
The fed-up restaurants charging £50 per cancellation
How things change.
A growing number of upmarket restaurants are now charging their customers before they've even set foot in the doorway.
At Piraña, a Japanese Peruvian restaurant in Mayfair, diners now have to agree to spend a minimum of £95 on food between Tuesday and Sunday. Fail to show up for a booking, and you'll be fined £50.
It's a similar story at Gymkhana, the two Michelin-starred Indian restaurant in Mayfair, which recently introduced a £100 minimum spend.
Other examples include the high end sushi restaurant The Araki, where diners must pay a £310 fee in advance for its omakase tasting menu. An evening meal at Claridge's Foyer & Reading Room, meanwhile, comes with a minimum spend of £50 per person.
These are, admittedly, extreme examples of restaurants that cater to the wealthiest diners. However, up-front fees for reservations are increasingly common in restaurants – particularly in London.
Many are imposing steep cancellation fees on customers if they don't show up, or if they cancel but fail to give enough notice, while others now ask for a deposit to ensure diners stay committed to the booking.
'The costs have gone up, and so you've absolutely got to lock it in,' says Chris D'Sylva, the owner of the Michelin-starred Dorian restaurant in Notting Hill, which charges a £25 deposit per head that is then subtracted from the final bill.
Fresh shock from Reeves
Restaurants have battled with the surging cost of everything from food to energy in recent years as the industry navigated Brexit, the pandemic and the cost of living crisis.
Yet just as many costs were beginning to stabilise, Rachel Reeves has hammered the sector with a fresh shock.
In her Budget last October, the Chancellor announced a rise in employers' National Insurance (NI) contributions and a fall in the earnings threshold at which it kicks in.
At the same time, minimum wage is set to jump by an inflation-busting 6.7pc. Changes take effect from April.
Bosses argue the changes will disproportionately hurt hospitality because of the sheer number of part time staff in the sector.
The tax rise has already caused companies to slow or pause hiring and cancel investments. The number of people employed in accommodation and food services has begun to fall since the Budget, dropping by 58,000 in January 2025 compared with the same period last year.
Only 14pc of hospitality leaders said they felt optimistic about the sector's prospects in the year ahead, according to a survey by data firm CGA.
'Many consumers remain hesitant about their spending, and while inflation has eased in some areas, business costs remain very high across the sector ... Energy price rises and the Government's planned changes to National Insurance thresholds and rates could hardly be coming at a worse time,' says Karl Chessell, director of hospitality operators and food at CGA.
Responding to these higher costs may seen counter intuitive. Many diners might find the suggestion that they should lay down money in advance dispiriting, let alone the prospect of calculating who owes what after a large group meal and several glasses of wine have been knocked back.
'Painful' decisions
Yet, restaurant owners say these measures are necessary after years of soaring costs and economic chaos that have made it much harder to turn a profit.
'They're hesitant to do it,' says Nick Gross, a hospitality industry consultant who works with restaurateurs.
'It is quite painful to charge someone £50 a head to not sit in your restaurant. It's all about revenue protection. If I didn't sell it today, that that seat is lost.'
Chris Galvin, the co-owner of Galvin Restaurants, charges a £50 cancellation fee per person at his Michelin-starred London site, Galvin La Chapelle, if a cancellation is not made within 48 hours of the meal.
'I think people were [previously] afraid to offend customers, but everyone is on this bloody precipice, worried about business and counting every single cover,' he says.
'Why should it be that we're spending a lot of time securing the best, making sure we prepare it by hand, we rota in the staff, we're paying rent and we're turning down other bookings, and then people don't show?'
Of course, no-shows are not a new problem for hospitality. Restaurateurs have spent decades scratching their heads over how to handle the problem. But the precarious financial position that many now find themselves in means a more rigorous approach to the issue is needed.
Sunitha Southern, the owner of Kira restaurant in Cheshire, now charges customers deposits for meals on special occasions and holidays like Valentine's Day to protect her income.
'We had situations when people didn't turn up, and we had turned people away,' she says.
'It's c--p, everything is affected if they don't turn up. As soon as you open the door, you walk through, the electricity starts ticking.
'Then your staff are lined up – it's such a competitive market that if you don't give them the shifts you have promised, they will just go and they will get picked by somebody else.'
She chose to charge a deposit because after the frequency of no-shows increased in the wake of the pandemic. Southern blames online booking systems, arguing they have made booking a table so easy people feel like it is less of a commitment.
'They will say 'oh, sorry, we have double booked' or 'my partner's booked another restaurant' – and this will be when we call them. It is the most frustrating thing,' she says.
