Don't Forget to Thaw Your Frozen Meat for Memorial Day Weekend Grilling
Grilling for memorial day weekend? Don't forget to properly thaw your frozen meat first. That means you need to move your frozen grill meat to the refrigerator today. Experts warn against cooking frozen meat because the internal temperature often doesn't get high enough to kill lingering bacteria, especially around bones and more central structures. If consumed, this can pose a very serious health risk. We asked Diego Campos Vargas, executive chef at CAMP in Greenville, South Carolina, an expert when it comes to churning out high-quality dishes for carnivores and agrees with this advice. I recently dined at his establishment where I noshed on everything from seared scallops and grilled octopus to steak pinchos and merguez agnolotti — all of which were cooked perfectly and left a lasting impression. "Unfortunately, we live in a society where we expect things to move fast and to be ready, but food shouldn't be that way. You shouldn't speed up cooking methods and processes," he says. "You can cook meat from frozen, but not with all products," he adds. That said, Vargas shares with us one exception to the thaw process. Here are his top tips for anyone who may be short on time, but not on achieving flavorful mealtime success. Best practices for safely thawing meat Poultry and other large cuts if meat should be thawed slowly in the fridge for safety. Getty Images 1. The slow thaw is best Nothing beats a slow thawing method to preserve the integrity of meat and prepare it safely. "Ideally, you want to thaw proteins slowly in a fridge," says Vargas. "At CAMP, we plan ahead. When we get our delivery on Wednesday, we know we will need to prepare the duck confit, octopus, etc. over the weekend." "Instead of storing in the freezer, we will store it in sheet pans inside our walk-in. This way, the product slowly gets to the same temperature as the walk-in. By the second day, the protein is ready to be processed and cooked as needed," he adds. 2. Thaw under cold running water But if time is of the essence and you're in a situation where meat must be thawed immediately, Vargas says that the best practice is to place the protein in a container under the sink and allow cold water to run continuously over it. " This will ensure the water stays at a constant temperature," he says. "The Department of Health and Environmental Control recommends that you run cold water when practicing this technique because bacteria love that 70 degrees Fahrenheit to 100 degrees Fahrenheit environment." Read more: How to Properly Thaw Turkey 3. No time to thaw? Braising is your best bet If there is one cooking technique that yields the most successful cooking-from-frozen outcome, it's braising. Not only does the initial high temperature and subsequent extended cooking time kill bacteria and break down the meat's tough fibers, but it's a method that also allows the layering of flavors along the way. "You will be able to infuse more flavor and moisture to the end product throughout the cooking method," Vargas says. The best way to thaw frozen meat is in the fridge over night. AnnickTo braise frozen meat, start by searing each side of the cut (see below on the best cut types) with olive oil or butter in a Dutch oven or heavy pot over medium-high heat. The meat should develop a crust and turn golden brown. Once this happens, remove the meat from the pot and set it aside. Next, add aromatics such as garlic and onions and soften them in the leftover fat. You may need to scoop out a bit of the protein's juices beforehand, as frozen meat will release more liquid than thawed meat. Deglaze the pan with a liquid of choice. This will typically be stock, broth, wine or even beer. Bring the pot to a simmer and add your meat, ensuring that the liquid doesn't completely cover it. Instead, the protein should be sitting in a shallow bath on low heat. Cover the pot and allow for the meat to cook for a couple hours or until it reaches desired tenderness. You can also add vegetables, herbs or anything else to enhance flavors, though cooking times will vary by ingredient (i.e. a potato is going to take longer to cook than celery). It's also advised that frozen meat be cut into smaller pieces before or after searing, as it will cook more evenly and timely. Safety tip: The type of meat and cut matters Tender cuts of steak should be thawed before cooking, no questions asked. Chowhound It's no surprise that different protein cuts often require different cooking techniques and times to maximize their flavor and tenderness. Vargas recommends, at least with beef, that you take the cut of meat into consideration before deciding to braise from frozen. Typically, larger cuts that demand longer cooking times such as osso bucco are ideal for braising. If it's a filet mignon that only requires a few minutes of sear, the meat must be thawed. A good rule of thumb: If the protein will literally transform and break down through braising, it should be OK to cook from frozen. Anything smaller and with less fat content will require a thaw. How long you freeze your proteins matter, too Simply placing meat in the freezer won't suffice to extend its life. Different types benefit from different freezing techniques and lengths of time. Some meats will thaw quicker thanHigh-fat cuts like rib eyes can certainly last in the freezer for longer, but it's wise to follow these recommended freezing times for more popular options: Octopus: one month Chicken breast: two months Chicken legs and thighs:three months Pork butt: three months Pork chops: two months Beef filets: two months Chuck beef: four months "As a rule of thumb, I would say that you want to freeze proteins for less time if they cook at a lower temperature," recommends Vargas. "For example: fish is cooked 'well-done' at 135 degrees Fahrenheit while beef is cooked well-done at 165 degrees Fahrenheit. You want to freeze fish and all other seafood for less time than you would beef and pork." Proper sealing is key during the freeze To achieve maximum freezer capabilities, Vargas recommends investing in a vacuum seal machine with proper storage bags. "I freeze leftover raw proteins all the time in my house," he reveals. "The bags also make it easy for thawing in the fridge." Fish can also be frozen, but not for as long as beef can be."When freezing, water molecules freeze, but when thawed out, the molecules melt and become the liquid that leaks from the protein," explains Vargas. "All those juices could be part of the protein, but they are lost after freezing. This influences the quality of the product greatly." Singer and actress Ashley Tisdale is best known for her role in High School Musical and as the voice behind Candace Flynn in the popular animated series Phineas and Ferb. Recently, the actress revealed that though she is a part of the Disney channel show as a voice artist, her four-year-old daughter Jupiter has never watched a single episode of Phineas and Ferb. And there's a good reason behind it. At the Bush's Bluey Baked Beans launch event at CAMP in New York City on Wednesday, May 14, the 39-year-old actress spoke with People and revealed that Jupiter is aware of the characters Phineas and Ferb. 