Chi-Chi's revival: Mexican restaurant chain's first two locations revealed
Chi-Chi's, the Minnesota-born Mexican restaurant chain that vanished nearly 20 years ago, will begin its revival this year in the Twin Cities.
Michael McDermott, the son of Chi-Chi's founder Marno McDermott, told Bring Me The News the first Chi-Chi's restaurants will open in St. Louis Park and Maple Grove.
In both communities, McDermott plans to convert his Rojo Mexican Grill restaurants into Chi-Chi's.

The St. Louis Park restaurant will open first, likely sometime this summer, and the opening of the Maple Grove restaurant is expected to follow in the fall.
"We'll have most if not all the dishes that people remember," McDermott said, adding some signature dishes from Rojo and new dishes, such as birria tacos, are planned for the menu.
His own Chi-Chi's go-to dish? The deep-fried red chili burro served enchilada-style.
Hormel Foods, which sells Chi-Chi's brand salsas, tortillas and seasonings, announced in December it had reached a new trademark agreement with McDermott to pave the way for the restaurant chain's revival.
Since then, it's been a whirlwind for McDermott who told Bring Me The News he did not expect such an overwhelming response to the news.
"It literally went viral all over the country," he said.
Among those reacting to the news are former Chi-Chi's franchisees who are interested in taking part in the comeback, he said.
McDermott, who hopes to bring Chi-Chi's across the Midwest and East Coast to start, said he's working to get the franchise program launched as soon as possible.
With a crowdfunding initiative on StartEngine, McDermott is looking to raise $3.5 million with equity given to investors who contribute $250 or more.

In March, remittances reached $5.14 billion. The annual decline is the largest since September 2012 and is likely attributable to a deteriorating US labor market and increasing fears of deportation among immigrants in the workforce, said Gabriela Siller, director of economic analysis at Grupo Financiero Base. 'This was due to the fact that migrants in the United States are afraid to go out to work and send remittances because they could be deported,' she said. A prolonged plunge could impact consumption and growth in Latin America's second-largest economy, which depends heavily on transfers from the US, Siller added. Mexico received nearly $65 billion in remittances in 2024, representing about 3.5% of gross domestic product, Finance Minister Edgar Amador said during a press conference last month. In the first quarter, 97% of its remittances came from the US, according to central bank data. Mexico's economy narrowly avoided entering a recession during the first three months of 2025, and the central bank reduced its growth estimate for the year to 0.1%, from 0.6% previously, in a quarterly inflation report released last week. US lawmakers are currently considering a 3.5% levy on remittances sent out of the country by non-citizens, an idea Mexican President Claudia Sheinbaum's government has rejected as double taxation. Changes to the US labor market and wages for low-skilled workers pose key risks to remittances going forward, Alberto Ramos, chief Latin America economist at Goldman Sachs Group Inc., said in a note to clients. 'The tightening of US immigration policies, and measures to reduce the flow of illicit drugs and money laundering may also impact the flow of remittances to Mexico,' he said. Another brewery and taproom player closes, no bankruptcy filing
Opening a restaurant under any circumstances can be seen as a foolhardy move. The vast majority of restaurants fail within a few years and the amount that makes it for over five stands at just over 50%. Most people would not make an investment that's basically a coin toss. That's just a really dumb way to invest your money when putting it in a market tracking fund would bring you an average of 9% most years. They are making an emotional decision to do something that pretty much everyone would tell you not to do. When you open a brewery, you are somewhat limiting your clientele and entering a space that's very crowded. People may love your beer and may come back once a month or even more, but many cases, they will visit you once or twice and opt for cheaper national brands. It's a punishing business where a competitor might open up in the same market, not because they did any sort of research, but for the same emotional reasons. When you add in the impact of Covid, breweries, brew, pubs, and tap rooms faced, added financial stress. They had to take on additional loans just to stay afloat during the period or businesses had to shut down. That has been a recipe for disaster, which has led to numerous failures. Now, another regional brewery and taproom chain has closed It's doors for good with no warning. While Track 7 Brewing's website has gone dark, some of its distributors are still offering its beer. Craft Beer King, a retailer which sells online, shared the brewery's basic methods and style on its website. "Track 7's approach to beer is in the vein of the firmly-hopped West Coast tradition, but without fidelity to a singular 'style.' This unfocused approach allows Track 7 to experiment with all varieties of beer, regardless of American, Belgian, English, or German inspiration," it posted. The Craft Beer Kings website shows off a number of Track 7 beers including: Track Seven Nukin' Futz: This creamy and crazy ale takes our Burnt Fog Smoked Porter recipe, drops the smoked malt and adds peanut butter, chocolate and lactose sugar. The combination produced a creamy peanut butter cup of a beer fitting of a celebration and capable of easing the winter Seven Panic IPA: After several months of hearing requests (and even pleas) to add an IPA to our line-up, we released the Panic IPA in August 2012. The company has not filed for bankruptcy and the only explanation for its abrupt shutdown was a not posted on its Instagram page. Next to a headline that reads: "Attention our brewery and taprooms have permanently closed. Thank you for your years of patronage. It has been a fun 13 years," the company offered the following note. "After 13 years we have made the decision to close our brewery and taprooms in Curtis Park and Natomas effective today, Saturday, May 31, 2025. We sincerely thank you for your years of patronage!" Its last Instagram post was in 2020 and Track 7 Brewing does not appear to have any other social media pages. OfficeMax closing another store in the Twin Cities' south metro originally appeared on Bring Me The News. A closing sale is underway at the longtime OfficeMax in Eagan. The upcoming closure marks the end of an era for the Eagan Promenade shopping center, which welcomed the office supply retailer to its line-up of shops nearly 30 years ago. Banners in the window at the location advertise mark downs up to 40% ahead of the store's final day. OfficeMax, which merged with Office Depot a decade ago, has a shrinking footprint in the Twin Cities. Another south metro OfficeMax, in Savage, closed permanently late last year. That space is being taken over by California-based discount department store chain Ross Dress for Less. There's no word yet on what might be next for the OfficeMax space in Eagan once the longtime store officially departs.
