Sweet! Crave celebrates 20 years with a new cookbook

Time sure flies when you're eating cupcakes. Article content Article content Twenty years ago, when Sex and the City was still a taste-making show, a shot of Sarah Jessica Parker's character Carrie Bradshaw devouring a pink frosted cupcake in front of NYC's Magnolia Bakery launched thousands of cupcake shops around the world. This scene aired only a few years before Calgary got a cool cupcake bakery of our own in the form of the still-thriving Crave, but co-founders/sisters Carolyne McIntyre Jackson and Jodi Willoughby have always been more inspired by home baking in the country than big city trends. Article content Article content 'I always loved to bake. We grew up on a farm outside of High River, and I was always in the kitchen baking,' McIntyre Jackson says. 'We would always bake from scratch and never had a cake mix in our house.' Article content Article content That love of baking led to the sisters opening Crave in 2004, and they immediately garnered fanfare with their delectable cupcakes made with their mother's timeless buttercream frosting recipe. Since then, Crave has expanded to four bakeries within Calgary as well as one in Edmonton and another in Saskatoon (all selling much more than those signature cupcakes) and also sells bake-at-home products for customers who want something better than the typical grocery store brands. While the cake mixes and tubs of frosting can tide Crave fans over between trips to the bakeries, McIntyre Jackson and Willoughby wanted to share the recipes that form the backbone of their business with a cookbook. Article content Article content Article content Crave: Cupcakes, Cakes, Cookies, and More from an Iconic Bakery was released earlier this month, and the book not only stands as a document of the goods that have made it onto Crave's shelves over the years, but also as a history of the co-founders' family recipes. The sisters say every treat ever sold at Crave stems from a family recipe – either their own or one of their staff's. Those formulas were tweaked for larger production and to gussy them up a bit, but for the past 20 years, the bakery has focused on using wholesome ingredients and traditional baking techniques. Article content McIntyre Jackson and Willoughby promise that, unlike some famous restaurants and bakeshops, they haven't downgraded the recipes just a little to discourage home bakers from making exact replications instead of buying them at the shop (yes, this is a thing). Rather, the relative simplicity of the new Crave book showcases that the bakery doesn't just talk a good talk: the goods they sell really are based on good, old-fashioned home baking. While pastry decoration can be a more elusive skill, there are plenty of tips for those who want picture-perfect cupcakes.

Another day, another amazing food video waiting for your attention. No, we're not talking about bizarre food experiments or over-the-top culinary stunts. This time, all eyes are on hyper-realistic cakes. Chefs and bakers around the world have been pushing boundaries by creating cakes that look like everyday objects-household items, delivery boxes, and even slippers. Yes, you heard that right. Recently, we stumbled upon a video of a woman pulling a prank on her father with a hyper-realistic slipper cake. The video, shared on the Instagram page @cakesbymarian_ begins with the woman making the cake at home. She pours a batch of chocolate ganache into a mould, covers it with pieces of bread, and then adds another generous layer of ganache on top. After freezing it for a while, she removes the cake from the mould and makes some adjustments to give it the perfect slipper shape. Next, we see her decorating the cake with white stripes to make it resemble real slippers. Once it's ready, she places the cake on the floor where her father's slippers are usually kept. Seconds later, he enters the frame and steps into what he thinks are his cosy slippers - only to realise he's stepped into a cake. Generate Key Takeaways May 6—Luke's Custom Cakes in Hamilton is opening a second location inside the Dayton Arcade. The bakery, expected to open in early August, will be located in a 300-square-foot space within the North Arcade retail marketplace. "We are absolutely thrilled to become a part of the Dayton Arcade's incredible resurgence," said Owner Luke Heizer. "To bring our creations to such a historically significant and now vibrant space is a dream come true. We look forward to serving the Dayton community and being a place where people can come together to enjoy delicious treats." Last summer, the opportunity to open a spot in the Dayton Arcade was presented to him. "At that time, I really wasn't necessarily looking to expand in that capacity with a second location, but I was open to it," Heizer said. Once he saw the space, he knew he needed to give it a try. What to expect Customers can expect a variety of grab-and-go treats such as cupcakes, cookies, brownies, rice krispie treats, dessert cups with chocolate mousse or banana pudding, cake slices and pre-designed small cakes. Heizer said he is planning to do most of the baking at the Hamilton location because it's more than 10 times bigger than the Dayton space. When Luke's Custom Cakes first opens in Dayton, the bakery will not offer custom orders because they will need to work out logistics. "Maybe later down the road figuring out a way to offer cake orders or orders for pickup there, but primarily it'll just be kind of retail," Heizer said. Luke's Custom Cakes was at Holly Days at the Dayton Arcade where they received positive feedback on their products. Heizer is excited to get more people to enjoy his treats. "Being in Hamilton, I know we kind of reach a lot of different areas, but being in Dayton I feel like we'll be able to reach a lot more people," Heizer said. A love for baking at a young age Heizer is a Trenton native who graduated from Edgewood High School in 2017. He has always had a love for baking. "My parents would obviously go to work and then my babysitter would essentially take me to the library, get cookbooks, baking books, would come home and then just bake a bunch of random stuff," Heizer said. He enjoyed baking anything from cookies and brownies to cakes. His love for cake decorating came from watching various baking shows such as, "Cake Boss." "I didn't really ever intend for it to become a business, but also I was like 12 or 13 years old. I was just doing it because I liked it," Heizer said. Heizer has always had an entrepreneurial spirit. He recalled selling pencils wrapped in yarn at school before he started baking and cutting grass around his neighborhood to pay for baking equipment. Luke's Custom Cakes officially opened a brick-and-mortar spot at 221 High St. in Hamilton in 2021. A new chapter for the Dayton Arcade The bakery will join a diverse array of businesses and organizations contributing to the Arcade's exciting new chapter including Smales Pretzel Bakery. "Luke's Custom Cakes is a perfect fit for our North Arcade retail marketplace," said Megan Dunn Peters, marketing and community partnerships manager for Cross Street Partners. "We're excited to bring back some of the retail components that Daytonians remember about the Arcade in a reimagined and purposeful way." "We're trying to nurture local businesses by creating a vibrant use plan, and everyone loves a little sweet treat," said David Williams, vice president of real estate development for Cross Street Partners. "The North Arcade concourse will be one of the highest densities of local businesses in the downtown core, and this type of retail will play a role in revitalizing our main street corridor." ------ MORE DETAILS The Hamilton bakery is open 11 a.m. to 3 p.m. Monday, 11 a.m. to 5 p.m. Tuesday through Thursday, 11 a.m. to 6 p.m. Friday and 10 a.m. to 3 p.m. Saturday.
