
The Coolest Underground Dinner Party Series in Dallas Is in a Ceramics Showroom
Forget ordering a tasting menu or even going to a restaurant. Some of the best and most interesting dinners in Dallas, cooked by award-winning chefs, are happening in the showroom of a local ceramics artist. Marcello Andres Ortega started making ceramics in high school and returned to it decades later, parlaying a passion into notable restaurants in Texas and beyond, where his dishware is now featured. If you've eaten at Georgie, Beverly's, or Jose lately, you've eaten off of Ortega's work, which he describes as sculptural work made using traditional methods, and designed with the idea of family-style eating in mind. Attendees at the Kiln to Table dinners also get the chance to eat from Ortega's work, with chefs choosing the ceramicware they would like to serve on from his collection.
Along the way, Ortega and his team created Kiln to Table, a farm-to-table inspired dinner party with extremely limited seating held monthly in the Marcello Andres showroom. This summer, the series kicks off in May, giving diners a chance to meet and try the food by Austin chefs Megan Brijalba and Paul Wensel of Hestia (Sunday, May 25) and San Antonio chefs Ian Lanphear and Danny Grant of Isidore (Sunday, June 1) — both restaurants are part of the critically lauded Emmer & Rye Hospitality Group.
Eater Dallas caught up with Ortega to learn more about these underground dinner parties — how they originated, how the chefs pull off these lavish meals without a kitchen, and how ceramics factor into it all. Eater: What inspired you to put a dinner series together?
Marcello Andres Ortega: I moved into the [ceramics studio] in the summer of 2020. During our evolution, the Cedars Open Studios had a tour once a year in November. Businesses open their doors to the public on a Saturday, and the neighborhood gets flooded with pedestrians. It would be our best sales day of the year, and a light bulb went off. I asked myself, Hey, why don't I try to do this once a month? I set my sights on building a showroom. I designed the room to be music-centric with a Bose sound system to make it a listening space. I wanted a long, skinny table to display plates and ceramics. We added a bar area for the staff to make coffee and for bartenders to come in to work during sales. We opened that space in conjunction with one of the neighborhood tours and hosted a Chilean dinner party for friends prepared by Rosin [Saez, creative director and events]. After that, when chefs came by to buy plates and do studio visits, the room piqued their interest, and they started asking about doing more formal dinners here. I didn't think it would be an option, because we don't have a proper kitchen.
So, chefs were like, 'Whatever equipment you've got, we'll figure it out?'
Every chef we talked to, it was no hindrance whatsoever to them. Every chef has some story about cooking for 30 in an elevator shaft. We got a couple of induction burners for the Chilean dinner. We have a toaster oven for staff to be able to make avocado toast, things like that, that get used in every dinner. We've had so many different types of cuisine, from sushi to Kent Rathbun using a flat iron grill in the main part of the warehouse that someone left here. We've had chefs bring in additional induction burners, sous vide, and finishing dishes with fire or torches for a final sear. It depends on the chef — we've had some do a lot of prep before coming, while others set it all up here. The biggest addition we've had is adding more electricity to the room. After the first few dinners, I realized we kept flipping the breakers. We went from renting to buying a generator for the dinners, and now we've had more electricity installed. It is a huge leap of faith for diners to find this warehouse in the Cedars and walk through to a back room. And now that we've worked through the wrinkles, it feels like a smoother experience. But having that rawness and feeling like you're in someone's home where you can see the hustle and food being made through a window, all adds to the charm.
How have you been finding chefs to partner with?
It started organically with chefs wanting to have events in the space. Our first dinner was with Justin Box [formerly of Cafe Momentum, the Market Cafe at Bonton Farms, and Lockwood Distilling]. Then, we brought in Gigi Zimmerman [private chef] and chef Marsia Taha [Gustu], who flew in from Bolivia. The second dinner, we held in our main production room instead of the showroom, where we hosted dinners for 28 and 30 people. We learned the pros and cons of that quantity versus being in our showroom with eight or 10. As we started thinking about which chefs made sense to invite to do the dinner series, I felt it was important to give our clients and people who have supported the studio dibs. There was no exact science to that, just timing. We started to get feedback from repeat attendees, too. RJ Yoakum from Georgie, Anastacia Quiñones-Pittman and her team, Misti Norris, Olivia Lopez from Molino Olōyō, and Shine Tamaoki from Pearl.
