As you sail into Spain's Bay of Santander, with its spectacular beaches and elegant waterfront architecture, you realise immediately that the capital of Cantabria is a place where people live very well indeed.
The beauty of arriving by ferry, slap bang in the heart of the city, is that you can dive straight into local life by heading for the Mercado de la Esperanza, a short stroll from the port. The imposing iron and glass structure was built in 1904 and is still the city's main market today. Seeing the dazzling array of super fresh fish glistening on slabs on the rows of stalls is enough to give you an idea of the high gastronomic standards throughout northern Spain.
Buy a sobao sponge cake, made with rich butter from the bucolic Pas valley, to nibble on as you wander around upstairs, where dozens of tempting cheeses made in Cantabria, the Basque country, Asturias and Galicia are on display.
Driving west along the coast from Santander, you can dip into a string of traditional towns, such as the chocolate-box pretty Santillana del Mar. Book ahead to experience the astounding reproduction of the Altamira cave paintings at the nearby National Museum and Research Centre of Altamira. Just a short drive from there you'll reach Comillas – which holds a market in the main square on Fridays. It's a popular seaside resort in summer, but also has some surprising architecture, such as El Capricho, an extraordinary house richly decorated with sunflower tiles that was designed by Antoni Gaudí.
While you could happily spend at least a couple of weeks tootling along the coast, swimming at a different splendid beach every day, you are never far from the mountain ranges that rise up a short distance inland. Crossing from Cantabria into Asturias, Cangas de Onís makes a great base for exploring the Picos de Europa national park.
Time your stay to coincide with the Sunday market, where people converge from the villages in the hills to sell their produce and catch up with friends. Start by buying one of the traditional baskets, as you are going to need it.
A real feast for the senses, this is where you'll find all the ingredients for the signature dishes of Asturias, such as fabada – an unctuous bean stew with chorizo and morcilla (blood sausage). Many varieties of apple are grown in orchards across the region and used to make cider, which you can try in the bars around the market.
Poured into tumblers from a great height to create a bit of fizz, it is fresh and zingy and goes very well with the cheeses that are the star of the show here. Cabrales is a dense, pungent blue cheese matured in mountain caves. Or you might prefer Gamoneu, which has a crystally texture and tangy finish. Some of these cheeses are made in cabins high in the hills around the beautiful Covadonga glacial lakes, Enol and Ercina, which are an easy drive from Cangas de Onís and popular with hikers.
Heading back towards Cantabria along twisting mountain roads, you stumble on tiny dairies in almost every village. Stop in the hamlets of Bejes or Tresviso to get a taste of rural life and try Picón Bejes-Tresviso, a deliciously creamy blue cheese. Drive deeper into the mountains to reach Potes, a gorgeous town in the heart of the Liébana area with plenty of characterful, rustic places to stay. Try to be there on a Monday morning when the market is in full swing and you can pick up everything you need for a hearty picnic.
You'll probably want to spend at least a couple of days in attractive Potes, but when you feel like a bit of sea air again, drive east across Cantabria to the fishing town of Santoña, east of Santander. If you love anchovies, you'll be in heaven here. But even if you think you don't like them, the softer texture and more subtle flavour of the local varieties may well change your mind.
The quayside is packed with factories devoted to the fiddly process of filleting and preserving the fish in oil, a job usually done by women. You can visit some of the factories to see this for yourself or have a look around the Galería de Arte de la Anchoa – the Anchovy Art Gallery – which is actually a fun multimedia experience that leads you through the history and development of the industry. Of course you get to taste some too, and by the end will understand why Santoña anchovies are so highly-prized in Spain and beyond.
To get back to Santander, drive along the Costa Trasmiera, a surprisingly rural stretch of coastline that is popular with Spanish holidaymakers. Have a walk around the Trasmiera ecopark in the Santoña, Victoria and Joyel marshes, one of the most important wetland areas in northern Spain and a haven for wading birds.
Later on, stop off for a swim at one of the superb beaches, such as Berria, Langre or Somo. You won't feel like leaving northern Spain – and there is so much more to explore – but at least when you get home you can dine out on the memories of all the wonderful local produce you discovered.