While he does charge a deposit, D'Sylva of Dorian says he makes exemptions for regulars and locals who he trusts.
'They don't pay the deposit, but they know how to behave: they honour their reservations, or they cancel them with appropriate time – everyone else, I will put them on £25 per person to keep them committed to the booking.
'We used to have a cancellation fee, but with [payment apps] Monzo, Revolut and all that, it's all two-step payment approval. They don't show up, you go to charge them and you can't – they reject the payments.'
As well as no-shows, the fee has managed to put off those who 'reservation squat', where people book several restaurants for the same evening to allow them the option to choose on the night.
While his upfront charge has been a success, D'Sylva worries the industry is going down a dangerous path.
'It's in conflict with hospitality. It's not welcoming, it's like 'let's talk about the money first, before I've delivered you anything' – that's not what I want to feel from the outset when I come to a restaurant.'

The changes will make it harder for workers to pass on cash to their loved ones tax-free. Inheritance tax is charged on all assets above the £325,000 threshold, which is called the nil-rate band. Anything above this threshold is charged at 40%. The allowance rises by £175,000 if you leave your home to a direct descendant, such as a son, daughter or grandchild. But house prices are expected to rise in the coming years, which means more homes will be affected by the time the rules come into effect. House prices are expected to increase by around 2.8% in 2025 and 2.5% on average from that point onwards, according to the Office for Budget Responsibility. Meanwhile, a single pensioner needs a pension pot worth £415,000 in order to enjoy a 'moderate' standard of living in retirement, according to Pensions UK. At the moment pensions can be inherited tax-free if the person who passed away is under the age of 75, as long as their total pot is worth less than £1.07million. Families whose relative passed away when they were 75 or older need to pay income tax on any money they inherit from a pension. The rule change announced in the Budget will mean the death duty of up to 40% will be applied to unspent private pension pots. It is estimated that the change will raise around £1.5billion a year by 2029/30. Some couples will be far more exposed to the tax raid than others. Couples who live together and have young children but are not married will not benefit from tax exemptions for spouses or those in civil partnerships. Among them is an exemption which allows married couples to transfer their estate to their spouse without paying any tax. Meanwhile, they will not be able to use the transferable nil-rate band, which allows couples to combine their tax-free allowances across both of their estates. Jon Greer, head of retirement policy at Quilter, said: 'A grieving family with young children and an average priced home could face six-figure IHT bills at the most distressing time. 'Married couples are protected by exemptions and allowances; cohabitees aren't.' He added that, without phasing in the change gradually, the policy risks causing a financial hit that can destabilise a family's future despite raking in very little additional revenue. Michelin Guide restaurant introduces UK's first 'water menu' with seven different options costing up to £19
A Michelin-recommended restaurant in Cheshire has launched an entire menu of bottled water that will cost £19. La Popote in Macclesfield, Cheshire, a French restaurant which is in the Michelin Guide for has introduced the UK's first 'water menu' Joseph Rawlins, 32, co-owner and head chef at the casual fine dining restaurant is working alongside Doran Binder, who is one of the UK's five water sommeliers. The idea was first pitched by Mr Binder, 52, two years ago, and he got the green light from Joseph to start putting the menu together in January. Doran, from the village of Wildboarclough in Cheshire, spent the last seven months choosing the perfect bottles from across Europe, including France, Spain, Portugal, Italy, Iceland, and the UK. The menu includes seven bottles from three still selections and four sparkling. Doran has his own bottled water on the menu, Crag Spring Water sourced from his village in the Peak District, which costs £5. From there, the prices go all the way up to £19 for Portuguese sparkling water, The Palace of Vidago. The premium waters will be served in wine glasses, to give customers who don't drink wine or other alcohol a similar experience to those who do. Doran chose the waters based on their total dissolved liquids (TDS), which affects flavour and mouth feel Joe said: 'The restaurant scene has changed a lot over the years we have been getting fewer big tables more groups of twos and fours. 'That means at least one person there will mostly likely be driving and not be drinking as such. 'To try and keep up with the market we wanted to offer something a bit different. 'Everything has been positive, it is a bit of fun, and we are looking forward to seeing where it goes.' Joseph, who trained at Gordon Ramsay's Tante Marie cooking school, has been co-owner of La Popote with his partner Gaëlle Radigon, 37, since 2019. He said that when he and Gaëlle took over the restaurant six years ago, they only kept a handful of previous suppliers, one being Doran. They have since transformed the acclaimed restaurant and, as of 2022, La Popote has been listed in the Michelin Guide. Doran has been selling his award-winning water at the casual fine dining restaurant since 2018. He invited Joseph and Gaëlle for a water tasting in June 2023, which was when he also pitched his idea for a bottled water menu. Joseph recalled: 'He had pitched the idea to us and we had a laugh about it as we were unsure what he meant by it at first. 