Leandro Trossard: Arsenal forward set to pen new deal as 'value' recognised

Leandro Trossard is set to sign a new contract at Arsenal. The Belgian, who joined the Gunners for £27million from Brighton and Hove Albion back in 2023, has spent two and a half seasons in north London, scoring 28 times and assisting 23 in 124 games at the Emirates Stadium. He has played a crucial role in Mikel Arteta's turning around of the club's fortunes, with Arsenal now firmly considered title contenders. The Athletic reports that the winger has agreed on fresh terms to his current deal, which will mean a 'significant' wage increase to reflect his valued role within the first-team fold. Trossard's current contract expires in 2027, and that will be the case once more with his new deal. Previous reports had claimed that Trossard could leave north London with Arsenal rumoured to be wanting to strengthen their frontline. Trossard was an unused substitute in Arsenal's opening-day victory over Manchester United at Old Trafford last Sunday, when Riccardo Calafiori notched the winner. Trossard suffered a groin injury during the Gunners' pre-season friendly against rivals Tottenham in Hong Kong earlier last month, and has yet to return to action since then.

How to eat like a Premier League footballer

Ever wondered what a professional football player eats during the week? Perhaps you think it is all steamed greens, or you envisage vast spreads of caviar and exotic fruits. Well, according to Brighton and Hove Albion's executive chef Will Carvalho, the array of options are vast – taking into account the varying demands of the athletes. As he explains: 'We are always trying to find that percentage more, to make sure our players are ready for and also recover well from their games.' Not everyone can emulate this generous spread but as Carvalho says for keen amateur athletes: 'They can organise their week so they balance their work, life and sport. Obviously, the intensities are different [for amateurs] and recovery as well, but these days, there is more and more of a positive attitude towards healthy eating and also healthy lifestyle.' Breakfast As Carvalho says: 'We start the day with breakfast and the players will have a choice from poached and scrambled eggs, Oyster mushrooms with parsley, grilled or roast tomatoes, steamed spinach, baked beans, and plum tomatoes with green pesto and mozzarella.' As well as American pancakes there are energy balls with dates and vanilla or raspberry and honey; and an array of porridge options: coffee and almond porridge, soya oat porridge; Bircher muesli and even a baked oat porridge option. But then there is the more bespoke side of things. Carvalho adds: 'The live omelette station consists of: cheese (light mozzarella), feta, turkey ham, rocket, spinach, mushrooms, peppers, red onion, jalapenos, spring onion, red chilli, cherry tomatoes and cooked potatoes. 'In the cold section we have turkey ham, smoked salmon and lemon wedges, grated carrot and beetroot, baby spinach, Greek yogurt, homemade granola, cottage cheese, honey, avocado, omega seed mix – with pumpkin, sunflower and chia – as well sourdough and wholemeal bagels and a selection of nuts and dried fruits.' Brighton also have their 'famous orange juicer' with the modern standards of ginger, turmeric, kale, beetroot, pineapple, kiwi, celery, carrots, cherry juice, watermelon, cantaloupe, pears and apples available for selection. And ginger shots, Keffir and Kombucha. Lunch Theming the offerings is a cornerstone of the club's menus, with Carvalho saying: 'For lunch, I always theme the menus with home nations or world regions. The meat would include a lamb and chicken kofta station. We would still have a grilled turkey escalope for the staple food menu [and] a falafel burger station for the vegans.' Match day As you may have noticed, Brighton have several stations set out for different demands. In terms of focus, building to match day is key. This necessitates a different focus, as Carvalho explains. 'The day before a game we aim for high-carb options, so we always have two: a pizza station and arancini.' If they stick with the Middle Eastern options, for example, they would have batata harra – a spicy potato dish – Afghan sautéed pumpkin with crumbled feta, as well as roasted vegetables with tahini drizzle. For a rice option they would have sayadieh – a spiced rice dish, without the fish – and a soup called harira. Which brings us to pasta. Carvalho explains that the pasta station will have eight different types of pasta alongside their own green and red pesto, a tomato sauce and a 'high-carb and high-protein white sauce', plus beef bolognaise and assorted condiments. But you want to know about the grill. As Carvalho says: 'From the live grill we offer Wagyu fillet, sous vide chicken to be finished on the grill and the fish of the day. Being situated on the coast means we have some amazing fish options daily, so we can have the best fish for the players.' The aim is to always have two 'high-fuel salad' options with protein to balance the menu. Sweet treat Players are often creatures of habit – and will let the chef know what they like. For that reason, Carvalho says, there is one constant. 'For dessert there is our classic vanilla rice pudding station. This is an iconic dish that is always available the day before a game.'
