Squidgy, nutty and rich in dark chocolate, these air fryer brownies skip the sugar but keep the joy – with options for ultra-low-carb swaps too
'Stefano is the head chef of our cookery school – La Cucina Caldesi – and has created this recipe to have minimal sweetness and maximum flavour,' says food writer and author Katie Caldesi.
'They are also full of fibre from the nuts, chocolate and dates. Toasting nuts brings out the natural oils and gives them oodles of flavour. Smell them as they go into the air fryer and come out and you will see what I mean. If you are keeping your carbs very low, use erythritol instead of the dates.
'Leave these plain, top with whipped cream flavoured with vanilla or serve with Greek yoghurt, creme fraiche or soured cream, and berries.'
Stefanos' squidgy chocolate, date and walnut brownies
Makes: 12 brownies
Ingredients:
75g walnuts
3 fat Medjool dates (approx 75g), pitted and roughly chopped, or 75g erythritol
100g dark chocolate (at least 85% cocoa solids)
60g butter, plus extra for greasing
3 eggs
50g ground almonds
Method:
1. Toast the walnuts on a crisper in the drawer at 160C for three minutes. Tip them out to cool before roughly chopping them.
2. If using the dates, soak them in 75ml of just-boiled water for a few minutes, then mash them to a pulp with a fork. If using erythritol, dissolve it in 50ml of just-boiled water in a small saucepan over a medium-high heat. Set aside.
3. Put a baking paper liner into a silicone liner.
4. Melt the chocolate and butter together in a bain-marie (a glass or metal bowl over, but not touching, hot water in a saucepan over a medium heat) or in a small bowl in the microwave. Set aside to cool.
5. Separate the eggs into two mixing bowls. Add the date or erythritol mixture to the egg yolks and stir through with a hand whisk or large spoon. Then add the chocolate mixture to the yolk mixture with the walnuts and ground almonds and stir again to combine.
6. Whisk the egg whites until just firm enough to stand in peaks. Use a large metal spoon to fold the egg whites into the chocolate mixture. Pour into the prepared liner and smooth the surface.
7. Bake in the air fryer at 140C for 20 to 25 minutes. It is ready when the crust feels firm but there should be a slight wobble to it; it will continue setting as it cools. Remove from the air fryer and leave to cool to room temperature before removing from the paper liner.
8. Cut into 12 squares and serve at room temperature. Or put into an airtight container in the refrigerator once cool, where they will keep for a couple of days.

In the UK — where traditional homes are built to trap heat, not release it — rising temperatures can turn living spaces into stifling ovens. And with air conditioning still a rarity (and a costly one at that), finding effective, affordable alternatives has never been more important We spoke to the experts to uncover smart, sustainable ways to keep your home cool without driving up energy costs. From airflow tricks and thermal-savvy window treatments to breathable organic bedding and strategic greenery, their advice offers practical solutions for staying comfortable through the hottest days. Invest in a fan that works smarter, not harder: It might seem obvious, but one of the simplest ways to stay cool is also one of the most overlooked: a decent fan. Not all fans are created equal, and the cheap, noisy models often end up doing little more than pushing hot air around. Instead, consider investing in a powerful, energy-efficient option that delivers real results — without draining your wallet. Take the Dyson Cool CF1, for instance. Its brushless DC motor generates a smooth, even breeze and draws only 30 watts of power at maximum fan speed for energy-efficient cooling. It also has a customisable sleep timer, ensuring no wasted energy. Spencer also recommends embracing the power of a night purge by opening your windows after sunset to invite in cool, refreshing air. Then, as dawn breaks, close and shade your windows to trap that overnight chill inside, creating a comfortable refuge from the rising heat. Wool? For summer? Groundbreaking. Wool might traditionally be associated with warmth, but it's also a (surprisingly) smart choice for staying cool in summer. Lisa Conway from carpet specialists Brintons explains: "Wool is always an excellent choice due to its natural insulating properties, and one lesser-known advantage is its cooling ability. Helping to regulate both temperature and humidity, wool carpets and rugs can prevent too much heat from coming through the floor - ultimately contributing to a more comfortable, energy-efficient home." Comfort and coolness in every thread: Other natural fibres offer similar benefits. When it comes to bedding, linen and cotton do more than help regulate temperature — they can actually improve sleep quality. Their natural breathability helps prevent overheating at night, while their soft, moisture-wicking fibres keep you dry and comfortable. Linen, in particular, grows softer with every wash, offering a relaxed, lived-in feel that encourages deeper, more restful sleep. If you shower in the morning, try turning off your boiler during the day, it just adds unnecessary heat Marta de Sousa, interior designerIndoors, introduce heat-fighting houseplants that double as décor — areca palms and peace lilies act as natural humidifiers, whilst aloe vera and snake plants absorb heat and release oxygen at night, making them ideal for bedrooms and living spaces. Tackle hidden heat makers: Remember, it's not just the sun making your home warmer — many everyday appliances quietly add to the heat. "Lights, ovens, computers, TVs, and electronics all give off heat," says property developer and interior designer Marta de Sousa. "Better to cook outdoors or have a barbecue if you can and avoid using the tumble dryer during the day." Even lighting choices matter: incandescent bulbs give off heat along with a cosy glow. Swapping them for energy-efficient LEDs or keeping lights off during the day can make a noticeable difference. Your boiler can also add unexpected warmth. "If you shower in the morning, try turning off your boiler during the day," de Sousa suggests. "There's no need to keep hot water stored when you're not using it - it just adds unnecessary heat." Heating water overnight and switching the boiler off during the day helps keep your home cooler and cuts energy bills. Electronics left on standby also emit residual heat, so unplug anything you're not using. Small changes like these can go a long way to keeping your home comfortable through summer.

