Japanese brown sugar shochu distillery uses music to create different flavours

At a small distillery in Japan's Amami Islands, speakers thump with reggae basslines, hip-hop beats and other music. It is not for the workers, but for the barrels of kokuto shochu absorbing the vibrations.

The team behind this 'sonically aged' spirit says the music genres coax different flavours from the spirit, adding a rhythmic twist to the centuries-old island tradition that is gaining fans far beyond Japan.
'When I became the CEO in 2021 after taking over the business from my father, I knew I had to make changes to appeal to a wider range of customers,' says Selena Nishihira, president of Nishihira Distillery on the sun-drenched Amami Oshima, the largest of the Amami Islands.
Made by fermenting boiled-down sugar cane syrup with rice koji, brown sugar shochu is prized for its fragrant, mellow character. It contains no artificial sweeteners or additives.

Like Japanese sake and whiskey before it, this Kagoshima spirit is being rebranded for international palates as domestic alcohol consumption continues to decline.

A stellar run on Hong Kong stocks gained traction on Thursday, with the benchmark heading for a level not seen in almost four years after better-than-expected earnings by Tencent Holdings added to signs that China's economic activity is picking up. The Hang Seng Index rose 0.2 per cent to 25,674.25 as of 10.56am local time, on track for its highest close since November 16, 2021. The Hang Seng Tech Index gained 0.1 per cent. On the mainland, the CSI 300 Index climbed 0.7 per cent and the Shanghai Composite Index added 0.3 per cent. Tencent, the second-biggest weighting on the Hang Seng Index, gained 1 per cent to HK$592. Semiconductor Manufacturing International advanced 3.8 per cent to HK$54.05 and Anta Sports Products added 2.9 per cent to HK$92.60. Second-quarter net income for Tencent rose 16 per cent from a year ago to 55.6 billion yuan (US$7.8 billion) based on the global accounting standard, the social-media giant said on Wednesday after the market closed. That beat the consensus estimate of 50.8 billion yuan in a Bloomberg survey of analysts. Sales increased for the 11th quarter, with a 15 per cent increase. 'Hong Kong stocks still have upside room,' said Yan Zhaojun, an analyst at Zhongtai Securities. 'Expectations for corporate earnings are stable. Earnings for the upstream industries will be revised upward because of China's move to cut excessive capacities in the anti-involution campaign.'

JSW MG Motor India – a joint venture between the country's JSW group and China's SAIC Motor – is leading the charge, growing its market share from under 1 per cent in February 2020 to 30 per cent by June this year. Hong Kong stocks on Thursday extended the gains from Wednesday's highest close in three weeks, as better-than-expected earnings by Tencent Holdings added to signs that China's economic activity is picking up. The Hang Seng Index rose 0.3 per cent to 25,700.51 as of 10.11am local time. The Hang Seng Tech Index gained 0.5 per cent. On the mainland, the CSI 300 Index climbed 0.9 per cent and the Shanghai Composite Index added 0.5 per cent. Tencent, the second-biggest weighting on the Hang Seng Index, gained 1 per cent to HK$592. Semiconductor Manufacturing International advanced 3.8 per cent to HK$54.05 and Anta Sports Products added 2.9 per cent to HK$92.60. Second-quarter net income for Tencent rose 16 per cent from a year ago to 56 billion yuan (US$7.8 billion) based on the global accounting standard, the social-media giant said on Wednesday after the market closed. Sales increased for the 11th quarter, with a 15 per cent increase. Investors also took comfort from data on China's money supply. M1, a measure of cash in circulation and corporate demand deposits, rose 5.6 per cent last month from a year earlier, the fastest pace since February 2023, according to a report released by the central bank on Tuesday. An increase in M1 typically points to an improvement in economic activity.
