Women's health dietitian and nutritionist Valerie Agyeman, RDN, breaks down your FAQs about evaporated milk – what it is, what it's best used for and how it compares nutritionally to other types of milk.

What is evaporated milk?
Despite what your elementary school science class may have taught you about the various states of matter, evaporated milk isn't milk that has evaporated into a gas. It's just regular milk, Agyeman notes.
The main difference between evaporated milk and the milk you pour into your cereal or coffee is that this one has "most of the water removed, so it's thicker and has a slightly caramelized flavor," she adds. So if you are planning on swapping out milk for evaporated milk, you're going to want to dilute it with some water first.

Is evaporated milk healthier than regular milk?
Nutrition-wise, evaporated milk is similar to whole milk – just more concentrated, Agyeman says.
Though a cup of evaporated milk has about 338 calories compared to whole milk's 152 calories, whole milk also has more than double the water content of the much thicker evaporated milk, according to the U.S. Department of Agriculture's (USDA) Food Database. But pound for pound, the protein, fat and carbohydrate content between evaporated and whole milk are roughly the same. (Lower-fat milks, such as 1% and skim, contain fewer calories and fat than both.)
"(Evaporated milk is) not necessarily healthier, but it's a great option when you want a creamy texture in soups or sauces without using heavy cream," Agyeman says. Evaporated milk is also commonly used in custards, puddings and pies to help achieve their rich texture.

The amount of calories someone should eat in a given meal can depend on several factors, including age, sex, height, weight, physical activity, pregnancy or lactation status and individual goals. For example, the current Dietary Guidelines for Americans recommends that a moderately active (defined as the equivalent to walking between 1.5 and 3 miles per day at 3 to 4 miles per hour) 35-year-old man should be consuming about 2,600 calories a day, while a moderately active 35-year old woman needs about 2,000. Women generally need fewer calories than men, and older adults generally need fewer calories than younger ones. These recommendations can also vary depending on whether a person is trying to lose, maintain or gain weight, too. Rather than focusing on how many calories someone should be eating at breakfast, nutrition experts suggest paying more attention to the variety of macronutrients you're serving yourself. "Start the day with a protein- and carbohydrate-rich meal for sustained energy until lunch time," Moore suggests. Adding healthy fats, such as chia seeds, walnuts, olive oil, avocado or full-fat yogurt to the equation is helpful. What is meal sequencing? These balanced breakfast options will give you the energy you need to get through the day. Vegetable-packed omelet with a side of fruit (pick your favorites!) Oatmeal with a creamy nut or seed butter with a handful of berries (this one's vegan, if that's something you're looking for in a recipe). Abbott, Rollins announce plans to address screwworm threat on cattle, livestock
AUSTIN (KXAN) — On Friday, Texas Gov. Greg Abbott (R) and Secretary of Agriculture Brooke Rollins publicly addressed plans to fight against the New World screwworm, which has disrupted the livestock and cattle industries. According to the U.S. Department of Agriculture, New World screwworms is an invasive species that burrows fly larvae into fresh wounds of living animals like livestock, pets and occasionally people. The damage they cause can be deadly. During a press conference, Rollins announced a new sterile fly production facility in Edinburg, Texas. The facility will breed three hundred million flies a week. Additionally, the Trump administration will invest in the development of technology and work closer with Mexico to track the screwworm population. 'We have a lot of data to collect. We have a lot of work to do. But we have to protect our beef and cattle industry in this country,' Rollins said. Abbott said during the press conference that screwworms, which feed on cattle and deer, could result in billions of losses each year. 'This is an issue that is essential to the cattle industry, to the food supply which are at risk,' Governor Abbott said. The animal is named after their feeding behavior, with the larvae screwing into the flesh of their victims. Larry Gilbert, a professor at the Univerosty of Texas and the faculty director of the Brackenridge Field Lab, said he was more concerned about the impact New World screwworms could have on the deer population. 'The deer herds would be very vulnerable to this, and you don't go around treating wounds on deer. Its hard to find them,' Gilbert said. In June, the Department of Agriculture reported that screwworms were detected about 700 miles from the southern border. Cattle imports were suspended from Mexico to prevent an infestation in the states. This drew concern from Abbott earlier in the year. He established a Texas New World Screwworm Response Team. According to Peyton Schuman, senior director of government relations for the Texas and Southwestern Cattle Raisers Association, a screwworm outbreak could cost Texas around $1.8 billion in damages to livestock annually. The state's hunting industry could also face issues. During the 1960s outbreak, 80 percent of Texas's white tailed deer died as a result of screwworms. The species originates in Cuba, Haiti, the Dominican Republic and some countries in South America. The pests were mostly eradicated in the U.S. in the 1960s, but they have occasionally reemerged in Central America and Mexico. According to the Texas A&M Agrilife Extension office, the population is controlled through the release of sterile males into the population. Using sterile populations for control was developed at the University of Texas in Austin by entomologists, Edward F. Knipling and Raymond C. Bushland. Signs of an animal infested with the New World screwworm include: Foul-smelling wounds with maggots Animals biting or licking their wounds Lesions in bellybuttons, ears and where branding has occured Lethargy If an infestation is suspected, Texas A&M Agrilife recommends you contact authorities, like the Texas Animal Health Commission and Texas Parks and Wildlife, and notify your veterinarian. You should then inspect the animal for signs of infestation and collect any samples to give to authorities. There are several treatment options, including topical treatments.