This summer, you're kicking things off with some Austin and San Antonio chefs. How are folks coming from out of town going to pull it off?
Everyone who agrees to be involved with this is drawn to the excitement of doing something different, where you get to be creative and are pulled out of your normal setting. Even though traveling from out of town adds an extra element of labor to it, I think that excites the chefs with whom we collaborate. When Gab Erales [ Top Chef: Portland winner and formerly of Comedor] came in from Austin to do a dinner, a lot of the prep happened in Austin, then got packed and iced up. It made sense, as we do more ceramics with Isidore and Pullman Market, and in the past few months, I connected with Hestia and started making ceramics with them. Generally, the chefs bring it up, asking how it works or how they could be considered after seeing it on social media.

Suge Knight spoke to ABC News, and despite the two being on opposite sides and catalysts behind the decades-old East Coast-West Coast beef, he's not putting all the blame on Diddy for his sexual behaviors, claiming others were involved but falling short of naming anyone. 'If you're going to make Puffy answer, make everyone answer,' Knight began. 'Change the theme of the culture of the problems in Hip-Hop. I think it'd be a great thing to let Puffy tell his truth. Tell the real truth, and bring everybody accountable.' Knight adds that Diddy's freak offs may have become public knowledge in 2023 due to Cassie's lawsuit, but they had been happening long before and were an open secret in the Hip-Hop world. 'Everybody knew that,' Knight said. 'Puffy didn't just pop in the industry and say, 'hey, I want to have sex with everybody.' I mean, we don't have enough time to name all the names.' Most recently, he was a topic of discussion when Diddy's former assistant Capricorn Clark took the stand. She revealed that once Diddy found out that she used to work for Knight, her new boss told her he'd kill her if anything sketchy happened. Diddy's lawyer Marc Agnifilo pressed Clark on why she'd continue to work for someone who was allegedly so dangerous, but Knight points out that it's because of how much power Diddy had. Knight said he felt bad for Clark and applauded her for her ambition and desire to succeed in the entertainment industry. 'A lot of people might say, well, Capricorn could have did anything else she wanted to do. She did try,' Knight said. 'If you go get a job at Universal and Puffy makes a phone call, you're not getting that job. If you go get a job at a counter agency or in the movie business and Puff make that call, your career is over.' Even with their long-standing beef, Knight doesn't think prosecutors should take 'Puffy and lock him up and throw away the key,' because he thinks he can 'do so much good right now.' Knight advises that he take the stand to tell the truth and take a plea deal, which he already turned down ahead of the trial. In another, he added, 'Donald doesn't take well to disrespect, and doesn't forget who chooses to go against him. while working tirelessly to make America great again there is no room for distraction. Shigeo Nagashima, ‘Mr. Baseball' of postwar Japan, dies at 89
More than any player of his generation, Mr. Nagashima symbolized a country that was feverishly rebuilding after World War II and gaining clout as an economic power. Visiting dignitaries sought his company. His good looks and charisma helped make him an attraction; he was considered Japan's most eligible bachelor until his wedding in 1965, which was broadcast nationally. He wore his success and celebrity so comfortably that he became known as 'Mr. Giants,' 'Mr. Baseball' or, sometimes, simply 'Mister.' Advertisement 'No matter what he did or where he went there was a photo of him -- attending a reception for the emperor, or coaching a Little League seminar, or appearing at the premiere of the latest Tom Cruise movie,' Robert Whiting, a longtime chronicler of Japanese baseball, wrote about Mr. Nagashima in The Japan Times in 2013. 