
How one Irish hotel is rewriting the rules on food waste
Over the past year, the hotel has slashed its food waste by nearly 60 per cent by weight and its food trimmings by 90 per cent. That amounts to 11.5 tonnes of food waste, nearly 50 tonnes of carbon and more than €16,000 saved annually. Much of it is thanks to a chef who was empowered to swap sustainability gestures for serious change.
'Instead of hundreds of tiny little initiatives, we decided to go after the stuff that would actually make a difference,' says executive chef Jonathan Keane, a sustainability advocate who leads the kitchen at the 64-room sister hotel to the magnificent, medieval Ashford Castle.
Those initiatives have been quite an undertaking. On any given day, Keane and his colleagues can serve 500-plus meals and go through piles of produce.
'At this property, I have 650 kilogrammes of watermelon rind. What can I do with that?'
From trimmings to transformation
The answer, it turns out, is a lot – especially when you have dataon your side.
Over the past three years, The Lodge's parent group – Red Carnation Hotels – has worked with UK-based food waste analytics firm Winnow to get a clearer read on their waste. The company's AI-powered tools and image recognition help Keane to measure and categorise what is being thrown away each day and why.
'I get an email every morning that tells me exactly what food went into the bin,' says Keane. 'If two kilos of onion skins went into the bin, I'll see a picture of that. Then I can investigate why that happened instead of [the skins] going into stock or treacle.'
Armed with these insights, the kitchen team has learned to upcycle ingredients like trimmings, peels and offcuts into syrups, muffins, canapés and even welcome drinks.
What little waste remains goes into a biodigester, which produces nutrient-rich fertiliser for the estate's sprawling garden – a pandemic project that Keane and his employers instituted to be more self-sustaining and environmentally-conscious.
'The garden became such a big project that it became phase one [of greater change],' says Keane, whose vision for The Lodge includes a tunnel greenhouse, a future distillery with its own orchard and aquaponics, a system that couples raising fish with hydroponic vegetable gardening. 'The long-term goal is to be fully self-sufficient.'
Hospitality's hidden problem
The hospitality sector has long accounted for a hefty portion of the world's waste.
Restaurants, hotels and other venues generated more than 25 per cent of the world's 1.3 billion tonnes of food waste in 2019, according to the UN Environment Programme. Most ends up in landfills, releasing methane, a powerful greenhouse gas.
'Much of it goes uncounted, so we don't even know the real scale,' says Vojtech Végh, Winnow's zero-waste culinary advisor who worked closely with Keane on The Lodge's transformation. 'Speaking from experience, it tends to be more than we would expect.'
The first step toward addressing this murky problem, he explains, is to arm chefs and hotels with information.
'If we don't know what is in our bins, then everything else is just guesswork, which isn't effective or sustainable,' Végh says. 'Once we start to measure our food waste, we can then focus on what exactly we need to reduce.
A growing shift across the industry
Across the industry, hotels are slowly waking up to the environmental and economic costs that this failure to measure has created.
At the Hilton Tokyo, chefs have begun reusing vegetable trimmings and fruit peels in soups, desserts and drinks. Novotel London Excel has also used Winnow's AI tools to cut waste by around 50 per cent in recent years.
Other solutions have also started to take shape.
In Southeast Asia, startups like Yindii have stepped in to connect hotels, restaurants and bakeries with local diners. Surplus food is sold at a discount through its app. The model has expanded across Thailand, Hong Kong and Singapore, where users can rescue meals for a fraction of the cost and prevent perfectly good food from being binned.
Efforts like these are just the beginning. For food waste prevention to stick, Végh argues that kitchens must rethink how they operate at a systemic level.
'Zero-waste cooking is more about how we think when we cook rather than how we cook,' he says. 'If we embed food waste prevention into our processes – rather than build it on top – then step by step it becomes the new standard in any kitchen.'
A culture shift from the kitchen out
If you ask Keane, the real change starts even one level beyond processes. Sustainability, he says, has a lot to do with people, 'which isn't always high on the agenda in kitchens.'
Keane has tried to create 'a fun place to work. We're nice to each other. We treat each other like adults, and we have the same approach with the ingredients and the produce.'