'I haven't (watched the show with Jupiter). I mean, she's seen (the characters) Phineas and Ferb." Explaining the reason, Ashley added, 'It might be a little bit more for the older age range." The actress further stated that her daughter knows that her mom is on the show, but she has not seen a full episode yet. 'She knows that I'm on it, and she has seen that, but I haven't shown her the new episodes," Ashley said. While she might not have gotten a chance to watch the show yet, Jupiter did get a peek behind the scenes when Ashley took her to a recording studio last year. FYI, a decade after Phineas and Ferb concluded in 2015, the beloved animated series is making a return. At New York's Comic Con in October last year, the show's makers announced its return to the screens once more. Phineas and Ferb's fifth season is set to premiere on June 5, with new episodes airing on both Disney Channel and Disney XD and streaming on Disney+ the next day. In the same conversation, Ashley expressed her excitement about the new episodes of Phineas and Ferb, especially because her character Candace is now 16. 'The new episodes are amazing, and I'm so excited because my character finally has aged a little bit. She's 16, and so I really can't wait for everybody to see it. It's one of those things where (creators Dan Povenmire and Jeff 'Swampy' Marsh) did not go far from the DNA of it, which is so great." A serial entrepreneur, a musician, and Walmart's CEO walk into an AI factory…
In the days after the serial entrepreneur Ben Kaufman exited from his retail store startup CAMP early last year, he found himself in Walmart's hometown of Bentonville, Arkansas meeting with a fellow tech founder he had partnered with years earlier. Before CAMP, Kaufman had also founded consumer startups Mophie, Quirky and Homesick Candles, and held exec roles at BuzzFeed. Now, he was looking for inspiration on what he might pursue next. The fellow entrepreneur was Yoni Bloch, an Israeli musical artist who in 2010 had founded a video tech startup now known as Eko, which Kaufman's companies partnered with in the past. In its early years, Eko (formerly Interlude) was supposed to disrupt the entertainment business by creating technology that enabled interactive features like choose-your-own adventure type customization of videos for online viewers. As a result, it attracted strategic investors like MGM Studios and Warner Music Group, in addition to venture players like Intel Capital and Sequoia Capital's former Israel-focused fund. But when that didn't catch on, layoffs and a pivot ensued. Eko finally found product-market fit in a less flashy but more monetizable space: the product catalogues of online shopping sites. More specifically, by bringing more detail and interactivity to product image galleries that the startup says drive higher engagement and better conversion rates from online shoppers. One of the biggest supporters of the reimagined Eko vision has been Walmart and, perhaps more importantly, its CEO Doug McMillon. (When I was conducting interviews for my book Winner Sells All about the Amazon/Walmart rivalry, several former Walmart execs used the same phrase to describe Eko founder Bloch's influence on McMillon—to them, he was the CEO's technology 'muse.') McMillon first met Bloch on a trip to Israel, the story goes, and a $250 million investment in Eko and joint venture followed. (In what is a rare startup occurrence that might only be interesting to an e-commerce nerd like me: Amazon sits alongside its retail rival Walmart on Eko's cap table, thanks to the tech giant's acquisition of early Eko investor MGM.) Now, a year and a half after the Kaufman/Bloch powwow in Bentonville, Eko is announcing that it has hired Kaufman as its president and chief commercial officer, and that he'll oversee the buildout and operations of a new 70,000-square-foot warehouse in Bentonville—what the startup is dubbing a 'capture factory.' Inside this 'factory,' AI-powered robotic cameras will shoot images of eventually hundreds of thousands of products—predominantly for Walmart at first, but eventually for other e-commerce websites and brands in the future. Eko says it'll hire 200 local residents to run the facility. Today, Eko's technology helps produce 'smart' image galleries—a few thousand are currently live on Walmart's shopping site—that provide online shoppers a more realistic view of a product: What does this bakeware set look like with the lids on versus off? How does the fabric of the swivel chair come across in the real world? But Kaufman's vision for Eko and its robotic photo studios is much bigger. He believes that all of the product data and attributes that the startup's proprietary camera system captures—and which the startup says is often more accurate than the details a product's suppliers might provide—could serve as a 'source of truth' in an online shopping world where AI companies like OpenAI and Perplexity need accurate data if they want to successfully popularize the AI-powered shopping recommendations and agents they've recently launched. 'GS1 was the standard to help computers identify products,' Kaufman told me recently, referencing the standard for retail barcodes. 'In the future, Eko could become the standard to help computers understand products.' It's an ambitious vision—and it starts on a new type of factory floor.
