The brave actress, who played Clara Livingston in the third season of the Netflix period drama, bravely attempted to stop the teen escaping.
Astonishing footage from police shows Genevieve grabbing Boulares' shoulder as she realises her phone has been taken.
She then tackles the serial thief to the ground with the help of another customer.
Genevieve managed to take her phone back from Boulares before repeatedly hitting him with it in the posh cafe.
She previously claimed she suffered a concussion in the horror in February and said even her dog was "traumatised".
The star added: "They didn't expect me to stand up for myself – but I did."
Algerian national Boulares previously pleaded guilty to stealing the phone.
The teen also admitted common assault against fellow Joe and the Juice customer Carlo Kurcishi, who had stepped in to help.
Boulares pleaded guilty to a separate charge of theft after he swiped a black leather hand bag from a diner at a pizza restaurant.
The court heard he has 12 previous convictions for a total of 28 offences - all relating to theft.
His rap sheet includes threatening to cut off Aled Jones' arm while stealing his £17,000 Rolex.
The Songs of Praise presenter, 52, was out with his son Lucas when he was targeted near their home in Chiswick, South West London.
Boulares - then aged 16 - pulled out 20 inch machete and repeatedly threatened Aled in a bid to steal the luxury timepiece.
He told him: "Give me your f***king Rolex or I will cut your arm off."
Aled handed over the £17,000 Rolex Daytona watch rather than fight with the armed robber.
He and his son bravely followed the 6ft teen but when he spotted them, he snarled: "Walk the other way or I will cut your head off."
Boulares was given a two year training and detention order after pleading guilty to robbery at Ealing Youth Court.
But he was released from youth detention early after serving just 14 months of his 24-month sentence.
He will be sentenced for robbing Genevieve on June 17 at Isleworth Crown Court.
As well as Bridgerton, Genevieve appeared in historical film 1242: Gateway To The West.
She is also a former professional athlete who represented Team GB at the Baku 2015 European Games in Artistic swimming events.

Pete Wicks 'on a mission' to rehome poorly Kenilworth dog

TV personality Pete Wicks says he is "on a mission" to help rehome a dog who does not have long to live. Wicks said he "instantly fell in love" with Theo, who has dilated cardiomyopathy, a life-limiting heart condition and is expected to only live for one more returned to the centre on Thursday and said: "It is a genuine, genuine mission, he needs to live out the rest of his life happy." Tristan Smith, who cares for Theo at the dogs home, said his condition had not been well treated when he was taken in at the centre."He's now on medication but he won't lead a life of a normal length," Mr Smith said."Nobody knows how long he's got left," Wicks added. The TV star described Theo as a "gentle giant"."He's goofy, he's clumsy, his temperament is incredible, he's got so much love to give," Wicks said."He deserves to be part of family and have as much love as any other dog. "We are in rush to get him that happy feeling where he knows he's safe and content." Wicks previously took in two rescue dogs and said it was so important to give dogs that had not had the best start in life a second chance. "Every dog deserves to know not every human is bad and that is exactly what Theo deserves," he added. Follow BBC Coventry & Warwickshire on BBC Sounds, Facebook, X and Instagram.

Tory taxpayers to bear brunt of Reeves's squeeze on police

Council taxpayers in Tory areas will bear the brunt of Rachel Reeves's squeeze on police funding, official figures show. Police forces in rural areas, which are predominantly under Tory control, have to draw twice as much of their budgets from council taxpayers as metropolitan areas, which are largely overseen by Labour police and crime commissioners. Conservative Surrey funds 57 per cent of its budget through its policing precept on council tax at the top of the table compared with 21.8 per cent for the West Midlands, 24.3 per cent for Merseyside and 27.1 per cent for the Metropolitan Police Service, which are all Labour-controlled, according to official data for 2024. This disparity means that they can only plug gaps from the Chancellor's police cuts through a disproportionate reliance on their council taxpayers who face an anticipated increase of £14 on their tax bills for Band D properties, or more than five per cent. The figures come a day after police chiefs warned Ms Reeves that the funding shortfall would mean they would be unable to deliver on the Government's pledges to put 13,000 more neighbourhood bobbies on the beat and halve knife crime and violence against women and girls. Ms Reeves pledged police forces would get an increase of 2.3 per cent in their spending power, but this included the council tax precept on which rural areas disproportionately rely for their funding.
