
Pasta and pesto, broth and dumplings, pancakes and chutney: Ravinder Bhogal's pea recipes
These herbal dumplings are made from the sturdiness of stale bread, cheese and sweet peas. I've used pecorino, but you could use parmesan or a hard goat's cheese instead.

For the dumplings
30g butter
1 leek, white part only, washed and very finely chopped
1 large egg, beaten
250g stale sourdough, torn into small pieces
Finely grated zest of 1 lemon
50g pecorino
1 heaped tbsp plain flour
125g podded fresh peas, or defrosted frozen peas, coarsely ground
2 tbsp chopped tarragon
2 tbsp finely chopped parsley, plus extra to serve
Sea salt and black pepper
1-2 tbsp milk
For the broth
1 litre chicken stock, or vegetable stock
200g peas, fresh or frozen
1 tbsp olive oil (optional)
100g guanciale or pancetta, cubed (optional)
Juice of ½ lemon
Melt the butter in a frying pan, then gently saute the leek until soft but not coloured, then take off the heat and leave to cool. Meanwhile, in a large bowl, combine all the remaining dumpling ingredients apart from the milk, then add the cooled leek and season. Add enough of the milk to make a soft dough, then, with wet hands, form the mix into ping-pong ball-sized dumplings and refrigerate.
Pour the stock into a large saucepan and bring to a boil. Add the dumplings, and simmer for 10-12 minutes, adding the peas for the last minute of cooking. If you're using the guanciale, heat the olive oil in a small frying pan, fry the cubed meat for five to six minutes, until crisp, then drain on kitchen paper.
Season the broth to taste and squeeze in the lemon juice. Divide the dumplings and peas between four soup bowls, ladle the broth over the top, add the guanciale, if using, and serve with extra parsley. I regularly make these for breakfast or lunch; you could use spinach or any other greens instead, or cooked beetroot for vibrant purple pancakes.

100g whole mung beans
200g podded fresh peas, or frozen and defrosted peas
1 thumb-sized piece fresh ginger, peeled and grated
1 green chilli, finely chopped
1 handful coriander, finely chopped
1 tsp cumin seeds
Sea salt, to taste
Coconut oil, or avocado oil
Fried eggs, to serve
For the coriander coconut chutney
100g coriander, stalks and all, roughly chopped
100g grated coconut (you can buy this frozen)
1 green chilli, roughly chopped
Juice of 1 juicy lime
½ tsp caster sugar
2½cm piece fresh ginger, peeled and roughly chopped
Rinse the mung beans well, cover with double the amount of water and leave to soak for at least six hours, or overnight.
To make the chutney, put the coriander, coconut, green chilli, lime juice, sugar, salt to taste, ginger and 100ml ice-cold water in a blender, and blitz smooth.
To make the cheelas, put the peas, ginger, chilli, coriander and a splash of water in a food processor and blitz smooth.
Drain the mung beans, add them to the pea mix with the cumin seeds and sea salt to taste, and blend again. Add roughly 100ml water and blend until the mix has the pouring consistency of crepe batter.
To cook, lightly oil a cast-iron or nonstick frying pan and put it on a low-medium heat. Pour a ladleful of batter into the centre of the pan and, using the back of the ladle, circle and spread the batter to make a thin pancake. Drizzle a little oil around the sides and in the centre of the cheela, then cook on both sides for two to three minutes, until golden and crisp. Transfer to a plate, and repeat with the remaining batter, cooling the pan with a splash of cold water before making the next cheela. Serve with fried eggs and the chutney. This makes a wonderfully bright pesto that is also excellent with grilled fish such as trout.

Sea salt and black pepper
100g basil
25g mint, picked
250g podded fresh peas, or frozen and defrosted
1 fat garlic clove, peeled and finely chopped
30g pine nuts, toasted
30g pecorino or parmesan, grated, plus extra for sprinkling
Finely grated zest and juice of 1 lemon 60ml extra-virgin olive oil
250g trofie , or other pasta shape of your choice
1 handful pea shoots (optional)
Bring a large pan of heavily salted water to a boil. Meanwhile, put the basil, mint, half the peas, the garlic, pine nuts, cheese, lemon juice and zest into a blender, season and whizz to a puree. With the motor still running, slowly drizzle in the oil until it's all incorporated and you have a vibrant pea paste.
Cook the pasta according to the packet instructions, adding the remaining peas for the last minute of cooking. Drain, reserving a ladleful of the pasta cooking water.