'People joked that he was the real head of state.' Advertisement None of that celebrity would have been possible had he not excelled as a ballplayer. Along with his teammate Sadaharu Oh, Japan's home run king, Mr. Nagashima was the centerpiece of the country's most enduring sports dynasty. He hit 444 home runs, had a lifetime batting average of .305, won six batting titles, and five times led the league in RBIs. He was a five-time MVP and was chosen as the league's top third baseman in each of his 17 seasons. He was inducted into Japan's Baseball Hall of Fame in 1988. In his first season, 1958, he led the league in home runs and was second in stolen bases and batting average, earning him rookie of the year honors. One of Mr. Nagashima's trademarks was his work ethic, a trait that was particularly celebrated during Japan's postwar rise. Under the guidance of manager Tetsuharu Kawakami, Mr. Nagashima practiced from dawn to dusk, enduring an infamous 1,000-fungo drill that required him to field ground ball after ground ball. In the offseason, he trained in the mountains, running and swinging the bat to the point of exhaustion. He bought a house by the Tama River in Tokyo so he could run there, and he added a room to his home where he could practice swinging. By the early 1960s, word of his talents had reached the United States. Bill Veeck of the Chicago White Sox tried unsuccessfully to buy his contract, as did Walter O'Malley of the Los Angeles Dodgers, now home to Japanese superstar Shohei Ohtani. (Ohtani offered his condolences on Instagram, posting photos of himself with the aging icon.) Advertisement After ending his playing career in 1974 (his number, 3, was retired), Mr. Nagashima became the team's manager. He was far less successful in that role, at least initially. He pushed his players -- some of whom were his former teammates -- to work as hard as he did. 'Bashing the players this year cultivates spirit,' he told The Japan Times. In his first season, the Giants finished in last place for the first time. The next two years, they won the Central League pennant but lost the Japan Series. The Giants failed to win their division for the next three years, and Mr. Nagashima was let go in 1980. Shigeo Nagashima was born Feb. 20, 1936, in Sakura, in Chiba prefecture. His father, Toshi, was a municipal worker and his mother, Chiyo, was a homemaker. He grew up rooting for the Hanshin Tigers, the Giants' archrival. He took up baseball in elementary school, but because of wartime shortages, he made a ball from marbles and cloth and used a bamboo stick as a bat. After graduating from high school, he entered Rikkyo University, where he started at third base. Rikkyo, typically an also-ran, won three college tournaments. After graduating from Rikkyo, Mr. Nagashima signed a then-record 18 million yen (about $50,000 in 1958) contract with the Giants. As his star rose on the field, speculation about his marital status grew. In 1964, he met Akiko Nishimura, a hostess at the Tokyo Olympic Games who had studied in the United States and spoke fluent English. Their wedding was the most-watched television broadcast in Japan the following year. She died in 2007. Advertisement Their oldest child, Kazushige, played sparingly for the Giants when his father managed the club and now works in television. Their second son, Masaoki, is a former race car driver, and his daughter Mina is a newscaster. His affable style came with occasionally incomprehensible chatter. But his charisma made him an irresistible target when the Giants were looking for a new manager in 1993. Then 56, Mr. Nagashima debated whether to return to the dugout. 'My wife and I were looking forward to a quiet life playing golf, and it was hard to decide to throw myself back into the fight,' he told reporters. 'But I was raised as a Giant, and if I have the strength, I will do whatever it takes for the Giants.' Mellowed by age, he was easier on his players this time around. He also had the good fortune to manage Hideki Matsui, the team's cleanup hitter and one of the most fearsome sluggers of the 1990s. (Mr. Nagashima would later criticize Japanese players, including Matsui, who joined the New York Yankees in 2003.) The Giants won two Japan Series titles, in 1994 and 2000, during Mr. Nagashima's nine-year tenure. In his 15 years as a manager, his teams won 1,034 games, lost 889 and tied 59 times. The Giants made him a lifetime honorary manager. As he was preparing to manage the Japanese team at the Olympic Games in Athens in 2004, Mr. Nagashima, then 68, suffered a stroke that partly paralyzed the right side of his body. Though he was seen less in public in the years that followed, he was no less adored. In 2013, he and Matsui were given the People's Honor award by Prime Minister Shinzo Abe. Eight years later, they were torch bearers at the opening ceremony at the Tokyo Games. Matsui walked slowly, holding Mr. Nagashima, as his old teammate, Oh, held the Olympic torch.
