Indonesia's beloved fried rice takes many forms, ranging from a simple salted version to bold, Thai-inspired variations. AISYAH LLEWELLYN MEDAN, Indonesia -- Travelers and food lovers considering Indonesian cuisine might think of many succulent dishes, including gado-gado , a mixed salad topped with a rich peanut sauce, beef rendang , slowly simmered in coconut milk, or soto , a traditional soup typically eaten for breakfast. But of all of Indonesia's best-known foods, one stands out as the national dish: nasi goreng (fried rice), which is served all over the country from roadside stalls to high-end hotels.

Bali, Lombok, Java and Sumatra draw the most visitors, while a few venture to Flores, home of the fearsome Komodo dragon. But few go beyond. One reason why most visitors stick to the "big four" islands is that they are the easiest to reach -- travel becomes more challenging and costly the farther you go. But for those willing to journey deeper into Indonesia, hidden gems await, including Nias, an island off the west coast of Sumatra.
