This robot uses Japanese tradition and AI for sashimi that lasts longer and is more humane

A local startup is using artificial intelligence and robotics in an unlikely way: making sashimi and other fish dishes taste better, last longer and more humane.
El Segundo-based Shinkei Systems wants to bring a traditional Japanese method of handling fish to fine dining in America, using technology to replace the labor-intensive process historically handled by practitioners on board ships. Investors have just bet millions that it will succeed.
The company's AI-driven robot — called Poseidon — has been designed to do a traditional form of fish handling called ikejime in Japanese. It is a method of killing fish that enthusiasts say enhances flavor, texture and shelf life.
Although fish processed in this way is found in some of the best restaurants in Japan, it hasn't been promoted in the U.S. because it is generally too expensive. Automating the process will make it more readily available to Americans, said Saif Khawaja, the company's chief executive.
'My end goal is that you're walking into your local grocery store and can buy fish that lasts three times as long, tastes better and is handled humanely,' he said.
The company raised $22 million in a funding round last month, co-led by Founders Fund and Interlagos, bringing total funding to $30 million since its inception. It has four Poseidons working on ships in the Pacific and Atlantic and hopes to have 10 more working in the coming year.
The ikejime process involves taking live fish that has just been caught and quickly putting them out of their misery by killing them with a spike through the brain and cutting their gills. This stops the stress hormone and lactic acid buildup that can hurt flavor and texture when fish are left to asphyxiate.
Although traditional practitioners sometimes add a step in which the spinal cord is destroyed, Poseidon just does the first steps of the ikejime technique.
The method has remained largely artisanal even in Japan, where only some fishermen will make the effort to process batches of fish in this way to sell to specific sushi chefs who are obsessed with having the highest-quality ingredients.
Even in Japan, the method, 'is still too labor-intensive to replicate at a high speed without damaging the fish,' Khawaja said, adding that, 'It's impractical and unsustainable for fishermen to adopt methods that require significant hands-on work,' in the U.S.
Shinkei says it also has a higher calling than just better-tasting fish. Khawaja said one of the motivations for developing the technology was to try to find a kinder, gentler way to kill fish than letting them die gasping for air.
During childhood fishing trips with his father in the Red Sea, he remembers it being 'very hard to watch' fish suffocating after they were caught.
While he was in graduate school at the University of Pennsylvania, Khawaja was moved by an essay that argued that fish suffer inhumane deaths because they cannot vocalize pain. He even once considered developing sensors to make fish's pain audible.
Shinkei provides Poseidon machines to fishermen, who then sell fish processed through the machines back to Shinkei at a premium. Shinkei in turn sells the fish to restaurants and other retailers underits fish company Seremoni.
Poseidon is roughly refrigerator-sized and sits on fishing boat decks. It processes fish within seconds of being caught. The fish is fed through an opening in the machine and into a small vinyl cavity. The machine then uses AI to identify what kind of fish it is and where exactly its brain and gills are.
Fish emerge with a hole in the head and incisions near the gills before being placed in an ice slurry for blood drainage.
Quickly killing the fish, bleeding it and chilling it without freezing leads to fish that is noticeably better, Khawaja said.
'There's going to be a flavor profile difference and there's going to be texture profile difference,' he said.
The company chose Los Angeles for its headquarters and production because it has the right mix of potential employees as well as customers. It has the mechanical engineering talent as well as a major fishing fleet and lots of high-end restaurants.
'The best mechanical engineering talent in the world, in my opinion, is in Southern California,' said Seremoni co-founder Reed Ginsberg.
The city is also a major health and consumer products hub as well as a trend setter for cutting-edge food fads.
Chef Michael Cimarusti, co-owner of the Michelin starred Providence restaurant in Los Angeles, says he tries to buy local ikejime fish when he can because it preserves the quality and color. The fish preserved using ikejime look as if they 'were just pulled from the water minutes ago,' he said in an interview posted on YouTube by the American Fishing Tackle Co.
Shinkei currently processes thousands of pounds weekly across operations in Washington, Central California and Massachusetts, with expansion to Alaska and the Gulf of Mexico planned this year. After feedback from fishermen that the bots took up too much deck space, the company is developing 'Block 2' robots this year that will have roughly half the footprint while processing fish twice as fast.
Currently, black cod and black sea bass processed through Poseidon are sold under Shinkei's brand Seremoni at retailers such as Happier Grocery and served at upscale restaurants including Atomix and Sushi Zo. This summer, the company plans to add salmon and red snapper to its offerings.

