, and others made YouTube mini-documentaries, some very conspiracy-minded, based on my writing. People on Reddit were generally less snarky than comments under other stories; one Washington Post reader called me out as being luckier than smart. I can't argue with that. The CNN documentary led to calls from others hoping to make a documentary on the topic. Some were producers asking that I speak to them exclusively as part of their pitch to find an outlet. Netflix called me when I was on an icebreaker en route to the North Pole. ABC asked for an interview for a documentary it was making, but I sensed it might be somewhat sensationalized and declined to appear. I was interviewed by the chief investigator for the Coast Guard. The articles I wrote were cited in a lawsuit against OceanGate filed by Nargeolet's family. I spoke with Netflix for their documentary and thought the resulting film was very well done. I was not in the final cut, but if you were to fast-forward to the last screen of credits, about 40 names are listed on a "Special Thanks" page. It appears for about a second and a half. Mine is the last name listed. If you look for it, don't blink. The Netflix documentary shows what appears to be texts among OceanGate staff questioning the company's methods and regard for safety. In one, there is mention of "expired carbon fiber." It was, at last, public corroboration of what Rush had told me. In the hundreds of stories written about the tragedy, I never saw anyone else mention expired carbon fiber. The captain of the mother ship was present when Rush said it to me and confirmed to me that he also heard it, but I felt pretty lonely out there as the only one reporting that particular aspect of the tragedy. Still, watching the Netflix documentary saddened me deeply. The images on the ship brought back people I had gotten to know, shown in a celebratory mood and full of hopeful anticipation. In the two years since the implosion I have been in touch with some people in the OceanGate-adjacent community. Many stayed loyal to Rush even after his cavalier attitude toward safety became clear. A few tried to talk me out of speaking with Netflix, sensing it would not show him in a good light. Most have now flipped, with some especially angry with him for abusing their trust. As for me, the most lasting impact occurs when I'm in the middle of an interesting conversation on a topic completely unrelated to OceanGate. Or when simply hanging out with family. It'll strike me that I would have missed those interactions had I gone down in the Titan when I was scheduled to. I'm glad to be alive. I'll still pursue opportunities for exploration but with more emphasis on due diligence than trust. And, stay focused on Roald Amundsen's observation: "Adventure is just bad planning."

The Coast Guard says the Titan submersible disaster was ‘preventable.' Now the deep-sea industry is looking to the future

FacebookTweetLink A lengthy report released by the US Coast Guard Tuesday identified glaring issues with the Titan submersible and the company that ran it, a little more than two years after five people were killed when the deep-sea craft imploded on its way to the Titanic wreckage. From technical issues to company culture, the over 300-page document detailed the many steps that lead to an epic but 'preventable' disaster and identified valuable lessons that the Coast Guard said could prevent future disasters. The 2023 implosion of the submersible at the bottom of the ocean floor killed all five people on board, including Stockton Rush, the founder and CEO of OceanGate, the company which operated the Titan, and triggered a dayslong international search effort until debris was found. While the report was shocking in its frankness about the mistakes made, industry leader William Kohnen said it 'officializes' longstanding concerns. Kohnen, the president and CEO of HYRDOSPACE Group Inc and a witness in last year's hearings on the Titan submersible, told CNN Tuesday that the issues raised in the report are part of an ongoing conversation in the industry that has existed long before the incident – but is now front and center. As the US Coast Guard's investigation comes to a close, Kohnen, who raised safety concerns to Rush in 2018, reflects on the next steps for a growing industry that caters to both scientific research and ultra-wealthy tourism. The recommendations in Tuesday's report made it clear that better regulations in the submersible industry are essential. 