Part of creating a more open – and open-minded – culture has involved getting his team of 18 kitchen workers out into nature more often. An avid forager, Keane regularly brings his colleagues into the forest to search for wild vegetables and mushrooms. He believes it builds morale while reinforcing the practices he wants The Lodge to embrace.
He also brings hotel guests out on foraging tours, ever so subtly transmitting a message that he hopes will stick long after they check out. He says that these steps might help his hotel, and others like it, have a greater impact in the future.
'We're not preaching. We're bringing the customer along with us [at their own pace],' Keane explains. 'We want to leave a legacy.'

New cryptocurrency may be aiding Russia to dodge sanctions
Multiple rounds of international sanctions have been imposed on Moscow since its February 2022 invasion of Ukraine seeking to ramp up economic pressure to halt the war. But the launch of A7A5 in February this year opened up an alternative payment method for Russian businesses and individuals to sidestep sanctions when trading with foreign partners, the UK-based non-profit Centre for Information Resilience (CIR) said in a report. A7A5 is a stablecoin -- a form of cryptocurrency backed by traditional assets -- in this case pegged to the ruble, making it harder for Western authorities to monitor than dollar-based alternatives. It was launched by a pro-Russian Moldovan oligarch and a Russian state-owned bank as "the first ever ruble-pegged stablecoin," George Voloshin from anti-money laundering group ACAMS told AFP. While it is not widely used yet, experts say its creation marks a significant step in Russia's efforts to reduce its dependence on major crypto companies -- many of which cooperate with Western governments. Russian stablecoin Since Russia was kicked out of the international banking system SWIFT and hit with asset freezes and investment bans, Moscow has already turned to crypto to sidestep financial restrictions imposed by the United States and its allies. Stablecoins are especially attractive because they are less volatile than other cryptocurrencies. People have also used cryptocurrency to donate directly to both the Ukrainian army and Russian militias, according to several analytics firms such as Elliptic. But Russia has faced a problem: USDT, the most popular stablecoin, is tied to the US dollar and controlled by a company called Tether, which cooperates with US and European authorities. Earlier this year, Tether blocked $28 million in USDT held in wallets on Garantex, Russia's largest crypto exchange, which was shut down following a global crackdown on illegal transactions. "That was a real wake-up call" for Russia, said Elise Thomas, senior investigator at CIR. "It made them think that they need their own stablecoin, they need something that they control," she added. Just before Garantex was shut down, tens of millions of dollars were moved from USDT into A7A5, according to data from crypto tracking firm Global Ledger. How it works A7A5 is backed by deposits in Promsvyazbank, a Russian bank under sanctions for its ties to the government and the military. The coin is traded on Grinex, a crypto exchange based in Kyrgyzstan -- a country seen as friendlier to Russian interests and less vulnerable to Western pressure. A7A5 is also registered in Kyrgyzstan rather than Russia because the country offers a crypto-friendly legal environment and is less exposed to "sanctions and other economic pressures," project director Leonid Shumakov said in an interview posted online. Less than six months after its launch, around $150 million is now held in A7A5. These transactions are not necessarily illegal, but they could become problematic if used by sanctioned individuals or entities to reconnect with the global financial system, warned ACAMS's Voloshin. The man behind the A7 group, which developed A7A5, is Ilan Shor, a Moldovan businessman and politician now living in Russia. Investigators found links between A7A5 and Shor's political activities in Moldova, including websites related to both sharing the same IP address. These findings have suggested that the cryptocurrency could be used as a tool for political influence. Shor and his company have already been sanctioned by the UK, and more recently by the European Union, which accused them of trying to meddle in Moldova's 2024 presidential election and its referendum on joining the EU -- all while keeping close ties with Moscow.