U.S. job growth cooled sharply over the past three months and the unemployment rate rose, showing the labor market is shifting into a lower gear amid widespread economic uncertainty. Payrolls increased 73,000 in July after the prior two months were revised down by nearly 260,000, according to a Bureau of Labor Statistics report out Friday. In the last three months, employment growth has averaged a paltry 35,000 - the worst since the pandemic. The data send a stronger signal that the labor market is weakening more noticeably. Not only is job growth cooling markedly and unemployment rising, it's harder for unemployed Americans to get a job and wage gains have largely stalled. That poses further risks to a slowdown in consumer and business spending that's already underway. The report caps a week of high-profile data that show underlying economic momentum is cooling and inflation progress is stagnating, reasons why the Federal Reserve chose to keep interest rates unchanged again in a divided decision. Chair Jerome Powell maintained that the labor market is solid and the central bank needs to be wary of inflation risks - especially with President Donald Trump's latest round of tariffs. "The cracks in the labor market have widened substantially and add further pressure on the Federal Reserve to lower interest rates and support the dissenting Fed Governors' views that the FOMC should have lowered rates this week," Nationwide Chief Economist Kathy Bostjancic said in a note. She was referring to the Federal Open Market Committee, the panel that sets interest rates. The S&P 500 opened lower while Treasury yields and the dollar fell as traders upped their bets that the Fed will cut rates at their next meeting in September. Officials will see another employment report and a few more on inflation before then. After the report, Trump again called on the Fed to cut rates in a social media post. The sluggish payrolls growth reflected declines in manufacturing, professional and business services as well as government. Downward revisions to local government education payrolls contributed to the overall revisions in the prior two months. Private payrolls rebounded after barely rising in June, in large part due to health care and social assistance. Trump's efforts to pull back on government spending are still rippling through the job market. The federal government shed jobs for a sixth month in July, and unemployment is creeping higher in parts of the country that are hubs for government work, including the nation's capital. The cuts have also spilled over to layoffs at universities and nonprofits reliant on federal funding. Elsewhere in the labor market, demand for workers remains mostly healthy. Vacancies are still hovering above prepandemic levels, and initial applications for unemployment benefits have fallen in recent weeks, suggesting companies are holding on to their workers. Layoffs are generally low, though rising particularly in the tech sector due in part to the rise of artificial intelligence. Data later Friday showed consumer sentiment rose to a five-month high in July on a recent stock-market rally, while U.S. factory activity contracted at the fastest pace in nine months. "The main takeaway from the jobs report is that labor demand appears to be falling faster than labor supply - the labor market is not 'solid,' as Powell characterized it, and we expect him to revise his opinion accordingly. While a rate cut in December remains our base case, we see growing chances of an earlier move." The jobs report is composed of two surveys - one of businesses, which produces the payrolls figures, and another of households, which publishes unemployment and participation, among other metrics. The participation rate - the share of the population that is working or looking for work - dropped to 62.2%, the lowest in nearly three years. The rate for those between the ages of 25 and 54, known as prime-age workers, also declined. Some economists say Trump's immigration crackdown is pushing foreign-born workers out of the labor force, which is taking a toll on participation and also helping keep a lid on unemployment. The rise in joblessness partly reflected more people who lost their jobs outright. The number of people unemployed for 27 weeks or longer rose to 1.83 million, the highest since the end of 2021. The jobless rate among Black Americans rose sharply also to the highest since late 2021. Central bankers pay close attention to how labor supply and demand dynamics are impacting wage gains - especially with inflation risks poised to the upside. Columbia Sportswear sues Columbia University over merch in latest legal battle for Ivy

For decades, T-shirts, sweatshirts and other clothing under the Columbia Sportswear brand and clothing emblazoned with the Columbia University name coexisted more or less peacefully without confusion. But now, the Portland-based outdoor retailer has sued the New York-based university over alleged trademark infringement and a breach of contract, among other charges. It claims that the university's merchandise looks too similar to what's being sold at more than 800 retail locations including more than 150 of its branded stores as well as its website and third-party marketplaces. Columbia Sportswear has filed a lawsuit against Columbia University because the campus's merchandise looks identical to its brand. Columbia Sportswear In a lawsuit filed July 23 in the U.S. District Court for the District of Oregon, Columbia Sportswear, whose roots date back to 1938, alleges that the university intentionally violated an agreement the parties signed on June 13, 2023. That agreement dictated how the university could use the word 'Columbia' on its own apparel. As part of the pact, the university could feature 'Columbia' on its merchandise provided that the name included a recognizable school insignia or its mascot, the word 'university,' the name of the academic department or the founding year of the university — 1754 — or a combination. But Columbia Sportswear alleges the university breached the agreement a little more than a year later, with the company noticing several garments without any of the school logos being sold at the Columbia University online store. Many of the garments feature a bright blue color that is 'confusingly similar' to the blue color that has long been associated with Columbia Sportswear, the suit alleged. The lawsuit details that the Ivy League institution violated an agreement the parties signed on June 13, 2023. Spiroview Inc. – The lawsuit offered photos of some of the Columbia University items that say only Columbia. 'The likelihood of deception, confusion, and mistake engendered by the university's misappropriation and misuse of the Columbia name is causing irreparable harm to the brand and goodwill symbolized by Columbia Sportswear's registered mark Columbia and the reputation for quality it embodies,' the lawsuit alleged. The lawsuit comes at a time when Columbia University has been threatened with the potential loss of billions of dollars in government support. Last week, Columbia University reached a deal with the Trump administration to pay more than $220 million to the federal government to restore federal research money that was canceled in the name of combating antisemitism on campus. Under the agreement, the Ivy League school will pay a $200 million settlement over three years, the university said. Columbia Sportswear aims to stop all sales of clothing that violate the agreement, recall any products already sold and donate any remaining merchandise to charity. Columbia Sportswear is also seeking three times the amount of actual damages determined by a jury. Neither Columbia Sportswear or Columbia University couldn't be immediately reached for comment.

