Stay close to the Guardian and exploit its weaknesses
From the start, try to get close to the beast. It's a counter-intuitive move but is crucial.
The Guardian has 2 weak points—Claws and Head. Stay close to the body and avoid wide swings. The red-glowing body slam of the Guardian is quite dangerous, but it can be parried. So, master it for staggering it.

Damaging the claw of the beast can cause valuable staggers.
Initially, forget about fancy parries. Give priority to dodging the wild swipes and then repositioning. The movements of the Guardians are unpredictable.
