
Prestatyn: Roux Scholarship finalist joins restaurant as head chef
Dishes, at 194 High Street, was opened by Sheridan, and his business partners, Sam and Emma Morgan, of Open Restaurant Group (ORG), last August.
Tonge, a 2021 Roux Scholarship finalist, has also worked at the one-Michelin-star Northcote, and the fine dining restaurant at the Chester Grosvenor Hotel.
A dad-of-two from Chester, he said he is looking forward to elevating the menu at Dishes, which was praised by Michelin for its 'roll-call of terrific Welsh ingredients'.
He said: 'I am absolutely delighted to be joining ORG as the new head chef of Dishes. It's a brilliant opportunity for me to lead a team and show what I can do.'
Andrew Sheridan added: 'To get Curtis onboard is a real coup for us. He's an immensely talented chef bringing loads of experience and enthusiasm to his new role.'
Situated near to where Sheridan lives, Dishes focuses on small, social plates of food and snacks using high-quality ingredients, with diners encouraged to order six plates between two people.
Menu items include smashed cucumber salad with feta and mint; slow-cooked lamb and baba ghanoush; scallop tikka with crispy rice; corn ribs with sriracha seasoning and lime; and tostadas avocado and tuna.

With the latter, passengers in the UK are being warning that ticket prices could rise by as much at 5.5% in the next round of price hikes. The July Retail Prices Index (RPI) figure, which is frequently used to calculate the annual rise in rail travel costs, will be revealed on Wednesday, August 20, and that could mean higher fares for passengers in England. Transport organisations have been left furious by the potential rise in next year's railway fares, which they have condemned as "outrageous". Just last year the Department for Transport confirmed costs would rise by 4.6%,but it looks like they may rise again. It wasn't employed in 2022 or 2023, but it was in 2024, when the Department for Transport confirmed costs would rise by 4.6% - one percentage point above last July's RPI figure. These alterations to fares took effect on March 2 this year. Article continues below The Government has yet to announce how it will calculate next year's railway fare increase, although banking firm Investec has predicted this year's July RPI figure at 4.5%, meaning costs could leap by 5.5% in March 2026. Bruce Williamson, of campaign group Railfuture, raged there was "no justification" for the massive increase. He said: "What would be the justification for jacking up fares above inflation? There isn't any." He continued: "It's ripping off the customer, driving people off the trains and on to our congested road network, which is in no one's interest. "One would hope that there would be some efficiency savings and economies of scale that you get from having a more integrated railway. "But I strongly suspect that if there are any savings to be had, they'd be swallowed up by the Treasury and not passed back to passengers, which I think is wrong." Around 45% of fares across Britain's railway network are regulated by either Westminster or the Scottish and Welsh governments. This encompasses season tickets for most commuter routes, certain off-peak return fares and flexible tickets for journeys around major urban areas. Railway operators determine increases for unregulated fares, though these are expected to closely mirror changes in regulated ticket costs. Ben Plowden, chief executive of Campaign for Better Transport, argued that costly fares were "putting people off" using trains. He continued: "Rising fares are not just burdening passengers, they are putting people off rail travel. "Our survey found that 71% of people would be more likely to take the train if fares were cheaper. Public support for nationalisation plummets if fares continue to rise. "As the Government progresses plans for Great British Railways, it must take the opportunity to reform fares and make rail travel more affordable." However, you can find return flights from Cardiff airport to Edinburgh airport with Ryan Air for over half of the price at £108 on Skyscanner. The Department for Transport has confirmed that "no decision" has been made regarding fares for the upcoming year. A spokesperson stated: "The Transport Secretary has made clear her number one priority is getting the railways back to a place where people can rely on them. URC considering major expansion into United States as Welsh regions could be axed
According to a report in the Daily Telegraph, URC chiefs have held exploratory talks over the venture, with 'big money on the table' for the competition to expand into the States. The move is, in large part, down to reports that the financially struggling Welsh Rugby Union could be about to axe two of its regions anyway, with the crisis-struck governing body expected to announce a plan to move forward in the next 24 hours. At present, the WRU are represented by Cardiff, Dragons, Ospreys and Scarlets in the URC, but noises out of the Principality Stadium suggest that number could be cut from four teams to two. Cardiff, which is owned and run by the WRU after being placed in administration earlier this year, is seemingly safe from any cull but the other three regions are on the chopping block, with the likely route being the Dragons merging into Cardiff and the Ospreys and Scarlets becoming one region to represent the west of the country. It is believed that the expansion into the US is not reliant on that being the case, with sources confident that the competition, which currently consists of 14 teams, could run with 16 as it looks to cash in on the upcoming 2031 World Cup in the United States. Discussions