Stir the pesto and a little pasta cooking water through the hot pasta and peas, then add the pea shoots, if using. Divide between four bowls and serve sprinkled with more grated pecorino or parmesan.

But imagine this: seared aubergines cooked with sweet onions and tomatoes, spiced with aromatics such as cardamom, chilli, mustard seeds and smoky curry leaves, then melted into a pot with rice, water and time, until wetter than a risotto but less homogeneous than a congee. A perfect meal to cook on a cool summer's evening to slow yourself down, both to stoke an appetite and to warm the belly. Fresh curry leaves are now sold in most large supermarkets, so never settle for dried ones. Box or wrap any you don't use and freeze for another time; much the same applies to green finger chillies, too. Prep 15 minCook 1 hr Serves 4 9 tbsp rapeseed oil 2 medium aubergines (600g), cut into 3cm x 3cm dice2 tsp fine sea salt 2 red onions, peeled and thinly sliced30 fresh curry leaves 2 green cardamom pods, lightly bashed5 garlic cloves, peeled and minced 360g cherry tomatoes, halved250g arborio rice 1 tsp black mustard seeds 2 green finger chillies, stalks discarded, the rest finely chopped Pour three tablespoons of the oil into your widest nonstick frying pan and set it on a high heat. When the oil is very hot, add half the aubergines, sprinkle over a quarter-teaspoon of salt and cook, stirring often, for about eight minutes, until browned on the outside and nearly cooked through (ie, not completely soft). Transfer to a large plate, add another three tablespoons of oil to the pan and repeat with the second batch of aubergines and another quarter-teaspoon of salt. Sudan war: Children dying of hunger in Darfur's el-Fasher city
The women at the community kitchen in the besieged Sudanese city of el-Fasher are sitting in huddles of desperation."Our children are dying before our eyes," one of them tells the BBC. "We don't know what to do. They are innocent. They have nothing to do with the army or [its paramilitary rival] the Rapid Support Forces. Our suffering is worse than what you can imagine."Food is so scarce in el-Fasher that prices have soared to the point where money that used to cover a week's worth of meals can now buy only one. International aid organisations have condemned the "calculated use of starvation as a weapon of war".The BBC has obtained rare footage of people still trapped in the city, sent to us by a local activist and filmed by a freelance Sudanese army has been battling the Rapid Support Forces (RSF) for more than two years after their commanders jointly staged a coup, and then fell in the western Darfur region, is one of the most brutal frontlines in the conflict. The hunger crisis is compounded by a surge of cholera sweeping through the squalid camps of those displaced by the fighting, which escalated this week into one of the most intense RSF attacks on the city paramilitaries tightened their 14-month blockade after losing control of the capital Khartoum earlier this year, and stepped up their battle for el-Fasher, the last foothold of the armed forces in the north and centre of the country where the army has wrestled back territory from the RSF, food and medical aid have begun to make a dent in civilian suffering. But the situation is desperate in the conflict zones of western and southern war: A simple guide to what is happeningAt the Matbakh-al-Khair communal kitchen in el-Fasher late last month, volunteers turned ambaz into a porridge. They have been damaged by shelling and are short of medical supplies to help both the starving, and those injured in the continual bombardment."We have many malnourished children admitted in hospital but unfortunately there is no single sachet of [therapeutic food]," says Dr Ibrahim Abdullah Khater, a paediatrician at the Al Saudi Hospital, noting that the five severely malnourished children currently in the ward also have medical complications. "They are just waiting for their death," he hunger crises hit, those who usually die first are the most vulnerable, the least healthy or those suffering from pre-existing conditions."The situation, it is so miserable, it is so catastrophic," the doctor tells us in a voice message. "The children of el-Fasher are dying on a daily basis due to lack of food, lack of medicine. Unfortunately, the international community is just watching."International non-governmental organisations working in Sudan issued an urgent statement this week declaring that "sustained attacks, obstruction of aid and targeting of critical infrastructure demonstrate a deliberate strategy to break the civilian population through hunger, fear, and exhaustion".They said that "anecdotal reports of recent food hoarding for military use add to the suffering of civilians"."There is no safe passage out of the city, with roads blocked and those attempting to flee facing attacks, taxation at checkpoints, community-based discrimination and death," the organisations of thousands of people did flee in recent months, many from the Zamzam displaced persons camp at the edge of el-Fasher, seized by the RSF in April. They arrive in Tawila, a town 60km (37 miles) west of the city, weak and dehydrated, with accounts of violence and extortion