Handsome, historic Oviedo – capital of the Principality of Asturias and the commercial, administrative heart of the wider region – was last year's Spanish Capital of Gastronomy, which showcased the best of Asturian cuisine – rich meat, fresh seafood, creamy cheeses and refreshing cider. NB: scorpionfish are unlikely to win a marine beauty contest any time soon. Cabrales is an artisanal blue cheese made from pure, unpasteurised cow's milk or a blend of goat/sheep milk for a stronger, spicier flavour. The modern Nuvó Hotel Oviedo is a four-star, accessible hotel with contemporary rooms in the historic heart of the city. Facilities include free wi-fi and a gym and spa and top-of-the range rooms have rooftop terraces with views. The historic splendours of highly walkable Oviedo await… architecture, a leafy park and those traditional sidrerías to tempt visitors and, perhaps, to try the traditional pouring of a glass from head height. Must sees include Oviedo Cathedral, Holy Chamber and Gothic tower. The cathedral was founded by King Fruela I of Asturias in 781 AD and is the most important landmark in the city. Fontán Market is one of the best-preserved squares in the city and home to a busy local produce market. Its name comes from the natural spring fountain which formed a pool in the sunken ground. History buffs will also enjoy the city's pre-Romanesque architectural sites, which flourished in the Kingdom of Asturias when the Moors' Caliphate of Cordoba had conquered the south of the Iberian peninsula. The UNESCO-listed Naranco monuments are a short bus ride, and the centrepiece Santa María del Naranco church is thought to originally have been part of the palatial residential complex of the monarch who commissioned its construction, Ramiro I (842-850). For the sweet-toothed, dive in to a sugary tour of the Old Town pastry shops in the historic centre. Elegant and famous Confiteria Rialto is a reliable choice. More quirky, see the cute Mafalda Monument – a tribute to the savvy protagonist of a 1960s-70s Argentine comic strip. Vibrant port city Gijón is a 30-minute train ride from Oviedo, larger and well worth a visit. The old town, Cimavilla, lies on an impressive peninsula with narrow, winding streets, historic buildings and the inevitable sidrerías, plus Cerro de Santa Catalina Park for city and coastal views. Baroque Palacio de Revillagigedo overlooks the marina in Plaza del Marqués and hosts modern art exhibitions, while main square Plaza Mayor is a focal point surrounded by neoclassical architecture. If you fancy a dip, take your cossie and stroll to Playa de San Lorenzo, Gijón's best-known and biggest beach. Much-photographed Cudillero is a fishing village 45 minutes by road from Oviedo and its colourful houses tumble down a hill to the harbour. From rabas to cocido montañés: six must-try Cantabrian dishes – and where to find them

Quaint coastal villages, snow-capped mountain peaks and verdant valleys – this is Cantabria. One of Spain's smallest regions, Cantabria lies sandwiched up against the country's wild north coast, in an area known as 'green Spain'. One of the best ways to experience it is through the delicious food, seeking out local specialities and connecting with the people through age-old culinary traditions, while exploring some of its best destinations. From Santander to Santoña, here are some beautiful places to enjoy the best authentic Cantabrian cuisine. Most trips to Cantabria begin and end in the capital – the port city of Santander, a big ferry hub. Hemmed in by its historic fishing port on one side and vast white beaches on the other, it's known for its numerous palatial style buildings and spectacular setting. Almost every region of Spain has its own signature stew, also known as a platos de cuchara (dish you eat with a spoon), and in Cantabria it's cocido montañés. This hearty concoction is made from white beans and vegetables mixed with chorizo, black pudding, pork ribs and pancetta, spiced with paprika and a dash of olive oil. From Santander you can head east, west, or south, depending on what you want to explore (and eat), whether it's charming seaside villages, national parks filled with dramatic summits, or lush valleys hiding ancient history. Bring your car on the ferry for ease of travel and flexibility, but buses also run throughout Cantabria for those travelling without a car. West of Santander lies the small village of San Vicente de la Barquera, the best place to sample Cantabria's famed fish broth – sorropotún. Family recipes have passed down through the generations among the locals here, but traditionally it features chunks of tuna and potatoes in a tomato soup flavoured with paprika, parsley and garlic. Stop en route at Santillana del Mar, an attractive medieval, cobbled town filled with Renaissance and baroque architecture and best known for its grand 12th-century Colegiata de Santa Juliana. Look out for sobaos in the local bakeries here, light and fluffy sponge cakes, flavoured with lemon zest and sometimes anise liquor or rum. A 15-minute drive from San Vicente de la Barquera lies the small town of Comillas – named the capital of Spain for one day in 1881 and the first place in the country to have electric streetlamps. Today, its main claim to fame is El Capricho de Gaudí, a fanciful, colourfully-tiled villa designed by Antoni Gaudí. Continue your exploration of Cantabria's cuisine in the historic area of Liébana (less than two hours from Santander) and the town of Potes, located right on the edge of the mighty Picos de Europa national park. This medieval town is known for cocido lebaniego – a type of stew found throughout the mountains of Picos de Europa. It's similar to the cocido montañés, but made with chickpeas and cabbage, as well as chorizo, bacon and ham, and served with bone marrow broth. Make sure to try some local cheeses here such as Quesucos de Liebana, a slightly smoky and buttery cheese made from cows' milk, sometimes combined with goat or sheep milk too. Follow it up with a hike through the nearby mountainous landscapes. Travel east from Santander and you'll find yourself at the coastal village of Santoña – renowned for its delicious plump anchovies and known as the anchovy capital of Spain. Anchoas de Santoña are considered first-rate because of the way they're specially prepared – cured in salt for a minimum of 12 months before being filleted by hand by local women known as 'sobadoras' and then preserved in high-quality olive oil. They are often eaten with toasted bread, olives or roasted peppers, then washed down with a glass of local wine. After you've had your fill, take a hike out along the route of the Faro del Caballo lighthouse or relax on Playa de Berria beach. Just 20 minutes along the coast from Santoña, you'll find yourself in Laredo with its vast four-mile sweep of sand – Playa La Salvé beach. This is an ideal spot to try rabas, another Cantabrian speciality. These tender strips of squid tentacles are coated in flour and fried, and can be found throughout the region, but are best eaten with a sea view and a squeeze of lemon. Drinks to enjoy here include local tart sidra (cider) and orujo, a brandy made from pressed and distilled grapes. South of Santander lies the Valles Pasiegos, which is made up of three valleys, Pas, Miera and Pisueña. This is where you'll find one of the best desserts that Cantabria has to offer – quesada pasiega. It's a dense type of pudding you can cut like a cheesecake and is made from fresh cheese or leche cuajada (milk curds) mixed with eggs, sugar and flour and a touch of lemon. Apart from its dessert, the valleys are known for their natural cave systems, which are filled with Palaeolithic art. Some are Unesco world heritage sites and date back to between 30,000 and 10,000 BC. Cueva de El Castillo and Las Monedas are both open for tours. Brittany Ferries provides a fun and easy way to reach Cantabria from the UK, enabling you to experience the culinary delights and discover the region. It runs up to two departures a week from Plymouth and Portsmouth to Santander aboard its ferries for both passengers travelling by car and on foot.