Corporation for Public Broadcasting to shut down after being defunded by Congress, targeted by Trump

WASHINGTON (AP) — The Corporation for Public Broadcasting, a cornerstone of American culture for three generations, announced Friday it would take steps toward its own closure after being defunded by Congress — marking the end of a nearly six-decade era in which it fueled the production of renowned educational programming, cultural content and even emergency alerts. The demise of the corporation, known as CPB, is a direct result of President Donald Trump's targeting of public media, which he has repeatedly said is spreading political and cultural views antithetical to those the United States should be espousing. The closure is expected to have a profound impact on the journalistic and cultural landscape — in particular, public radio and TV stations in small communities across the United States. CPB helps fund both PBS and NPR, but most of its funding is distributed to more than 1,500 local public radio and television stations around the country. The corporation also has deep ties to much of the nation's most familiar programming, from NPR's 'All Things Considered' to, historically, 'Sesame Street,' 'Mister Rogers' Neighborhood' and the documentaries of Ken Burns. The corporation said its end, 58 years after being signed into law by President Lyndon B. Johnson, would come in an 'orderly wind-down.' In a statement, it said the decision came after the passage through Congress of a package that clawed back its funding for the next two budget years — about $1.1 billion. Then, the Senate Appropriations Committee reinforced that policy change Thursday by excluding funding for the corporation for the first time in more than 50 years as part of a broader spending bill. 'Despite the extraordinary efforts of millions of Americans who called, wrote, and petitioned Congress to preserve federal funding for CPB, we now face the difficult reality of closing our operations,' said Patricia Harrison, the corporation's president and CEO. As part of Thursday's committee deliberations, Sen. Tammy Baldwin, D-Wis., authored but then withdrew an amendment to restore CPB funding for the coming budget year. She said she still believed there was a path forward 'to fix this before there are devastating consequences for public radio and television stations across the country.' 'It's hard to believe we've ended up in the situation we're in,' she said. 'And I'm going to continue to work with my colleagues to fix it.' But Sen. Shelley Moore Capito, sounded a less optimistic tone. 'I understand your concerns, but we all know we litigated this two weeks ago,' Capito said. 'Adopting this amendment would have been contrary to what we have already voted on.' CPB said it informed employees Friday that most staff positions will end with the fiscal year on Sept. 30. It said a small transition team will stay in place until January to finish any remaining work — including, it said, 'ensuring continuity for music rights and royalties that remain essential to the public media system.' 'Public media has been one of the most trusted institutions in American life, providing educational opportunity, emergency alerts, civil discourse, and cultural connection to every corner of the country,' Harrison said. 'We are deeply grateful to our partners across the system for their resilience, leadership, and unwavering dedication to serving the American people.' The impact will be widespread NPR stations use millions of dollars in federal money to pay music licensing fees. Now, many will have to renegotiate these deals. That could impact, in particular, outlets that build their programming around music discovery. NPR President and CEO Katherine Maher estimated recently, for example, that some 96% of all classical music broadcast in the United States is on public radio stations. Federal money for public radio and television has traditionally been appropriated to the Corporation for Public Broadcasting, which distributes it to NPR and PBS. Roughly 70% of the money goes directly to the 330 PBS and 246 NPR stations across the country, although that's only a shorthand way to describe its potential impact. Trump, who has called the CPB a 'monstrosity,' has long said that public broadcasting displays an extreme liberal bias, helped create the momentum in recent months for an anti-public broadcasting groundswell among his supporters in Congress and around the country. It is part of a larger initiative in which he has targeted institutions — particularly cultural ones — that produce content or espouse attitudes that he considers 'un-American.' The CPB's demise represents a political victory for those efforts. His impact on the media landscape has been profound. He has also gone after U.S. government media that had independence charters, including the venerable Voice of America, ending that media outlet's operations after many decades. Trump also fired three members of the corporation's board of directors in April. In legal action at the time, the fired directors said their dismissal was governmental overreach targeting an entity whose charter guarantees it independence.