'The two-year investigation has identified multiple contributing factors that led to this tragedy, providing valuable lessons learned to prevent a future occurrence,' Jason Neubauer, the US Coast Guard Marine Board of Investigation chair, said in a statement. The MBI, the US Coast Guard's highest level of inquiry, called on the agency to pursue a new regulation requiring all submersibles in the US to be built and maintained under uniform standards. The report cites 'the lack of comprehensive and effective regulations for the oversight and operation' of submersibles designed or operated in the US. In the Titan's case, the MBI found the 'primary contributing factors' to the implosion were OceanGate's 'inadequate design, certification, maintenance and inspection process,' a Coast Guard release said. Kohnen said the need for comprehensive regulation is something the industry has 'been preaching in the desert for 20 years.' As the submersible industry continues to grow, rules are needed much in the same way rules were made during the creation of freeways, he said. 'By the time you have hundreds of cars, somebody came up with a very simple idea of drawing a line in the middle of the road and saying, look, everybody's going to agree that you drive on either side of the line,' Kohnen said. 'That's really what we need to do here.' 'We're not reinventing the wheel. It's just a matter of scrubbing it, making it better, and then engaging other maritime authorities,' he added. Kohnen also advocated for a third-party certification system for the safety of submersibles and their teams, saying it would help keep standards high across borders. Future paid passengers on submersibles will not understand the risk they are taking if the industry continues without mandating third-party certification or other regulations, Kohnen argued. 'A waiver doesn't work if the person signing it cannot give informed consent,' he said, adding, 'Informed consent is just going to get more complicated for the next two generations, because there's so much technology around how do you make sure that a citizen understands the risk they're taking?' Another glaring problem found in the US Coast Guard's report was the 'toxic workplace culture' at OceanGate, instituted by Rush and his management style. Rush held much of the decision-making power as he filled multiple roles within the company, centralizing his power and avoiding checks and balances from the company's board. 'Overall, the MBI believes Mr. Rush deliberately sidelined OceanGate's Board and did not solicit its collective expertise so he could proceed unchecked with his vision to conduct TITANIC expeditions, regardless of any mounting safety concerns,' the report stated. When asked if the culture issues were isolated to OceanGate or reflect an industry-wide concern, Kohnen said he considers this situation a 'civic dereliction of duty.' 'We teach our younger ones to become leaders and push and believe in what they're doing, but that when you are in a position of high-level leadership, you have a huge responsibility not to create chaos,' he said. 'This is really difficult. And I think OceanGate, at the leadership of Stockton (Rush) – it was a problem, and we communicated that with him.' Five years before the implosion, Kohnen, who was at the time the chair of the Marine Technology Society – a group of leading ocean engineers, scientists, policymakers and educators – wrote a letter to Rush on behalf of about 40 other industry leaders expressing concerns with the safety of the Titan submersible. Rush and Kohnen debated some of the key concerns of the letter on a call. Kohnen ultimately convinced the Oceangate CEO to change some of the language on their website to reflect its experimental status, but felt like the public still wouldn't understand that the safety of the submersible hadn't been verified. 'No one was restricting them from innovating and coming up with new technologies,' Kohnen said, arguing OceanGate had the right to dive the submersible on their own without passengers. But putting at risk others who didn't understand the situation is where they crossed the line, he said. Since the submersible's implosion over two years ago, the industry has spent time reflecting on the importance of nailing down a standard across the board, Kohnen said. 'People are paying attention,' he said. He thinks that another important step is making sure different facets of the industry and maritime authorities are connected to one another and build relationships with one another. Being able to call up a colleague and get their opinions on a situation could potentially save lives, he said. 'This five minute conversation can go a long ways into avoiding some big issues,' Kohnen said. 'So just when we think it seems like too dumb to be a real problem, you find out, no, it is a real problem, and it's not as simple to sort out as it appears.' Kohnen said the industry's annual conference will be hosted in the first international location in its history, with the hope of getting more attendance from countries around the world and to encourage international cooperation in regulations. 'It's made a bit more difficult because these vehicles travel across international boundaries,' he said. 'So it's not enough to have just a local or a national solution. It really needs everyone holding hands here and saying, look, we're going to kind of agree that we're looking at these things the same way.'