Natasha Oakley, founder of Monday Swimwear, shares how the label turns every trip into an endless Summer. Talk us through your background. I've always had an entrepreneurial spirit, my mum and dad both owned their own businesses, so I grew up around that mindset. I started in digital content, working both behind and in front of the camera, which gave me a really unique perspective on storytelling and brand building. That experience eventually led to the creation of my own personal social media channel, and inevitably, to the birth of Monday Swimwear and its creative vision. What inspired you to launch Monday Swimwear? It really started from a place of personal need. My co-founder, Devin and I couldn't find swimwear that flattered our bodies and made us feel confident, let alone something that aligned with our lifestyle. So we created it ourselves. From day one, the goal was to design pieces that made women feel beautiful, supported, and comfortable, no matter their shape or size. That mission still guides everything we do today. Monday Swimwear has redefined what body confidence means in the swimwear space. What was the key vision behind the brand and how has that evolved? The original vision was always about body confidence, timeless style, and versatility. We wanted to break the mould of the 'one body type' narrative and instead design pieces that celebrate real women and real curves. Over time, as our customers grew with us, we naturally expanded into resortwear and lifestyle pieces, things you'd want to live in beyond the beach. That evolution felt really organic. Today, we're just as focused on making you feel amazing poolside as we are at dinner, on vacation, or lounging at home. How does Monday Swimwear approach design? We've always stayed true to our design philosophy: clean lines, flattering fits, elevated neutrals, and wearable classics. Our pieces aren't about chasing trends, they're designed to outlive them. But we do pay attention to what our customer wants and where she's going. It's about evolving with her lifestyle while holding onto the essence of Monday: effortless, confident, and forever summer. How do your travels influence your design choices? Travel is probably our biggest source of inspiration. Each destination brings out something different in our collections, from the soft pastel tones of the Mediterranean, to the vibrant colours of the Caribbean, the effortless silhouettes inspired by South American style, and the laid-back ease of the California coast. Even our fabric choices are shaped by climate and culture – how something moves, how it feels on the skin after a long day in the sun. It's all about designing with real life (and real holidays) in mind. Where do you personally escape to recharge and find inspiration? Greece and Italy will always have my heart. My husband is Greek, so we spend a lot of time exploring the islands – there's something so grounding about being near the water and surrounded by history and tradition. Italy is where we got engaged and married, so it's a place I return to often for both romance and creative energy. Capri, Ischia, and the Amalfi Coast are my forever favourites. How do you balance global trends with staying true to your brand DNA? We filter everything through the lens of what's timeless and wearable. We're aware of trends, but we don't let them define our direction. Instead, we ask ourselves: does this make sense for the Monday girl? Will she still love it next year? If the answer is yes, and it aligns with our DNA of confidence, elegance, and ease, we run with it. You've grown your personal brand alongside Monday Swimwear – how do you separate or integrate your identities as influencers, entrepreneurs, and creatives? It's definitely a balance, but the throughline is authenticity. The brand is such a reflection of our lives and style, so there's a natural overlap. But we're also intentional about creating space for each role, when I'm in creative mode, I'm fully in it. When I'm building something as an entrepreneur, I think strategically. And when I'm sharing online, it's about connection and storytelling. Each piece supports the other. This is The Summer Escape Issue – where do you plan on travelling to this Summer? I'm currently mid-way through my summer travels! We started the trip in Paris, and I've just spent a few beautiful weeks in Greece both for work and a little downtime. Devin has been with me the whole time, and we'll wrap up this leg together before heading our separate ways. Next up is Italy – my husband and I return every year. Capri, where we got engaged, is always a must. We'll also be visiting Ischia and the Amalfi Coast.