along the road from RSF-allied is safer in the crowded camps, but they are stalked by disease - most deadly of all: cholera. It is caused by polluted water and has killed hundreds in Sudan, triggered by the destruction of water infrastructure and lack of food and medical care, and made worse by flooding due to the rainy season. Unlike el-Fasher, in Tawila aid workers at least have access, but their supplies are limited, says John Joseph Ocheibi, the on-site project coordinator for a group called The Alliance for International Medical Action."We have shortages in terms of [washing facilities], in terms of medical supplies, to be able to deal with this situation," he tells the BBC. "We are mobilizing resources to see how best we can be able to respond."Sylvain Penicaud of Médecins Sans Frontières (MSF) estimates there are only three litres of water per person per day in the camps, which, he says, is "way below the basic need, and forces people to get water from contaminated sources".Zubaida Ismail Ishaq is lying in the tent clinic. She is seven months pregnant, gaunt and exhausted. Her story is a tale of trauma told by tells us she used to trade when she had a little money, before fleeing el-Fasher. Her husband was captured by armed men on the road to Tawila. Her daughter has a head injury. Zubaida and her mother came down with cholera shortly after arriving in the camp."We drink water without boiling it," she says. "We have no-one to get us water. Since coming here, I have nothing left."Back in el-Fasher we hear appeals for help from the women clustered at the soup kitchen - any kind of help."We're exhausted. We want this siege lifted," says Faiza Abkar Mohammed. "Even if they airdrop food, airdrop anything - we're completely exhausted." The polluted city struggling to enforce single-use plastic ban
Nigerian shop manager Olarewanju Ogunbona uses Styrofoam and plastic packaging multiple times a day, a common practice in Lagos, one of the world's most plastic -polluted urban areas. The megacity's over 20 million residents contributed 870,000 tonnes to the global 57 million tonnes of plastic waste in 2024. Last month, Lagos state authorities imposed a ban on single-use plastics, but its effectiveness is being undermined by weak enforcement and a lack of viable alternatives, according to residents. The law, which commenced on 1 July, prohibits items such as cutlery, plates, and straws, with offenders risking business closure. However, other plastic forms, comprising a smaller percentage of the city's waste, remain in use. The ban is far from fully implemented, with some shops still openly displaying Styrofoam packs. Mr Ogunbona, who continues to purchase his meals in such packaging, observed: "Sellers are still using it very well." This ongoing reliance highlights the significant challenge facing Lagos in its bid to curb its pervasive pollution problem. A global treaty on plastics In Geneva this week, countries including Nigeria are negotiating a treaty to end plastic pollution. Such talks broke down last year, with oil-producing countries opposed to any limits on plastic production. In large part, plastics are made from fossil fuels like oil and gas. Lagos generates at least 13,000 tons of waste daily, almost a fifth of which is plastics, officials have said. In the absence of a proper waste management system, most of it ends up in waterways, clogging canals, polluting beaches and contributing to devastating floods. Although the state government has promoted the ban on single-use plastics as a major step, watchdogs are skeptical. 'Its effectiveness is limited without strong enforcement, affordable alternatives for low-income vendors and meaningful improvements in the city's overwhelmed waste management systems,' Olumide Idowu, a Lagos-based environmental activist, told The Associated Press. The Lagos state government did not respond to a request for comment. Scraping off labels with razor blades With the quest for a better life driving millions of Nigerians to Lagos, some in the city are finding ways to manage the pollution. Recent years have seen a rise of private waste managers and sustainability groups helping to tackle the crisis. At a sorting site in Obalende, a bustling commercial suburb adjacent to the upscale Ikoyi neighborhood, two women with razor blades scraped labels from plastic soft drink bottles. They uncapped the bottles and threw them into different nets, ready to be compressed and sold for recycling. Competition has become tougher as more people join the work, the women said. The informal network of waste collectors sell to, or sort for, private waste management companies. They can make around 5,000 naira ($3.26) a day. But far more work is needed. Manufacturers have a key role to play in tackling the plastic waste problem, according to Omoh Alokwe, co-founder of the Street Waste Company that operates in Obalende. 'They need to ... ensure that the plastics being produced into the environment are collected back and recycled,' Alokwe said. Experts also call for a behavioral change among residents for the law banning single-use plastics to be effective. Lagos residents need alternatives to plastics, shop owner Ogunbona said. Otherwise, 'we will keep using them."
