‘My grandmother never used yuzu': global gastronomy is out as Catalan chefs celebrate tradition

They revolutionised cooking worldwide with radical techniques and a highly technical cuisine of playful trompe l'oeil – but now many disciples of Catalonia's iconoclastic chef Ferran Adrià believe it's time to get back to their roots.
Catalonia has been named World Region of Gastronomy 2025 by the International Institute of Gastronomy, Culture, Arts and Tourism and later this month 60 Michelin-starred chefs will launch a campaign to position Catalonia as a unique and exceptional gastronomic destination.
While not rejecting the techniques of so-called molecular gastronomy introduced by Adrià at his restaurant El Bulli, with its foams, spherification and liquid nitrogen, the emphasis will be on local produce and the region's gastronomic culture. El Bulli closed in 2011.
'Copying El Bulli is over. Now it's become a huge repertoire of techniques that each person can apply to their cooking,' said Jordi Artal, chef at the two-starred Cinc Sentits in Barcelona. 'I wouldn't say there's a backlash; it's part of the natural ebb and flow. We use modern techniques but in ways that hark back to Catalan gastronomic history. That's the ideal.'
Artal said there had always been a schism between those who believe you should only cook what's in season and Adrià saying: 'I'm an artist, find me the world's best cherry in January so I can make my dish.'
Carme Ruscalleda said: 'The concept may have changed but my cooking has always been based in the Mediterranean and its produce.' The chef was speaking in her home town of Sant Pol de Mar, next door to the restaurant where she won the first of seven Michelin stars. 'We must embrace new ideas without losing sight of who we are. Catalan cuisine has Roman and Greek and medieval roots. We make many dishes that are basically medieval but with modern techniques.'
This year chefs such as the Roca brothers in Girona and Jordi Vilà in Barcelona have opened – running alongside their flagship restaurants – more modest establishments where they offer more traditional dishes.
'We are taking a broad but not a simplified view of Catalan cuisine,' said Joan Roca about Fontané, the brothers' latest venture, where prices are well below those of El Celler de Can Roca, twice voted the best restaurant in the world.
Vilà, chef at one-starred Alkimia and the more homespun Al Kostat del Mar, said: 'Joan Roca and Carme Ruscalleda have always cooked Catalan food but what happened was that what became important was what we call cocina vanguardista [avant-garde cuisine], when what really matters is to use local produce and express yourself in your cooking.
'Many young chefs don't aspire to be Joan Roca or Ferran Adrià but want to cook the dishes their mothers or grandmothers made.'
Tradition doesn't always come cheap, however. The tasting menus at high-end restaurants such as El Celler de Can Roca cost upwards of €200 (£170), without wine.
Oriol Castro, one of three chefs – all ex-El Bulli – behind Disfrutar, voted best restaurant in the world last year, said no one expected people to pay those sorts of prices for basic Catalan dishes.
'In Disfrutar we offer many dishes based on traditional recipes, with new techniques but traditional flavours, such as a suquet de peix [fish and potato stew] or mar i muntanya [seafood and rabbit or chicken casserole],' said Castro, who insists there is no backlash against the El Bulli school of cooking.
'People come here to eat modern, creative versions of traditional dishes. What's important is the combination of creativity and tradition. There isn't a war. All of us want to preserve this tradition.'
Artal said that while he was no purist, in keeping with his principles there were only Catalan and Spanish wines on his wine list. 'I can't explain to a customer that a dish was inspired by my great-grandmother and that we're using locally sourced ingredients and then serve a wine from Bordeaux,' he said. 'I love yuzu but there's no yuzu on the menu because I couldn't say my grandmother used yuzu.'
Everyday Catalan cuisine may be in good health outside Barcelona but in the capital it's far easier to find ramen, sushi, hamburgers or pizza than traditional fare.
'I'm not against ramen or hamburgers, I'm against globalization,' said Vilà, who has published a humorous 'self-defence manual' for Catalan cooking. 'Here there are 50 ramen places and none that serve escudella,' a traditional Catalan stew containing pasta or noodles.
Ruscalleda said: 'Young people are attracted to the new, so they order sushi or ceviche but they don't know about their own culture.' She shares the view that the biggest threat to traditional cuisine everywhere is that people have stopped cooking at home.
In the meantime, it seems it is up to the culinary elite to maintain tradition, a paradox that Vilà accepts.
'We're in a transition because the grandmothers of the future don't want to stay at home cooking, they want to be out in the world,' he said. 'Obviously, a top chef is no substitute for a grandmother, but it's up to us keep the tradition alive.'