Carrefour sells Italian supermarkets to NewPrinces for €1 billion
Carrefour supermarkets in Italy will soon be in the hands of Italian food multinational NewPrinces Spa, who announced the roughly one billion euro purchase on Thursday. The NewPrinces group owns the Plasmon, Centrale del Latte, Giglio, Polenghi Lombardo and Delverde food manufacturing brands, among others. The acquisition of approximately one thousand shops now requires authorisation from the relevant authorities, with a view to closing by the end of the year with Carrefour Nederland Bv and Carrefour Sa. With this transaction, the Reggio Emilia-based company reaches a potential turnover of 11 billion euros, becoming the second-largest Italian group in the food sector by turnover and the largest operator in terms of employment, with 13,000 employees in Italy and more than 18,000 worldwide, as well as 11,000 in related industries. "The acquisition of Carrefour Italia represents a fundamental step in the growth trajectory of our Group," said NewPrinces Group Chairman Angelo Mastrolia, "with this operation, we take a decisive step towards vertical integration between production and distribution, strengthening our ability to generate value along the entire supply chain." NewPrinces may decide to relaunch the Gs supermarket brand and rename the stores after three years. The food retailer was founded in Italy in the 1960s and was replaced by Carrefour stores in 2010. Unrest proclaimed among Carrefour workers After the news of the takeover, the trade unions Filcams CGIL, Fisascat Cisl and Uiltucs declared a state of strike due to Carrefour Italy's failure to respond regarding the workers' prospects. The unions have asked for a meeting at the Ministry of Enterprise and Made in Italy to 'review the recovery plan', which is expected to include brand and development investments totalling more than €400 million between the seller and buyer. Minister Adolfo Urso expressed his "appreciation for an operation that strengthens Made in Italy," confirming that he will soon meet both Mastrolia and the unions. The French newspaper Les Echos commented on the news, writing that Carrefour 'removes a thorn from its foot', as its Italian operations were recording annual losses of €180 million. Carrefour president, Alexandre Bompard, assured the newspaper that he was leaving "Carrefour Italy in good financial condition."

Shock media closure deals new blow to press freedom in Balkans
The Bosnian journalist inaugurated the new network on November 11, 2011, telling viewers: "You are watching the first news channel in the region," and promising them "accurate, verified and impartial" information. But on July 10, management suddenly announced the Qatari-based channel's regional branch was closing, the latest in a wave of closures and downsizing to hit the Balkans' strained media industry. "I had no idea," Delic, 47, told AFP. "It was sudden, but you have to adapt. It's the owner's decision." Two days later, his colleague Dalija Hasanbegovic gave the channel's farewell sign-off: "That was the final Al Jazeera Balkans newscast. "We always tried to be the voice of those who didn't have one, an island of truth." 'Silencing the last voices' Claiming more than 22 million viewers, "AJB" broadcast across most of the Balkans, with studios in Belgrade, Sarajevo and Zagreb. "We never adhered to anyone's political agenda," said Delic, who added he fears the closure will hurt strained media freedoms in the region. "A beacon of free journalism in the Balkans goes dark," said philosopher and journalist Dragan Bursac in his final column published on the Al Jazeera Balkans website. Al Jazeera Balkans' executive director and one of its founders, Edhem Foco, told AFP the closure was a consequence of a "strategy shift" at the parent channel, which is investing in developing its online platform Al Jazeera 360. The loss will be felt mostly at the broadcaster's Sarajevo hub, where nearly 200 employees worked, according to Foco. "It is a warning: independent journalism in the region is increasingly under threat," said the SafeJournalists Network (SJN), a coalition of journalist associations and unions in the Balkans. For Maja Sever, director of the European Federation of Journalists, "we are witnessing the silencing of the last voices that embodied professional and quality journalism". The network's shuttering comes after the United States cut funding to a slew of foreign-based media outlets, part of President Donald Trump's budget cuts -- including to news outlets he deems hostile to his agenda. Voice of America's Serbian office closed in March after 82 years, and the future of the regional newsrooms of Radio Free Europe remains unclear. Many other independent outlets that relied on US government funding have also closed or are struggling around the world. "The damage is very significant, profound," Sever said. Independent media disappearing Balkan countries rate poorly in the 2025 World Press Freedom Index, created by watchdog group Reporters Without Borders. Out of 180 countries, Bosnia ranks 86th and Serbia 96th. The report also noted that Serbian media "bear the brunt of attempts by the authorities to quell" large-scale anti-government protests that have rocked the country for months. At least 28 media professionals had been assaulted by police or supporters of President Aleksandar Vucic since February, it said. Independent media in the Balkans are increasingly rare, and some, like the N1 channel, are not distributed by public or government-affiliated cable operators. As these outlets shrink, many journalists will leave the profession, Sever warned. "Those who ask questions are leaving, those who think independently are leaving. Who, then, will ask a question to a prime minister or a president at a press conference? Algorithms? Artificial intelligence?" she said.
