
Chef reveals his pet hate from customers and cheaper olive oil substitute
My chef hero is... not a famous chef but my own dad, who is a very good cook, and also my father-in-law, who is Sicilian and also very good. From a young age I've always been around good food and kitchens full of fun and family.
One restaurant that's worth blowing out for is... Fallow in London - what they're doing is top tier.
My pet hate in restaurants is... people who can't hold a knife and fork properly! I can't look!
My one piece of advice for an aspiring chef is... just keep on wanting it, if you truly want it you'll also enjoy it. Keep learning, keep on asking questions and trying new things.
The biggest mistake I see in kitchens is... people who've maybe climbed the ladder a bit too quickly and get a senior position when they're not ready. It's not just about cooking, a kitchen needs leadership and this can take a long time to learn to do in a kind and fair way.
A tip that non-chefs might not know to make them a better cook is... keep on cooking, reading and talking to people involved in food. Also, there's loads of good content on social media now.
My favourite cookbook is... I go through stages. I got the original River Cottage book for my 21st - it touched on foraging and nose to tail cooking, which I was really into when I was younger. More recently, Ottolenghi & Tamimi - I really love both of their books.
One thing I wish more people realised about restaurants is... in my experience it's always been very flexible with my life. I think people think it's all late nights and long days but I've found it to be a really flexible and a lovely way to live.
I've given free meals... to my wife and children.
The worst type of customer is... a rude one.
The most overrated single food item is... salt and pepper chicken.
My secret ingredient I love and use all the time is... wonton soup seasoning - it gives everything a little lift.
My tip for preventing waste is... write your menu at home. Try and plan some of your week this way and you won't buy too much food in your shopping, because you know you're getting a couple of takeaways in the week as well! Also frozen veg is very good and having a couple of different bags in your freezer is handy. I always have soy beans, peas, spinach and green beans in my freezer.
My favourite cheap substitute is... virgin rapeseed oil.
My go-to cheap eat at home is... very quick spaghetti pomodoro.
Ingredients
Two litres of good passata
One tin of tomatoes
Bulb of garlic finely sliced
Big bunch of basil - torn up
Salt - 1/2 tsp
Sugar - good pinch
50g good tomato puree
Extra virgin olive oil or rapeseed oil
Spaghetti - cooked with a bit of water in reserve
This hasn't even got onion in the sauce - just tomato, garlic and basil!
Cook the spaghetti in boiling salted water until just cooked and strain.
Reserve some water (about 200ml) and leave to cool.
Spread out the spaghetti on a tray and dress in a bit of olive oil so it doesn't stick together (don't run it under cold water to cool down - this isn't needed and it washes the flavour away and makes the pasta wet and soggy).
Heat up the remaining olive oil in a sauce pan on a medium heat and slowly caramelise the garlic until golden.
Now add the pasta and half the basil.
Mix the pasta water with the tomato puree and add this to the pan.
Add the salt and sugar and gently cook out until it's started to thicken.
When it's finished, add the remaining basil and check seasoning.

During summer in London, there's one thing on everyone's mind: how to stay cool. Where air-con fails, there's no better way to ward off the heat than a good old-fashioned ice cream. Lucky for Londoners, a brand new gelateria has just opened up in the capital. Don Nino is a popular ice cream chain in Rome and Florence, and now it's made its way to the UK. The store popped up on Paddington Square in early July, and has been serving proper Italian gelato to the capital since. The café is the brainchild of Francesco Mastroianni, a man so good at making ice cream he's won multiple awards for it and been dubbed 'Gelato Ambassador of the World' by his fans. Clearly, he knows what he's doing. Each of Don Nino's 24 flavours has been carefully crafted by Francesco and his team, covering everything you might want from chocolate to lemon to pistachio. If ice cream isn't your thing, fear not. Francesco is also an expert patisserie chef, so Don Nino is also stocked up with authentic cannoli and pastries. Some are savoury – filled with meat or cheese – and others are sweet treats like brioches and macarons. There's also the eponymous Don Nino bite, a nutty, chocolatey delight. Getting hungry yet? The manager of the London shop, Benito Megna, has expressed his excitement about the opening, saying: 'We're thrilled to introduce Londoners to our authentic Italian gelato and freshly baked pastries and Sicilian cannoli in our first UK store. A stunning new waterfront Italian restaurant has opened in Barangaroo
Barangaroo has welcomed a brand-new Italian restaurant to hit up for your next work lunch – or for a relaxed dinner. Called Gina, the 170-seat indoor-outdoor restaurant – inspired by Italy's waterfront trattorias – is by the same team behind Sydney's Izgara and Malika Bakehouse. Come for house-made pastas, a spacious terrace and fun Italian cocktails created by celebrated bartender Grant Collins of Zephyr and Gin Lane. Sunset Spritz at Gina? We're there. The kitchen is led by group executive chef Michael Chang (ex-head chef at Maydanoz), joined by Sicilian-born head chef Giuseppe Pappalardo. Fresh pasta is a focus here, with the menu featuring five shapes each day – from bucatini to calamarata, casarecce, pappardelle and caramelle – paired with classic Italian flavours. Our pick is the pappardelle with Moreton Bay bug, cherry tomatoes and chilli oil. Cold cuts, including LP's mortadella, are sliced to order at the bar – perfect for aperitivo hour. There are also a trio of steaks on the menu, starting from just $35 for 250g of Angus beef rump cap, served with a house-made mustard. This August also sees the return of one of east London's most legendary pubs in a brand new (somewhat classier guise), as well as a beefy new brewery for Walthamstow. The big ticket Spanish spot Legado, Shoreditch Founder of Mayfair's turbo tapas joint Sabor, Nieves Barragán Mohacho, is set to open her second restaurant in league with the all-conquering JKS Restaurants. Legado – which translates to 'Legacy' – will serve up lesser-known regional Spanish dishes, and will also be home to La Taberna, an all-day bar and terrace where you can pick up pintxos, cava and sherry. 1C Montacute Yards, 185-186 Shoreditch High Street, E1 6HU Opening date: August 28 2. The return of an indie sleaze icon The Macbeth, Hoxton This pub will be extremely familiar to anyone who got drunk in London about 15 years ago. Founded in Bologna in 2010, they've been voted 'world's 6th best artisan pizzeria' by 50 Top Pizza. The Michelin-star adjacent bar The Clove Club, Shoreditch Double Michelin star champ The Clove Club is getting into the holiday spirit by (re)launching its bar for the summer. You used to be able to swing by the front of the restaurant for snacky bits and drinks, so we're happy to see the return of this more affordable way to enjoy Isaac McHale's immaculate food, even if it is only for a few weeks. Expect warm crab dumplings, fish pakoras, chicken kebabs, Scottish tacos (pigs blood and buckwheat pancakes with pork jowl) and parmesan fries with Manjimup truffle. The menu includes broadbean orzotto with glazed chicken wing, aubergine scarpece with clam bagna cauda and crispy palourde clams, beef carpaccio with oyster mayonnaise and baby artichokes and whole sucking pig belly for two. Dough Hands x Toklas Bakery, Temple Dough Hands makes the finest pizza in London and now you don't need to head to London Fields or Nunhead to try it. Toklas Bakery is hosting a two night pop-up collab with Dough Hands founder Hannah Drye on August 5 and 6, from 6pm until they sell out. There'll be white pie with Calabrian chilli and hot honey on offer, as well as pepperoni and pickled peppers, with wedge Caesar as well as tomato salad with tahini and salted ricotta on the side. Toklas will be providing passionfruit and coconut ice cream sandwiches for pudding.