Vick Hope has broken her silence after giving birth to her first child last month. The Radio 1 star welcomed her baby boy Micah with husband Calvin Harris, with the DJ sharing the happy news earlier this month. And now Vick has 'emerged from our little newborn bubble' to share photos of her first month as a mum. Sharing snaps of herself cradling Micah alongside one of Calvin and her son and her beloved parents meeting the newborn, Vick gushed she was 'besotted'. 'Emerging from our little newborn bubble to say happy first month Micah, you are magical and we are so utterly besotted with you.' She also paid tribute to her 'powerful' home birth at the couple's idyllic Ibiza farm, revealing: 'Our beloved baby boy Micah Nwosu Wiles completed his journey to us on Sunday 20th July in a beautiful, powerful home birth here in Ibiza, surrounded by love and nature and chickens.' Vick had a home water birth at their property in Ibiza, where she flew after beginning her maternity leave, sharing a snap of herself in her birthing pool. Calvin, 41, also previously shared a candid photograph of his wife laying in the birthing pool and a tender shot of himself with Micah moments after the birth. He included a graphic photograph of Vick's placenta, which was later turned into pills by drying and grinding the organ into a powder that's then encapsulated. This practice, called placentophagy, is believed by some to offer postpartum benefits. Some people believe eating the placenta can prevent postpartum depression; ease bleeding after delivery; promote a healthy hormone balance in the body; improve mood, energy and milk supply; and provide important nutrients, such as iron. But there's no evidence that eating the placenta has health benefits. Alongside the series of photos, Calvin announced the birth and wrote: '20th of July our boy arrived. Micah is here! My wife is a superhero and I am in complete awe of her primal wisdom! Just so grateful. We love you so much Micah.' The couple were congratulated by fans and friends in the comments section, including fellow DJ Oliver Heldens who queried the placenta pills. He wrote: 'Wow, congratulations to all 3 of you! Daily Mail contacted Calvin's representatives for comment. 'NO BENEFIT' TO EATING PLACENTA, SAY EXPERTS The placenta is an organ attached to the lining of your womb during pregnancy. It connects the mother and the baby in the uterus and delivers oxygen, nutrients, and hormones to it. It also takes away the waste that the baby makes. After the baby is born, the placenta is also delivered through a few more contractions. The consumption of placenta, called placentophagy, is an old practice that has been observed in several cultures. More recently, celebrities like Kim Kardashian-West and January Jones made headlines for consuming their placenta after giving birth. It is claimed that ingesting the placenta reduces chances of postpartum depression and increases the quality of breast milk. It's been observed that dogs who eat their placentas had reduced labour pain and bonded with their puppies, however, such effect were not tested in women. However, scientists say there are no benefits to new mothers eating their placentas, and it could actually do harm. Consuming the placenta has become increasingly popular among new mothers because of claimed benefits such as a lower risk of getting postpartum depression, and increased mood and energy levels. Health experts led by an obstetrician from New York-Presbyterian/Weill Cornell Medical Center in New York City said the risks of eating a placenta could outweigh any potential benefits. They analysed dozens of studies about placenta consumption and now advise obstetricians to discourage their patients from eating the placenta in any form, according to the study published in the American Journal of Obstetrics and Gynecology. 'As obstetricians, it's important to tell the truth,' said Dr Amos Grunebaum, lead author and obstetrician. 'And the truth is it's potentially harmful and no evidence it's beneficial, so therefore, don't do it.' 'Over the last few years, we've had an increasing demand from patients who wanted to take their placenta home after delivery in order to eat it.' The experts feared eating the organ could spread bacterial or viral infections.

A MUM has shared how her family ditched the UK to live in Spain four years ago and will 'never be bored' of her new life. Jodie Marlow, who shares clips of her new sunny lifestyle online, shared how she doesn't miss the rainy weather at all, and spends her days enjoying the sun. 5 5 Jodie, who is a stay-at-home mum, said her two boys finish school at 1.30pm in summer and they spend afternoons playing in the pool. In a clip on her @jodiemar1ow account, which has over 1,790 likes, she said: 'Four years in & don't think I'll ever get bored of this.' She added that the weather is perfect for her, with temperatures in the top 20s or 30s every day. Jodie said: 'It's not too hot, not too cold. Like, I can wear my nice summer dresses, which I love.' When her kids are at school, she spends her time picking up fruit and veg at the local market, or going for a pamper, including laser hair surgery. She then does housework before picking up the boys and having some lunch with them. Meanwhile, weekends are spent exploring gorgeous nearby beaches and dining out in local restaurants. MOVING TO SPAIN Finally, Jodie advised people on how they can also make the move to Spain. She shared: 'If you hold a UK British passport, you can't just move to Spain like you could pre-Brexit, you do need a visa. 'The working visa you could look into getting dependent on if you've got a specialised job. I quit my job and did a complete 180 moving to Spain - beer is just $3 a pint and my life is so much better 'The self-employed visa, basically they said to us it's just impossible to get, so we didn't even try with that. 'But the digital nomad visa allows anyone that is working online, as long as you are earning a set amount of money that provides for if there's four of you for the family, you can pay for all four of you, and they set out exactly how much that would be.' Since Brexit, UK citizens, and non-EU citizens require a visa to stay longer than 90 days. 5 SOCIAL REACTION Many people were quick to chime in and comment on her new life in Spain, and praise her for making the move. One said: 'It's beautiful there, my sister moved there 26 yrs ago, no regrets.' A second added: 'I don't think you could ever get bored of that lifestyle.'