are still at an early stage but it is understood that the two teams that would join the URC would not be Major League Rugby teams, which are not as competitive as the URC teams, and would instead be newly-created franchise teams. Other logistics will need ironed out, too, such as a new schedule and travel arrangements, particularly for the South African teams in the League given the distance they would have to cover for games, especially if they were one-off Play-Off matches. The four South African teams – the Bulls, Lions, Sharks and Stormers – were the last teams to join the URC as part of its ongoing expansion, replacing fellow South African sides the Cheetahs and Kings in 2021, while rumours have abounded of a team from Georgia potentially being added, too. There had also been reports that Premiership Rugby were keen on a merger with the URC teams from Ireland, Scotland and Wales, although those were quickly quashed by the URC. Any potential team changes would not take place this season, with all four Welsh regions committed to the new campaign and any WRU announcement being followed by a six-week consultancy with stakeholders, which would conclude after the season had begun. When asked about any future expansion for the League in June, URC chief executive Martin Anayi commented: 'As the URC, we have always had expansion in DNA. We have been the Celtic League, and we moved, and we have tried to grow each time. And we have done that. I think we have genuinely made it a better League. 'I think it is important that we continue to look outwards. But also, the bar is very high because, for every game you add, there is a player welfare issue to engage with. And that is something you have to make sure you aren't compromising. 'You have logistics, especially when we are transcontinental, and then you have the sporting element, and we want it to be as competitive as ever. So I would never say never, but I think the bar is very high to do that. 'We play less rugby with the URC model and format. We don't have home and away games in every match. And it also allows us to not play across international weekends. We have almost 320 internationals playing in the League, which is almost double what you have in the Premiership or Super Rugby. 'If we do expand in the future, it has to be in the right way, and we don't fall into the traps of those who have done it in the past, and it hasn't been successful.'

Plan to turn old 'eyesore' bookies into home turned down The bookmaker's is said to be 'falling into a state of disrepair' in a coastal Welsh town known for its architecture The former betting shop in Aberaeron (Image: Local Democracy Reporting Service) An appeal against the rejection of plans to transform an "eyesore" 1960s flat-roof betting shop into a home in a Ceredigion coastal town renowned for its Georgian architecture has been dismissed. In an application turned down last August Dafydd Phillips, of nearby Ffosyffin, sought approval from Ceredigion planners to transform the former Wright Bookmakers in Castle Lane, Aberaeron, into a one-bedroom property involving the removal of a flat roof and adding a first-floor extension. The bookmaker's, housed in a 1965 building within the town's conservation area behind the Prince of Wales pub, shut its doors in 2018 and was described as "falling into a state of disrepair". A supporting statement via agent Morgan & Flynn Architectural Services argued the existing building is "not providing a sympathetic approach in appearance to the setting of the conservation area and therefore means that it provides little evidential value", claiming it "actually creates an eyesore that is not sympathetic to its surroundings". An officer report, advising rejection, stated: "Whilst [the planning authority] agrees that the loss of the existing building would not be particularly impactful on the conservation area as a whole due to the building being a relatively recent addition to Aberaeron and having little architectural merit given its context the design for the proposed dwelling is not deemed acceptable." The council also noted that affordable housing policy required a commuted sum equivalent to 10% of the open market value but no such agreement had been secured when the application was submitted. Article continues below The proposal was turned down due to "inappropriate design that fails to positively contribute to the context of its location and surroundings due to the sensitivity of its setting within a conservation area and close proximity to numerous listed buildings" and the absence of a formal section 106 legal agreement. After the rejection developers submitted an appeal to Planning and Environment Decisions Wales (PEDW). An inspector's report, compiled after a site visit in July, concluded the proposed development "would double the height of the building, raising it above the predominantly single-storey rear lane buildings and boundaries, and substantially increasing its prominence". Article continues below The report said that "would unacceptably alter the significance of the dwellings' historically taller form and harm the experience and understanding of the historical hierarchy between the dwellings and the more subservient lane structures". Regarding affordable housing contributions the report stated: "Although the appellant indicated a willingness to make an appropriate contribution to meet Policy S05 requirements no mechanism was provided to secure such a contribution at the application stage," and a pledge to provide a contribution in support of the appeal did not convince the inspector that it "would secure the necessary contribution to affordable housing".
