He told how the overwhelming workload of running the patisserie had taken its toll, leaving him struggling both physically and emotionally. Opening Écosse Éclair had been a dream come true for Can and his partner, Tugba. The duo focused on creating iconic cream éclairs, which quickly garnered rave reviews and a dedicated following among food enthusiasts in the Scottish capital. Advertisement However, Can revealed in a heartfelt Instagram post that the shop – which first opened in 2021 – had actually closed two months earlier, though it had taken him some time to formally announce the news. Posting to social media on Friday, Can said: "With a heavy heart, I'm announcing that Écosse Éclair is now permanently closed. "In truth, we closed our doors about two months ago — but it's taken me this long to find the right words. "Words that could even begin to express how much this journey has meant to me. Advertisement "Five years ago, Écosse Éclair was born out of a dream — and from day one, I poured all my energy and love into it. "Thanks to your support, I was able to turn that dream into a reality. The strain of perfectionism led to him taking on multiple roles, including pastry chef, barista, manager, and accountant, significantly impacting Can's health. Advertisement The final blow came when, after 17 years of working as a chef, he accidentally switched off the bakery's freezer overnight, resulting in the loss of stock. It was at that moment he realised the business was no longer sustainable. He continued: "After five intense years of wearing all those hats, my health began to suffer. "Then, about two months ago, I accidentally turned off the freezer. Everything inside was lost. Advertisement "It felt like a sign — the final straw. I knew in that moment it was time to say goodbye." "So, once you had some time to rest and recover, I hope this experience will give back for many years to come. "All the best with the new job and looking forward to your updates on here." Another shared a touching story about the impact of Can's éclairs: "I was so sad to see the shop was closed, you are really missed on Easter rd and your eclairs were so special. Owner of much-loved Edinburgh patisserie announces sad closure with 'heavy heart'
A much-loved Edinburgh patisserie has closed its doors, with the owner making the decision with a "heavy heart." Écosse Éclair on Easter Road has ceased trading with owner Can Misirlioglu taking to Instagram to make the announcement after struggling with a huge work load over the past two months. Can opened the specialist bakery in 2021 in what was a dream come true for him and his partner Tugba. Specialising in cream eclairs, the business has received rave reviews and built up a huge following in the city. Taking on the work load of a chef, barista, owner and accountant led to a decline in Can's health. He also accidently turned off the freezer one day which led to stock being wasted as he came to the realisation he could not go on. Can previously told Edinburgh Live: "I've been a chef for a little over 17 years now, and it's been a lifelong dream to have a place of my own. I'm very experienced with choux pastry as I've worked with lots of French chefs and learned a lot, and have been inspired by them." He is now inviting anyone who wishes to take over the business to write to him as he takes on a new role at Duck & Waffle in the city centre. Taking to Instagram on Friday he wrote: "With a heavy heart, I'm announcing that Écosse Éclair is now permanently closed. You brought pure quality and something different to the area. Hope you find some balance for the future, take care of yourselves." Another wrote: "So sad to see the best eclair shop in the world being closed. Hope your new path brings you lots of joy and peace."
