4 Asian chefs lighting up Vancouver with Thai, Korean and Hong Kong flavours

There is plenty of Asian culinary talent in Vancouver, Canada, with many chefs inspired by its abundance of fresh seafood and local produce.
We highlight four rising Asian chefs: one from Thailand, one from South Korea and two from Hong Kong.
1. Nutcha Phanthoupheng, Baan Lao
Baan Lao was recently named best destination restaurant by Canada's 100 Best, and the best restaurant in Canada at the World Culinary Awards in 2024. Quite the accomplishment for Nutcha Phanthoupheng, who was a nurse and cancer researcher for 13 years before following her culinary dream in 2019.

She opened the restaurant in British Columbia's biggest city to promote royal Thai cuisine which, unlike Thai staples such as pad Thai and tom yum goong, is beautifully presented in small plates and subtly flavoured.
Her background in medicine also informs her cooking.
'Food is a big factor of cancer, and I want to do something to take care of people, do something beautiful, helpful and healthy,' she explains. 'Food is medicine so I want to open a restaurant that is beautiful and healthy for customers.'
Originally from Isaan in northeast Thailand, Nutcha grew up cooking with her mother and helped grow vegetables and raise animals on their farm. They ate simple food such as steamed vegetables and fish, and seasoned dishes with a simple mix of chillies, garlic and fish sauce.
When she and her young family moved to Richmond, British Columbia, in 2014, her husband, John, who is the honorary consul for Laos, encouraged her to follow her passion to become a chef and open a restaurant.

Send us your recommendations using this form I highly recommend the book Divided on D-Day, written by Edward E Gordon, a history teacher at DePaul University in Chicago, and David Ramsay, whose father, Sir Admiral Bertram Ramsay, was a naval commander on D-Day. This book interests me because it tells me how commanders, captains, soldiers, politicians and leaders found ways to lead their people to victory in World War II. For example, Sir Frederick E Morgan thought of a plan for D-Day. However, adjustments were needed so Americam, British and Canadian forces could successfully march in Normandy on D-Day. Though they could move on to liberate other countries, the American troops faced tough challenges in Utah Beach and Omaha Beach. It was the lack of cooperation between the leaders that affected D-Day. Here is an interesting side note about this book. It is perfect for people who cannot fall asleep. Once, when my dad tried to read this book before reached the fifth paragraph on a page, I could already hear him snoring like a pig.

More than 25,000 residents in three provinces have been evacuated as dozens of wildfires remained active on Sunday and diminished air quality in parts of Canada and the US, according to officials. Advertisement Most of the evacuated residents were from Manitoba, which declared a state of emergency last week. About 17,000 people there were evacuated by Saturday along with 1,300 in Alberta. About 8,000 people in Saskatchewan had been relocated as leaders there warned the number could climb. Smoke was worsening air quality and reducing visibility in Canada and into some US states along the border. 'Air quality and visibility due to wildfire smoke can fluctuate over short distances and can vary considerably from hour to hour,' Saskatchewan's Public Safety Agency warned Sunday. 'As smoke levels increase, health risks increase.' Saskatchewan Premier Scott Moe said continuing hot, dry weather is allowing some fires to grow and threaten communities, and resources to fight the fires and support the evacuees are stretched thin. Advertisement 'The next four to seven days are absolutely critical until we can find our way to changing weather patterns, and ultimately a soaking rain throughout the north,' Moe said at a Saturday news conference.

More than three years after a family of four from India froze to death while trying to enter the US along a remote stretch of the Canadian border in a blizzard, the convicted ringleader of an international human smuggling plot was sentenced in Minnesota on Wednesday to 10 years in prison. Federal prosecutors had recommended nearly 20 years for Harshkumar Ramanlal Patel, and nearly 11 years for the driver who was supposed to pick them up, Steve Anthony Shand, who got 6½ years on Wednesday with two years' supervised release. 'The crime in many respects is extraordinary because it did result in the unimaginable death of four individuals, including two children,' US District Judge John Tunheim said. 'These were deaths that were clearly avoidable.' Patel's defence lawyer, Thomas Leinenweber, told the court before sentencing that Patel maintains his innocence and argued he was no more than a 'low man on the totem pole'. He asked for time served, 18 months. But acting US Attorney Lisa Kirkpatrick said Patel exploited the migrants' hopes for a better life in America, out of his own greed. 'We should make no mistake, it was the defendant's greed that set in motion the facts that bring us here today,' she said.