Notorious Boar's Head Plant to Reopen a Year After Listeria Outbreak That Killed 10
Boar's Head plans to reopen a meat packaging plant in Jarratt, Virginia, that was the source of a listeria outbreak in 2024 that sickened dozens of people and killed 10. The company had closed the plant indefinitely after liverwurst packaged there had been linked to the deaths. A shocking report from the New York Times shortly after the Boar's Head recall explained that the plant had evidence of meat that was exposed to wet ceilings, extensive rust, and the presence of green mold. But last month, the USDA lifted a suspension on the Virginia plant's ability to operate after the Food Safety and Inspection Service was provided evidence it could operate safely, according to the Post. The Associated Press published a new article last week that Boar's Head plants in other states had experienced sanitation problems similar to the ones found at the Jarratt plant in 2024 before the listeria outbreak. The AP obtained information through freedom of information requests about Boar's Head plants in three states, which found evidence of 'meat and fat residue left on equipment and walls, drains blocked with meat products, beaded condensation on ceilings and floors, overflowing trash cans, and staff who didn't wear protective hairnets and plastic aprons.' The USDA noncompliance reports obtained by the AP come from Jan. 1 to July 23 of this year, and also note that staff sometimes didn't wash their hands. The Boar's Head plants are located in Forrest City, Arkansas; New Castle, Indiana; and Petersburg, Virginia. And the AP spoke with food safety experts who said they were 'surprised' that Boar's Head seemingly hadn't fixed its sanitation problems after such a deadly outbreak. After the listeria outbreak in 2024, Boar's Head said it would create a 'Boar's Head Food Safety Council' comprised of 'independent industry-leading food safety experts,' according to a press release from last year. But the company has seemed to be less than willing to talk about problems at its facilities, even cancelling an interview with the AP, according to the news service. The AP was supposed to talk with Natalie Dyenson, Boar's Head's new food safety officer, but that didn't happen. The New York Times has characterized Boar's Head as 'secretive,' given the fact that the company's own chief financial officer couldn't name the CEO during a deposition in 2022. The privately held company does billions of dollars in annual revenue, but the two families that run it, the Brunckhorsts and the Bischoffs, are 'intensely guarded,' as the Times put it. It's not clear when the Jarratt plant may reopen. But a spokesperson for Boar's Head told Gizmodo in an emailed statement that the company had recently made 'enhancements.' 'Boar's Head has an unwavering commitment to food safety and quality. That commitment is reflected in recent enhancements to our practices and protocols, which you can read about at the statement reads. 'We have also been working with the USDA in developing a plan to re-open our Jarratt facility in a measured, deliberate way in the coming months.' The USDA didn't immediately respond to questions about the reopening of the plant on Friday afternoon. Gizmodo will update this article if we hear back.