'He then invited us down for a water tasting and that's when we realised that water isn't just water and explained he thinks there is an exciting new market.' According to Doran, water has flavour that is established through the number of total dissolved solids (TDS) found in the liquid. These solids include minerals which the water has absorbed naturally from the earth before it is taken from the source and bottled. TDS levels can range from super low, between 0 to 50, to super high, which is over 1,200. Doran believes the perfect hydration level is between 100 and 200. While the couple were intrigued by the idea, they postponed it after Joseph and Gaëlle welcomed their first child in 2023. It was postponed again when Gaëlle became pregnant last year, so it wasn't until January 2025 when they decided to go ahead with the water menu. Joseph said: 'During that period we had been wanting to give it a go having a water menu. 'We have noticed in the last 18 months a lot of people don't drink as much and are looking for an alternative to alcohol. 'With Gaëlle also having a little one and being pregnant, also breastfeeding, there is a limit to what she can drink. 'We thought there was space for it so why not?' While working on putting the menu together, Doran changed it three times over the last seven months as he sought to create the perfect menu. For the still water selection, Doran chose the sharp, dry and metallic-tasting super-low TDS water in Icelandic Glacier Water (£12). His own Crag Spring Water (£5) made for the perfect mid-range TDS, as it has no flavour but offers a smooth, silky mouth feel. Doran's final choice for the still water selection is from the brand 22 Artesian Water, from La Rioja, Spain (£11), which has a smooth mouth feel and a delicate mineral taste. As for the sparkling water selection, the water sommelier opted for a £9 Vichy Celastin, which is delicate and sweet, and The Palace of Vidago (£19) for its high TDS, which gives it a delicately salty flavour. He also picked sparkling Crag (£5.50) and the low-TDS Lauretana (£12) sparkling water, which has a sharp and dry mouth feel. Doran said: 'I had been working on a water menu for the last three or four years trying to get a restaurant to pick it up but it has been really difficult. 'People thought it was a joke and a gimmick but it was exciting when La Popote took me on. 'What I have done is put together a quality range of interesting water. 'It is a selection showing off the different TDS water has to offer. 'They all have different tastes, mouth feels, and offer a different perspective on dining at a restaurant.' He believes the different waters 'will elevate the dining experience for non-drinkers like myself and millions of others who aren't interested in a wine menu'. "Being able to chose a water with a story, something special and unique that you couldn't just get from a shop is elevating that experience,' Doran continued. 'The water will be served in a wine glass, water will be put on a stage, and showed respect. 'I could have put hundreds on the menu all for different reasons. It was really hard to narrow it down and I feel bad about leaving some out. The menu will hopefully grow and expand.' La Popote's water menu will be fully available from next Friday (August 22).

India proposes slashing taxes on small cars under Modi reforms, sending shares higher
NEW DELHI, Aug 18 (Reuters) - India aims to slash taxes on small cars and insurance premiums as part of a sweeping reform of its goods and services tax (GST), a government source said on Monday, sparking a rally in Indian stock markets. Prime Minister Narendra Modi's administration revealed plans over the weekend for the largest tax overhaul since 2017, with consumer, auto and insurance companies likely to emerge as the biggest winners when product prices drop from October, once the reform is approved. The federal government has suggested lowering GST on small petrol and diesel cars to 18% from the current 28%, said the source who is directly involved in the matter. The consumption tax on health and life insurance premiums may also be lowered to 5% or even zero from 18% currently, the same source said. Shares of Maruti Suzuki ( opens new tab, the biggest seller of small petrol cars in India, surged nearly 9% on Monday, leading a rally in auto shares that helped push India's benchmark Nifty index 1.3% higher, on course for its best day in three months. Shares of other carmakers such as Mahindra & Mahindra ( opens new tab, as well as motorbike manufacturers like Hero MotoCorp ( opens new tab and Bajaj Auto ( opens new tab, which will also benefit from tax cuts, jumped 2%-4% on Monday. The announcement will not be effective until the GST Council, which is chaired by the federal finance minister and has representatives from all states, gives a nod. A meeting is expected by October. Sales of small cars, defined as those having engine capacity below 1200cc for petrol vehicles and 1500cc for diesel and not exceeding 4 metres in length, have slowed over the last few years as buyers switched to bigger, feature-rich SUVs. Small cars made up a third of the 4.3 million passenger vehicles sold in the world's third-largest automobile market last fiscal year, down from nearly 50% pre-COVID, industry data showed.
