Food Picks: Spanish restaurant Binomio marks new chapter at Raffles Hotel

SINGAPORE – Established in Craig Road in 2012 , Spanish restaurant Binomio has relocated to a swanky new home at the Raffles Hotel Singapore.
It is now helmed by Spanish executive chef Felix Noguera, 42, who has worked at three-Michelin-starred Spanish establishments Can Fabes by the late chef Santi Santamaria and Aponiente by Angel Leon.
Under chef Noguera, the menu has been refined with a mix of new dishes and returning favourites.
Start your meal at the 50-seat outdoor bar section with tapas and drinks.
Highlights include ensaladilla de gambas y encurtidos ($16), a creamy potato salad topped with prawns, pickled gherkins and capers; and the show-stopping bienmesabe de lubina ($19), nuggets of battered sea bass fillets fried to golden perfection. The considered kick of vinegar and paprika in the batter elevates the dish, along with the striking whole fish bone as part of the presentation.
It is not a Spanish meal without croquetas (from $18 for four pieces) – the deep-fried bites are available at the bar or in the restaurant – with options such as cod, mushroom, truffle and the signature Binomio, made with chicken thigh and 60-month aged Iberico ham.
Continue the meal inside the 76-seat restaurant, which includes a 12-seat private room, with elegantly plated carpaccio de lubina con vinagreta de trufa negra ($34), thin slices of sea bass finished with a black truffle vinaigrette, toasted nuts and chives; and the indulgent bogavante con salsa de marisco ($78), succulent lobster topped with a rich lobster stock and chive oil.
Finish with a classic Basque cheesecake ($14) with a gooey centre or churros with chocolate sauce ($12).
For best value, go for the weekday set lunch (from $42++) or Sunday brunch (from $88++).
